Wi t h a l l t h e Vi c t o r i a n elements within the area, it only seemed correct to honour this history by re-introducing the railway station and tea gardens, as well as the avenues that reconnect the residential areas with the station and with t h e h i g h s t r e e t . Th e r e i s evidence to suggest that Wa l wo r t h h a s p r e v i o u s l y reinvented itself many times over whilst never quite being a success and

perhaps it is the lack of connections into central London that prevents it from seeming to be an attractive location. T h e n e w “ Tu r n i n g S o u t h London Orange” project r u n b y Tr a n s p o r t f o r London will create better connections between Wa l wo r t h interchange and central London, which will allow Wa l wo r t h to reinvent itself once again.

I Pa g e N 2 1 9 Journey’s with Tea

Te a g a r d e n s a n d t e a d r i n k i n g originated in China. It was discovered by a mythical sage ruler named Shennong in 2737 BCE when it is said that a few leaves fell i n t o h i s h o t c u p o f w a t e r. Although tea leaves can b e e a t e n r a w, t h e r e i s a particular way that they can be harvested and processed r e a d y f o r d r i n k i n g . L u Yu wrote a book called ‘Classic o f Te a ’ , w h i c h i n c l u d e s t e a rituals and advice on how to brew the perfect cup of tea. Te a l e a v e s c o m e f r o m o n e species of shrub o n l y, called ‘Camellia sinensis’, which has only two varieties -Camellia sinensis v a r. S i n e n s i s a n d C a m e l l i a s i n e n s i s v a r. A s s a m i c a . Th e Chinese version is variety Sinensis which, when left, will only grow 2 m h i g h . Th e r e i s a n I n d i a n v a r i e t y, h o w e v e r, A s s a m i c a

which, when left, will grow between 10-13m high. China is the biggest producer of tea today with India being a close second. Commercial tea plantations only exist today because of a Scottish traveller n a m e d R o b e r t B r u c e . Th i s individual had lived in China, knew the tea plant and found a similar shrub in India. One species of plant can produce five different types o f t e a ; b l a c k , g r e e n , y e l l o w, wh i t e a n d o o l o n g t e a . Fr o m these there can be variants made with different mixes of leaves, spices and fruits, including chai and Earl G r e y. Each type of tea can taste and look slightly different according to the type of soil, climate, altitude, rain, location or when the leaf is plucked (flushes) and then

Pa g e N o 2 2

how the leaf is processed (drying, oxidising). Examples of different types of tea according to its location include Darjeeling, Nilgiris, Assam and Sichuan.

When researching, it seems Masala Chai was a medicinal beverage and the recipe did not include tea leaves until around 1835 when British settlers began producing black tea from tea plantations in Assam India. Before 1835 Masala Chai was a mixture of herbs and spices, served hot or cold and which later evolved into the Masala Chai now served in India with Black tea, herbs, spices, sweetener and milk. Black tea leaves were too expensive for most Indians when it was processed in the o l d t r a d i t i o n a l “ o r t h o d o x ” w a y. W h e n t e a could be processed in a faster method called “ C T C - C u t / C r u s h - Te a r- C u r l ” , h o w e v e r, then the price of tea dropped to become an a f f o r d a b l e c o m m o d i t y.
