CORE: The Foundation of You

Vegetarian Course: Burgers and Tacos

The major muscles that move, support and stabilize your spine are called “the core.” A strong core should be the foundation of any exercise routine or program, and the foundation of you. Become stronger from the inside out during this dynamic session emphasizing the importance of core strength and stability. Join Matthew Noe, director of the Peggy & Philip B. Crosby Wellness Center at the Center for Health & Wellbeing, as he shares the best core exercises for those at all levels of fitness.

How can we enjoy those delicious flavors and textures that a juicy hamburger or taco can give us while eliminating or reducing our meat consumption? Join Chef Jenny Breen as she introduces creative, delicious and vegetable-focused recipes, big on flavor, high on nutrition, low on cost and time needed to prepare. Chef Breen will help you transform two meatbased dishes into vegetarian-friendly recipes that are packed with flavor. Featured recipes are Veggie Tacos with Chimichurri Sauce and Pickled Slaw, and Veggie Nut Burgers with Tomato Jam and Seasonal Condiments.

Short Story Writing with CFCArts

Cooking with Collette: Fall Harvest Soups and Salads

Get started on mastering the art of writing with Central Florida Community Arts Teaching Artist Chris Hicks. In this session for beginners, Hicks will teach you how to create short stories by using descriptive words that capture your audience’s imagination. Work with Hicks and your fellow writers to create an original, creative work to share with your peers. Tuesday, October 12, 1 PM

Tracing Our Spiritual Autobiography

Fresh apples, pumpkin spice and everything nice...It’s officially fall! Now’s the time to match your harvest hues with healthy, fall recipes you and your family can enjoy together. Join Chef Collette Haw of Nourish Coffee Bar + Kitchen at the Center for Health & Wellbeing to learn how to make two hearty soups to keep you warm and well-fed, and two salads bursting with flavors that will make your taste buds sing. Chef Collette will demonstrate Turkey and Three Bean Chili Soup, a Pumpkin Sausage Chowder Soup, a Fall Cobb Salad with Maple Dijon Dressing and a Pear and Pecan Salad with Pomegranate Vinaigrette. Wonder Women: Be a “SuperYou,” Not a Superhero

Are you asking the big questions in life, like “Who am I? What is my purpose and meaning? Why do I exist”? Asking these existential questions can be the first step to new growth, healing and maturity. In this workshop led by Licensed Mental Health Counselor Alison Issen, you will use different tools to explore the path you have followed in your spiritual life thus far, in order to find direction for your future journey. You will also learn about the current developmental theories of spiritual growth in adults. This workshop is trans-denominational; all faith and wisdom traditions are honored.

Even before the COVID-19 pandemic, women faced unrealistic expectations to do or be it all. This past year, however, has brought increasing pressures from blurred home-work boundaries, job losses, childcare and schooling challenges — creating all-time high stress levels. For today’s women, it’s not about being a superhero; it’s about being the best you can be and bringing energy and focus to the things you love most. In this session with Karen Smith Cochran, interim CEO of the UCF Foundation, you’ll learn how to prioritize wellbeing through mindfulness, self-compassion and inner strength.

Transitioning to a Plant-Focused Diet

Changing to a plant-based diet typically doesn’t happen overnight. Start by making small changes that over time lead your diet to become more plant focused. Join Dietitian and Culinary Medicine Specialist Allison Harrell for this “Digital Dinner Party” where she will demonstrate a variety of simple recipes that will support you in including more plant foods in your diet while using key kitchen and pantry ingredients. Harrell will demonstrate Italian “Sausage” Sauce with Mushrooms and Zoodles, a White Bean Dip, Vegan Parmesan Cheese and Crispy Seasoned Tofu. Thursday, October 21, 1 PM

Write Your Way to Wellbeing

A garden for wildlife doesn’t have to be a jungle of unkempt plant life. It can and should be a quiet refuge for you, birds and animals. Learn more about starting your own garden by joining horticulturalist and Fleet Farming Manager Caroline Chomanics for this program intended for Florida growers to learn the basics of ecological gardening.

What is the story of your life? Is it an empowering, uplifting one or could it use a “rewrite” to ensure you see challenges and experiences in a more healing, helpful and positive way? Through discussion and handson exercises, Licensed Mental Health Counselor Jill Hamilton Buss will show you how to “reframe” your experiences, rewriting your story for a happier, healthier next chapter.

Ghostly Greetings! Halloween is a real treat and it’s just around the corner. But it’s been a spooky year indeed with the pandemic throwing traditional Halloween activities into question. This Halloween don’t be a scaredy-cat — join Chef Collette Haw of Nourish Coffee Bar + Kitchen as she demonstrates how you and your family can make four Halloween-themed, flavorpacked healthy recipes that beat trick-or-treating doorto-door. Chef Collette will demonstrate how to make Pumpkin Donuts, Boo-Nana Ghost Pops, Goblin Potion and Mummy Flat Bread Pizzas. Stop in for a spell!

Take your home décor to the next level with fall florals when you join local floral expert Emily Bader as she demonstrates how to create four unique fall designs. You’ll learn how to use Bader’s designs to inspire your own creation and condition fresh flowers to add extra life to your arrangement. Bader will also share tools and techniques that make flower arranging easier, including where to purchase supplies in the greater Orlando area.
