1. Melt chocolate in a bowl above a pan of hot water. Allow to cool.

2. Dilute coffee granules in 2tbsp of hot water.

3. Mix together coffee, sugar, eggs and vanilla extract. Gradually beat in chocolate mixture.

4. Fold in flour, choc chunks and choc chips.

5. Pour mixture into prepared tin.

6. Bake in pre-heated (190c) oven for 35-40 minutes, until brownies have a crusty top and a skewer comes out clean.

7. Leave brownies to cool and cut into squares.

TO PRUNE OR NOT TO PRUNE?!

hould you be wielding the secateurs in a frenzy of activity, I caution you to restraint. This is not the time for serious pruning.

You may read that pruning should take place once a shrub has finished flowering as a general rule. However, our weather is so inconsistent over autumn and winter that those late-flowering shrubs need to be left alone until spring. The

trouble is that you can go in there, cutting hard back, then we have a strangely mild spell so the plant uses up its energy making new growth. Follow this with a sudden cold snap and the whole lot is killed off. Thus, in order to spare the plant from unnecessary stress, desist. Certainly, you can have a

half-hearted tidy up if you want to, but leave the serious stuff until spring.

Early flowering shrubs such as Forsythia, Viburnum x bodnantense, Lonicera fragrantissima should be avoided altogether. If you start cutting them back now you will be cutting off all of next year’s flowers so think on! With evergreens such as Choisya, you are too late anyway. These are best cut back in the summer and early autumn if necessary.

Should you be having a bit of a go at roses, you could always use your cutback stems as hardwood cuttings and pop them in the ground or in a pot of free-draining compost to give them a chance to root. Cut the soft tops out completely down to a leaf joint at an angle; cut the bottom off straight and about 6”-8” down the stem, the idea being twofold: you will recognise which way up you need to plant the thing and also the sloped top will mean that rain and/ or snow will not sit on the top of the cutting.

In preparation for the cold, if you have an unheated greenhouse in which you intend to overwinter things, it would be a good idea to line it with bubblewrap to keep the worst of the weather out. You can also bubblewrap any pots in which you have

permanent planting and make sure that you take away any saucers from underneath and stand the pot on either feet or gravel to ensure decent drainage. Have fleece to hand as well to fling over anything that is not totally hardy.
