Having covered making your own pasta a few issues ago I thought I would include this delicious ravioli filling, recipe. INGREDIENTS 225g chicken 1 small onion 2 garlic cloves 75g Pancetta Cubes 2tbsp grated Parmesan 100ml chicken stock 2 tbsp bread crumbs 100ml double cream 1 egg

Top t i pm...olina

h se Dust wit pasta to stop r. togethe sticking

METHOD 1. Cut chicken into thin strips and fry on a medium to high heat with the pancetta, chopped onion and garlic. 2. Add the chicken stock and leave for 2-3 minutes. 3. Then add the breadcrumbs and 1 tbsp of Parmesan. 4. Once the chicken has cooked. Place contents

of pan into a blender. Then pulse, making sure to maintain some texture. Don’t overdo the blending or you’ll end up with a ‘soup’. 5. Add the remaining Parmesan, plus 1 whisked egg and the double cream. Give the mixture another pulse in the blender. 6. Transfer to a bowl and allow to cool. This makes it easier when making the ravioli parcels. 7. Instead of stock you can use Marsala.

MARCH IN THE GARDEN

N OV E M B E R G A R D E N I N G N

ovember can be a month of damp, cold miserable. You may still have asters and nerines performing and the berries of skimmias, autumn foliage and decorative bark to keep you company on the bleakest days. Now is the time you really appreciate any evergreen foliage you have planted. This is probably one of the busiest months in the garden for maintenance but remember any work done this month will save you loads of time and effort come the spring. With the new seed catalogues out for next spring, now is a best time to sit down with a cup of tea and decide what you want to grow next year. Order it as soon as possible before their seed banks are depleted. If you have sown seedlings of hardy annuals protect them with some horticultural fleece in the hardest of frosts. Towards the end of the month winter prune deciduous trees and shrubs including fruit trees and bushes. Mulch around all fruit trees and shrubs that have been pruned. Planting: Any hardwood cuttings that you took last autumn should now be planted out into their permanent positions. November is the month to plant trees, protect newly planted trees and shrubs from harsh winds and severe weather.Whenever you plant or move shrubs, stake and water them well in, and put a good a layer of mulch around the base. Now and over the next couple of months is a good time to visit your garden centre to seek out those plants which look good through the winter. It’s still not too late to plant spring flowering bulbs. Vegetables: You can start harvesting celeriac by digging it up with a fork from now until the spring. Lift and divide rhubarb crowns. Early this month plant out garlic. If you’re into your veg now

DRC

is the time to lift and heel in winter leeks before the ground is frozen solid. If you have stored vegetables or fruit – keep an eye on them to prevent rot and disease spreading. Begin collecting vegetables that you have been growing through the summer such as parsnips and brussel sprouts. It is a good time to take hardwood cuttings of the following: redcurrants, whitecurrants, blackcurrants, gooseberries. Lawns: With this mild weather we have been having, your lawn may well still need one final cut. Once that’s out of the way, get your mower serviced, this saves a lot of screaming and shouting next spring when the blasted thing won’t start.Make sure you don’t walk on the lawn when there is a frost, all you will do is leave big brown foot prints were you have broken the brittle grass stalks. Maintenance: Give your glasshouse, benches, pots and tools a good clean with a disinfectant. Throw away old pots and any rubbish that is not needed. Now is the time to get those glasshouse heaters fired up to protect any tender plants and cuttings that you have. Insulate the inside of your greenhouse or insulate your cold frames and on really cold nights cover the cold frame with an extra layer. Just because the air is colder now that should not prevent you ventilating your greenhouse and coldframes on the sunnier days of the month. This will prevent stale air and the dreaded spread of damping off. Clear out bird boxes and put some food out for the birds such as nuts, seeds, fruit, and Irish brown bread. To prevent the garden hose from being damaged from the frosts - take in and store, but make sure you drain off any remaining water. Also protect outdoor taps by insulating them. Prevent leaves accumulating on the lawn. The lack of air circulation and sunlight will encourage moss.

Book Club The Racehorse who wouldn’t gallop

Rick Stein’s Long Weekends

by Clare Balding Charlie Bass is a horse-mad tenyear-old who dreams of owning her own pony. So when she accidentally manages to buy a racehorse, Charlie is thrilled. The horse she buys, Noble Warrior, looks the part: strong, fit and healthy. There’s just one problem - he won’t gallop. In fact, he won’t even leave his stable without his best friend, a naughty palomino pony called Percy. Charlie is convinced that Noble Warrior has what it takes to be a champion. But can she prove it? Derby Day is fast approaching and only a win can save the family farm from being repossessed. The stakes couldn’t be higher for the Basses. Can Charlie turn her chaotic family into a top training team? Can Noble Warrior overcome his nerves? Will Percy the pony ever stop farting? Find out in this classic, funny animal story, perfect for fans of Dick KingSmith and Gerald Durrell. Clare Balding’s first book, My Animals and Other Family, was a runaway number one bestseller and won the Autobiography of the Year at the 2012 Specsavers National Book Awards. Her subsequent book, Walking Home was also a Sunday Times Bestseller.

Rick Stein’s passion for using good-quality local produce and his talent for creating delicious flavour combinations in his books and restaurants have won him a host of awards, accolades and fans. As well as presenting a number of television series, he has published many best-selling cookery books, including French Odyssey, Coast to Coast, Far Eastern Odyssey, Rick Stein’s Spain and Rick Stein’s India. Rick has always believed in showcasing local seafood and farm produce in his four restaurants in Padstow, Cornwall, where he also has a seafood cookery school, food shops and a pub in the nearby village of St Merryn.
