FLORENCE - Protecting the Ohio casino market may be good for business, but according to Kentucky Racing Commission Vice Chairman Mark Simendinger, it’s bad for Kentucky racing. But, that’s what he believes JACK Entertainment, owner of Jack Casino in Cincinnati and the Florence horse racetrack, Turfway Park, is doing. “(JACK has) an interest in protecting their Ohio market and because they want to do that, maybe they’re holding Kentucky back,” Simendinger said. This concern was brought to light at a December meeting of the Kentucky Racing Commision in which Turfway Park announced another delay in its proposed $25 million renovation project. The project, announced last February, included a remodel of the grandstand, as well as new games and extended operations once the renovation was complete. Makeover plans also included a revamped entrance, modern restrooms, restaurant upgrades, as well as dedicating part of the second floor of the grandstand for historical racing games. Historical racing games are horse-race betting machines similar to slot machines that allow players to place bets on replays of horse races that have already been run. According to Turfway Park General Manager Chip Bach, there is a delay because engineers discovered structural issues with the 60-year-old property that will need to be addressed as part of any ongoing construction. “We are proceeding with the renovation and will work as quickly as we can to improve the aesthetics of the front and add 350 historical horse racing machines on the first floor,” Back said. This will be considered as the first phase. “We are still pursuing the larger scale construction, but JACK Entertainment wants to create a project where we get machines in as soon as possible to improve the guest experience, attract more guests and then from those profits invest in the longer term.” With the machines, the grandstand would get a new

coat of paint and new awnings. Bach said he expects, as long as all goes well, the minor renovations will be complete and the machines will be up and running by June 1. “We are meeting this week with the city and country for permits and hope to start actual work very soon,” Bach said. For Simendinger, a Northern Kentucky resident, this is unacceptable and just another delay. “We have heard a lot of different proposals over the last several years,” he said. “The approval of the machines was granted under the Beshear administration. The Beshear administration. So, you see how far these delays go back.” In that time, Simendinger said that Churchill Downs requested approval for historical gaming machines, the request was granted, and they designed, built and now have a facility up and running to house those machines. “They invested and were rewarded with good returns and its helped their racing program,” Simendinger said. “We need this for Turfway. With the delays, the real loser is the horse racing public, the people who make a living in this business. It’s bad for everybody - the horse owners the jockeys, those making the bets.” Senior Vice President of Regional Operations and General Manager of JACK Casino Chad Barnhill said the company is committed to Turfway. “We are actively working to finalize our plans to renovate Turfway Park and install historic horse racing machines,” he said in a statement. “The significant improvements will benefit our guests as they will have an exciting new amenity to enjoy as well as produce additional purses to support Kentucky’s storied horse racing industry.” According to Paulick Report, a North American independent thoroughbred racing website, other racing commissioners expressed frustration during the December meeting. Some even questioned whether the commission could or should revoke Turfway’s license for historical horse racing, or even its racing license, to send a message to JACK Entertainment. It's a little hard to find, but if you slow down and look for it on US 42 in Florence, you may see a flapping banner that says tacos (it's next to Mugbee's, if that helps). I suggest you stop and try out Miami Style Tacos. Another taco place? I know, there are a lot of tacos in town. But these are an interesting variation that I think you might really like. It's owned by Dave Rich, a retired executive at Toyota Boshoku, and his wife Annette. They encountered beach tacos they loved in Miami and thought they'd go over well here (their favorite place in Miami closed. Turns out it was a front for a drug operation). They're like Mexican street tacos, served in double corn tortillas, which are both warm and a little crisp, with great corn flavor. The fillings have a tropical theme, and not strictly traditional, but don't get too unusual. There's fresh pineapple salsa, lime-marinated meats. I should have gotten someone to go with me so I could try more than two varieties. But the two I had were very good. There was beef slowly cooked in cola, topped with lots of creamy jack cheese and pickled onions. The shrimp is marinated in lime, has corn salsa and is topped with baby greens. They're generously filled and are $4.50 each, which is, I'm afraid, standard for good tacos these days. Two was plenty. They came around with small samples of spicy pineapple, one of their desserts. It was delicious: sweet fresh fruit with a dusting of cayenne. I also tried the Miami-style chocolate pudding, which is spiced up with nutmeg and cinnamon, cayenne optional. It's an order-at-the-counter format, in a brightly decorated room with lots of turquoise. The guy who took my order was almost unnaturally cheerful and friendly to match.

Is it too early to start thinking about that super bowl party? Not if Tom Feie’s chili is on the menu. Tom, an Eastside resident, shared his recipe that won first place in a corporate chili contest three years running. Yes, the chili takes a bit of time to assemble, but once it starts cooking, re-
quires little attention. Serve some fire crackers on the side. They stoke up the heat quotient with red pepper flakes. A word of advice: do not leave fire crackers out uncovered. Why? Tom Feie’s triple award winning chili This is one recipe worth spending time on. Ingredients 11⁄2 pounds ground beef 2 tablespoons vegetable oil 3 pounds chuck roast, trimmed and cut into 1⁄2” cubes 2 oz. chili powder 1 tablespoon cumin powder 3 bay leaves 1 teaspoon kosher salt 1-2 teaspoons black pepper 1 teaspoon red pepper flakes ⁄2 teaspoon each: oregano, thyme and paprika

2 large onions, diced 2 ribs celery, diced

1 teaspoon beef bouillon
All I had were Ritz regular crackers. Yummy, even though they were a bit salty. Feel free to use salt free crackers. And you decide how much heat you want.
2 cans stewed tomatoes 24 oz. spicy V-8 juice 1 cup pepperoncini peppers, diced
Ingredients
4 oz. pepperoncini juice
48-60 crackers, either salt free saltines, regular saltines or Ritz round crackers

1 tablespoon Tabasco
⁄4 cup oil

⁄4 cup ketchup

1 pkg., 1 oz. dry ranch dressing salad mix 1-2 tablespoons crushed red pepper flakes (I used 1 tablespoon plus 1 teaspoon) Instructions Spray 2 cookie sheets. Preheat oven to 325. Whisk oil, salad mix and pepper flakes together. Either lay out the crackers in a single layer on the cookie sheets and brush with oil mixture on top of each, or place crackers in a large bowl, pour oil mixture over and mix gently to coat crackers on both sides. Then place in single layer on cookie

Instructions Brown ground beef in large pot, remove and drain. Add oil and brown chuck roast and remove roast. Add herbs and spices to oil and cook over low heat, 2-4 minutes.

Add remaining ingredients and bring to a low boil, reduce heat, cover and simmer 3 hours or until roast is tender.
Bake until coating is absorbed and crackers turn golden, about 5-6 minutes or so. Cool and store at room temperature.
Taste and stir while it cooks and adjust seasonings. Remove bay leaves. Yield: approximately 8 quarts

Many of us may be taking a closer look at our money and budgets with all that is happening in the world. Getting the most from our food dollars may mean changing a few habits and practices. It is possible to stay within a budget and prepare nutritious and appealing meals. However, to truly save money and provide your body with the many nutrients it needs, most of foods will have to be prepared at home with very few convenience items used. First, take a close look at what you spend on food during a week or month. Write down the amounts spent each time you purchase any type of food or beverage from a restaurant, convenience store, vending machine or grocery store. You might be surprised as just how much money you spend each week on food and beverages for yourself, your family, and others. As you work to save money on food, the following basic steps may help you through the process. Plan. At least weekly sit down with a calendar and write down what meals and foods you plan to eat in the coming days.
You will have to consider the times you’ll be away from home and the special occasions to celebrate. Planning will help you with your grocery shopping. Use a shopping list. Write out a shopping list based on your menu plan. Take inventory of what you have on hand, so you know what you will need to purchase. Also consider the specials at local stores when considering what to purchase. Buying store brands or generic brands will generally save you money. Coupons may or may not be a money saver depending on the item; carefully compare the cost of the item to its competitors. As a rule, purchasing food in its least processed form, i.e. a whole chicken instead of boneless skinless chicken breasts, is more economical. Larger cuts or meat or bulk foods may also save you money if you will use the items or properly store them until they are needed. Having a shopping list and planning your shopping trip can help you save money on gasoline by not having to make multiple trips to pick up forgotten or needed items. Additionally, fewer trips to the store mean fewer potential impulse purchases. Don’t forget that canned, frozen and dry foods often fit well into money, time and energy saving meals plans. Organize your kitchen and food preparation. Plan for leftovers when possible to save time in the kitchen and money on ener-

gy. The planned leftovers can be used to make other dishes a day or two later. An example would be cooking whole chicken one day and making chicken salad for the following day’s lunch. One cooking time, two meals, two different menu items. One dish meals are also great time and energy savers. Usually one dish meals have an abundance of cheaper grains and vegetables as their base with less of the more expensive meat ingredients. Don’t forget to include your family in the planning and preparation process. Food that is purchased and not eaten is a waste of money and resources. Saving money on food starts with by looking at what you are doing now and deciding to take some small steps toward a new and improved habit. HIGHLAND HEIGHTS, Ky. – Northern Kentucky University does not have a football team. Head men’s basketball coach John Brannen, who used to be an assistant at football heavyweight Alabama, is clearly a fan of the sport after bringing something that might be found in Nick Saban’s playbook to BB&T Arena Jan. 11. NKU went viral over the weekend after the Norse ran an unorthodox inbounds play with 11.8 seconds left in their eventual 68-64 win over Wright State. With the Norse leading by three, 6764, Dantez Walton was set to inbound the ball. The other four Norse players in action joined him on the baseline, spread out. Then, when Walton accepted the ball from the official, the other four ran upcourt like they were wide receivers, running routes of various lengths and shapes. Walton inbounded to Tyler Sharpe on the short route less than five yards away, but the Raiders were confused enough by the action that the Norse were able to

play keep-away, with Walton and Drew McDonald also handling the ball until Sharpe was fouled in the frontcourt with 2.8 to play. Sharpe made one of two foul shots to clinch the win, a sweet one for
the Norse, who lost both meetings with the Raiders last season. The play gained national attention over the weekend. Scott Van Pelt made that the focus of his nightly “Best Thing
I Saw Today” segment on ESPN SportsCenter. Major sports news sites reported on the play. CBS Sports did an interview with Brannen. “Dan Muller actually ran the play at Illinois State, so I have to give him credit,” Brannen, told CBS Sports. “I saw him run it, and I liked it because of the fact that it allowed us to get the ball inbounds, because you never see it. And secondly, it put us in position to put our two best foul shooters in position to probably be the first and second options on the play, which was the main thing because we were up three with 11 seconds to go.” NKU, 14-4 and 4-1 in the Horizon League, is in second place, half a game behind Detroit Mercy, who is 5-1 in league play (8-10) overall. NKU won at Detroit 95-73 Jan. 5. Oakland (8-11, 4-2), Green Bay (9-9, 3-2) and UIC (9-9, 3-2) are all one loss behind NKU and Detroit. Hamilton’s D’Marco Howard vs. Lakota East Hamilton is on a three-game winning streak thanks to three-straight 20-plus-point efforts from Howard. The senior’s latest big-time night came Jan. 11, when he came off the bench to score a team-high 21 points in the Big Blue’s 65-62 victory over Lakota East. Howard added six assists and five rebounds as Hamilton improved to 7-4 and Lakota East suffered its first conference loss of the season. 8. Silver Grove’s Spencer Macke vs. Calvary Christian Macke has been one of the most prolific scorers and rebounders in Kentucky this season and continued his stellar senior campaign Jan. 11. In a loss to Calvary Christian, the left-hander went for 28 points and 14 rebounds. So far this season, Macke, who has accepted a preferred walk-on spot at West Virginia, is averaging 30.5 points and 14.7 boards per game. 7. Boone County's Kayla Anderson vs. Ryle and Cooper Boone County went 1-1 this past week. BC suffered a 78-47 loss to Ryle Jan. 8 and defeated Cooper 66-62 Jan. 11. In the loss, senior Kayla Anderson scored 20 points (making six 3-pointers) and a team-high five rebounds. Three days later she scored 19 points and grabbed six boards in the win. 9. Mercy McAuley's Jenna Schoster vs. Seton and Turpin Mercy McAuley picked up a pair of convincing wins against Seton and Turpin this past week. Senior Jenna Schoster had two strong outings in the victories. Against Seton she scored 14 points and added five rebounds and three steals. Two days later against the Spartans she scored 11 points and added three more steals, along with two rebounds. 8. Roger Bacon's Lyric Harris vs. Badin Junior forward Lyric Harris scored 13 points and hauled in 11 rebounds as she helped lead Roger Bacon to a 52-43 win against Badin Jan. 9. Harris also added four assists and two steals, keeping the Spartans atop the GCL-Coed Central division with a 4-1 conference record. 7. Gamble Montessori’s Kaden Warner vs. SCPA and Riverview East The sophomore had two big-time performances for the first-place Gators last week. In a 100-56 win over SCPA Jan. 9, Warner had a triple-double with 32 points, 10 rebounds and 10 steals. He followed that with a 36-point performance in a 101-56 triumph over Riverview East Jan. 11. A Union fatal crash victim retired early in June, hoping to spend more time with her three children. Amy L. Skiba, a 45-year-old former school guidance counselor in the Boone County School District, was killed Wednesday, Jan. 9 when a pickup truck struck her vehicle head-on. She was driving her 12-year-old twins to school, said friend and former colleague Thomas Haddock. Her son, a junior in high school, drove himself that morning. "They were the love of her life," Haddock said. "She was so looking forward to being retired and the time she was going to be able to spend (with her children). ... That's what breaks my heart." Skiba was westbound on Richwood Road in Walton when Darrin Carroll, 42, of Union, was operating a 2003 Chevrolet flatbed truck in the opposite direction. When Carroll brought his pickup back to the roadway, it crossed the center line and struck Skiba's Honda Accord in a "head-on, side-swipe manner," the sheriff 's office said. Skiba's twins were rushed to a hospital but were released later that day, Haddock said. Carroll was initially transported to St. Elizabeth Hospital in Florence with non-life-threatening injuries. He was later transferred to the University of Cincinnati Medical Center. Skiba often shuttled her children to various school events. And she delivered lessons to students about bullying and conflict resolution and gifts to low-income families during the holidays, Haddock said. "She’d always go out of the way to do Thanksgiving meal packs, presents at Christmas time," Haddock said, adding that during the holiday season, her office would be brimming with donations, making it difficult to maneuver about inside. Skiba worked together with Haddock at Conner Middle School for a period during her approximately 20-year career in education. She also worked at Thornwilde Elementary, Haddock said. Her relationships with students were so strong that, Haddock recalled, he had to weigh whether students who asked to visit her "just wanted to go up to be around her or if they truly had a concern." Haddock had lunch with Skiba a few weeks back, and she'd talked about her early retirement, the extra time she now had with her children. "This is a huge void in our community," Haddock said. "You hear everybody say hug your little ones, tell people you love them. It's kind of a wake-up call."

One of the fastest growing U.S. ports is in Northern Kentucky and has an Amazon boost to thank for it, according to Forbes. According to Forbes contributor Ken Roberts, four of the fastest growing ports (which for Roberts are airports, seaports and border crossings) are in Texas and have oil to thank. But at Cincinnati/Northern Kentucky International Airport, Roberts said Amazon's comings and goings are helping the expansion. Northern Kentuckians already know part of the story. Bright blue semi-trailers emblazoned with "There's more to Prime. A truckload more," are now a staple of the commute. We all know Amazon has selected Northern Kentucky's airport for a hub that could bring 3,000 jobs. For Roberts, the story of CVG "is not one of boom and bust all too familiar to those Texas ports. It is one of just boom, pure and simple." "The story can be told by talking about avionics and aviation and about pharma and medical devices, but it can be told, increasingly, by talking about Amazon and its brown smiling boxes," Roberts said. At CVG, Passenger and cargo numbers are rising, flight costs are down and low-cost carriers like Allegiant and Frontier keep adding flights. In October, CVG's CEO Candace McGraw highlighted those changes. "CVG is experiencing a lot of positive change, including growing our passenger traffic by more than 31 percent over the last two years," McGraw said. “Also, cargo tonnage has grown more than 50 percent over the last two years and we’re now the eighth largest cargo airport in North America." 2017 was also a success story for the airport, for the first time in its history,
CVG officials said it experienced annual cargo tonnage of more than 1 million tons, which is about 2 billion pounds. It was a 27 percent year-over-year increase, nearly four times the North American average of 7 percent, according to airport officials. The Amazon hub is still under construction and in 2017 when the deal was announced, Amazon said it would build several facilities on nearly 920 acres of CVG land, including a 3 million-square-foot sorting facility and a 350,000-square-foot loading dock. It also plans to build enough ramp space to house 100 cargo jets, more than what DHL has. Amazon already has a sorting facility near CVG, but airport officials weren't certain whether work there will complement efforts on the airport grounds. "Over the last five full years, the Cincinnati airport's growth is 44.42 percent, while U.S. trade was up a paltry 1.75 percent. Only Boston's Logan International (pharma) and Seattle-Tacoma International Airport (avionics and aviation) have grown more rapidly among the top 50 in that time," Roberts said. According to Roberts, the trade impacts could continue to show. "The Amazon effect, an effect that will likely increase as it prepared to open its hub -- it is currently leasing space from DHL -- is easier to see with a few more data points: While overall trade at the airport was up 28.34 percent in 2018, imports from China more than doubled in value," Roberts said. Roberts said China accounted for 11 percent of all Cincinnati trade in 2017 but accounted for 14 percent through the first 10 months of 2018. At CVG, China ranks No. 1, accounting for more than 25 percent of the cargo tonnage flying into the airfield. "In Boone County, they have a good story to tell. And it's not over yet," Roberts said.

A new “travel-inspired” beer is the result of a collaboration between Cincinnati/Northern Kentucky International Airport and Christian Moerlein Brewing Co. The new brew, JET CVG, made its debut following a Dec. 15 tapping celebration at Christian Moerlein Taproom. “We’re excited to be one of the first airports to collaborate with a local brewery to produce a travel-inspired beer,” Candace McGraw, CVG CEO, said in a statement. “With the upcoming Christian Moerlein Malt House Taproom opening at CVG, we wanted to pay homage to our community in a way both locals and visitors would enjoy.” JET CVG, a German-style Schwarzbier, is jet black in color with an aroma and flavor of roasted malts with a hint
of coffee and tobacco. The new brew pays tribute to Cincinnati’s German brewing legacy featuring Old World Pilsner, Munich, Caramunich II, Carafa III, and chocolate malts as well as German Hersbrucker hops, CVG and Christian Moerlein officials said in a statement. “The collaboration between Christian Moerlein and the CVG teams in developing JET CVG Schwarzbier was something unique you don’t get a chance to do every day,” Greg Hardman, president and CEO of Christian Moerlein Brewing Co., said in a statement. FRANKFORT - The Public Service Commission is asking for feedback on two proposed utility rate increases in Northern Kentucky. A public meeting will be held Jan. 24 at Dixie Heights High School in Edgewood to provide information and gather feedback on both proposals. One is a request from Duke Energy Kentucky to increase its rates for deliv-
ery of natural gas. The other is a request by the Northern Kentucky Water District for a general rate increase. Duke Kentucky’s request would add about $5.78 to the typical residential customer’s average monthly bill, according to the company’s application. The water district is asking to increase residential rates by 11 percent over two years, which would total about $3.84 per month for a typical residential customer. Formal hearings in the cases are scheduled in February in Frankfort.
