uring recent assemblies, all of the students learned about how walking to school keeps their bodies healthy, reduces traffic, and helps our earth by reducing air pollution. Speaking before the event, Head, Liz McLaughlin, commented: ‘‘We are excited to get our Falcons community walking, scooting, or cycling to school. We know that there are so many benefits to taking regular exercise, not just physically but also in terms of improving our mental wellbeing. Studies have shown that it helps concentration and increases creativity. In addition, we are also helping to create safer, cleaner and more inviting streets.’’
taken for each journey - the class who clocked up the most miles received a special walk to school badge to wear on their blazers. Falcons Pre-Prep also took this opportunity to support their charity, Acton Homeless Concern. As they asked their families to travel less via motorised vehicles, they remained aware that some people need access to better transport. Acton Homeless Concern has shared that their community struggles to get to hospital appointments, doctor appointments and so forth which means that an Oyster Card is a highly needed resource for many homeless people. Therefore, during the course of the week, Falcons Pre-Prep families also donated pre-paid Oyster cards to the charity to help them continue to provide much-needed support for their community.
Each morning, the students were asked how they got to school. If it was an active journey, they got a sticker for their chart. At the end of the week each active journey was multiplied by the miles that were

West and Hunter by Áine McGinty
West End experience comes to west London
Looking from the outside, you’d be forgiven for thinking that West and Hunter is a multinational company with stores all around the country or even an upmarket restaurant, something many think at first. But you’d be mistaken, this is an independent family-run luxury barber shop with a twist.
offering an experience and a place to relax, rather than just simply a haircut. Thankfully, we were able to speak to founder, celebrity barber, Zamaine Ismail who gave us the lowdown on just what to expect at this exciting new (ish) offering on Chiswick High Road.
West and Hunter has been in the making for ten years so it’s no wonder the design is so impeccable.
I say ‘new (ish)’ because West and Hunter actually opened in July 2020, facing the closures that many other hairdressing and barber businesses faced. ‘‘I took a leap of faith, opening during the worst time,’’ Zamaine tells me.
I’ll admit I don’t think I’d ever been inside a barber shop before but having had conversations with some of the men in my life I've always thought of barber shops as an in and out kind of experience. After all, most of them can't quite get their heads around the length of time my hair appointments take or the many topics of conversations I cover with my hairdresser...
A leap of faith which by all accounts appears to be paying off, which is unsurprising when you look at Zamaine’s career so far. A head barber from just 20-years-old, Zamaine has a wealth of experience in luxury barbering. Most recently working as a master barber in the prestigious Acqua Di Parma barber shop in Selfridges.
That’s where West and Hunter is different - priding itself on being a ‘Gentlemen’s Grooming Club’,

the highest standards and a sense of privacy. In fact, despite some gentle prodding, Zamaine refuses to name-drop. Although a glance at the shop’s Instagram page does show me that one recent visitor, who was clearly happy to be photographed, was singersongwriter James Morrison.
Now Zamaine has brought this ‘in town, Mayfair experience, closer to home’ to W4 with what is actually one of London’s largest barber shops. From hot scented towels, a cosy fire and black Chesterfield sofas, it’s probably one of London’s most luxurious too. ‘‘We offer an hour of escapism for the modern man,’’ he explains. Services include haircuts, styling, wet shaves, beard maintenance, facials, and experiences with thorough personal consultations as well as a selection of complimentary drinks with all services.
I get the feeling that no matter who you are, you’ll feel sensational whilst being pampered by the team at West and Hunter. Zamaine’s aim for his shop is for customers to feel like ‘more than just a number’ - he wants his barber shop to be a place where people like to spend time. His aim is to create a community within our community and he seems well on the way to achieving it.
Owing to its luxury feel, West and Hunter also offers hair products from Balmain Paris and Oliver J Woods with many more to come. Cigars will also be able to be purchased from the shop in the latter part of this year.
We all deserve some extra TLC after the year we’ve had so why not give it a go?
Knowing all of this, it’s hardly surprising that Zamaine’s array of customers come from near and far. ‘‘They’re exceptional individuals from all walks of life,’’ he tells me. Ranging from famous athletes, musicians, and actors to Instagrammers, Zamaine provides all of his customers with

Chiswick RNLI Local volunteer is new face of charity by Dia Stronach
Chiswick volunteer Holly is the new face of the Royal National Lifeboat Institution (RNLI). A new national TV advert has been released by the RNLI featuring 39-year-old Chiswick resident Holly in its call for supporters to sign up and donate after a difficult year for the lifesaving charity. The advert features real-life rescue footage and shows the impact of RNLI lifesavers as loved ones are saved and emotionally reunited with family and friends, as Holly says: ‘‘When the pager goes off, I don’t know who will need rescuing, it could be someone you love, and when we get that call, we’ll answer it.” Last year, RNLI lifeboats launched 8,239 times, assisting 8,374 people saving 239 lives. RNLI lifeguards were just as busy on the beaches

keeping people safe, aiding 25,172 people saving 110 lives. They are now preparing for what they expect to be an incredibly busy summer. Chiswick RNLI have recently teamed up with the London Fire Brigade (LFB) to deliver water safety training to local riverside venues ahead of restrictions easing. Guy Addington, the RNLI Water Safety Lead for the South East, said: ‘‘If somebody ends up in the Thames, seconds count in saving their lives; teaming up with LFB is a fantastic way of getting vital safety messages and advice to as many people as possible.” You can view the advert online.

Even better, it caters for all budgets. There are items ranging from 50p to £500 and entry is free so even just heading in for a browse won’t cost you. The market is also ideal for all those looking to live a more green and sustainable life. Antiques and vintage buys can be seen as a green way of living as people look to reuse items and it’s also a way of having unique items that very few others have. Dexter was inspired to open his market here in Chiswick after having worked in the area for fifteen years. ‘‘I think it’s quite an exciting and vibrant area,’’ he explains. He also saw it as a good opportunity as at the time there were no independent local antiques markets. The move has paid off despite the setbacks with local people having a ‘lovely, really enthusiastic’ response to this fabulous addition to the area. If you’d like to head along to the next market and see the stunning range of items for yourself, it will be back at St Michael’s Centre in Chiswick on Saturday 4th September from 10:30-16:00. The market takes place – whatever the weather - on the first Saturday of each month. The atmosphere promises to be relaxed but also careful with the current times. Visitors will be asked to sanitise and wear face masks and entry can be staggered if needs be.
It is of course important to support brick and mortar stores but another financial casualty of the pandemic has been the country’s wonderful fairs and markets. The Chiswick & Grove Park Antiques & Vintage Indoor Market being one of those. Although in its second year, the fair has really been closed more than it has been open since its beginning. ‘‘Establishing a fair in the middle of a pandemic has been a challenge,’’ says Dexter O'Neill, the organiser behind this one man treasure. I say one man but Dexter’s market actually plays host to a variety of independent traders who rely on events like this in order to earn money. Traders encompass a whole range of antique and vintage gems including specialists in silver, books, paintings, jewelry and football memorabilia. The market prides itself on having something for everyone. From the vivid colour and unique styles of West German vases and the geometric designs of Hornsea kitchenalia, to the intricate designs of Chinese Pottery or stylish art deco and ornamental items for your home. ‘‘It’s a treat for the eye,’’ Dexter explains. ‘‘You don’t know where to look!’’ Objects range from useful to decorative. ‘‘We have a huge variety of items. It can be for yourself, for your home and garden, and especially if you are looking for that unique gift for someone special.’’

CHISWICK HOUSE: The Centre of Summer
20
THE CHISWICK MAGAZINE
by Georgie Condie
With over 300 years of history, Chiswick House and Gardens has continually been at the centre of life here in W4 but in 2020 it was forced to take a break. Restricted by coronavirus, the exhibits and events that Chiswick House has always prided itself on were closed to our community. Yet, as summer 2021 rolls in, Chiswick House is reviving itself.

According to Director of the Trust Xanthe Arvintakis, their mission this summer is ‘To be here for everyone, every day’. The summer programme at Chiswick House seems bound to the concept of bringing our community together after a time of such extreme isolation by targeting every member of Chiswick, from the retired to school children.
THE CHISWICK MAGAZINE
outside doesn’t stop there. With their new yoga class at the Ionic Temple lead by Kim Sellis, Chiswick House is adapting to our new appreciation for nature and desire to find our fitness fix outside, rather than returning to a cramped, air-conditioned gym. For some of us though, the thought of getting fit this summer is daunting, having been glued to our couches or a zoom screen but Sellis’ yoga class welcomes all. With a range of classes targeted at beginners, intermediates and ‘yogis’, this class throughout the week encourages you to get active whether you're a sofa lover or Joe Wicks’s regular.
Over the last year, given our collective desperation to get outside, across London people have been taking even the most tedious activities outside and Chiswick House is fully embracing this. Popularised by its extensive products and relaxed atmosphere, Chiswick House’s Duck Pond Market teleports your mundane Waitrose trip into their beautiful gardens. Even better… it’s simultaneously reviving our community in an unparalleled way, giving local businesses their deserved opportunity to get their products into our community. With a mix of local produce, being sold by your own neighbours, the market’s central message is that this summer Chiswick deserves to ‘shop good and feel good’. However, the gardens’ push to get us
However, if this summer exercise isn’t on your bucket list, Chiswick House still has your cultural desires covered. Talking to Xanthe Arvintakis, there was a strong sense that given the closure of their historic house over the last year, their team was placing strong emphasis on reenforcing the culture and legacy of Chiswick House. Once more bringing people together, their photography workshop: ‘Reframe Your Perspective’ which took place on July 24th

examined how perspective is altered when something comes between you and your surroundings. Alternatively, their Mindfulness Walk: The Beautiful and the Wild on the same date also took advantage of the unparalleled gardens in a two hour walk with artist Ansuman Biswas and astroparticle physicist Prof. Chamkaur Ghag, discussing the themes of pleasure and freedom. Alongside these smaller, more niche events, after months of having to pause visits to the historic building, the Chiswick House team aim to draw our attention to the history and significance of the house itself with their ‘Bring Into Being’ event running until the 31st of October 2021. Collaborating with the works Peter Adjaye, Jaimini Patel and Mark Wallinger (as well as many other professionals) this series of workshops and events is the House and Garden’s impressive way of examining the significance it has on our society, looking at the house in the past and the present. After a year of isolation it feels as if Chiswick House is providing our community with a special opportunity to reconnect with itself and ask how we can
24
shape our future through art, music, science. In spite of the obvious desire to get outside, for many there is a new anxiety joint at the hip with the return to normality. After being inside for so long, the prospect of socialisation or busy surroundings can be both daunting and unappealing but Chiswick House seems to take this into account this summer. Events such as their Luna Cinema acts as a thoughtful way to transport us from our living rooms to their gardens without the pressure of a post lockdown frenzy. So, whether you find yourself attracted to their more relaxed activities like Yoga and Photography classes or the larger events like the Chiswick Festival (running from the 4th to 8th of August), getting involved in their summer programme is getting involved in the wider Chiswick community. Their aim, according to Director Arvintakis is to connect Chiswick residents with each other and provide a space where all of us can thrive.

TIK TOK
Is this really the place to be for all things beauty? by Áine McGinty
Given the fact that the first person who ever mentioned TikTok to me was my cousin who is ten years younger than me, I’ve always felt I’m that little bit too old for the app. To me at least, it first seemed like a place for teenagers to reenact their favourite dance routines, not something I’d excel at. But I think it’s time for me to get with the times. As well as Instagram and YouTube, TikTok is now the place to be for all things beauty. With dupes for higher end products or new ways to apply your favourite products, the latest trends are sure to be on TikTok. So can the recommendations be trusted? It’s worth noting - as some of my favourite beauty bloggers always warn - everyone is different. Something that works for your favourite MUA might not necessarily suit your skin type or just might not work for you. But that being said, when someone
26
claims a product is the next best thing, I can never resist trying it. Here are some of the viral TikTok products that have worked for me Maybelline Lash Sensational Sky High Mascara £9.99 It shouldn’t be a surprise given Maybelline’s reputation for mascara but after having tried a few other more expensive brands, I thought this would be more of a day to day mascara - one I could maybe use for popping to the shops or walking the dog. I didn’t think it’d be my new go to. It has to be said, I have been using an eyelash serum to try and grow

YouTube or Instagram but it’s been praised by beauty fanatics and experts on TikTok too. It’s said to be a dupe for the more expensive Tatcha Silk Canvas Primer, to be honest I haven’t tried that primer so I can’t testify for that but what I will say is that this does what it says on the tin. The pores on the sides of my cheeks are much less obvious when I use this, my makeup seems to last longer and I find that my foundation doesn't sit in my fine lines as much. There are also different versions to suit different skin types. Another one certainly worth trying.
my lashes but this mascara is a dream. My eyelashes really do look sky high and best of all, I don’t end up with black underneath my eyes after a few hours - something that was starting to happen to me with a mascara that retails for double the price! It even prompted my mum to say ‘are they your own eyelashes?’ in disbelief, so if that’s not a reason to spend a tenner on this mascara I don’t know what is. Paula’s Choice Skin Perfecting 2% BHA Liquid Exfoliant £28.00 Speaking of skin, mine has drastically changed following the pandemic and introduction of masks. A small price to pay to keep others safe I know but still an annoying one. Recommended on TikTok as one for those with acneprone skin, this product wouldn’t have been something I would have considered before ‘maskne’ but it is a saviour.
This is the most expensive out of my small selection of products but they do a travel sized version for £9.00 and often have discounts online. Let me know if you try any of these out or if there’s something you’re curious to find out more aboutUnfortunately for my bank balance I don’t take too much persuading to buy more makeup!

Meet the Artist: CHARLOTTE BERRIDGE by Áine McGinty
Many of you will already know the artist featured in this month’s ‘Meet the Artist’, Charlotte Berridge, in fact this isn’t our first time featuring her but just in case you’re yet to discover her wonderful work, let’s start at the beginning.
Charlotte has been creating and selling illustrated pieces of west London landmarks for five years as Charlotte Berridge Studio. Charlotte studied Graphic Design and Illustration at Bath Spa University before embarking on a successful career designing magazines. Her publishing career saw her launch and redesign many influential UK magazines and win lots of industry awards. Her last full time role in the industry was as the creative director of Marie Claire UK, a role she absolutely loved. However, after four years in the role, when Charlotte took some time out to deal with a health issue, she ended up making
30
the bold decision not to return. ‘‘I fell in love with my new pace of life and decided to see if I could build my own business,’’ she explains. A move I know many local people are grateful for. Charlotte began by illustrating her hometown of Ealing but has gradually added more areas of west London as her business has grown. She sticks to west London as it’s the place she knows best. She says, ‘‘All my prints and products feature places not far from my home so they are all places I love and know well.’’ So why has Charlotte incorporated her talent with celebrating this part
of London? ‘‘I’m passionate about our little corner of west London and love showing off its beautiful architecture and by celebrating its rich heritage I hope it supports the local area and businesses too,’’ she replies. ‘‘It’s wonderful that so many residents feel such a connection to the areas they live in.’’
As we all know, this couldn’t be more true for people in Chiswick which was actually the first area added to Charlotte’s collection after Ealing. The focus is now once again back on Chiswick with Charlotte recently launching her ‘Greetings from Chiswick’ illustrated cards collection- something which has also been inspired by the times

their surroundings and enjoyed a stronger sense of belonging to a community. This renewed interest in all things local has helped me maintain my business this year but it’s definitely in quite a different shape to usual,’’ Charlotte tells me.
Thanks to the easing of restrictions Charlotte has finally been able to get back out there with her fellow traders and friends and back meeting her much appreciated customers.
Luckily, Charlotte’s website is fantastic and showcases her work well but this didn’t stop her worrying when ‘non-essential retail’ was forced to close due to most of her sales being face-toface and most of her online sales coming from returning customers who had already seen her work in person. ‘‘Social media and the internet are great for sharing your work, but showing people your actual products is invaluable.’’ we are living in. ‘‘Lockdown has created a resurgence in sending cards, a simple handwritten note, however short, is always well received and definitely more thoughtful than a text or email,’’ she says. If you get a chance to chat with Charlotte about her work, you might even find out an interesting local fact or two!
The family-run independent shop in the heart of Ealing where Charlotte rents shelf space was closed for 32 weeks in total last year - impacting Charlotte’s business immensely. As well as this, like many, Charlotte really missed the interaction her business provides through large local events. ‘‘When you work on your own, it can be quite isolating and without seeing people’s reactions to your work makes you question why you do it. Seeing someone genuinely interested, how it triggers a memory and hearing why, makes everything worthwhile. Knowing I’ve captured a place that’s as special to them, as it is to me, is heartwarming. CHISWICK BOOK FESTIVAL
Tickets have gone on sale for next month’s Chiswick Book Festival, which will take place in front of live audiences, after last year’s event went online because of the Covid-19 outbreak. The authors’ books – for adults and children - will be sold by Waterstones Chiswick, at Festival venues and its shop in Chiswick High Road. 34

This year’s speakers include Gyles Brandreth and Ed Balls, talking about their memoirs; Clare Balding on her first non-fiction book for children; Alan Johnson on his first novel; and, from New York, Emily Mortimer, who wrote the BBC’s adaptation of The Pursuit of Love by Nancy Mitford, who lived in Chiswick. The Festival is a non-profit-making community event with proceeds going to three charities and St Michael & All Angels Church, which runs the event.
Pre-Festival events • As part of a weekend of events celebrating the anniversary of the first Chiswick Flower Market, Kate Teltscher will talk about Palace of Palms, her acclaimed book about Kew Gardens, now out in paperback. It will take place at the George IV at 12 Noon on Saturday September 4th. • The George IV will also be the venue for this year’s Waterstones Local Authors Party on Tuesday September 7th, at which twenty local authors have just two minutes each to talk about their books. • On Wednesday September 8th, the Festival will join members of the Chiswickbuzz Book Club for a free Zoom discussion with Adam Andrusier, the author of Two Hitlers and a Marilyn.
In case of further changes in government Covid advice, organisers have initially put on sale only half the potential tickets. They have also increased the number of venues, partly to reduce overcrowding.
Thursday September 9th • The Festival opens formally on Thursday September 9th in the Garden Pavilion at Chiswick House & Gardens, with a panel session exploring the life and work of Nancy Mitford and her sisters. It will include an interview with Emily Mortimer, the writer and director of the BBC serialisation of The Pursuit of Love. It will be chaired by Jane Thynne (Widowland) and will include Jessica Fellowes, author of the Mitford Murders series, and Bridget Osborne, editor of The Chiswick Calendar, who will explore the Chiswick connections of Nancy Mitford and her sisters.
New venues this year include The Chiswick Cinema, Hogarth’s House, the University of West London in Ealing and the Boston Room of the George IV pub in Chiswick High Road, which will host sessions on the main Festival weekend as well as two preFestival events. The Festival director Torin Douglas said: “We are delighted to welcome book-lovers in person after last year’s online festival, but we want to reassure people we are being cautious in terms of Covid advice. We’re only selling half the tickets to start with, and though we hope to add more, we’d encourage people to book early to avoid disappointment.”
Friday September 10th • The prizes for the Festival’s 11th Young People’s Poetry Competition will be presented by Clare Balding on the afternoon of Friday September 10th and she'll then talk about her inspirational new book for children, Fall Off, Get Back On, Keeping Going. • At 6.30pm, in the Andrew Lloyd Webber Theatre at Arts Ed, the Emmy-award-

A Chiswick neighbour and friend of Richard Briers, Alvin has seen it all, from Z Cars and the BBC Shakespeare, and working with Laurence Olivier and Peter Sellers, to discovering Sean Connery and Alan Rickman. • At 8pm in St Michael & All Angels Church, political commentator Steve Richards talks about The Prime Ministers We Never Had eleven individuals who never quite made it to Number 10, including RA Butler, Denis Healey, Michael Heseltine and Jeremy Corbyn.
Tuesday September 14th and Wednesday 15th • The Festival will focus on Ealing writers in two events held at the University of West London. On Tuesday September 14th, Rory Cellan-Jones, the BBC technology correspondent, recounts the liberation, disruption and oppression of the smartphone era in his book Always On – Hope and Fear in the Social Smartphone Era. On Wednesday September 15th, this year’s Ealing Fiction Panel includes Nicola Rayner, Robin Duval and Saz Vora, chaired by Lisa Evans. The final event on Wednesday 15th is a virtual wine tasting and discussion led by Victoria Daskal, focussing on some of the wines featured in A Gentleman in Moscow, by Amor Towles.
Saturday September 11th and Sunday 12th • The main Festival weekend, September 11th and 12th, features the memoirs of Brandreth and Balls, as well as non-fiction stories of prejudice; of life on the NHS front line; and of global politics and how to save the planet; from writers such as Mary Ann Sieghart, Tim Marshall, Sarfraz Manzoor, Parm Sandhu, Stuart Prebble, Dr Amir Khan, Dr Jim Down, Suzette Llewellyn, Suzanne Packer, Andrew Mitchell and Rowan Hooper. • There’s a feast of fiction from Charles Cumming, Nancy Tucker, Susan Spindler, Luan Goldie, Cathy Rentzenbrink, Peter Hanington, Elizabeth Buchan, Ellen Alpsten, Marika Cobbold, Samantha Norman, Mary Chamberlain, Gill Paul, Jane Thynne, Louise Candlish, Charlotte Philby and others. • Children’s authors include Rob Biddulph, Chitra Soundar, Josie Dom, Kim Ansell, Lisa Read, Zoe Antoniades, Dianne Hofmeyr, Joshua Seigal and Neil Zetter plus The Really Big Pants Theatre Company and a 75th birthday tribute to Astrid Lindgren's Pippi Longstocking. Cooking Beyond Alcohol: Do You Know Your Switches? by Dia Stronach
Cooking with restrictions can be tricky. It’s pretty easy to find gluten-free or veggie alternatives online or in the shops these days, but that’s not true of everything.

can be replicated very well with an equal amount of apple cider vinegar. If your recipe calls for a larger amount of white wine, you may want to dilute the vinegar with stock or water. Try it on a fried pork chop or in a light seafood stew.
Most people looking to skip alcohol in their home cooking, whether to save money or to maintain an alcohol-free household, are more likely to just skip the addition than substitute anything. But the different alcohols used in the kitchen have a significant chemical impact on your food, and with a little bit of nutritional science, you can usually find an alternative that won’t disappoint. We’ve compiled a few below!
Beer Beer is often used in thick, meaty stews where its rich, earthy flavour infuses into the broth while its sugar content tenderises even the roughest hunks of meat. It’s also popular in baking, where it adds a sweetness whilst its yeast supports the structure of your bake. In baking, you can easily swap in ginger beer or another root beer, though proportions might take a little trial and error. In a stew, you’re probably better off with a more complex substitution: try a mix of equal parts mushroom stock (made by boiling down mushrooms with herbs to your taste) and apple juice. Try it in a hearty German beef stew or even a chocolate cake.
Red Wine Red wine is generally used in cooking for its high tannin count, which gives a rich, deeper flavour to stews and mincemeat. To replace it, look for another source of tannins like strong black tea-just one cup of well-brewed tea will have the same effect on your meal as a glass of red wine. If you’re really missing the sweetness of wine, you can even add a couple of crushed grapes at the same time as the tea to add that fruity layer! Try it in a cottage pie or a bolognese.
Vodka
White Wine
Vodka in cooking is primarily used to add depth and creaminess without altering the flavour of the dish. It’s incredibly difficult to replicate, since it’s value lies in its ability to impact a dish’s construction without changing its taste. However, in recipes that call for a small amount of vodka, you can often use a small amount
Popular in French and Italian cuisines, white wine is usually simmered down in a fresh-tasting meat or seafood dish. The wine’s high acid count helps it to break down protein structures and strip off glazed edges, leaving behind a light, sweet flavour. It’s one of the easiest alcohols to substitute, and

cooking wines above, the acidity is best matched by a light vinegar like apple cider vinegar or an acidic fruit juice like apple. Given the strength of the acid in sherry, you may be better served by adding a healthy splash of lemon juice to your diluted vinegar when a recipe calls for a larger volume of sherry. For sweet sherry recipes, you can add a couple of teaspoons of sugar or a splash of vanilla essence. Try it in a smooth chicken stew or festive trifle.
of tonic water instead for a similar affect. Try it in penne alla vodka or struffoli. Rice Wine Unlike other wines, this staple of Asian cooking is made from fermented glutinous rice instead of fruit. This gives it a clear, sweet flavour that makes it ideal both for tenderising proteins and for using as a base for soups and sauces. To get the same tenderising effect and crisp sweet flavour, you can use two parts white grape juice to one part rice vinegar. If either of these are hard to come by, you can instead use two parts apple juice to one part white wine vinegar (alcohol-based vinegars have had all their ethanol converted to acetic acid, but a 0.1-2% alcohol content can remain) or apple cider vinegar. Try it in teriyaki chicken or broccoli beef.
Port Native to Portugal, port is another fortified wine made by adding brandy to red wine during fermentation. The high alcohol content of the brandy halts fermentation entirely, leaving a strong-bodied red wine with a sweet flavour and heavy duty alcohol content. When cooking, port shares the high tannin count of red wine and the sweet flavour of brandy, making it ideal for roasting or stewing gamier meats like duck and venison. It’s best substituted with a mix of black tea to mimic the tannin count and a sweet, acidic liquid to balance the flavour-- orange juice or grape juice being ideal. Try it in a roast duck or a lamb casserole.
Sherry Sherry is a fortified wine made by combining white wine with distilled alcohol either during distillation (sweet sherry) or after (dry sherry). Sherry is used in cooking both for its unusually strong acidic structure and for its distinctive flavour. Like the other

them. These do burn a little longer than a typical flambé, though, so don’t attempt without someone on hand to extinguish the fire if any problems arise. Try both in a Christmas pudding!
Rum Much like white wine, one of the most common uses of rum is to break down other flavours, especially for deglazing a sauté pan. Unlike white wine, rather than distilling down to a clean, fresh flavour, rum maintains its complex profile of sweetness, spice, and alcohol. You can replicate the deglazing effect with apple cider vinegar, and the flavour with a mix of equal parts white grape juice, pineapple juice, and apple juice with a dark brown sugar and a small amount of almond extract. If your recipe calls for a dark rum, add molasses. Try it in barbecue ribs or a rich chocolate brownie.
With these basics under your belt, it should now be easy for you to start doing your own intelligent substitutions. Alcohols like amaretto, orange liqueur, crème de menthe, or kahlua, which are used mostly for flavour, can be substituted with intuitive flavour matches like almond extract, orange concentrate or syrup, mint extract, or espresso. Strong acidic alcohols like cognac, wine, or even vermouth are often used as crisp, fresh-tasting bases for stews and soups or for deglazing pans, and can be replaced with an acidic liquid or combination of liquids with a matching flavour profile such as vinegars, kombuchas, or other fizzy drinks like coke or ginger beer. High tannin alcohols can be replaced with black tea, extra-sweet alcohols with fruit juices, strong alcohols with tonic water or even concentrated syrups.
Brandy A favourite of festive desserts, brandy has a strong, distinctive flavour often used in icings and flambés rather than as a main ingredient. Despite its immediately identifiable flavour profile, you can substitute the flavour of brandy with a very slightly overcooked beurre noisette, added as a liquid. You can even replicate the spectacle of a tableside flambé by soaking sugar cubes in a flavoured extract like vanilla, arranging them around your dish, and lighting
One last note: do not try these swaps in cocktails.

systems, they are then expelled the same way as food and drink. I won’t lie, I’ve always been sceptical about these types of treatments. Can they work? Are they worth the money? But this treatment with Marianne, the studio’s manager, was able to take all of my reservations away.
Considering my last trip to Isleworth’s hidden gem involved trying out the various machines in the studio’s ‘Fitness Zone’ and only a short while in the ‘Relaxation Zone’, when I was asked to come along and review a treatment, I was expecting to break a sweat. Instead, I managed to lose nearly 2 inches of fat from my stomach simply by lying down…
The treatment boasts four main benefits:
This isn’t magic, although it certainly felt like it, this is Ultrasonic Cavitation - one of four treatments available in the studio’s ‘Prestigious Zone’. With the Ultrasonic Cavitation machine, fat cells are able to be destroyed through ultrasounds before being transported to the liver through the vascular and lymphatic
• The breaking down of fat cells • Improving the elasticity of skin • Firming • Helping to eliminate cellulite. The boldest claim of all - that after just one treatment you will lose inches off your targeted area. A claim I originally thought was too 46

journey with Studio Figura, this is one part of their very successful concept. You also need to keep up with your water intake too. Both worthwhile prices to pay in my opinion.
During the treatment I received even more reassurance, after finding out that Marianne has been on her own fitness and wellness journey with Studio Figura. ‘‘For the first time in my life, I’ve found something sustainable,’’ she told me. She truly believes in their philosophy - after all she has experienced all of the benefits the women’s only studio has to offer.
The treatment can, however, Marianne tells me, be used as a short term quick fix if necessary. Some clients do like to book sessions before a big event. Ultrasonic Cavitation can be used to target a number of areas - I went for the stomach but others use it for their arms and thighs. Essentially, it can be used anywhere you’ve got unwanted stubborn fat, I’m told.
To give you an idea of what this treatment involves, you’re essentially lying down on a comfortable spa-like bed, having a conversation with the person conducting your treatment whilst they glide a machine over your target area. Yes, the cooling gel used is slightly cold but despite that and having a part of my body out that I wouldn’t usually show off, I couldn’t have been more comfortable. Surprisingly, it reminded me of when I go to get my eyebrows or hair done - I felt pampered and listened to, the former being something I’ve never said after leaving a typical gym or fitness centre!
I felt lighter immediately after leaving the treatment roomsomething I was sure I was imagining but was told is often felt. At the moment Studio Figura Isleworth is offering a free consultation with a trial to try out two of their fitness machines. Send them a message or give them a call and find out what all the fuss is about. Studio Figura London TW7 398 London Road Isleworth TW7 5AG Telephone: 020 8326 2887
Before I mislead you into thinking this machine can keep you fit without cardio, sadly, it cannot. However, Marianne is very up front about this. ‘‘It’s an aid,’’ she tells me. ‘‘Diet and fitness are still key.’’ If you’re undertaking a fitness

Lockdown Meditation and the Working Day by Dia Stronach
With indoor gyms and exercise programs now open again, people across London and the UK are looking to build new wellbeing and fitness regimes. But do you know what’s best for your needs?
W
e spoke to yoga and mindfulness professionals across London to see what they’ve discovered over lockdown, what they’ve been missing, and what’s new for the industry. Of course, home fitness has been a huge feature of the past year. Sales of at-home workout equipment skyrocketed in 2020, and online exercise courses, communities, and support have seen massive increases. Walking and jogging have been by far the most popular exercise routine for Brits in lockdown, followed by yoga, HIIT workouts, and pilates.
48
YouTube yoga channels like Yoga With Adriene have seen particularly huge increases, being calming and beginner-friendly in addition to being healthy and robust workouts. It helps that she has a dog. Now that indoor group exercise classes reopened on May 17, including components like saunas and steam rooms, a lot of firsttimers are starting to look for ways to continue their newfound routine in the studio. Social distancing, regular cleaning and other Covid-secure measures will apply in gyms and group exercise classes. So where to begin?
Why yoga? By this point, the benefits of yoga and related fitness plans are wellknown. It’s linked to lowered stress levels, better communication with loved ones, and other mental health benefits. Data showing that practising yoga improves your social abilities in personal, professional and community settings is particularly attractive to anyone recovering from far too much alone time over the last year. Social yoga is a trend which has been gaining traction both with work-from-home yoga converts and longtime yogis excited to move back into the scene post-
lockdown. Many are eagerly hoping for a return to the social yoga coffee shop morning which the V&A previously hosted. There has always been a social aspect to yoga and wellness-oriented fitness, with joining a group or studio associated with easing social anxiety and improving your outlook on society. A recent study by Dr Kanupriya Sharma, Dr Akshay Anand, and Dr Raj Kumar has detailed why yoga has been so key to many people’s mental and physical healthcare regimes during the Covid-19 pandemic. It concluded, “As the lockdown cannot last forever and workplaces will have

to be functional soon, there is an increased possibility of recurrent infection. Therefore, Yoga can provide the necessary tool for risk reduction, amelioration of stress and anxiety and strengthening of the immune function. The online platforms provide a good media for Yoga training at work places and homes.”
There are a huge number of incredible studios and gyms in our area. Some, like Chelsea’s FLEX, offer a huge range of styles and levels from the gentle vinyasa flow of Chill Yoga to the balance and flexibility focused Dharma Yoga.
Smaller studios with a more local feel, like MOVE by Market Halls, are also opening and taking advantage of the increased custom to nearby marketplaces and food halls. One trend which was taking off before lockdown and looks set to return is hot yoga, with The Hot Spot Yoga in Parsons Green and Hotpod Yoga in Notting Hill both eager to welcome newcomers back.

offer more intense workout with an emphasis on strength, balance and flexibility whilst maintaining a welcoming and relaxed environment. Of course, a lot of people are now seeking more fitness-intense options offering classes with a sense of community. One popular name amongst local yoga lovers was Box Clever Sports, newly relocated to Kensington Church Street. With their emphasis on health, good spirit, and women growing strong and fierce together, the location looks set to be a massive hit in these early months of its reopening.
There is a limited amount of data available on the affect of wearing a face mask while exercising. As many have expressed discomfort, most are recommending an emphasis on social distancing in gyms. If social distancing is not possible, a mask should still be worn.
How to stay safe? Of course, venues opening does not mean we will be totally setting

Whilst turtles and dolphins are always abundant in the Maldives, September to November offers wildlife enthusiasts the best chance for spotting manta rays and whale sharks as they glide through the Maldives’ crystal-clear waters to feed on plankton. Divers may even be lucky enough to swim alongside these gentle giants. Adaaran Select Meedhupparu offers travellers the chance to scuba dive amongst these majestic creatures during excursions to neighbouring dive sites Kottefaru Kammati and The Wall (Vandhoo Kanuoli). And the resort’s house reef provides holidaymakers with the chance to explore tiers of multicoloured corals and swim with schools of tropical fish and reef sharks.
