BUY FRESH. BUY LOCAL. About us Pure Catskills is a buy local campaign that promotes farm and food businesses in the Catskill Region. Our goal is to increase support of the local food system. This guide is created in collaboration with farmers and purveyors of fresh food across Delaware, Greene, Otsego, Schoharie, Sullivan and Ulster Counties. When farms thrive, our communities benefit in many ways. Why buy local food? IT TASTES BETTER. Food that is grown closer to home is fresher and tastes better. It is better for you. Fresher food has more nutritional value. It creates accountability. Farmers take responsibility for food that they sell directly to consumers who in turn know and trust the source of their food. It supports the local economy. Buying from local farmers ensures that rural farming communities survive. It protects the environment. Well-managed farms must maintain ecosystems that plants, animals and humans inhabit. It preserves the working landscape. The sustainability of farming prevents unwanted and excessive development. It is part of our culture. Losing our farmers would compromise an essential part of our cultural heritage. It is an investment in the future. This year, our agricultural imports exceeded the value of our exports. A safe food system supports local farmers so that we can feed ourselves for generations to come.

2 Pure Catskills 2010-2011 Guide to Farm Fresh Products

About our logo Developed from the 1940’s era label of the Walton-Hamden Cauliflower Grower’s Cooperative, the Pure Catskills logo is a celebration of our regional heritage. From the 1920s to 1940s, local cauliflower was shipped in huge quantities via rail and highway to ready metropolitan markets, making the Catskills synonymous with fine quality produce. The image of the logo exemplifies the long tradition of quality products from a working landscape here in the Catskill Region. For more information Visit us online at www.buypurecatskills.com and join our e-mail newsletter list, view extended member listings, find the latest calendar dates, news clippings, maps and to sign up for next year’s guide. Direct questions about Pure Catskills to Challey Comer by e-mail at ccomer@nycwatershed.org or by phone at (607) 865-7090, ext. 217. • Support for this project comes from Pure Catskills members and the Watershed Agricultural Council. • Pure Catskills is an economic initiative of the Watershed Agricultural Council. WAC is a not-for-profit organization whose mission is to support the economic viability of agriculture and forestry through the protection of water quality and the promotion of land conservation in the New York City watershed region. WAC is funded by the New York City Department of Environmental Protection, the U.S. Department of Agriculture and other public, foundation, and private sources.

Welcome to the 2010 – 2011 Pure Catskills Guide to Farm Fresh Products!

TABLE OF CONTENTS

W

e are excited to bring you this, the seventh edition, of our buy local guide. With nearly 200 farm and food businesses included, the Guide becomes a more comprehensive resource each year. It is an exciting time for local food in the Catskills. Communities across the region are starting community gardens, organizing farm-to-school collaborations, sustaining farmers’ markets and welcoming new farmers and food entrepreneurs to their villages. Each of these efforts strengthen the connections between our agricultural communities and our local economies. Pure Catskills is just one component of the work done through the Farm to Market Program at the Watershed Agricultural Council. Through this program, our organization works to support the economic viability of agriculture in the greater New York City Watershed region. We organize events and workshops for food-based businesses; build business connections between growers and buyers; and support the development of regional projects that benefit farmers. Similar opportunities are available for forestry businesses including a Pure Catskills branding campaign for forest products and business listings at www.catskillwoodnet.org. This year’s guide features the photographs of artist and designer Ulla Kjarval. Ulla’s family owns Spring Lake Farm in East Meredith where they raise pastured sheep and beef. The images featured are also posted at Ulla’s webpage, Goldilocks Finds Manhattan at www.goldilocksfindsmanhattan.blogspot. com. Visit her site for seasonal recipes, updates from the farm and—of course—great photos! Stay connected with Pure Catskills throughout the year by visiting our webpage at www.purecatskills.com or by following us on Facebook. Please contact me with any questions regarding Pure Catskills at (607) 865-7090 or ccomer@nycwatershed.org. Thank you for your interest in supporting local food in the Catskills!

In a time where restaurants have become generic and non-descript or complicated and confusing, The Lazy Beagle is a breath of fresh air. Designed and built by proprietor Sims Foster, the Lazy Beagle Pub and Grill came from the fundamental belief that every community needs its place to be fed. Itís a place to gather and enjoy food that nourishes in all ways; a place where you build community. When you walk in the door there is smile and a genuine hand shake or a slap on the back, welcoming you home. Great food provided by Chef Martin Ruef that is as likely to come from his fatherís garden as anywhere else, and a menu that makes you nod your head and smile. This is a place that is getting back to the basics and doing it with heart. www.lazybeaglepub.com
