The votes are in!

The Best of Lewis County contest is one of the most enjoyable annual projects that the staff at The Chronicle works on. Each year our readers participate by nominating and voting for a few regulars and each year there are a few new businesses that get added to the mix. This year we added a “nominate us” and a “vote for us” digital media kit for businesses who wanted to rally their customers to more fully participate. Almost 300 businesses used the media kits. Some businesses put out flyers to encourage votes and Rib Eye even had it on their reader board. Participation was as an all time high. Over 33,000 people looked at the website and more than 12,000 of you voted to determine the winners. We hope you had as much fun with this contest as we did. Wilted Spinach and Sheep Cheese Bruschetta Bread Ingredients: 2 baguettes, sliced into ½-inch slices or 1 country loaf, sliced into ½-inch slices ¾ cup olive oil 2 cloves garlic, split 8 ounces Black Sheep Creamery pecorino, grated ½ medium red onion, sliced into thin rings 1 handful baby spinach leaves 3 small roma tomatoes, thinly sliced 2 small red pickled peppers 10 kalamata olives 10 green olives ¼ cup fresh basil leaves, whole ¼ cup ricotta cheese Directions: Place oven rack 6 inches from the heat source in oven, and preheat broiler. Toast bread. Rub slices with garlic and brush a light coat of olive oil on top. Arrange slices on a baking sheet. Spread a layer of ricotta cheese on top of bread. Lay spinach on top of ricotta to taste.

Sprinkle grated pecorino on top of spinach. Top with your choice of combinations and sprinkle lightly with pecorino. I particularly enjoyed tomatoes and basil, kalamata and green olives, red onion and fresh basil, and green olives and tomatoes. Place under broiler until spinach wilts and cheese is melted. Remove from oven and sprinkle with salt and fresh ground black pepper to taste. The bruschetta comes out crisp, chewy and soft, all at the same time.

According to USA Today, About 83 percent of adults drink coffee in the U.S., the world’s biggest consumer of the beverage, up from 78 percent a year earlier, according to the National Coffee Association’s 2013 online survey. That’s an average of three cups a day per person, or 587 million cups. The only weak spot: volatile young drinkers, who last year drank less coffee.

Evidence suggests the same bacteria that can cause plaque and gum disease may lead to cardiovascular problems. According to information from Harvard Medical School, several species of bacteria that cause periodontitis have been found in the atherosclerotic plaque in arteries in the heart and elsewhere. Chef’s Night Out Raises Record Funds for United Way By Kyle Spurr kspurr@chronline.com The sixth annual United Way of Lewis County’s Chef’s Night Out on Saturday night had more chefs, more attendees and raised more money than in the previous five years. More than $50,000 was raised at the annual fundraiser at the Lucky Eagle Casino, doubling the average amount raised in the first few years. The money goes toward the United Way and local partner agencies. “It was very successful. We will be over and above what we were at in past years, over $50,000,” Angela French, resource development director for United Way of Lewis County, said. “That number could be a lot higher, but we don’t know yet.” The sold out crowd of 300 people at the Lucky Eagle Casino sampled dishes from eight local chefs. For the first time in the event’s history, two chefs tied for the honor of Top Chef. Darin Harris, owner of

Boccata Deli & Market in Centralia, and Dawn Lawson of Dawn’s Delectables in Centralia, both earned the exact same number of points from the judges to share the Top Chef title. Harris won the title outright last year. “It’s never happened before. It was a dead tie,” French said. “When you added everything together, Darin and Dawn came out exactly the same.” The chefs competed in three categories: People’s Choice, Judge’s Choice and Patron Support, where customers voted prior to the event. Harris won the judge’s choice and patron support categories. The chefs were judged on taste, presentation and creativity of their bite-sized cuisines. “Those chefs worked hard on making some excellent food,” French said. “They are really stepping up. It really opens your eyes to the culinary talent we have in this community that goes unnoticed sometimes.”

We asked winning photographer Alison Clinton to give us a few tips on what to wear and not wear for a session: 1. Something you are comfortable in! If you or your family is uncomfortable it will show in photos. 2. Think about your home and where you are going to hang your portraits. For example if you have all neutral/earth-tones in your house you might want to stay away from wearing bright hot pinks and neon blues, you want to wear something that will compliment your home when it’s on the wall. 3. Have fun mixing patterns/styles/colors. Just make sure you stay within the same tones so they work together instead of competing with each other. Tips on what NOT to wear: 1. Stay away from big logos or writing on your clothes. It’s distracting and more than likely 10 years from now the “brand” of shirt won’t be as popular =). The “Aeropostale” shirts now will be the “Bum Equipment” or “Guess Jeans” shirts 15 years from now =). Stay classic, something you won’t get bored of in the future. 2. Pay attention to sleeve lengths. You don’t want to be the only one in strapless or spaghetti straps when the rest of your family is wearing longs sleeves. All you’ll see is skin. 3. Make sure if you mix colors and styles there is still a connecting piece between family members. Whether it be a color or style of clothing. You don’t want your family portrait to look like everyone just chose their favorite shirt, or you won’t have the polished look that you’re after.

Simple Steps To a Clean Interior

After home and work, a car is where many people spend most of their time. As a result, a vehicle can easily become soiled, scratched or overrun with clutter. Maintaining the interior of your vehicle need not take much time or effort, but it should be done often enough to keep on top of the mess. Here’s how to start. REMOVE CLUTTER The first step in cleaning the interior is to remove the excess items that may have accumulated in the car. Busy families tend to leave toys, books or clothing in their vehicles. There also may be discarded food wrappers or beverage containers. People who commute also may accumulate a number of items in their cars, including business materials. These items

should be sorted through and put where they belong before tackling the rest of the cleaning work. VACUUM Much of the dirt and debris that accumulates in vehicles can easily be removed with a vacuum. A shop vac will have enough power to thoroughly clean upholstery and mats. If you do not have one, visit a self car wash. Remove the floor mats and set them on a flat surface. Thoroughly vacuum the mats to clear them of dust, dirt, food crumbs, and any other debris. Vacuum the floor of the car as well as any seat upholstery that may be a catch-all for crumbs. Using a soft-bristled vacuum attachment, you also can remove dust from the vents, speakers and the center console of your vehicle . SPOT CLEANING Spills and stains do occur in vehicles, just as they do elsewhere. Cleaning these stains may require a little elbow grease and a cleansing agent. Most automotive supply stores will sell an upholstery cleaner designed for car interiors. You also can use a mixture of laundry detergent and

WINDOWS Having clean windows is essential to driving safely. Cleaning the windshield and windows is relatively simple to do with a glass cleaner spray and a lint-free cloth. Use caution when cleaning the rear windshield if it has a defogger/defroster grid on the window. These wires can be damaged easily. Clean with the direction of the defroster grid lines.
