D
ecember is not generally our most extreme weather month and one can expect a fair amount of clear frosty mornings and plenty of sunny days. With the light fading so fast - this is the month for getting up early and stuck into any tasks that haven’t been finished in the garden. Below are some of the things you could be getting on with: Continue with your winter digging but only if the soil conditions and weather suit - not too wet or frozen. If you are on clay I would imagine that you can probably forget about it. Prune bush roses back by half or so to stop them being damaged in the wind. This a good time of the year to plant bare root shrubs and trees while the ground is warm. You may still have time to repair lawns if the weather allows. Make sure you don’t walk on the lawn when there is a frost, all you will do is leave big brown foot prints where you have broken the brittle grass stalks. Keep all your house plants in good light but not direct sunlight and water them sparingly. If you haven’t done so - insulate the inside of the greenhouse with bubble wrap. Also insulate your cold frames and on really cold nights cover the cold frame with an extra layer. Just because the air is colder now that should not prevent you ventilating your greenhouse and coldframes on the sunnier days of the month. This will prevent stale air and the dreaded spread of damping off. Keep birds stocked up with fresh water, seeds and any scraps from the house but go easy on white bread. Clean away any damaged or diseased material in and around shrubs and trees. Mulch around all fruit trees and shrubs that have been pruned. When tidying up the garden, leave a pile of wood, and leaves in a corner providing somewhere for any hibernating insects or little animals. Always check for animals before clearing anything in the garden.

Turkey and Tuna Salad You won’t need reminding that Christmas will soon be upon us! And despite the fact that most of us end up over-eating, there always seems to be Turkey left over. We all joke about having turkey in our sandwiches for the rest of the week but there are infact some great ways to use turkey. Here is just one of them Ingredients • 100g mayonnaise (an olive oil one works best) • 1 tbsp capers , drained • 2 anchovies from a can, 1 cut into thin slices • 80g tuna in oil (a good-quality one will make all the difference here), drained • juice ½ lemon • 400g/14oz or thereabouts leftover turkey - white and/ or brown meat • 100g bag rocket

Preparation method Put the mayo, most of the capers, 1 whole anchovy, the tuna and most of the lemon juice into a food processor. Whizz until the tuna is completely mixed into the mayo. Season with pepper first, then taste, and add salt and more lemon juice, if you need to. If your sauce seems a bit thick, whizz in a drop of water. Can be made up to a day ahead. Spread the turkey and rocket over a large serving plate, then spoon over the dressing and scatter with the remaining capers and sliced anchovy. Serve straight away with crusty bread.
