着狗年的临近，让我们回顾一下中国国家旅游局在鸡年取得的所有成就。 “中澳旅游年”期间举办了许多盛大的活动，并在国际上大获成功，如“熊猫跑澳洲”大篷车巡游活动，行程覆盖整个澳大利亚，向澳大利亚民众宣传中国旅游和“中澳旅游年”。1,000余名澳大利亚游客齐聚古都西安，接受仿唐入城仪式盛典的欢迎。这一年，无论是在中国还是澳大利亚，都发生了许多大事，促进了两国之间的关系和旅游业的发展。我们预计两国之间的游客人数将在2018年继续上升，让我们共同期待一个繁荣的狗年。

s we welcome the Year of the Dog, we look back at all the accomplishments that the Year of the Rooster brought the China National Tourist Office. The China Australia Year of Tourism was an international success that saw many grand events takes place, like the Panda Explorer vans, which covered the whole of Australia travelling and educating locals. We also saw 1,000 Australians travel back in time to ancient Xi’an where they were greeted in the old capital by a traditional Tang-style welcoming ceremony. There were many different events that took place throughout the year, both in China and Australia, to continue to grow the relationship and promote tourism between both countries. With the number of travellers between China and Australia expected to rise in 2018, we look forward to a prosperous Year of the Dog!

ave you ever visited a UNESCO World Heritage site where its history is still being written? Some of Fujian’s famous tulou are half a century old and still house descendants of the families who first built them. You’ll find these unique earthen buildings off the beaten track, about three-and-a-half hours’ drive out of the province’s capital island-city, Xiamen. Discover the architectural feat that is the tulou and let the local Hakka people invite you into their home to taste traditional local delicacies. Another city worth visiting that boasts UNESCO World Heritage Sites is Lijiang. here is no shortage of UNESCO World Heritage sites in China. You’re actually spoilt for choice. In total, there are 52 of them, second most in the world and only one short of first-placed Italy. If you’re making a trip to China, it’s more than likely you’ll be ticking some sites off your bucket list – the Great Wall, Forbidden City, Terracotta Warriors, Temple of Heaven. The only downside is that many of these more popular sites are packed with tens of thousands of tourists a day, and you can only access certain sections to ensure the attractions remain well-preserved. So the best way to witness some of the world’s oldest monuments and China’s rich history is to head off the beaten track. Specifically, about three-and-a-half hours out of the island city of Xiamen, where you’ll find ancient Fujian Tulou: one of the very few live UNESCO World Heritage sites that locals still call home.

Home grown

Tulou directly translates to earthen (tu) and building (lou), and that’s often how tourists refer to them. There’s 20,000 of them in Fujian, so choosing which to visit is tricky. We opted for the most famous one in Gaobei Village. To get to the tulou it’s a long and winding journey deep into Fujian’s richly green and mountainous province, to reach Yongding county. Here, the tulou are the only visible buildings among kilometres of dense pomelo and bamboo trees and rice, tea and tobacco plantations. The doughnut-like structures stand-out, but not like a skyscraper in the middle of a forest would. They’re not misplaced. Each tulou looks like it belongs in the midst of wild nature. The reason for this is that they’re sculpted and made from the earth around them. Sophie, our guide for the day, leads us to the largest tulou in the Gaobei Tulou Cluster, which was built in 1709. “We call this one the ‘King of the Tulou’,” says Sophie, but its official name is Chingqilou. “This one probably took about 50 years to build. All of the materials used to come from the earth. The walls are made of natural clay, rocks, pieces of wood, branches and, some say, sticky rice was also used. And it was all done without any machinery.”

“You can truly appreciate the perfect symmetry of each of the inner rings and the locals’ way of life” The Chingqilou tulou is four storeys tall, measures 62.6 metres in diameter, and is an architectural feat even by today’s standards. Not only is it ecological, but it was also built with defensive purposes in mind. There are no windows on the first two floors, and the outer ring wall is 1.6 metres thick. The building is pretty much impenetrable from the outside. The only way in is from one of the three gates, which would normally stay shut for protection from local bandits.

Hold the ring

The Hakka people were the first to build tulou clusters. “There were five big migrations in China’s history,” Sophie tell us. “Many northern Chinese came south to Fujian’s mountainous region during the last migration. To the local southern Chinese, these people are known as guests to the region. The word for guests is Hakka, which is why they’re called Hakka people.” As a community, the Hakka people created their own habitat by creating houses that were large enough to fit over 600 people and also sustain their living through nature. Initially, tulou were square-shaped, but were soon replaced with the more prominent round tulou because corners are considered bad feng shui. “Over the years I have seen many different shapes and sizes,” says Sophie, who has been through so many tulou she’s lost count. “I’ve been in one where the centre courtyard was as big as a football field, but the more common ones are round.” Inside the giant, outer ring of every tulou, you’ll find inner rings. In Chingqilou tulou, there are three inner rings. The centre of all the rings is where chickens and other animals are kept and bred. There is also an ancestral hall where occupants of the tulou go to pray. The second ring is a community library, the third the family living/dining rooms, and the fourth (outer) ring are where families live. The kitchen is found on the ground floor. Some couple of hundred years ago there was only one well that serviced the whole tulou. But in 2017, occupants at Chingqilou have the luxury of having a one-metre-deep mini-well in their own kitchens. The second floor is used for storage of wood, while the third and fourth are bedrooms. 58

The amount of people living in each tulou varies. Back in Chingqilou’s prime there were about 600 people living here, all descendants of the Jiang family. Today, 300 people occupy the rings.

Meet the locals

While a tulou was once self-sufficient in growing fruit and vegetable in surrounding farmland and breeding chickens for food, today tourism is the residents’ main source of income. You can buy dried local persimmons, mushrooms, pork, radish, sweet potato, as well as dried tea and tobacco leaves. There are also handmade wooden souvenirs, like key rings, for sale. Because you’re still visiting someone’s home, the top floors are not open to the public. But if you’re lucky, a resident will offer to give you a full tour of their place, for RMB 10 – a small price to pay for the view you get from the fourth floor. It’s from here you can truly appreciate the perfect symmetry of each of the inner rings and also get a look at the locals’ way of life. After the grand tour of Chingqilou, Sophie takes us to her favourite restaurant in the county. Only a 10-minute drive away, lunch is served at Mr Jung’s house, where he has lived his whole life, as did his parents and grandparents. His house is a miniature tulou. It is round, but doesn’t have any inner rings. Instead, it has one large courtyard where cats and chickens roam freely. Mr Jung’s daughter is in the kitchen, which is surprisingly equipped with mod-cons like a stove and sink. “This is not a UNESCO-protected site,” Sophie explains. “Mr Jung runs a small hotel from here and has even renovated some of the rooms so that they have their own showers and bathrooms to cater to Western guests.” Lunch is chicken with green almond and chilli and dry bamboo shoot cooked with pork, which Sophie tells us is a local delicacy. While the flavours are rich and spicy, it does make you feel slightly guilty for the fate of the chickens that are clucking at your feet. And that’s the beauty of visiting China’s lesser-known sites: there are no queues or pushing your way through large groups of people. The only nudging required is to the chickens, to ensure they don’t peck at your feet while you’re eating in one of the tulou. 60

Chengdu’s laid-back tea houses are integral to Sichuan’s culture and lifestyle. The Temple House, an urban resort that incorporates seven heritage Qing dynasty buildings, offers a contemporary take on the Sichuan art of taking it easy. Mi Xun Teahouse, attached to the hotel’s spa, is located in two courtyard homes that were still inhabited 15 years ago. Ornamental Chinese Traditional Medicine (TCM) drawers are a main feature of the teahouse, which has a range of 44 selected teas and serves exclusively vegan food. Afternoon tea at Mi Xun is an elegant affair with a three-tiered serving stand presenting an assortment of sweet treats including fresh papaya coconut panna cotta, pumpkin cheese chocolate balls and cakes flavoured with yam and cranberry ginger ice jelly. Guests can choose to match the snacks with either tea or a sweet wine, selected by sommelier Fei Fei. Higher View approved of a unique and balanced blend of riesling, chardonnay and sauvignon blanc from Kanaan winery in the highly regarded Chinese wine region of Mount Helan in Ningxia. A la carte highlights include pleasantly spicy stir fried chilli okra with smoked tofu and Wuhan noodles with pickled kale. The Jazz Age is the inspiration behind JING, the hotel bar, which features ample angular leather seating and light fittings that evoke art deco. Head bartender Leo Lai, 28, has devised a unique twist on a classic cocktail that captures local flavours. His Sichuan Negroni uses French G’Vine gin infused with osmanthus flowers, Sichuan pepper infused Campari and jasmine tea syrup, which he then ages in a Vermouth oak barrel. It is a perfect aperitif to begin an evening of culinary exploration in Chengdu. >

Vito Romeo was already destined to make his mark in Sichuan at four years old when he surprised his relatives with his enjoyment of fiery Calabrian chilli sausage in the south of Italy. Romeo, The Ritz-Carlton Chengdu’s general manager, has an impeccable food and beverage pedigree, having shifted to hotel management after stints at some of the top restaurants in Monaco under world-famous chefs. “I first tasted Sichuan pepper matched with foie gras by [Michelinstarred chef] Paul Bocuse,” recalls Romeo. “Wow – what a combination! I’ll never forget that taste.” However, it is European fine dining that Vito has brought to Chengdu along with the Ritz-Carlton’s German executive chef Steffen Gube. “Locals are really focused on their food,” says Romeo. “Western food is new to many people in Sichuan and young people in particular are interested to try it.” At Dining Room, the Ritz-Carlton’s Western restaurant, fresh ingredients are at the forefront and presentation is paramount. The menu plays to Sichuan’s culture of sharing with a Mediterranean mezze platter that combines Italian and Middle Eastern influences with dishes such as beef carpaccio, falafel and dips served with plenty of freshly baked bread. The stars of the show are a 1kg Australian Black Angus tomahawk tagliata steak and an immense seafood platter for the crustacean connoisseur with a whole Boston Lobster as its centerpiece. Dessert also has a theatrical flourish with Crepes Suzette prepared at the table with plenty of flaming Cognac and Grand Marnier liquor. Ritz-Carlton Chengdu also has a sister bar to Ritz-Carlton Pudong’s Flair, which, like its Shanghai counterpart, has a wide selection of whiskies, Cognacs, wine, cigars and an expansive terrace. The bar’s signature cocktail is their Sichuan Gin & Tonic, which uses Aviation gin infused with a variety of spices more commonly found in a bubbling hot pot, including Vito Romeo’s favourite, the Sichuan peppercorn. >

Legend has it that the first hot pot originated during China’s Jin dynasty (1115 AD to 1234 AD). Introduced by Genghis Khan’s soldiers, these all-conquering warriors on horseback travelled light, with their metal helmets and shields doubling as cooking vessels. Through the centuries, huo guo evolved into China’s most popular communal dining experience. Although there are countless regional varieties, the basic formula is the same – diners cook their own food in a simmering pot of broth. The dominant hot pot in China today is the spicy version with a bubbling broth of oil and beef tallow, founded by Chongqing dock workers on the banks of the Yangtze River. At #8 restaurant at Grand Hyatt Chengdu, discerning diners can choose from eight different broths, from spicy ones loaded with potent red chillies and mouth-numbing Sichuan peppercorns to a delicate Cantonese abalone and seafood broth. “Chengdu is the hot pot city,” declares Felix Lee, executive chef at #8, in a bold statement sure to raise some eyebrows with natives of Chongqing. Nevertheless, hot pot is indeed wildly popular in Chengdu, which had the honour of being named Asia’s first UNESCO “City of Gastronomy” seven years ago. “There are more than 600 hot pot restaurants in this district alone,” Lee says. One thing that sets #8 apart from other hot pot restaurants is that they do not recycle their spicy beef tallow broth, a widely practised act of frugality that also enhances flavour. Instead, Chef Lee boils and simmers his stock over three days.

Luxury ingredients are the order of the day at #8 and diners can peruse and select many of them at the market-style entrance to the restaurant. Seafood is hugely popular at #8, and to our pleasant surprise ingredients like Maine lobster, Dalian abalone and Qingdao oysters retain their flavour exceptionally well even when cooked in Chef Lee’s spiciest broth. Other indulgent ingredients include wafer-thin slices of Australian Wagyu steak and Alaskan snow crab. “We give some advice to diners about ingredients,” Lee says. “You really only need to cook the Wagyu for two seconds, but this isn’t fine dining. Hot pot is freestyle and anything goes.” >

SIX SENSES QING CHENG MOUNTAIN

In an industry where imported ingredients are sought after and celebrated, Six Senses Qing Cheng Mountain, located 60km from central Chengdu at the base of the UNESCO World Heritage site, is breaking the mould. “Everything on our table is local: either from our garden or from a maximum of 3km away,” says executive chef Ozgur Bozgurt. Fresh and delicate flavours are a signature of Chef Bozgurt’s style at the spa and resort’s Farm2Fork restaurant. His style is subtly influenced by the Turkish cuisine of his homeland with adjustments catered to local tastes. “I’d prefer goats cheese instead of yoghurt,” he says of a delicious dish of roasted fig with local honeycomb with homemade yoghurt providing a softer tang than one would find in a traditional Turkish recipe. Another dish with a deft touch is beef short rib, cooked for 32 hours, which has mild flavour and meltin-the-mouth texture and a touch of freshly picked thyme from the hotel’s organic vegetable garden. Besides its organic vegetable garden, other sustainable practices at the resort include free range chickens, re-usable glass drinking water bottles and a fleet of electric-powered Tesla S limousines to whisk guests from Chengdu’s Shuangliu International Airport to the resort in about an hour. Alongside a Chinese and a Thai restaurant, Six Senses Qing Cheng Mountain also offers traditional Sichuan homestyle casual dining at Wok Mee Shack. Private dining is big business at this luxe venue, with rooms for groups of six to 70, but there’s also plenty of space in the dining room for decadent meals beside the restaurant’s 15 aquarium tanks filled to the brim with seafood. A name that is synonymous with Melbourne’s Chinese food scene has to be David Zhou. His restaurant in trendy Prahran focuses on simple dishes that are big on flavour – the standout is a sticky pork belly and chat potato dish that brings traditional Shanghai cuisine together with Australian ingredients, but keep your eyes out for special Chinese New Year dishes in the week prior. The restaurant will also host lion dancers for prosperity and good luck.

There are some 261 different spirits and 232 different bitters on the menu – the tiki cocktails are among the most popular each night, and the bar now specialises in Old Fashioned drinks, with all those bitters. Late night guests tuck into pot stickers, gyoza, dumplings and chicken dim sim.

Queen Chow, Enmore, Sydney A traditional Australian pub is the setting for this very cool bar and restaurant in Sydney’s Inner West. The Queens Hotel received a revamp in 2016 from Merivale Group, with a very slick interior design makeover and a whole new concept for the upper floor. Queen Chow transformed the second story into the spot for share plates of Cantonese classics inspired by Hong Kong street food. There’s plenty of space for sit-down meals, but grab a spot at one of two bars to try cocktails like the Gold Rush, a nod to Australian Chinese history.

Treasures of a Nation is an amalgamation of traditional and modern Chinese music traditions, paired with unique audiovisuals.

s dawn slowly sweeps across Jade Dragon S n o w Mountain, its jagged snow-capped peaks reveal themselves in pale shades of rose, then orange and finally yellow before the warm hues of sunrise give way to clear daylight. At almost 6,000 metres at the highest of its 13 peaks, which together resemble a dragon’s back, this mountain is holy to the ethnic Naxi people and stands sentry over their ancient kingdom of Lijiang, one of China’s most picturesque destinations. Higher View takes a look at three hotels that make the most of the scenic and cultural riches of this region.

Luxury resort chain Aman’s third China property Amandayan takes its name from Dayan, the Naxi name for Lijiang’s ancient town, which sits at 2,300 metres above sea level with more than 1,000 years of history. Amandayan has a commanding view of the UNESCO World Heritage site’s distinctive curved rooftops and winding cobblestoned streets from Lion Hill, which rises from the centre of Lijiang. Amandayan shares its location with Wenchang Palace, built in 1725 to host civil service exams. Its 35 spacious suites are inspired by traditional Naxi architecture with twin level courtyard compounds offering balconies and terraces. Heated floorboards and free-standing bathtubs are among the luxurious interior touches. The ancient town’s bar street can get crowded and raucous at night, but early risers at Amandayan are rewarded by a short walk down Lion Hill to the narrow, deserted streets and many canals that have given Lijiang the nickname ‘Venice of the East’. Among the first stores to open each day are local bakeries, which offer oven-fresh rose petal cakes, a buttery version of a mooncake with sweetened rose petals inside flaky pastry. With a flavour somewhere between a croissant and Turkish delight, they are a must-try for the sweet-toothed. >

Yuhu village, at the foot of Jade Dragon Snow Mountain, 12 kilometres from the ancient town, is home to around 500 Naxi families. The region’s most celebrated expatriate, Dr. Joseph Rock, spent much of his time in this stone village between 1922 and 1949. Dr. Rock was an Austro-Hungarian botanist and explorer whose writings and photography for National Geographic magazine shared the region with the western world. While his home is open to the public, an impressive print exhibition from the National Geographic archives is also on permanent display at Wenchang Palace at Amandayan. A living link to this history is a short drive away at the Snow Dragon Snow Mountain, Chinese Herbal Medicine Clinic at Baisha Village. The clinic’s 95 year old proprietor, Dr. Ho, claims to have been one of Rock’s botany students: “I knew him very well. He was the same age as my father.” Dr. Ho, whose wife is 94, attributes his longevity to healthy lifestyle and a knowledge of herbs honed over 12 generations. “Some of these herbs are unknown outside these mountains,” he says. Guests may be tempted to do little else, but soak in warm bubbling waters and enjoy Banyan Tree’s luxury spa treatments, but a trek into the surrounding mountains is one of Lijiang’s most profound experiences. On the back side of Jade Snow Mountain lies Tiger Leaping Gorge, one of the world’s deepest canyons. “It’s one of the best hikes in the world – absolutely spectacular,” says Sydney-born hotel manager Nigel Fisher, “and worth every minute it takes to get there.” The journey of around two hours, hugs the curves of the Jinsha River, a primary tributary of the Yangtze, China’s longest river. The quickest way to hike the gorge is to drive to the halfway point and stop at the Halfway Guesthouse for a refreshing glass of Yunnan Pu’er Tea, before venturing on the winding path. This slightly smoky flavoured aged tea was once a prized export along the Tea Horse Road, a trade route that weaved through these same mountain paths all the way to Tibet. As the hike begins at an altitude of 2,100 metres and rises to 2,650 metres, those who embark upon it should have a good level of fitness. The altitude can be almost as breathtaking as the views, which stretch around 3,790 metres from the rushing Jinsha River to the highest peak. Depending on the season, hikers might have the spectacular views entirely to themselves, save for the occasional herder and perhaps an unaccompanied family of goats. Once back at Banyan Tree Lijiang, there is no better way to unwind than with a locally brewed Shangri-La Beer and a hearty Naxi hot pot, a copper cauldron in which meat and vegetables are cooked in a choice of ham bone or chicken soup.

SECRET PARADISE

Beyond Tiger Leaping Gorge lies Shangri-La, formerly known as Zhongdian County. In an attempt to spur tourism, this town within the Deqing Tibetan Autonomous Prefecture was renamed after a fictional land featured in James Hilton’s 1933 novel, Lost Horizon, which was inspired in part by the non-fictional writings of Dr. Joseph Rock. The journey by road to Shangri-La takes around four hours through spectacular mountain passes. This is soon to be significantly reduced by both a new highway and a rail link. While Shangri-La is also serviced by Diqing Airport, it is advisable to acclimatise to 2,300 metres altitude in Lijiang before travelling to Shangri-La, which sits at around 3,300 metres. Banyan Tree Ringha, like its Lijiang counterpart, is managed by an Australian; in this case, Mario Piazzo, another ex-Sydneysider who has fallen in love with the region’s landscape and culture. “This is a magical place to discover. Ringha is full of surprises every day. You just have to be ready with your camera!” 92

The resort sits in a secluded river valley lined with 600-year-old spruce trees. Lodgings are reconstructed 80-year-old twin-level Tibetan farmhouses which have flat roofs, stone walls and timber balconies fronted by huge tree trunk pillars, the width of which is a marker of family wealth. All but the walls of the houses are original including the carved wood panels and Tibetan tapestries within. Wooden hot tubs are standard in all accommodations. The resort is around 30 minutes drive from Shangri-La’s ancient town, smaller than Lijiang’s and with a distinctly Tibetan flavour to its cobblestoned streets and shop fronts. Popular outings from the resort include trips to Ganden Sumtseling Monastery, Yunnan’s largest monastery, built in 1679 and to Napa Lake, a 660 square kilometre wetlands reserve that is a beacon for thousands of migratory birds. Banyan Tree Ringha’s charms can also be enjoyed by foot accompanied by a knowledgeable local guide. A short stroll through the resort’s neighbouring Hong Po village leads to 800-year-old Dabao Temple, which sits upon a forested hill. At the top of the ancient steps lined with cylindrical copper prayer wheels, visitors are greeted by a menagerie of tame chickens, pigeons, turkeys and the odd rabbit. These temple wardens are referred to as ‘animal monks’. Many of them have been bought and taken here to save them from the dining table and in turn, earn their saviours good karma. Back in the village, after descending the temple’s stairs, resort guests are treated to a Tibetan afternoon tea served in a village farmhouse. The spread consists of warm flat bread, sugar-sprinkled yak cheese (which has the consistency of Greek feta cheese and a sharp yoghurt flavour) and yak butter tea. This hot concoction of pu-er tea is mixed with powdered barley and seasoned with salt. The nourishing brew is said to be an excellent tonic for the adverse effects of altitude. Guests often find themselves eagerly agreeing to a refill as they enjoy the authentic Tibetan hospitality.

In 2014, Adelaide Oval underwent a staggering $535 million dollar redevelopment to make it a centrepiece of Adelaide’s CBD. Adelaide is home to international cricket games, football matches and concerts. It was during the redevelopment that the oval’s iconic RoofClimb was introduced. You can climb the sails that make the roof of Adelaide Oval all the way to the ‘lean out’ point. If you’re an avid cricket fan, then this is the best seat in the house. You can watch six to seven overs from this very vantage point come game day.

CLELAND WILDLIFE PARK You can’t visit Australia without cuddling one of their ridiculously cute national treasures, the koala. The best place to do this is at Cleland Wildlife Park. Here, koalas are carefully looked after. The park is unlike your typical zoo – it is surrounded by a national park, so instead of the animals feeling like they’re in a man-made environment, we feel like we’re in theirs. You can walk in large grassland enclosures among emus and kangaroos and even have a go at feeding them. Living in China, we only get to get to see kangaroos in pictures, so to see one hop right past me was surreal. On my visit, I was lucky enough to name a baby koala. The name I chose for him was Bao Bao, which means cuddles. This reminded me of Ping Ping and An An, the two pandas I have adopted back home in China. They live at the Chengdu Research Base of Giant Panda Breeding and I love going back to visit them. I plan to come back and visit Bao Bao when he is a little older. 98

CHAPEL HILL WINERY There’s no denying that South Australia has some of the finest wine Down Under. Having already been a fan of drinking Australian wine imported in China, I was looking forward to being able to taste a wide range of wines from Chapel Hill. The vines at Chapel Hill were planted in 1838 and still produce the grapes for wine making today. This is a testament to Chapel Hill’s dedication to keeping soil healthy and sustainable farming practices to build character in the vineyards, and ultimately the wine. I personally believe, if you treat nature well, it will treat you well in return.

D’A RENBERG CUBE The d’Arenberg Cube is groundbreaking. From when the concept of it was first thought up by Chester Osborn, fourth-generation grape grower and chief winemaker at one of South Australia’s most significant wineries, d’Arenberg, it took 14 years to become the reality we see today. Having such a modern building sitting in the middle of a vineyard breaks the stereotype of what a traditional cellar door should be. The five-storey half-solved-Rubik’s-Cube-like structure is home to a contemporary wine museum, which includes a quirky wine fog museum, offices, a commercial kitchen, a fine dining restaurant and glass-encased pavilion, which offers panoramic views of the whole region.

Now oysters are not unfamiliar to me, or most people in China. We love seafood, especially oysters. But I don’t think I've tried fresher oysters than Coffin Bay oysters. Picking an oyster straight from the water, shucking and eating it right there – it’s just not possible to get any fresher. I lost count with how many I ate; they were too delicious to stop at one. What’s most surprising about oyster farming is learning about how oysters grow. It’s hard to believe that they are the size of a grain of rice to begin with and then grow into something so large. But it’s all part of the beauty of nature and how it will always continue to impress me with its grandness.

The beauty of animal experiences in South Australia is that they are almost always in the wild and natural habitat of the animal. When you swim with native sea lions at Baird Bay, there’s no cage in between. It’s just you, the crystal clear waters of Baird Bay, and the sea lions. If you’re not an animal person, you needn’t worry. Sea lions are an extremely friendly species and will happily swim right up to your face. Sea lions are one of the rarest species in the world and are only found in Western Australian and South Australia, with 85% of the population found in the latter. Most days, you’ll get to swim around with at least two to three sea lions, and if you’re as lucky as I am, you might even spot an abalone to pick up.

hen the Handa Opera on Sydney Harbour production of La Boheme premieres on March 23, there will be an unusual challenge for the ensemble to conquer. The beloved Puccini opera will be performed outdoors and under the stars in the city’s Royal Botanic Gardens, so the cast will be fighting the temptation to gaze at the lights sparkling around Sydney Harbour as they stand on stage telling the tale of love and loss in 19th-century Paris. Opera Australia’s artistic director Lyndon Terracini is the mastermind behind Handa Opera on Sydney Harbour – called HOSH by cast and crew – and he came up with the concept while strolling around a scenic corner of the waterside park.

“I always felt opera needed to play to a broader audience, rather than just the aficionados who follow it, and when I was walking around the gardens I saw this amazing setting with the city skyline and ferries dashing about,’’ he says of the light-bulb moment. “I wanted to float that stage in front of the Sydney Opera House but the wash from the ferries would have moved it around – not only disastrous for lighting, but it could have made the singers seasick. So instead, we sunk pylons into the water and every year we come back and sit the stage in place. “HOSH is preparing for its seventh season, after premiering in 2012 with La Traviata, and now boasts more than just the show, with the Mrs Macquaries Point location home to five restaurants offering the audience everything from fine dining to street food before the curtain rises. “And La Boheme is one of the most popular operas ever written that’s not only perfect for beginners, but is also popular with experts.’’ Higher View asked members of the cast and crew – director Andy Morton, conductor Brian Castles-Onion, and soprano Julie Lea Goodwin who plays Musetta – to share some HOSH secrets.

Why is this the perfect story for HOSH? The opera is romantic and intimate, but it takes place against the backdrop of a boisterous night of Christmas Eve celebration, and we have the space to transport the audience into a festive scene straight out of the Parisian Latin Quarter complete with ice and snow. We love the idea that we’re here in subtropical Sydney and we’re putting ice and snow in the middle of the harbour.

What is the most impressive aspect of a HOSH season? The technical requirements are beyond belief and there are more than 300 people involved every night with each element coming together to make a seamless show. What are the challenges performing outdoors? Weather plays a big part. In the past, we’ve paused the show a couple of times for a few minutes for heavy rain or excessive wind, but that’s part of the experience. The audience feels even more a part of the show when this occurs, cheering the performers on until the end, and we frequently receive a standing ovation on rainy nights as everyone knows they’ve been part of something special.

Mercedes Benz released its all-new C300 in July this year, and since then it has become abundantly clear the C in the car’s moniker stands for comfort, convenience and class. Everything in the elegant sedan is designed to make your life on the road easier. The buttery leather seats can be adjusted with controls on the door, so you don’t have to scrabble around under your seat. The wood-appointed dash features plenty of stylish storage options to keep your knickknacks out of sight, and the car’s safety technology is second to none. The high-output turbo petrol engine packs a punch on the road, and happily the car endures barely any bumps due to its standout Agility Control suspension. But while practicality is key, the C300 still manages to maintain its sense of a fun. As part of the $3,838 Vision package you get a positively panoramic sunroof that leaves the car feeling more like a convertible than a sedan. The most recent developments include a rosé collaboration, urban cellar door experiences and the acquisition of vineyards in the Mornington Peninsula, Barossa Valley and Yarra Valley. It sounds simple, but it’s a wildly ambitious approach in the often conservative world of wine. The retrospective, celebrating over 60 years of the label’s coat making, has hit major capital cities around the world including Berlin, Tokyo, Beijing and Moscow. But its largest exhibition landed in Seoul late last year, where it was displayed in Dongdaemun Design Plaza, the city’s newest and most iconic landmark designed by the late architect Zaha Hadid. The exhibition featured seven themed rooms, and celebrated Maramotti’s idea to “make the ordinary extraordinary,” with a focus on how the coat, and the women who wear it, have changed through the decades. The tightly edited selection had been pooled from some 30,000 of the house’s archival magazines and clips, plus 20,000 archival Max Mara pieces, and 8,000 vintage and historical pieces. To mark the occasion, Max Mara has released a special look. Included is a coat in pure camel’s hair – paying tribute to the brand’s very first coat – with brass colour lining and in the same fabric a shirt with crystal buttons and French cuffs and pencil skirt. This brass colour is inspired by yughee, precious Korean tableware, used by the royal family and passed from generation to generation just as a Max Mara coat would be. Like camel coats to Max Mara, yughee represents the importance of tradition and quality in Korean culture. It’s also renowned for its unique chemical composition, which increases its thermal properties and helps to keep the food it’s holding warm. It shares parallels with how, at the crux of it, a Max Mara coat is made to keep you warm (and looking enviably stylish) throughout winter.

Each year the open-air square in the centre of World Square transforms itself for Chinese New Year. The festivities are brought in with a special lion dance performed by Jin Wu Koon Dragon and Lion Dance Association. Moving to the beat of the drummers, the lion dance moves through the main square, jumping and dancing across platforms high above the ground before weaving through the crowd.
