ALEXANDRIA – Susan Pederson wrapped a quilt she made around Korean War veteran Sam Ruschell’s shoulders and hugged him tightly. Then, the Independence resident planted a kiss on her uncle’s cheek. “This is from me to you,” Pederson whispered to the U.S Navy veteran. The Cold Spring veteran was one of five veterans thanked by Northern Kentucky’s new Quilts of Valor chapter with a personalized quilt Aug. 31 in Alexandria. Quilts of Valor is a national effort (www.qovf.org) to offer a warm reminder to veterans that people care about them, member Sue Neltner of Alexandria said. The Alexandria councilwoman organized her quilting group’s first thank you to veterans at Campbell County Veterans of Foreign Wars Post 3205 on U.S. 27. Ruschell served aboard ships including the U.S.S. Coral Sea aircraft carrier afloat in the frigid waters near North Korea. His job was anti-submarine warfare. The 88-year-old said he was amazed by his niece’s kindness and the quilt honoring his service. “It’s unbelievable,” Ruschell said. “It’s going to go right onto my bed.” Pederson wishes she could have given a quilt to her father prior to his death for serving in World War II and the Korean War. Quilters also honored brothers Donald Stein and Robert Stein of Southgate. Both brothers served in the U.S. Army Air Corps, a predecessor to the U.S. Air Force. Robert Stein earned six Bronze Stars as a member of a bomb squadron who flew missions across

Europe during World War II. Robert Stein’s service record included flying missions as part of the invasion of Nazi-occupied Normandy, France. Army veterans Vince Lauer, of Florence, and Pete Neltner, of Alexandria, were also honored with quilts. Vietnam War Marine Corps veteran Ron Jones, of Alexandria, shed tears when he spoke about the need to recognize more veterans during the quilt-giving ceremony. The Campbell County VFW Post 3205 commander was based in Saigon for his first yearlong tour of duty. He spent another year protecting Da Nang Air Base from attacks. “I don’t think a lot of people know what freedom really means,” Jones said.

John Eubank, 47, spends most of his time sitting in his mother’s family room alone. A brutal attack last winter left John, a “passionate” former teacher, paralyzed on the right side. He is barely able to form a single word. “But he is able to ask, ‘Where are they?’” his mother, Judith Eubank, 70, said. He’s speaking of his many, many friends, according to Judith. “He really needs companionship,” Judith said. “I wish more of his friends Eubank would visit and visit often. So many make promises but don’t follow through and that’s hard. He needs to see them. It keeps him going.” Judith said her son made friends with ease and was able to keep the relationships going for many years. “He was just that way,” she said. John also dedicated most of his life to educating others. “He was a great teacher and loved by his students,” Judith said. Judith was always proud of John and his dedication to educating others. He graduated from Dixie Heights High School in 1988 and attended Northern Kentucky University, earning degrees in communications and English. He served as a substitute teacher at Kenton County Schools until about two and a half years ago when he decided to go to Ponce, Puerto Rico, to teach English to 12th-grade students. “He was so excited,” Judith recalls, as John left for Puerto Rico around fall 2014. He had his own apartment and was making friends.

NKY Bucket Brigade set to visit state No. 50 Melissa Reinert mreinert@enquirer.com

Sand tickles Virgil Malone’s feet as the sun pushes through the clouds bringing forth a glorious awakening on a quiet shore in Hawaii. The sparkles reflecting off the water sting his eyes. He can’t look away. Malone, a member of

the “Bucket Brigade” has seen a lot. “We’ve walked across the Golden Gate Bridge and back. We’ve taken a helicopter ride down through the Grand Canyon. At Acadia National Park, we stood in the spot where sunlight first hits the U.S.,” said Malone, who works at The Enquirer.

The Bucket Brigade consists of Malone, 55, his wife Debbie Maggard, 57, of Independence, and their friends Dave Hudgens, 67, and Shirley Hudgens, 65, of Edgewood. About two years ago, after traveling to Alaska and Hawaii, the couples decided to create a oneitem bucket list. Their goal? Visit all 50 states.

The Hudgens had 17 to go, Malone and Maggard, 18. The couples traveled together and separate, but will travel with each other to their 50th state, Oregon, in September. Malone said they will have a T-shirts and a banner made to display while they get their picture in front of the “Welcome to Oregon” sign.

apartment,” Judith said. “It’s a mother thing I guess, but I knew something was wrong.” The principal had to get a court order to get into the apartment. When he did, he found John in a pool of blood, barely breathing. “He had a half-an-inch crater in his skull,” Judith said. “There was a lot of pressure on his brain. They didn’t think he’d make it.” Judith made plans to fly to Puerto Rico accompanied by her eldest son, Robert. “It was hard seeing John that first time,” she said. “It was shocking.” The love and support of those in Puerto Rico who knew John helped Judith and the family through the early stages of this tragedy. “The Puerto Rican people were so very nice and loving,” she said. “The men who did this to John are not like the typical Puerto Rican people.” Judith said the police worked diligently on John’s case, but his attackers have yet to be found. Eventually, John was released from the hospital

Best of all, Judith said, he was helping others. All that came to an end last winter when John was attacked in his apartment. He was robbed, severely beaten with a baseball bat, stabbed multiple times and left to die. No one knew until two days later when John didn’t show up to teach. The principal at his school knew immediately something was wrong. It wasn’t like John to miss a day of work. The principal called John’s mom who lives in the U.S. in unincorporated Kenton County. “I told him to go to his

and with the help of American Airlines, was able to come back home to the U.S. Since then, he’s spent time at the University of Cincinnati Medical Center and Daniel Drake Center for Post-Acute Care – UC Health where he continues physical therapy. John uses a wheelchair and has suffered many other mental and physical impairments. Doctors won’t know the full extent of his injuries until a full year has passed. “He’s lost everything,” Judith said. “He’s lost his ability to teach, his independence. Everything, but his family.” Without work, John has no benefits other than Medicaid. Judith is doing the best she can for her son, but it’s difficult because her home isn’t handicap accessible. Others, however, are stepping up to the plate to change that. One of his friends started a GoFundMe account, Help John at http://bit.ly/JohnEubank. The goal is to raise $6,000 to install a handicap accessible shower on the first floor of Judith’s home. Currently, John has been taking sponge baths in the driveway. Winter is quickly approaching, however, and Judith said they are still waiting for John’s disability to be approved. In just a month, 96 contributors to the GoFundMe account have raised $5,030. Encouraged by the response, Judith said she hopes others

will help John, who “dedicated his life to helping so many children in Kentucky and Puerto Rico.” Besides the GoFundMe effort, another friend of John’s, Shawn Carter, organized a fundraising event. Jammin for John – An Open Mic Benefit for John Eubank was held Oct. 13, at Hebron Lutheran Church. Although Carter lives in North Carolina, he and John have remained friends. “I’ve known John since middle school,” the Villa Hills native said. “We really became friends our freshman year at Dixie Heights High School where we both were in the band. He played the clarinet, I played drums.” Carter said John is “a very strong and independent person.” “John always marched to the beat of his own drum,” he said. “He has a very generous heart too. Hearing about this has been heartbreaking.” Carter is traveling to Northern Kentucky this week for the event and plans to visit with John. According to Judith, that’s just what John really needs, visits. “We welcome everyone,” she said. The support of friends and prayer pushes both John and Judith forward. “I’m convinced that’s what works,” she said. “We believe in a higher power – God. John would have died that night if it wasn’t for God. And He’s got him here for a reason.”

Throw those ripe apples in the slow cooker When our boys were young we planted 60 apple trees on our land. We had visions of selling bushels of Red Delicious, Jonathan, Lodi, Winesap and Yellow Delicious apples. What we wound up with were bushels of apples that tasted amazing and were healthy to boot. The kids helped pick, wash and polish apples. The only problem? They didn’t look like store bought, so we made cider from most of the apples and sold that. Rita Today those apples Heikenfeld would be considered gourmet, authentic RITA’S KITCHEN fruit. And would probably go for a nice price. If you’ve never made homemade applesauce and apple butter in the slow cooker, make it now that apples are in season. “Eat an apple a day to keep the doctor away.” Apples contain pectin, which helps remove cholesterol. The pectin is greatest right under the skin so don’t peel unless you have to. Apple’s fiber helps the digestive track, and apples are good for your skin and immune system. And with Halloween coming upon us, you have to try the pork carnitas if you want something easy and “double dog good” as my friend Charlene would say, for your party. Carnitas have become a cult favorite in our family. It originated with daughter-in-law, Courtney, a Mt. Lookout reader who found the recipe on the Damn Delicious site. Courtney shared it with my other daughter-inlaw, Jessie, a Mt. Washington reader. Then the recipe was shared with Jessie’s sister, Lottie, an Anderson Township reader. I finally got the recipe today. Another slow cooker gem. Rita Nader Heikenfeld is an herbalist, educator and author. Find her blog online at Abouteating.com. Email her at rita@com munitypress.com with “Rita’s kitchen” in the subject line.

Homemade slow cooker applesauce and butter If you want applesauce to stay “whiter” sprinkle them with Fruit Fresh or a bit of lemon juice.

Easy slow cooker applesauce

Slow cooker pork carnitas. PROVIDED

Best slow cooker pork carnitas It’s not often that a recipe stays true to the original. But this recipe is so good, no one wants to change it, least of all me. Jessie's suggestions: "Serve with lime tortillas chips and Tostitos white queso, black beans, Spanish rice, and guacamole." Prep this the night before, pull it from the refrigerator in the morning. You might have to cook it a bit longer. Ingredients 1 tablespoon chili powder blend 2 teaspoons ground cumin 2 teaspoons dried oregano 2 teaspoons salt, or more, to taste 1 teaspoon ground black pepper 4 pounds fresh pork shoulder, excess fat trimmed (don’t trim it all off) 4 nice sized cloves garlic, peeled 2 onions, quartered

2 oranges, juiced 2 limes, juiced

Instructions Combine spices, salt and pepper. Season shoulder with spice mixture, rubbing in thoroughly on all sides. Place garlic, onions, orange juice, lime juice and seasoned shoulder into sprayed slow cooker. Cover and cook on low 8 hours or high 4-5. Remove shoulder and shred meat before returning to slow cooker with juices. Season with salt and pepper, to taste. Cover and keep warm for 30 minutes. Preheat oven to broil. Spread carnitas onto sprayed baking sheet and broil until crisp and crusty, a few minutes. Enjoy.

Ingredients No specific amount but enough apples to fill your slow cooker is good. Your favorite apple is fine, except for Red Delicious, which lose their flavor in cooking. Peel. Or not. Remove stems and seeds and chunk apples up. Add 1/2 cup apple cider, apple juice or water. (You may have to add a bit more as the apples cook, but this usually isn’t necessary). Instructions Place apples in sprayed slow cooker/ crockpot. Cover and cook on high 1-2 hours. When they’re soft enough to smoosh down with a potato masher, that’s applesauce. If you want it real smooth, cook a little longer or process in food processor or Homemade slow cooker food mill. apple butter. PROVIDED Sweeten to taste with sugar, stevia or honey and cinnamon or apple pie spice if you like.

Apple butter After the first hour, reduce heat to low and cook, stirring occasionally, until mixture is thickened and brown. This can take up to 9 hours, but check every few hours. Uncover and continue cooking 1 hour. This thickens it up even more. Sweeten to taste and add cinnamon or apple pie spice to taste if you like. Storing Spoon into containers, cover and refrigerate or freeze.

Trump, the NFL and misguided politics Former Legislative Candidate The president used profanity recently to bring attention to his belief that professional athletes who kneel during the national anthem are disrespecting the flag, our nation and the heroes who’ve given their lives to protect it. NBA player LeBron James called the president a “bum” and claimed that it was an honor to visit The White House until Trump took office. The commissioner of the NFL stood in solidarity with players who kneel and Trump fired back in his usual fashion. Even the so-called right wing media claimed Trump was reigniting racial tension by using the term “heritage” when claiming kneeling disrespects everything the flag and anthem stand for. What does this mean for race relations in the United States? What does this mean for the future of our country? It means we have a president who would rather put the athletes down in a public way and avoid the conversation altogether. Rather than inviting the professional athletes to the White House to have a frank conversation on what they feel are the motivating factors of race relations declining in this country, Trump tweets anger-filled statements to ignite a ratings boost on his part. It means we have spoiled multimillionaire athletes who would rather disrespect the symbol of our free nation than specifically put their time, money and celebrity to good use in drawing recognition to best practices that could help our country come together as one people. The approval ratings of the president are down, however so are the ratings of the NFL and any athlete that kneels during the anthem. How do we fix this? Our president should be attempting to bridge the divide instead of speaking about television ratings and calling athletes profane names. It cannot be lost on the president that many young children idolize NFL players.

It should also be a reminder to the NFL players. Have they forgotten that the children who look up to them need patriotism and national pride instilled in them? I don’t imagine they would want to instill hate William and unnecessary rhetoric Woods in the minds of their young followers. COMMUNITY RECORDER GUEST It is safe to say the enCOLUMNIST tire nation should not only be disappointed in the words of President Trump and certain professional athletes. We should also be disappointed in their lack of action to fix the problem. Neither side is working to come together. Both are simply throwing the bloody stones of history in an already painful grave. Our president should be presidential. Our professional athletes should be professional. Our nation was built, and is still being improved by folks of all races, religions and orientations. Now is the time for us to act the way we wish our enemies would, in kind. Treat people with respect, even when they don’t show respect to you. That is how we fix the problem of our people. America’s heritage and the heritage of all her citizens are symbolized by the flag and the anthem. There is no problem with the United States of America. There is no honor in disrespecting the flag that covers the caskets of fallen soldiers and first responders. There is honor in the hearts of those who defend the flag, our nation and her people. How blessed we are to live in a nation that stands together, bound by love for country and love of each other, surrounded by the grace, selflessness and humility of those sworn to protect her. William E. Woods is a Florence resident and former legislative candidate.

Rules have been established to keep pedestrians safe Not only in the cities, but through rural Campbell County, pedestrians must be aware of traffic and other dangers while walking, beyond looking both ways before crossing. To minimize the potential dangers for all, the Legislature has set several rules for pedestrians. These rules may seem obvious but I believe it may be useful to review. These rules include requiring pedestrians to obey the instruction of any official traffic control devices specifically designed and applicable to the pedestrian. Of course, if there is a police officer directing traffic, the officer can direct otherwise. Similarly, no pedestrian shall cross a roadway intersection diagonally unless authorized by official traffic control devices. Moreover, no pedestrian shall suddenly leave a curb or other place of safety and walk or run into the path of a vehicle which is so close as to constitute an immediate hazard. Where a sidewalk is provided and its use is practicable, it shall be unlawful for any pedestrian to walk along and upon an adjacent roadway. Where a sidewalk is not available, any pedestrian walking along and upon a highway shall walk only on a shoulder, as far as practicable from the edge of the roadway. Where neither a sidewalk nor a shoulder is available, any pedestrian walking on or along a highway shall walk as near as practicable to an outside edge of the roadway, and, if on a two-way roadway shall walk only on the left side of the roadway. Any pedestrian upon a roadway

shall yield the right-of-way to all vehicles. Violation of these rules set by the Legislature could result being charged with a Steven criminal violation Franzen and being subject to a minimum COMMUNITY RECORDER GUEST fine of $20 up to a COLUMNIST maximum fine $100 plus court costs. Regardless of the potential criminal penalty, pedestrians should strive to be safe while traveling to avoid injury. Here are some additional tips that may assist pedestrians while traveling: » Do not assume vehicles will stop; » Do not rely solely on pedestrian signals; » Be alert to your surroundings including approaching lights and noises; » Wear bright/light colored clothing; » Stay sober; » Carry a flashlight while walking at night; and » Do not wear headphones or be talking/texting on phones while walking I hope this information will help keep all of us safe. PLAYOFF PAIRINGS TAKE SHAPE IN NKY James Weber jweber@enquirer.com

It is crunch time for playoff brackets in Northern Kentucky high school football. The number one seeds in all eight Northern Kentucky districts were determined last weekend, though some teams still have a chance to grab a share of the district crown. Several games this weekend will be key for seeding, especially multiple matchups that determine who gets to stay at home for round one. Here are the scenarios and seeding for area teams. A reminder on KHSAA tiebreakers: Head to head comes first. In a three-way tie, head to head is still first. The second step adds up the total wins of the best four teams each of the tied teams have defeated, not counting each other. 1A, District 4: Dayton (1-7, 0-2) at Beechwood (6-2, 2-0), Bellevue (5-3, 1-1) at Ludlow (7-1, 1-1). Beechwood is the one seed and Dayton the four. Bellevue and Ludlow are playing off for second. 1A, District 5: Berea (0-8, 0-3) at Bishop Brossart (4-4, 1-2), Bracken County (7-1, 2-1) at Nicholas County (4-4, 1-2), Paris (7-1, 4-0) vs. Carroll County. Paris is the top seed. Brossart needs to beat Berea Saturday night to get into the playoffs. Berea has scored only 12 points all year and forfeited one of its games, so that shouldn’t be a problem. A Brossart

Matt Shearer skips through the defense and scores a Simon Kenton touchdown, Oct. 13, 2017. GEOFF BLANKENSHIP FOR THE ENQUIRER

win combined with a Bracken win gives Brossart the third seed. A Brossart win and a Nicholas win creates a three-way tie for second, then Brossart would need to beat Pendleton County in Week 10 to have any chance of getting higher than the four seed. They could possibly then get the two seed with help. 2A, District 6: Holy Cross (0-9, 0-2) at Lloyd Memorial (6-2, 2-0), Newport Cen-

tral Catholic (4-4, 1-1) at Newport (2-6, 1-1). Lloyd has won the district, its first district title since 2003. The winner of the Fireman’s Bell gets second. 2A, District 5: Walton-Verona (6-2, 3-0) has won the district for the fourth straight year and closes district play at Gallatin County (4-4, 1-2). 4A, District 7: Scott (5-3, 3-0) at Holmes (2-6, 1-2), Harrison County (0-8, 0-3) at Bourbon County (5-3, 2-1), Mason County (5-3, 2-2) vs. Grant County. Scott is the district champion. Holmes will be the four seed no matter what happens in the two district games. Bourbon is second and Mason third. 5A, District 5: Covington Catholic (8-0, 1-0) at Dixie Heights (3-5, 0-1), Highlands (3-5, 1-1) at Greenwood. CovCath has the top seed. A CovCath win makes Highlands second. If Dixie pulls off what would be a massive upset, CovCath will still be the top seed. Dixie and Highlands would have a tight race in the three-way tiebreaker for second. 6A, District 5: Cooper (1-7, 0-1) at Conner (4-4, 0-1), Ryle (6-2, 2-0) at Simon Kenton. Ryle is the champ. The Jaguars and Cougars will have a catfight for the two seed. 6A, District 6: Boone County (1-7, 0-1) at Campbell County (5-3, 0-1), Simon Kenton (9-0, 2-0) vs. Ryle. SK is the district champ. The Rebels and Camels face off for the two seed.

Goalkeepers save the day in 37th District James Weber jweber@nky.com

ALEXANDRIA The 37th District always brings good drama during the postseason soccer tournament. So much so that the Goodyear Blimp paid a visit to Campbell County High School Oct. 12 to check out some of the action. The blimp flew over the school during the first game of the night, dropping low to give everyone a good look as it passed through during a crosscountry journey that will eventually end in Los Angeles. Play was stopped at the time as trainers tend-

ed to an injury, allowing the players to get a long look. The blimp turned out to be a warmup act for a thrilling night of district finals, as both district championship games went to penalty kicks. Campbell County beat Bishop Brossart in the boys final after a scoreless draw, then Brossart beat Campbell in the girls final after a 1-1 tie. All four teams hope to have really good years this week as they play in the 10th Region tournaments. “It’s crazy,” said Campbell senior keeper Luke Oehrle. “I love it. Back to back (district titles) is

great. Great for the school, great for the team. Hopefully we’ll get in a good groove going into regionals.” It wouldn’t have been a surprise if the visiting dirigible had been the most dramatic moment of the night because both games were rematches of earlier lopsided contests. Both eventual champions avenged regular-season losses to their city rival. Big losses. So big that both teams allowed six goals in defeat. The Campbell boys had lost 6-0 to Brossart Aug. 22. Campbell beat Brossart in girls 6-2 on Sept. 9.

Since 2012, St. Elizabeth has donated more than $66,000 and recently pledged $250,000 total over the next five years to provide tuition assistance for students (K-8) in six urban Catholic elementary schools in Campbell and Kenton counties. “Our vision of becoming one of the healthiest communities in America involves more than quality medical care,” said Garren Colvin, president CEO of St. Elizabeth Healthcare. “It starts with providing a healthy, safe and nurturing environment for our youth.” More than 50 percent of ACUE stu-

The parishes and schools in these neighborhoods provide a quality, values-based education to children regardless of their faith, ethnicity, ability or economic status. In fact, 45 percent of ACUE students are not Catholic. “St. E’s donation will help offset the more than $2 million in aid required to support these students,” said Tim Rawe, chair of the 2016-2017 ACUE Annual Appeal. ACUE schools include Holy Cross Elementary, Latonia; Holy Family Elementary, Covington; Holy Trinity Elementary and Junior High, Bellevue and Newport; Prince of Peace Elementary, Covington; St. Anthony Elementary, Taylor Mill; and St. Augustine Elementary, Covington.
