METHOD 1. First fry the chopped onion and pancetta cubes. Add garlic if required / to taste.

2. Then add chopped sage and coriander.

3. Finally add bread crumbs to cook.

4. In a separate bowl prepare mincemeat. I used sausage meat from Gloucester Old Spot sausages with salt and pepper.

5. From the onion, pancetta, sage, coriander and bread crumb mix take half and blend in a food processor put the rest directly in with the sausage meat.

6. Add the blended mix to the sausage meat mixture.

7. Use an egg yolk to bind the mixture together and roll into balls 8. Fry the balls until browned.

9. Then remove the balls and fry fresh chopped tomatoes 10. Then add the balls to this plus a tin of chopped tomatoes, some water and red wine. Allow this to bubble away.

11. Whilst this reduces boil some water for your pasta. I made fresh pasta which takes only a minute or two to cook.

12. Once the pasta is ready drain and put in a bowl add the meatballs and tomato juice and serve with freshly grated Parmesan.
