FRANKFORT, Ky. – Harlen Wheatley may be best known in Northern Kentucky for playing linebacker on the Boone County High School football team that made it to the state title game in the late 1980s. But elsewhere around the world, Wheatley is recognized as one of the driving forces behind the resurgence and explosion of Kentucky’s bourbon industry in his role as master distiller for Buffalo Trace Distillery. “I have lots of good memories of
growing up there and going to Boone County,” said Wheatley, who was brought up in Union and got a degree from Northern Kentucky University before joining what would become Buffalo Trace as a supervisor in 1995. “Football was a big passion of mine.” Now, Wheatley oversees production for the privately-owned facility, which is one of America’s oldest and longest running distillery, dating back to the late 1700s. He is credited with not only helping craft the recipe that became the company’s flagship product but is also instilling several other innovations. That in-
cludes overseeing the explosion of the craft bourbon scene and production of some of the industry’s most famous brands including Blanton’s and Pappy Van Winkle. “Back when I lived there and was in school, there were different styles of bourbon but nothing like it is today,” he said. “You basically had 4-5 choices ... and the thinking was no one would pay $25 for a bottle of bourbon. There were only 6-7 distilleries in the first place making bourbon. “Now look where we are today with 1,400 nationally. It’s an entirely different landscape.”
Flipdaddy’s seeks bankruptcy help Chris Mayhew Cincinnati Enquirer USA TODAY NETWORK
Flipdaddy’s, a Cincinnati area craft beer and burger chain, has filed for Chapter 11 bankruptcy protection in federal court. Industry almost didn’t get its man And to think it almost didn’t happen, at least for Wheatley. Wheatley says after he graduated from high school, he considered a career with Eastman Kodak as a chemist, following in his uncle’s footsteps. But after a few years studying at NKU, Wheatley realized he didn’t want to spend that much time in a lab. So he finished his chemistry degree at NKU and got a chemical engineering degree from the University of Kentucky. See BOURBON, Page 6A

Bourbon
said Wellmann, one of the area’s foremost liquor historians.
Continued from Page 1A
Role of distiller expands
He says Kodak, then the world’s largest camera film manufacturer, hired “a couple thousand” engineers nationally the year he graduated from college. Four years later, they laid off 4,000 people. “I did make that comment back then that boy, that could have been me,” Wheatley said. By that point, Wheatley had been recruited by what was then known as the George T. Stagg Distillery, which was about to transform not just itself but help take the bourbon industry to another level. “When I was hired, that was the plan - for me to apprentice and eventually take over,” said Wheatley, now 49. “I never knew it would take me here.” Wheatley says the distillers came to him after asking UK officials for possible candidates, he was still working for the water treatment company that hired him as a college student. By that point, he had fallen in love with the history of the state’s bourbon industry and all that he had learned during his time in Lexington.
In his role, Wheatley oversees the actual making of the bourbons for the distillery. He is a member of a “leadership team” that includes someone from marketing, bottling/distribution, and the maintenance/ grounds/tourism department – they all report up to Buffalo Trace’s owners at the Louisville-based Sazerac Co, which also makes Fireball Whiskey. And unlike the old days, where a distillery might put out one or two kinds of bourbon, Wheatley is busy overseeing the distilling of more than 18 brands from the Frankfort site. All are based on yeast that dates back to the 1930s. That includes the brand that helped start the current craze, which was a non-starter at other distillers. Elmer T. Lee had tried in vain to pitch a concept of a “single-barrel” high-end bourbon to several distillers in Kentucky in the 1980s. It was only the Stagg company that took a chance. That idea became Blanton’s, which launched in 1984 as the world’s first single-barrel bourbon, which means that what comes out of the distinctive bottle with the bronze horse stopper was aged from a single source and wasn’t mixed with bourbon from other barrels. Wheatley says it took a while for the concept to catch on, however. The company even agreed to make a special blend of Blanton’s for Japanese customers – because the Asian market initially was the only one to embrace high-end bourbon. Now, all the major distilleries have multiple higherend offerings.

Harlen Wheatley is the master distiller at Buffalo Trace in Frankfort, Kentucky. ALBERT CESARE/ THE ENQUIRER
“There was a lot you didn’t hear about growing up in Northern Kentucky – brands we didn’t get,” Wheatley said. Within a few years, Stagg had been transformed into Buffalo Trace Distillery in the heart of Frankfort, launching its flagship product that helped put Wheatley on the map.
Local product made good Wheatley was brought up in Union, where his mother still lives. His brother lives in nearby Walton. His fondest memories are playing for legendary Boone County coach Owen Hauck as well as visiting the bars along the Ohio River “once I was of legal drinking age, of course,” Wheatley said. He also recalls one of his first experiences that touched an engineering nerve when he made an operational crossbow in shop class at Ockerman Middle School. “First of all, can you imagine that now?” Wheatley said. “And secondly, it’s too bad that they don’t even teach shop much anymore.” Locals within the alcohol industry view him with reverence, even as they don’t quite understand why the area hasn’t embraced its native son. “He is such a quiet guy, but he is a genius when it comes to making good product,” said Molly Wellmann, a well-known Cincinnati area mixologist and owner of Molly’s Brands “What’s funny is that there is a lot of connection between Cincinnati and Northern Kentucky and the bourbon industry through the years that not a lot of people know about. “Heck, even Pappy Van Winkle lived in Northern Kentucky for a while and sold Weller bourbon up here,”
Next steps for the distillery Just as he was in on the ground floor of the first major rebranding, Wheatley is onboard as Buffalo Trace embarks on another $1.6 billion expansion. He says given that it’s hard to predict what people will be drinking or what trends will be in place in 20 to 30 years, it is a huge gamble.“Every drop of whiskey that we have aging is sold already, and we just don’t see the demand for our product diminishing,” Wheatley said. Buffalo Trace launched a new line of vodka called Wheatley, named after its master distiller. He also oversaw the opening of Warehouse X, a section of the campus where experimental whiskeys are made. “This place has been here 180 years and is not going anywhere,” Wheatley said. “And neither am I.”

I have been waiting to share this special recipe Giant cinnamon roll The recipe called for bread flour. All I had was all-purpose, so I just used a little more. That substitution may not work in all recipes, but it worked fine in this one.
Butter or spray pan. Roll dough out on very lightly floured surface to a 9x12” rectangle, about 1/4” thick.
If you like, right after you frost it, sprinkle with chopped toasted pecans.
Spread dough with butter, then sprinkle with brown sugar and cinnamon, patting the mixture in as you go.
Ingredients for roll
Cut into six 11⁄2” x 12” strips.
1 round cake pan, 9”
Loosely roll up 1 strip and place in center of pan.
1 package active dry yeast, (0.25 oz.) 3
⁄4 cup warm water (110-115 degrees)
⁄4 cup granulated sugar + pinch for feeding yeast
1
⁄2 teaspoon salt
1
1 large egg, room temperature 3 cups all-purpose flour or 21⁄2 cups bread flour ⁄4 cup butter, softened
1
⁄2 cup packed brown sugar
1
Add rest of strips, loosely coiling them around the center spiral of dough. Cover and let rise until doubled, about 40 minutes. Preheat oven to 325. Bake 25-35 minutes or until top is golden and dough in center is set, not gummy. A toothpick inserted in center will come out clean. (mine took 25 minutes). Let cool 10 minutes then frost with cream cheese frosting.
1 tablespoon cinnamon
Frosting
Instead of individual rolls you get a super-sized spiraled cinnamon roll.
Instructions
RITA HEIKENFELD FOR THE COMMUNITY PRESS
Dissolve yeast in warm water, adding a pinch of sugar to speed up the proofing process. Give it a stir. Let stand until foamy, around 5 minutes or so.
Beat 3 oz. cream cheese, softened, 2 tablespoons butter, softened, 1 cup confectioners’ sugar, 1-3 tablespoons milk and a dash of vanilla. Or make a simple glaze with 1 cup sugar, 1 tablespoon or bit more of water, and 1/2 teaspoon vanilla.
Rita’s Kitchen
Place in mixing bowl and mix in granulated sugar and salt.
Rita Heikenfeld
I could hardly wait to share this giant cinnamon roll recipe with you. The recipe intrigued me – instead of individual rolls you get a super-sized spiraled cinnamon roll, pretty and easy to serve. Check out my site abouteating.com for a photo tutorial. Now don’t forget about the true meaning of Christmas and this holiday season - it’s about family and friends getting together. Remember, it’s not just about the food, but who shares it with you. Rita Nader Heikenfeld is an herbalist, educator and author. Find her blog online at Abouteating.com . Email her at rita@communitypress.com with “Rita’s kitchen” in the subject line.
Add egg and 1 cup flour and mix well to combine. Mixture will be real sticky. Continue adding flour until nice dough forms. It may or may not leave the sides of the bowl. That’s OK. Turn out onto a very lightly floured board and knead a few minutes. It will be as smooth as a baby’s bottom. Cover with damp cloth and let rest 10 minutes.
Serves 8-12. Tips: Substituting rapid rise yeast. Yes, you can. This will speed up the rising process a bit. Freeze it. Cool, then wrap well and freeze, unfrosted, for up to 3 weeks. Wrap in foil to rewarm and then frost it.

Viewpoints Cranberries and the many ways you can use them Extension Notes Diane Mason Community Recorder
It is the time of year when cranberries show up in our meal plans. Cranberry sauce at a holiday function is often a tradition. And, on a sandwich with leftover turkey or ham it is a delight. Cranberries are native to North America. They were originally called crane berries because of the shape of their flower. It is thought that cranberry was a condensed version of crane berry. Cranberries were also once known as bounce berries because they bounce when dropped. Harvesting of cranberries
begins in October and the berries usually appear on grocery shelves from late October through the end of the year. Cranberries, by themselves, are quite tart. They are a good source of vitamin C and fiber. One cup of fresh berries provides about 47 calories and four grams of dietary fiber. They also are a good source of several phytochemicals and nutrients that help keep our bodies healthy and help decrease our risk of some diseases. Cranberries are usually packed in a bag. Choose bags that hold fresh, plump, bright berries. Avoid those that are soft or starting to turn brown. Fresh cranberries will keep in the refrigerator for two or more weeks. For longer storage
Loss and grief during the holidays Extending Knowledge Kathy R. Byrnes Community Recorder
Many people who have lost a loved one experience more intense feelings of grief during the holidays. Since you’re used to associating the holidays with good times and your special person, you’ll likely miss them even more at this time of year. You will likely still enjoy certain aspects of the holiday season, especially if you’re able to spend time with other family members and friends. It is helpful, however, to be prepared, stay flexible, and trust your ability to handle whatever situations arise. Handling the Holiday Season ❚ Allow yourself some time to feel sad or have a good cry. ❚ Be careful with excessive use of alcohol or medications. ❚ Try to keep on a routine. Eat as well as you can, get your rest, and maintain your exercise program. ❚ If you need some quiet time, take it. ❚ Some people feel that a change of pace is more helpful than old traditions. Do you want to do something different, such as spend the holiday at the beach or in the mountains where you won’t be so acutely reminded of your loved one’s absence? Even a “day trip” can help. ❚ Set priorities. Grief is exhausting; know that you may tire quickly and save your energy for the most important things. ❚ If you aren’t up to a large family affair, have a scaled-down event with a few close family members
or friends. ❚ Delegate. Let others share the workload by helping with decorations and preparing food. ❚ Be prepared to receive correspondence from friends who have not heard of the death and may inquire about your loved one. ❚ If you are by yourself, you may want to consider spending the day volunteering. The good feeling that comes with giving of yourself can be healing. ❚ Light a special candle to honor your loved one. ❚ Special prayers can be said in memory of your loved one. ❚ Look for a lecture or workshop on how to get through the holidays. ❚ Know that the anticipation of a holiday or family event often may be more difficult than the actual day. Allow yourself to enjoy the day if that’s truly how you feel. ❚ Give yourself something to look forward to after the holiday. ❚ At dinner, make a toast to the person who has died and invite others to do the same. ❚ This might be the time to share some personal belongings of your loved one with family and friends. Make sure people know you are going to do this ahead of time so there won’t be an awkward silence. ❚ Bring photos of your loved one to the event and encourage family members and friends to tell stories or share memories. ❚ Take care of yourself. I wish the happiest of holidays to all. Kathy R. Byrnes is a Family and Consumer Sciences agent at Kenton County Cooperative Extension Service.
they may be frozen. Wash the berries with cool water and lay them to drain on towels. When well drained, place them in a freezer safe container that is labeled and dated. Store the berries in the freezer. It is best to use them within nine months to a year. Cranberries can be found throughout the grocery store. They come fresh in the produce section, as a relish in the deli section, in the canned aisle as cranberry sauce or whole cranberry sauce and in the dried fruit section. Cranberry juice can also be found, although it is rarely 100 percent cranberry juice due to the tartness. Each product can be used in several ways. Except for the canned cranberry sauce and whole cranberry sauce, most forms
are not interchangeable. Cranberries have been shown to have many health benefits. Look for new and creative ways to add them to your eating plan. Cranberry Orange Delight Serves 9 1 tube orange rolls (in the refrigerated section). 1 1/2 cups cranberry relish from the deli section. Preheat the oven to the temperature listed on the tube of rolls. Lightly spray a 9” baking pan with cooking spray. Spread cranberry relish in the bottom of the pan. Unroll the tube of orange rolls and separate them. Place the rolls on top of the relish. Bake according to the directions on the package.
Remove from the oven, invert the pan onto a serving plate. Allow to cool slightly then ice the rolls with the orange glaze from the tube of rolls. Serve warm. Allen Feldhaus earned 11 sports letters while at BCHS Allen Feldhaus was one of the finest athletes to ever play at Boone County High School (BCHS). He graduated from the Florence school in 1958, just three years after the consolidated school opened its doors for the first time. He earned 11 letters for the “Rebels” four in basketball, three each in football and baseball and one in track. In basketball he was a member of the school’s 1,000-point club. Feldhaus as a senior, was selected to the NKAC Feldhaus and All State teams in both football and basketball. He was also selected to play in the Kentucky East West All Stars series. Allen’s athletic abilities enabled him to earn a scholarship to the University of Kentucky where he earned six letters in basketball and baseball for the Wildcats. He played forward in basketball and was a catcher in baseball. He played basketball for Adolph Rupp from 1958 to 1962. Allen played baseball in the Washington Senators professional baseball organization from 1962 to 1965. He then returned to Kentucky and began a long 27-year head basketball coaching career that began in Russell County and then saw great success at Mason County High School in Maysville where he served as baseball basketball coach and athletic director. He guided his team to the 1981 State Championship game where they lost to Simon Kenton 70-63 when the Pioneers became the first Ninth Region team (the other Corinth in 1930) to win the KHSAA State Basketball Title. He was named Kentucky “Coach of the Year in 1982. In later years he followed his passion for golfing, he ran the Kenton Station golf course with his son Deron Feldhaus. Deron, was one of the four “unforgettables” on the 1991-92 University of Kentucky men’s basketball team. His son Allen Jr. has been coach at Madison Central High School the last 10 years and has twice been named Kentucky “Coach of the Year.” His third son Willie was recently head coach at Louisville Male High School. Feldhaus was always known for getting a lot out of his players and well respected throughout the state of Kentucky. Feldhaus won 158 games at Russell County before taking the Mason CounSee FELDHAUS, Page 2B

YOUR HEALTH with Dr. Owens
This holiday, invest in building strong relationships This is the time of year when we want to show our friends and family how much we care about them. As you make your to-do list and look at your budget, consider the gift of your time.
O’dell M. Owens, MD, MPH President & CEO
One way to build strong relationships with children and adults is to show that we enjoy being with them. Set aside time for activities to do together, whether it’s sharing a meal or going to a holiday-themed event. Acknowledge people by name for who they are, not just what they do. The Search Institute, a nonprofit organization that studies and works to strengthen youth, outlines some ways we can build relationships. While focused on youth, many of these tips could apply to people of any age. • Express care: Show youth that you enjoy being with them. • Challenge growth: Help your children to see possibilities for their own futures.

Chevy, 16, took first prize overall, second in cattle, third in swine, fifth in sheep and tied for fifth in reasons. She has been a member of Boone County 4-H for eight years and a member of the livestock judging team for three. Raised on a cattle farm, Chevy credits her father, Bill Vaske, for her passion for judging livestock, especially cattle. That drive has helped her make connections with like-minded teens that she may never have had the opportunity to meet had it not been for her involvement in 4-H Livestock Judging. “Meeting people from across the United States who share a passion for the livestock industry is my favorite thing,” she said. “It’s always neat to talk with people who may do things differently than myself or my fellow teammates.” Chevy said livestock judging has improved her public speaking, taught her the importance of be-

Amanda Bodenbender, a fourth-grade teacher at Florence Elementary, participated in the Florence Walk-a-thon with her class and she participated in the walk-a-thon as a student when she attended Florence Elementary as a child. PROVIDED/KATHY KUHN, FLORENCE ELEMENTARY
Leader in Me Walk-a-thon held by Florence Elementary “Great Happens Here,” Leader in Me Walk-a-thon took place at Florence Elementary. The school walked in waves by grade level, walking the surrounding neighborhood for 1.2 miles. The school’s SRO, Officer Gilpin, along with the principal and assistant principals cheered on the student body. Cory Franklin, one of our assistant principals, drove his truck which held the Florence mascot, The Metal Knight, to lead the walk-a-thon. The Florence Police and our community friends assisted by blocking the connecting roads for our safety. Along the way PTO and volunteers encouraged the students and held up one of the eight habit posters. Each
poster stated the goal, be responsible for you, know what you want… before you do it, work first… then play, you win… I win… We all win, first listen… then speak, play well with others, take care of yourself, and discover your talents. Back at school the students received a snack and a drink. The school raised about $4,500 dollars. The students will reap the rewards by being able to participant in Hat Day and Pajama Day. Some received homework passes, custom FES water bottle, custom T-shirt, and were entered in a drawing for a brand-new tablet based on their contribution. The grand prize for the top sponsor was a XBOX1. Kathy Kuhn, Florence Elementary
