Wonder walls After a successful showing in Shanghai, Van Gogh Alive continues its Chinese tour – opening in Beijing’s Chaoyang District. Marking the 125th anniversary of Vincent Van Gogh’s passing, the stunning multimedia experience features more than 3,000 images of the famous Dutch painter’s masterpieces, including ‘Starry Starry Night’ and ‘Sunflowers’. In the absence of frames, Van Gogh’s works will be enlarged on more than 40 high-definition projectors on four-metrehigh walls spilling onto the exhibition space floor, fully immersing you in his surreal artworks. Centre stage It has been 29 years since Andrew Lloyd Webber’s Phantom of the Opera premiered in London and for the first time in history it will be staged in Beijing’s Tianqiao Performance Center. Lights, camera, action!

Universal Studios has confirmed plans to build a Hollywoodstyle theme park near Beijing. The park will open in 2019 in the Tongzhou district, east of the Chinese capital, and will be built in two phases. The first, at 120 hectares, will include entertainment and the first ever Universalbranded hotel.

The second phase, potentially expanding it to 400 hectares, is planned to add a further theme park, a water park and five more hotels.

Keeping cool Beijing has won the bid to host the 2022 Winter Olympics. This will be the second time the capital city hosts the games, the first being in 2008. The Olympic family has put its faith in Beijing again to deliver the athletecentred, sustainable and economical Games we have been promised.

Hangzhou IN EIGHT STOPS

5 Longmen Ancient Town As they have for thousands of years, residents still live in Imperial-era homes.

6 Xixi National Wetland Park Literally meaning “west waterway,” Xixi is a lush wetland that covers about 10 square kilometres, of which three-anda-half are open to the public as a park.

More than 70 per cent of the area is covered by water.

Where is the best spot to get a great picture?

Anywhere high up, and in Xi’an there are a few places above ground level. Built in the Ming Dynasty (1368-1644), and recently restored and opened in 2014, the south gate of the City Wall of Xi’an is not only the most beautifully decorated, but it also offers sweeping views of the barbican. This section of the wall is also close to the Bell Tower, another vantage point for a great panoramic shot of the city centre.

Best place to get a taste of local cuisine is...

The local food is something you don’t want to leave the city without tasting. From our hotel, turn right and

walk for about 15 minutes and you’ll reach the Muslim Quarter, where the old alley is full of local snacks and meals like pita bread soaked in lamb soup. If you take a left from the hotel and walk in that direction for 15 minutes you’ll reach the newly opened Tang style building streets where you’ll still find authentic local cuisines along with a great dining environment.

Tour not to miss...

The City Wall is around 13.7km and can take half a day to stroll around. But a quick and fun way to get through the whole wall is to do it by bike. It’ll take about two hours to circle the whole wall at a leisurely speed. If you’re travelling as a pair, you could give a tandem bicycle a go.

he strings of a single cello echo through the Sydney Opera House Concert Hall, resonating between the white birch ribs of the high vaulted ceiling. Suddenly, the entire Sydney Symphony Orchestra erupts into a harmony of woodwind, brass and percussion. And as soon as the melody settles into its rhythm, with a flick of the wrist, Swiss maestro Charles Dutoit creates a deafening silence. It’s not even close to showtime yet.

This is one of the many perks of a day-time Opera House tour. While you can’t expect a full show until the sun is down, the daily tours give you small snippets of huge-scale performances in practice, fine-tuning for the big show. In the Concert Hall you may get the chance to see a full orchestra in street clothes backed by a colossal organ and 2,700 empty seats. Meanwhile, in the much more intimate Playhouse, you could see the simple stone coloured curtains and blue gel lights ready to go for a showing of The Tempest. It’s these small behind-the-scene moments that remind you there’s a lot more going on under the theatrical sails of the Opera House than just a great photo opportunity. After all, at its heart, this is the home of Opera Australia, the Sydney Theatre Company and the Sydney Symphony Orchestra.

As you weave between the contoured concrete, sloped glass and steel beams of the architectural masterpiece made possible by Danish architect Jørn Utzon, you’ll be taking a walk through the history of the space itself. After winning a design competition in 1957 to design a new opera house for Sydney, Utzon knew he needed to make a statement – one loud enough for the world to hear and put Sydney on the map. As such, Utzon’s design was suitably bold and radical, drawing inspiration from ancient Mayan and Greek architecture and incorporating a series of sail-like overlapping shells. Some 2,000 concrete ribs, 1 million roof tiles, 14 years and $102 million later, Sydney had its shiny new cultural beacon.

At just over 40 years old (comparatively a pup on the world stage) the halls and theatres of the Sydney Opera House hold stories from decades of world-class performances, controversies and tall tales. Between Pavarotti fleeing in disgust at the sight of the purple carpet of the Concert Hall’s foyer, live chickens falling onto the heads of an orchestra and a delivery man getting lost and ending up on stage in front of 400 people, the story of the birth of Australia’s most iconic building comes alive. >

SET THE SCENE But you don’t have to simply wait around for your chance to see a show in full; the Opera House has plenty to keep you busy until the evening. After the Opera House tour, it has almost become custom to take some time out at the Opera Bar and Kitchen, a waterside bar and restaurant perched underneath the most famous sails in the world. The Opera House even offers the handy ‘Tour and Tasting Plate’ deal where you can indulge yourself in a three-tiered plate of goodies after the tour. It’s easier to digest the history and controversy of the Opera House with a table full of oysters, smoked salmon and mini wagyu burgers.

The Opera Kitchen and Opera Bar on the harbour concourse, while essentially conjoined twins, both offer a menu and atmosphere unique to themselves.

Framed by one of the best views in the world, the Opera Kitchen is for your casual small eats. Tall bar stools and rounded steel recliners are rowed along the waterfront of this fantasy food court, and low wooden tables are packed with everything from fish and chips to the famous and always popular dumplings.

Opera Bar, established by Matt Moran of Aria fame, is your home for fresh seafood, charcuterie and cheese plates – and, of course, drinks. While the shows don’t kick off until later in the day, there’s enough theatre happening at the Opera Bar to keep you entertained at all hours. At the kitchen turned dining space, Raw Bar, you can watch chefs in culinary action as they wield knives like samurai, delicately slicing sashimi straight onto your plate. And for even more showmanship, slide down a few seats and catch the bartenders’ creativity running wild with locally inspired cocktails such as the Sydney Sling or the Elderflower Margarita. >

Sitting on the water’s edge with a wine in hand across from the Sydney Harbour Bridge could become a whole-day affair, but with Bennelong – Peter Gilmore’s new restaurant – at arm’s reach it’s worth peeling yourself away for some dinner with an equally stunning view. After 18 months redesigning the space in the belly of the Opera House, Gilmore opened Sydney’s new fine-dining darling, and the end result is nothing short of superb.

“There is a great history built on the site of the Sydney Opera House – great food and entertainment, and this is something we wanted to really build upon with Bennelong,” says Gilmore Tapping into Utzon’s genius, the interior captures the Danish vibe with Hermes chairs, copper tabletops and eye-catching, golden-orb light installations.

Gilmore may be known for his intricate techniques, but here he ditches these for a more informal but equally fascinating menu, taking a ‘back-to-the-roots’ approach.

“The ethos behind Bennelong is all about the celebration of great Australian produce, great seafood, heirloom vegetables and quality meat from specialist producers all over the country,” says Gilmore. The simple yet elegant menu puts the spotlight on the ingredients themselves, such as red claw yabbies with pikelets, lemon jam and cultured cream, or the Blackmore wagyu steak tartare.

There’s nothing more Australian than eating inside the Opera House with a view of Sydney Harbour and, as such, Gilmore has been creative, with some dishes on the menu to mirror what would be made in the classic Aussie family kitchen or pantry. The toasted cheese sandwich with truffle and the suckling pig sausage roll with black garlic are two of the most popular dishes – and not just for the novelty.

However, it’s in the dessert menu that we see some of the Gilmore flare truly shine through. The delicately constructed pavlova is the spitting image of the Opera House itself and shows the level of care and dedication the chefs put into their Australian-inspired dishes. Another standout is the cherry jam lamington, capturing all the flavours of the Aussie favourite with the added theatre of bellowing dry ice fog. “The Sydney Opera House itself is so inspirational with the high ceilings and dramatic views of Sydney Harbour.

It would be impossible not to be inspired here,” says Gilmore. “And when it comes to dessert, I really wanted to embrace Australian classics and modernise them.” >

“Sydney Opera House is an icon of modern Australia.

We like to program work that resonates with both local Sydneysiders and visitors to Sydney in a contemporary context,” says Pride. “Sydneysiders are very proud of the Opera House and we love to show it off to as wide an audience as possible.”

Whether it’s ballet, opera, huge-scale concerts or even just sitting down to hear lectures from influential film-makers, authors and scientists, the Opera House is no stranger to hosting some of Australia’s most sought-after shows. It has made a habit of over achieving year in and out, continually delivering even more impressive performances and festivals under its symbolic sails. And 40 years on, the Opera House still challenges us, entertains us and, most importantly, inspires us.

After a day of food and drink, a show caps off the full Opera House experience. W

andering around Beijing W Town you’ll be easily fooled into thinking you’ve time travelled centuries into the past. Wooden sampan boats float through narrow waterways set between old-time dwellings with stone walls and timber roofs. It’s quiet. Just three hours from Beijing’s city centre, remarkably, there’s not a car in sight – nor any motorised vehicle, for that matter. The hustle and bustle of city slickers is replaced with local workers taking part in age-old practices of hand-dying cotton and distilling wine, passed down for generations, all idiosyncratic to an ancient Chinese village.

But spend a bit of time in this town and the facade slowly begins to peel away. Those quaint sampan boats are filled with tourists wearing modern-day life vests. The old-time dwellings have air conditioning units attached to their walls. After all, this town is not a time-capsule that has been carefully preserved, but rather has been completely manufactured in the last decade. Officially, it has only been open to the public since October 2014.

Sitting at the base of Simatai – easily the most majestic and dangerous section of the Great Wall of China – Beijing W Town is a replica of Wuzhen water town located in East China’s Zhejiang Province. It took about three years and 4 billion RMB to complete. And it has been well worth it – in peak season the town can draw in up to 30,000 tourists a day.

Mod-cons include two five-star hotels, six small boutique hotels, 400 local inns, restaurants, spas and stores. Spreading over nine square kilometres in total, the makeshift water town is like a theme park. The Great Wall of China happens to be the main attraction, but there’s plenty to do before taking on the biggest > ride in the park.

A BRAND-NEW HISTORY Tanghe Ancient Castle: Built along the branch of Tanghe River, the Tanghe Ancient Castle Area depicts the ancient fortress or castle life during the Ming and Qing dynasties.

Water Street: A highlight of W Town, this area draws inspiration from the water towns in Jiangnan in the lower reaches of the Yangtze River.

Wonglong Fort Folk Cultural Area: Just after Water Street, this sector focuses on the preservation of the folk culture of northern China. Visit traditional houses, Yangwudi Temple and Yinghua Academy.

DO AS THE LOCALS DO

The town possesses an old-fashioned simplicity and elegance. Unlike your meticulously planned mega-cities, rows upon rows of guesthouses, old quartzite streets and weaving hutongs complete this maze-like town, making it difficult to navigate your way through. A tour guide who can show you the ins and outs is highly recommended. Our guide saved us from walking around in circles more times than we can count on two hands.

We can smell our first stop of the day before we see it. The potent aroma hits you five metres from the door. “During the Ming Dynasty, as the Great Wall was being built in this area,” our guide explains, “the Generals would keep their soldiers warm by making them wine to drink, which is still drunk by Beijing locals today.” With an alcohol percentage that ranges from 40-60%, this type of wine isn’t made from fermented grapes. To Westerners, Chinese wine is more commonly known as a spirit.

At Sima Liquor – W Town’s distillery – you can witness the process of wine making and learn to cook dishes with vinasse, the residue that remains in the still after distillation. The wine makers use five grains to make the alcoholic beverage: wheat, corn, rice, millet and barley. In the on-site workshop you’ll find locals working away and over five-foot-tall distilling vases scattered about. Just as they would in the Ming Dynasty, all the machines operated in the workshop are done so by hand, sticking to the historical practices and era upon which the town is based.

Winemaking isn’t the only ancient-style practice you can experience in this water town. Our next stop is Yongshuan Dye House. Outside in the courtyard you’ll come across giant sails of cloth that are a work of art in their own right – and that’s even before they’ve been turned into an outfit.

“These were all dyed on site,” our guide goes on to tell us. “The people of ancient water towns used to make cotton textiles and trade them. All the hand-run machinery in the dye house are exact replicas of the ones that were used in ancient times.”

Inside you can see workers in the process of dying cottons. Big vats of deep coloured water are splashed about by machines pulling fabrics in and out. If you have some time, and a flare for the creative, you can try your hand at the ancient practice by creating your own pattern with the help of a craftsman.

If textiles aren’t your thing, don’t be disappointed – there is something for everyone at W Town. You can spend some time in the Yinghua Academy, where many Confucian classics, historical records, philosophical writings and miscellaneous works have been collected.

Or pay homage to the Yang family at Wudi Temple, built to commemorate the soldiers who sacrificed their lives in various wars. Generations of the Yang family devoted themselves to defending their country in ancient times. There is also the Eight Banners Guild Hall, situated at the fortress of the capital, where you can learn the traditions and customs of Gubei – the area in which the town is situated.

But while you can spend days exploring all that the town has to offer, you can’t go home without climbing the Simatai section of the Great Wall... >

CLIMB THE WALLS

Built during the Ming Dynasty (1368-1644) the Simatai section is the only part of the whole Wall that still has its original ‘Ming Dynasty-style’ appearance.

This particular section stretches about 5km from the Wangjing Tower in the east to Chuanhoukou in the west. The wall is celebrated for its steepness, meaning comfortable walking shoes are a must. Some parts of the wall have an 85-degree slope. The narrowest part of this section of the wall measures a mere 40cm, thinner than your foot. Closed for three years, the Simatai section re-opened in conjunction with the opening of W Town as a major tourist attraction.

If you’re afraid of heights this may be a challenge for you. First, you’ll need to last the 10-minute cable car ride up to the wall from W Town at the base of the mountain. Then you’ll have to climb the wall. Hands and feet will be needed to reach some of the watch towers, as the wall is as steep as a ladder.

The whole Simatai section has 39 watch towers in total – 18 in the western part of the wall and 16 in the eastern part – but only 10 are available along this walk. The two most famous watchtowers, Fairy Maiden and Wangjing Tower – one has marble arches carved with lotus patterns and the latter is the highest part of the wall. 1,000 metres above sea level – are the most famous on the eastern side of the wall. Unfortunately, they’re not accessible to the public anymore.

That’s not to say there aren’t other great watch towers. You’ll get sweeping views of the Great Wall and W Town from most towers. Many locals like to think that, from up high, the wall looks like a winding dragon jumping in and out of a lake. Depending on your fitness, it’ll take you an hour or two, if not more, to make it all the way to the 10th tower; trust us, the breathtaking view is worth making it to the end. >

REST AND RELAXATION

After a long day’s worth of exploring and hiking, refuel at one of the town’s 26 restaurants. You’re spoilt for choice when it comes to cuisine at W Town. Depending on what you’re in the mood for there are restaurants that specialise in Chongqing hot pot, roast duck, Halal dishes, traditional Beijing quick-fried tripe, and even pizza.

But the most opulent offering is Wenchang Pavilion Restaurant, where Huaiyang cuisine – one of the most popular and prestigious styles of Jiangsu cuisine – is served. Fresh seafood, pork slices and vegetables unique to the region are featured on the menu. For dinner with a view, opt for Pork Hall. Set by a river at the foot of the Simatai Great Wall, the all-wooden restaurant channels that ancient charm the town has mastered. Watch the sun set over the wall while boats drift along the river and you succumb to the intoxicating peacefulness that surrounds W Town.

For the perfect night cap, head to the Old Siheyuan hot spring bathhouse, the ultimate cure for sore muscles. Soak away any kink or pinch you may have acquired from climbing the Great Wall in natural, healing hot spring water, sourced from 3,376 metres underground. There’s an outdoor spring and an indoor spring, the latter surrounded by floor-to-ceiling glass.

But the real treat is the foot-bath area that boasts views of the Great Wall, making it the perfect spot to unwind and enjoy a glass or two of wine (the Western kind).

Enjoying such opulent experiences in W Town makes you wonder what those locals from yesteryear would think of the luxuries the town boasts today. We have a hunch that, after a day spent in the distillery, they’d want to be sitting right here soaking with us...

PLANNING YOUR TRIP TO BEIJING W TOWN Beijing W Town allows visitors to enter from 9am-6pm. For guests staying in the town it is open at any hour, but most stores close at night. ust over an hour’s drive north of Adelaide lies the Barossa Valley – a stunning region recognised as one of Australia’s most illustrious wine-producing districts and continuously acknowledged as a foodie’s paradise.

The backdrop isn’t something to sneer at either – luscious valleys, verdant fields, vineyards aplenty, and even a few streets lined with Canary Island date palms. These distinctive trees are not native to Australia, but offer a spectacular driving experience and come with a heartwarming story: during the Great Depression, Seppeltsfield Winery put its nose to the grindstone and managed to avoid laying off its employees. As a thank you, the vineyard and cellar door workers decided to beautify the grounds and surrounding streets by planting thousands of palms. >

The history of Barossa goes further back, of course.

The English and Germans were the first pioneers to settle in the valley in 1842, and the remnants of their lives remain scattered throughout. Wine production began soon after they discovered Barossa’s fertile soil was ideal for grape growing. The Germans brought their culinary customs too, and with not much to their name started afresh, building beautiful homes fit out with traditional wood ovens, planting crops of fruits and vegetables, and using their knowledge to build a new life for themselves.

The Barossa Valley became a food and wine hub pretty quickly thanks to these innovative settlers, and today visitors come from far and wide to experience the culinary culture and soak up the extraordinary Barossa vibe.

It’s not just about eating the produce and drinking the wine though. The Barossa food and wine experience is about doing, making and learning – so arrive Friday morning, leave Sunday afternoon and take your time to really get to know the Barossa.

FRIDAY I’M IN LOVE

Start the day by taking in your surrounds at Mengler Hill Lookout. Beautiful vistas are a big part of the Barossa experience and seeing the region from up high helps put the splendour in perspective.

Getting around the Barossa is most convenient by car, so regardless of whether you hire your own vehicle or get chauffeured around, there are plenty of opportunities to take in eye-level panoramas when travelling from point A to point B. Spend the morning taking it slow on the road to enjoy the landscape, stopping wherever you think there’s a photo opportunity (hint: you will need to be selective).

For lunch, enjoy a modern take on Vietnamese food at fermentAsian. Vietnamese chef-owner Tuoi Do has been wowing locals and visitors since she opened her modern Southeast Asian restaurant in 2011.

wines to go with the cuisine, so sit back and let the connoisseurs show you what they do best.

Every day you spend in the Barossa should be matched with at least one dedicated wine experience, so start your wine appreciation journey with a bang by learning to make your own at Penfolds. Launched in 2006, the Make Your Own Blend experience (be sure to book ahead) is a fascinating way to learn about one of Australia’s finest wine producers by experimenting with your own interpretation of what it is to craft quality wine.

During the interactive class guests formulate their own wine amalgamation using Shiraz, Mataro and Grenache (these three varieties have been grown in the Barossa for over 150 years and are the constituents used to create the Penfolds Bin 138 Barossa Valley Shiraz Grenache Mataro). “It’s an interactive and hands-on experience that offers our guests an opportunity to learn about the blending process – and the skill required by our winemakers to produce exceptional wine,” Amanda Scheiner, Penfolds cellar door manager, explains. “Guests love that they get to work in the winemakers’ laboratory and enjoy the challenge of creating a finished wine that they can take home in an individual bottle.”

After the best ‘lesson’ you’ve probably ever had, check in to The Louise, a luxurious property nestled among vineyards and offering sweeping vistas of the valley. Though it’s easy to stay in once you’ve arrived (classic music is played as you step into your accommodation, all rooms are elegantly appointed; everything is divine), finish the day on a high note with a lavish dinner at the on-site restaurant. Together with his team, executive chef Ryan Edwards designs gastronomic masterpieces utilising the best seasonal local produce and doing as much as possible by hand (they bake their own breads and butcher and cure their own meats).

Book months ahead to secure a seat and select the tasting menu to indulge in what chef thinks is best. >

Rise early and head straight to the Barossa Farmers Market for fresh farmgate produce. Held every Saturday morning in the historic Vintners Shed, a visit here is a chance to stock up on food grown and produced by the locals. Many offerings are organic, a lot of the fruits for sale have been picked that morning, and everything is delicious! Take your time to stroll through the premises, chatting to the producers and growers to gain an understanding of the dynamic foodie scene.

Pack a picnic basket while shopping at the markets and enjoy a scenic drive around the valley before stopping for lunch at the Whispering Wall. Built between 1899 and 1903, this preserved wall of the Barossa Reservoir is fascinating because of its unusual acoustic effects – anything whispered at one end of the wall can be heard on the other, over 100 metres away!

Dedicate the afternoon to Seppeltsfield. Established by the Seppelt family in the early 1850s, the historic winery grounds and gardens are classified as a historic village by the State Heritage Act. Touring the beautiful expanse is a charming (and educational) way to while away the afternoon.

Seppeltsfield is the only winery in the world to release a 100-year-old port every year, and the Taste Your Birth Year Tour (2:30pm daily, bookings required) 76

offers a delightful way to learn about how this special custom was founded, as well as sample port created the year you were born. It’s the only place in the world where you can do this, and should most definitely be a must-do on any Barossa itinerary.

Continue your wine appreciation education with the 3:30pm Heritage Tour (11:30am and 3:30pm daily, bookings required), where you’ll join a wine guru on an expedition through the grounds (with stops at the distillery, barrel cellar and underground blending cellar) while learning about the Seppelt family and how they shaped Barossa’s wine trade. The tour fittingly ends in the old bottling hall – the place to sample Seppeltsfield drops and stock up on bottles to take home.

Then it’s onto Hentley Farm for more wine tasting before a beautiful dinner you’ll be talking about for years to come. When Keith Hentschke founded Hentley Farm his vision was to find land that would allow him to grow and forage produce in unique ways.

Today the way the Hentley Farm team champions the soil is a key contributor of its success, and the boutique wines made on premises are certainly worth sampling.

Headed up by chef Lachlan Colwill, the restaurant, housed in the stylishly renovated stables, has won a plethora of awards since its foundation in 2012.

Together with his team Lachlan focuses on sourcing fresh-as-possible produce. “We work on three boundaries,” he explains. “First we focus on produce farmed or growing wild on the Hentley Farm site; this supplies us with all our fruits and vegetables. Second we travel throughout the Barossa to find the best products available – often meats and game birds. Third we look to the rest of South Australia, which in my mind is one of the best locations in terms of quality and sustainability in produce in all of the world, particularly for its seafood.”

Patrons can choose from two set menu options (the Discovery menu or the du Jour menu), with matching wines highly recommended for the ultimate epicurean experience. Remember to book ahead.

SUNDAY BEST

There aren’t many better ways to culminate the Barossa experience than with a scenic helicopter flight over the valley. Cherry-pick from Barossa Helicopters’ variety of flight-tour options, then sit back and enjoy the panoramic views as the helicopter soars over the picturesque expanse. Be sure to bring a camera to record the unforgettable flight, as this is one memory you’ll certainly want to share with family and friends.

he endless rows of neon lights; the ancient lilongs (alleyways), humming with activity; the towering skyscrapers flickering with busy-bee workers; the slick shopping centres brimming with designer shops – Shanghai holds a whole world of excitement. But sometimes it can be exhausting, so it’s a good thing this glitzy Chinese metropolis majors in A-grade spas.

Pods of serenity cut off from the frantic rush outside, they’re just what the doctor ordered when it comes to unwinding and rebooting. With so many to choose from, where should you start?

STAY AND SPA

When it comes to uber-luxe hotels, Shanghai is a global heavyweight. But it’s a well-known fact in this city that those four or five shiny stars on your door mean nothing if you don’t have a world-class spa complex.

There’s a heady luxury to getting spa-ified into submission, then needing only to shuffle off – still in your bathrobe and hotel slippers, obviously – to drape yourself across your suite on a neighbouring floor.

The Shangri-La Pudong – which perches gracefully over the historic Bund promenade at a curve of the Huangpu River – is about as Shanghai as it gets.

Staying right in the thick of it, you can catch snippets of the city’s most famous view – across to futuristic Pudong – from your milky-hued bedroom, replete with silky fabrics so soft you could melt into them.

But a relocation to the warm-toned, womb-like CHI spa is essential; named after the traditional medical concept of ‘universal life force’, it has racked up awards in abundance – not only for its gigantic and numerous spa suites, but also a devotion to quality Chinese-style treatments. Simple offerings, done exceptionally well, are the linchpin here. Feel even the most stubborn of shoulder knots turn to putty during a Balance Massage, which mixes acupressure and massage to re-balance yin and yang (translation: you’ll feel extremely good, like the best-ever version > 82

of yourself). Up the clinical factor with a specialized Lymphatic Massage to detox your body of any nasties, or slough off Shanghai’s city excesses with a Mountain Tsampa Barley Rub. For those seeking indulgence, rather than simplicity, the options are here too – we’d urge you to feel no guilt when booking in for the Jade Facial, which culminates in a soothing mask of golden caviar. Apparently all that added collagen is great for hydrating the skin.

In contrast to the Shangri-La’s Asian-inflected atmosphere, a decidedly European vibe pervades at the Langham in Xintiandi. Expect sophisticated, clean lines, muted tones and a slightly retro flare. Set as you are by Shanghai’s answer to the Champs-Elysees, there are plenty of distractions; but no amount of shopping can outweigh the pleasures of the low-lit, atmospheric Chuan spa. Staying in the Langham’s crisp, breezy rooms is the only way to properly do it justice – how else are you supposed to work your way through the tome-like treatment menu, which extends to over 60 globally inspired options?

At Chuan, traditional Chinese therapies, centred around the five elements (metal, wood, water, fire and earth) meet with Euro twists, including some star products by lush French marine-bio brand Thalgo. Begin with the ‘bathing ritual’ in the day spa (basically, just knocking around the steam rooms, saunas and Jacuzzis for a bit) to get your blood flooding and relaxation in gear; then, make your way through the zen-like, candle-lit environs for a day of

self-improvements. Try old-school treatments such as Chinese moxibustion to get you body’s energy flow (qi) on point, or go a decidedly more modern route with a collagen velvet eye facial, great for combating any lingering signs of jet-lag. Swan back to your room, sleep it all off, rise and repeat.

When it comes to stay-and-spa combos, there’s nowhere that quite gives you that ‘pinch me, I’m in Shanghai’ feeling quite like the Water’s Edge Spa in the Park Hyatt. The Pudong-based hotel snakes over floors 73 to 92 of the World Financial Center, affording spectacular views of the city beneath. Through the floor-to-ceiling spa windows the city is carpeted out below you – but it’s hard to tear your eyes from the 20-metre-long infinity pool, which from some angles seems to melt into the horizon.

Rise early from your slick, monochrome room – equipped with its own spa tub and rainfall shower – to join a Tai Chi class in the adjoining pool courtyard.

Or, sleep in and beat a trail straight for the treatments later: refreshing lavender wraps will remove lingering skin toxins, or a ginger polish will restore balance, just for starters. And since this isn’t a spa that does style over substance, you can just as easily get a hardworking number too – for example, the Breath Easy Treatment, where you’ll inhale blends of eucalyptus, tea-tree and pine to improve your breathing and immune system; or the Tui Na ‘press and rub’ massage, which works your vital points to relieve body pain and fatigue, or give colds and headaches the what for. > 85

That ol’ vanilla massage fail to kick you into relax mode? No problem – so comprehensive is Shanghai’s obsession with spa-going that you needn’t look far to find treatments with a twist.

For example, at the Anantara Spa inside the PuLi hotel, the ingredients for your massage or body scrub are truly good enough to eat – or make that drink, as the majority of them are made using Chinese green, white and red teas. Enter the spa’s embrace, a cocoon of invigorating orange-and-red hues dashed with highlights of bronze, then turn yourself over for the steeping. The therapist can detoxify your skin with a green tea scrub, turn back the clock with an antiageing, balancing white tea and avocado body wrap, or rejuvenate your tired pores with a rose tea polish.

Getting the chance to chill out and sup from your own personal teapot is part of the deal, too.

The Four Seasons Stress Buster is a unique combination of body exfoliation, aromatherapy massage and scalp massage, crafted to help you sleep better, while the Eternal Beauty of the Lotus Facial – where flowers and caviar are lathered on in age-busting, luxurious layers – is designed to roll out your wrinkles.

As Shanghai does indulgence at the top level in every other way – shopping, restaurants and hotels included – why should it be any different with spas? If money is no object, this is the city in which to go no-holds barred.

Is it the floors of cool, silvery marble or the ones of pale oak? The cushy fabrics and fluffy pillows? Or is it the whopping 2,415 square metres over which you can spend literally days relaxing – whether it’s in exclusive VIP suites, the crystal steam rooms, or the adjoining tea lounge? t’s a tale of two Australian cities. One boasts the biggest Chinese New Year celebration outside of Asia, while the other is home to the oldest Chinese community in the Western world. Like the dragon and the lion, they are separate and yet utterly complementary. The cities are, respectively, Sydney and Melbourne – the former welcoming 600,000 people a year to its annual lunar festival, the latter having a Chinese connection that goes back to the 1800s.

A cultural colossus, China’s traditional New Year celebrations have spread around the world, with people of all backgrounds and cultures reveling in the theatre of ceremonies that go back thousands of years. But while both Melbourne and Sydney are incredible locations to experience the zest of the festivities, what really links these two urban giants is how they filter this ancient celebration though the prism of Australia’s modern aesthetic.

Generations of Australian Chinese people, who have grown up with a foot in both Eastern and Western cultures, have imbibed the ceremonies with a flavour that reflects their own experiences too.

“We wanted to do something exciting and different and contemporary while also respecting tradition as, of course, that’s what the festival is all about,” says Claudia Chan Shaw, curator of Sydney’s Chinese New Year Festival. “Last year we had the lanterns in the shape of the Terracotta Warriors and people went crazy for them because it was so fresh. This year we thought, ‘How can we refresh it and keep it amazing?,’ and not only having it in one spot but to have it going through the city – that’s a first for the Chinese New Year Festival in Sydney.”

The result is a collection of public performances, exhibitions and food stalls spreading from Chinatown right through the CBD and to the harbour. “The highlight of our festival is Lunar Lanterns,” says Claudia. “This will be an exhibition of giant lanterns representing signs of the Chinese Zodiac – like a 50-metre-long dragon or a five-storey high monkey.

In 2016, the festivities are centered around the new moon on Monday, February 8. Following a 12-year cycle of the animal zodiac (2016 is the Year of the Monkey), the 14-day celebration is filled with traditions that rid bad omens of the year that has passed and welcome the good fortune to be brought by the year ahead.

Walk the length of Chinatown and you’ll enjoy a world of hanging lanterns, street music, busy teahouses, dumplings, dumplings and more dumplings.

Lining the footpath are a seemingly endless amount of restaurants and stores, selling everything you’d expect to find on the streets of Beijing. Rare herbs, such as wild ginseng, dan gui and wolfberry sit in glass jars filling store shelves alongside dried persimmon and peeled sour tamarind, all imported from Asia.

DELIGHTFUL DIXON STREET

Not to be left behind, Sydney’s CBD boasts its own paifang-bedecked street: Dixon Street. Here too, the range of restaurants is plentiful, and long-established local favourites such as East Ocean and Nine Dragons have been in service for three decades each.

The same applies at Golden Century on Sussex Street where, for 25 years, husband-and-wife team Eric and Linda Wong have been serving Cantonese cuisine to up to 500 people at a time. “I’ve watched customer’s children grow up and then met their children’s children,” says Linda. And it’s not the only thing Eric and Linda have seen grow.

“Chinatown has exploded in the last decade,” says Eric. “When we first opened in 1989 you could only find Cantonese cuisine. Only one or two restaurants could be found on Sussex Street. As Sydney’s Chinatown is expanding with slick additions such as Waitan – which boasts the city’s largest round table, seating 32 – and The Eight, which has reinvented the classic dumpling with modern interpretations, Golden Century has tried to stay close to the classics. “We aim to perfect recipes that are thousands of years old and provide our customers with an authentic Cantonese dish,” says Eric. “We want to eat something that we would want to pay for back in China. The most modern thing on the menu is the wine list.”

But, in truth, modernity is found everywhere – whether you’re in Sydney or Melbourne. And that’s what will keep the country’s Chinese New Year celebrations exciting and relevant for another 2,000 years.

bird taking flight, a spacecraft hovering over a deep quarry or a great ring rising up out of a lake.

It seems China’s new five-star hotels can look like almost anything – apart from hotels.

In the last few years China has employed some highly adventurous architects from all over the world – and China itself – to create eye-catching hotels that challenge our very idea of what a hotel might be.

Many use Chinese symbols – the moon, the lantern or the scallop – while others take the idea of an imperial palace or skyscraper further than it’s ever gone before.

But all are surprising and exciting and point to a design future no one could have imagined 10 years ago.

湖州喜来登温泉度假酒店

SHERATON HUZHOU HOT SPRING RESORT On the southern banks of Taihu Lake, in Huzhou Zhejiang Province, a great ringed arch rises dramatically out of the water. This is the Sheraton Huzhou Hot Spring Resort, a 101-metre glass and concrete structure designed by Ma Yansong, co-founder of MAD Architects, a company dedicated to futuristic buildings based in a contemporary interpretation of the eastern ethos. MAD also created the bulging high-rise towers in Ontario, Canada known as ‘Absolute World’.

In Huzhou, its 27-storey structure consists of two curved towers, named Crystal and Jade, that rise towards each other and between them offer 321 luxuriously furnished guest rooms, plus a spa that is located in the underwater link beneath the two towers.

True to his Chinese roots, Ma Yansong has created a building that combines with its reflection in the lake to form, a circle, an image that references the rising moon, an important symbol in Chinese culture. Within this shimmering ring of light the design uses a reinforced concrete core wall structure of the kind that first held up the Empire State Building in New York City.

The building has also been designed with a night-time impact in mind. Coloured LED lights pan and ripple across the two curved towers, turning the whole building into an incandescent work of art.

广州W酒店

W GUANGZHOU Looking like a fragmented box, the W Guangzhou is made up of black and clear glass elements that reflect each section’s function. The architect Rocco Yim, who has developed some of China’s most iconic projects, like Guangzhou’s Guangdong Museum, has built a 317-room black glass boutique hotel topped by a clear glass roof that contains its gym and restaurant. Meanwhile, rising out of the same foundations, a black-glass, 160-apartment residence block is bisected by a clear glass swimming pool halfway up. The effect is dramatic, particularly at night-time when the different asymmetrical elements seem to be drifting apart from each other.

The hotel interior is the work of Yabu Pushelberg, Glyph of Toronto, AFSO of Hong Kong, A.N.D. of Tokyo, and Design Wilkes of Kuala Lumpur. On entering the hotel lobby, guests are greeted by a 19-metre tall ‘Luminous Water Wall’, a light feature of flowing colour.

The hotel’s bar by the architect and designer Kosaka of A.N.D. is a three-storey glass loft suspended from the side of the hotel with optical fibre strings of light cascading down the inside of the glass. At night the pulsating effect of this light feature can be seen from both inside and outside the hotel.

As a global design powerhouse, W Hotels Worldwide continues to push the boundaries with each new design.

Like two piles of building blocks collapsing elegantly either side of a central column, or a giant bird unfolding its wings, the Langham Guangzhou is a daring design in glass, steel and aluminium by Andrew Bromberg. Bromberg, an American architect based in Hong Kong with the architectural practice Aedas, was recently responsible for Sandcrawler, the new playful regional headquarters for Lucasfilm in Singapore.

This 107-metre high hotel, opened in 2013, dominates Pazhou Island in the Pearl River and is a deliberate echo of an office block sited 160 metres away, which Bromberg also designed. The idea behind the design was to create something so individual that the two separate buildings would appear to be linked in the mind of the beholder – and that, Bromberg has certainly delivered.

He has also given a distinct profile to the Nanfung International Exhibition and Convention Center, the second largest commercial and exhibition complex in the world. Aedas likens the exterior of both buildings to a pile of randomly stacked old-fashioned pencil cases; but once inside the hotel, guests see much more order. A massive, open, 15-storey atrium rises up above the lobby of black-and-white pebbles. All of the hotel’s 500 rooms lead off from this cleanly delineated void and most have excellent views over the Pearl River. The hotel also offers five restaurants and bars on different levels.

CROWNE PLAZA RESORT XISHUANGBANNA Taking its inspiration from traditional Thai palace design, Xishuangbanna’s Crowne Plaza Resort makes the most of the tropical landscape of southern Yunnan province. This huge 190,000-square-metre hotel complex was masterminded by P49 Design of Thailand, a specialist practice for interior design. The company was founded in 1979 by the influential Vipavadee “Pao” Patpongpibul.

On arrival guests are ushered into an openceilinged entrance lobby that combines Thai elements with local red-and-black volcanic rock. There’s also a 10-metre waterfall preparing guests for the resort’s celebration of the local rainforest and nature reserve.

In all there are 520 rooms, each with large balconies to make the most of the extensive tropical gardens. Views take in the tree canopy of broadleaf evergreens, a tall bamboo forest and gardens of frangipani. The Dragon Ballroom seats up to 1,500 guests and is decorated with the heart-shaped leaves of the Bodhi, Buddhism’s sacred tree, while its chandeliers that look like inverted parasols are said to symbolise Thai pavilions.

Much of the architecture is intent on referring the guest outward, showcasing the rainforests of Xishuangbanna, a UNESCO World Biosphere Reserve.

In the evening, street lights shaped like peacock feathers illuminate the walkways and elephants in the park can be heard calling to each other.

THE ST. REGIS SHENZHEN Rising like a sleek space rocket over Shenzhen’s Financial Centre, the new St. Regis Shenzhen occupies the top quarter of KK100, a 100-floor tower that is the tallest building in Shenzhen.

KK100 is the focal point of a redevelopment of old Caiwuwei village, an area known for its underdeveloped infrastructure. A joint development initiative with the villagers created Caiwuwei Co. Ltd, and it was this company that commissioned Sir Terry Farrell’s architecture practice, Farrells, whose offices are scattered around the world – London, Shanghai and Hong Kong. Their aim? To design a business/housing/ shopping complex that would benefit everyone.

This remarkable glass-and-steel skyscraper is topped by an observatory floor at 427 metres above the ground, and its height-width ratio of 9.5:1 makes it one of the slimmest buildings in China. The St. Regis Hotel occupies floors 75 to 98, while down below the KK Mall has its own garden and several restaurants. The Mall also contains Shenzhen’s first IMAX cinema.

Although it appears pointed from one angle, the building also appears like a great cascade of bright water when faced full on. According to Caiwuwei Co. Ltd this is an “allusion to a fountain representing the wealth and prosperity springing from the economic success that is Shenzhen.”

郑州建业艾美酒店

LE MERIDIEN ZHENGZHOU The Shanghai-based architectural practice of Neri & Hu was inspired by Henan province’s literary, visual and culinary history to create a hotel they have dubbed an ‘archive’ of new and old artefacts. To give this idea form, partners Lyndon Neri and Rossana Hu created a 25-storey structure that resembles stacked boxes. Each box is clad in dark metal panelling and is cantilevered out to disguise the bulky proportions of the inner structure.

To further differentiate the boxes the glass front of each is a slightly different tint of green, while the spaces between boxes are picked out in clear glass. The sides of the boxes, where they extrude, are clad in black and coffee-coloured metal panels, each textured with perforations that create the image of the local Henan wild rose.

Down below, two floating canopies supported by a cluster of bronze poles lead the visitor to the main entrance. Once inside, the five-storey podium rooms are accessed via a central lift core, conceived as a huge cave recalling the nearby Longmen Grottoes.

In all, 350 guestrooms and suites are contained on the upper floors. All have floor-to-ceiling windows and are decorated in a palette of rich, earthy hues. One hour’s drive from Beijing’s city centre, a remarkable new hotel rises up on the side of Yanqi Lake. The Sunrise Kempinski is a great glass disc designed by Shanghai Huadu Architect Design Company to represent the rising sun. Cleverly sculpted in glass and steel, the building resembles a scallop – a Chinese symbol of good fortune – from the side.

Chief designer Zhang Hai Ao worked with an international team of 60 designers from as far away as Britain, Italy, Spain, USA, Holland and the Philippines to create this 21-floor objet d’art with its 10,000 panels of glass. The height and orientation of the hotel means that at its top it reflects the sky, while the middle section reflects the Yanshan Mountain and the bottom lake.

Entering through a circular aperture shaped like the mouth of a fish (another symbol of prosperity) guests find the hotel’s lobby, rounded like a cloud, on floor three.

Interiors by DiLeonardo feature circular glass spectrums suspended on stainless steel cables that rise up like bubbles of air within that cloud. This lobby, according to the design team, represents a ‘cloud lifting the sun’.

At night all reflections disappear as thousands of LED lights cause the hotel to glow like a Chinese lantern over the lake, or even like a reflection of the moon above.

DAWANG MOUNTAIN RESORT CHANGSHA The Dawang Mountain Resort near the city of Changsha is one of the most striking projects in modern China. And that is saying something. Currently under construction over a deep quarry, the complex appears to hover like a great glass spacecraft containing the Deep Pit Ice and Snow World recreational facilities.

From cliff to cliff it spans 170 metres over a hanging garden, creating a leisure space of islands, water features, and cliff-side pathways. As well as an indoor ski slope and water park, the Dawang Mountain Tourism Resort Center also offers a five-star hotel contained within a 100-metre high tower that will be the first part of the complex visible as visitors crest the ridge.

The hotel, whose sides flow organically like the glass spacecraft below, contains 270 single and double bed suites, 60 Executive Suites with an Executive Club Lounge and a six-room Presidential Suite, all with views to Tongxi Lake and Dawang Mountain itself. Outside, a cantilevered swimming pool creates a 60-metre high waterfall into the quarry pit. The whole complex has been designed by the Austrian company Coop Himmelb(l)au and led by one of its founding partners, architect Wolf D Prix. The company’s past projects include a church with steel whirlpools that spiral into skylights in Austria, and a contorted steel conference centre in Dalian, China. But here, on Dawang Mountain, it is doing its most remarkable work.

gluten and dairy, which is surprising considering restaurants and cafes in mainland Australia are still getting used to the idea.

When it comes to food allergies, most places on the island actually have offerings for the lactose or gluten intolerant. But, surprisingly, one of the most extensive gluten-free menus can be found at Bommie, inside the Hamilton Island Yacht Club. The contemporary Australian meals showcase fresh, locally sourced produce: freshly shucked oysters, mud crabs, beef, duck and salmon. This is another beautiful restaurant serving innovative meals, its dimly lit ambience beckoning those with an eye for life’s finer things.

Which brings us to one of the most exclusive resorts in all of Whitsundays: qualia. Located at the tip of the northern end of Hamilton Island, with views to the north offering a sunny outlook, it takes in the breathtaking waters of the Great Barrier Reef.

The whole place adopts a nature-inspired vibe, even on the interior – a value that Australian architect Chris Beckingham had every intention of employing.

It’s surrounded by native eucalypt trees and built using local and imported timber, stone and glass.

To complete the look, New York-born interior designer George Freedman was given the brief to create interiors that were elegant yet relaxed and inviting.

Almost every piece of furniture featured at qualia is bespoke; Freedman considered everything: “Think of where we are,” he says. “The first criteria was that every fabric selected would be physically comfortable to bare >

Away from resort life, there are still plenty of culinary offerings. Coca Chu is a name every worker on the island will mention as one of the ‘must-eat’ places on Hamilton. In fact, on any given night, you’ll see many a familiar face dining at tables next to yours (you know it’s good when the locals eat there!) The modern eatery adopts Thai and Southeast Asian flavours in its share-style dishes – an enticing combination of mouth-watering hot, sweet, sour and salty flavours.

Meanwhile, on the main street, you’ll find Romano’s for superb Italian, Marina Tavern for pub food with a view, an ice-cream parlour, renowned pizzeria Manta Ray, and even a mini-supermarket. And, for those so inclined, the four-hour Sunset Cruise and Dine experience aboard the Denison Star departs opposite the post office, traversing the deep-blue waters of the Coral Sea while serving a three-course meal with a complimentary bottle of wine.

But how do you reach the main street? Well, you can either wait for a free shuttle to take you there (one comes every 10 minutes) or – and this is option is significantly more fun – hire a golf buggy! It’s more expensive than the bus – a two- or four-seater costs $87 for 24-hour hire – but when will you ever get to say your main transportation on an island was a humble golf buggy?

snorkelling – but there’s so much more around. What many visitors don’t know is that Hamilton Island is also covered in lush terrain, able to be explored on an ATV or even by foot on a bushwalking escapade.

And for those not so tempted by nature, there’s always the choice of bowling, trivia, go-karting, art classes, a wildlife park and even a shooting range.

After an adventure-filled day, it’s tempting to retreat to the comfort of your room – but don’t! The world’s largest coral reef is home to the most diverse animal and plant life on the planet – and, considering it can be found right in the heart of it, Hamilton Island is the perfect base. Inside Hamilton’s tour booklets is an array of experiences, including snorkelling the reef ($209 per adult), diving it (from $299 per adult), and taking a scenic flight over it to observe the iconic Heart Reef, the azure waters of Hill Inlet and the pristine white sand of Whitehaven Beach ($299 per person). On the outer Great Barrier Reef is Reefworld, the largest floating pontoon in Australia, where visitors can truly experience the tranquillity this part of the world offers.

Tours from Hamilton Island can be all-inclusive (a one-way, half-hour scenic helicopter flight to Reefworld for snorkelling or diving, a buffet lunch and afternoon tea, then a catamaran back to Hamilton, all for $440 per person) or really all-inclusive (a return cruise from Hamilton Island to Reefworld, use of snorkelling equipment, a semi-submersible tour, a swag under the stars in which to sleep overnight – or a fully equipped private cabin, two buffet lunches, dinner, morning tea and afternoon tea, from $425 per person).

True nature bugs should arrange to camp on nearby Whitehaven Beach. Yes, we’re talking about the 7km beach with sand so white it’s almost clear and dazzling turquoise water that’s shown on all the postcards promoting the Whitsundays. This paradise is not, in fact, located on Hamilton Island – but it can be accessed from it. It’s not too well-known (which means it’s still relatively untouched), with seven campsites allowing a maximum of 36 people nestled among lowland vine forest and eucalyptus woodland, just behind the beach. Accessible by catamaran, helicopter or seaplane, the beach on the south-eastern end of Whitsunday Island doesn’t have the best mobile reception, and it’s essential to bring drinking water, rubbish bags and insect repellent, but it’s nonetheless a truly unforgettable experience. > 116

A MATTER OF TIME Now that we’ve established a visit to Hamilton Island is at the top of the ‘must-do’ list, it’s time to figure out when to go. The temperature is quite pleasant yearround – even in the Australian winter (June to August) when, although days could be overcast with light rain, it’s still warmer than on the mainland.

Perhaps the main deciding factor, then, will be special events. At any given time of the year, there’s a plethora of vessels docked at the marina. In fact, it’s not uncommon for visitors to charter their own yacht, proving this is the place for boat enthusiasts to be. Arguably the most unmissable event is Hamilton Island Race Week. Held every August, one of the world’s most famous yachting events features races, lunches and dinners presented by celebrity chefs, fashion, golfing competitions and wine tastings.

Then there’s the five-course Endurance Series spanning May to November, which tempts a number of world-class athletes. From a half marathon, triathlon and beach run to canoe racing and ocean swims, organisers promote this as the perfect way to “push yourself in paradise.” So, really, what we’re trying to say is, whenever you visit, you won’t be disappointed.

n Shamian Island, two Guangzhou women jog the length of the old Central Boulevard listening to music. Tourists photograph the wrought-iron balconies and verandahs of the 19th-century European mansions lining this island. It’s early morning but you may already find a fashion model or a Chinese bride posing under the sweep of one of those huge fig trees.

Guangzhou is the ‘Garden City’ of China. Despite its fast-paced urban life and busy freeways, the city map is dotted with green patches. Some were built as public parks, some as imperial projects, and some were just left bare and became nature reserves in due course. But wherever you come across parks in Guangzhou, you’ll discover people come to exercise, to enjoy waltzing together or tai chi, or simply to wander around and savour the scenery.

Shamian is a perfect example. Lying in the centre of the city, this old sandbank in the Pearl River was transformed into a sequence of tree-lined boulevards by the French and English to whom it was granted as a trading concession. Once upon a time there were 13 factories here, numerous banks and some splendid mansions, all accessed by two bridges – one guarded by the French, one by British Sikhs. Today it’s a

charming place to stroll, stopping for lunch in one of the many cafes overlooking the Pearl River.

Guangzhou has a number of parks along the Pearl River including the garden island of Zhongyang 8km to the east with its concert hall and art gallery, and the park at Pazhou Pagoda 20km to the east of Shamian.

Constructed 1597-1600, this octagonal pagoda is situated on a knoll at the south bank of Pearl River.

Although it was built as a Buddhist monument, the pagoda soon became a useful navigation point for merchant ships on the Pearl River travelling inland from Hong Kong. Now it’s listed as part of China’s cultural heritage and the park is a popular place for people who want a breath of fresh air in Guangzhou.

Most of the parks in this city lie in a great green arc that curves north-east out of downtown Guangzhou.

Yuexiu Park, just within the Inner Ring Road, is the largest urban park in China. Almost a kilometre square, the park contains sports grounds, historic monuments, tea houses, trees and three artificial lakes.

Its main gate, decorated with porcelain dragons, lies on Jiefang Bei Lu, and in the middle of the park stands Zhenhai Lou, a 14th-century three-storey gate tower that once formed part of Guangzhou’s city walls in the time of the Ming dynasty.

Walk north from here and you’ll reach the Garden of Chinese Idiom where idiosyncratic sculptures illustrating Chinese sayings are displayed, while to the south you come to the Five Rams statue that commemorates the legend of the foundation of Guangzhou. Two thousand years ago, it is said, Guangzhou was a barren land whose people were teetering on the edge of starvation. One day five immortals in colourful garments came riding on five rams and the rams held sheaves of rice in their mouths. The immortals presented the sheaves, gave blessings to the city and left. Then the rams turned into stone and the city became a rich and populous place. Ever since, Guangzhou has been known as both the City of Rams and the City of Sheaves.

Yuexiu Park was one of the first parks not to be laid out for the imperial rulers. As one of China’s oldest civic parks it has developed as a venue for traditional events, like the regular lantern shows and a major flower show that’s held during the Moon Festival.

HISTORIC SETTINGS Immediately to the south of Yuexiu Park, the Sun Yat-sen Memorial Hall stands in its own gardens.

Built 1929-31 with funds raised by the people of Guangzhou and expatriate Chinese, it commemorates Dr Sun Yat-sen, the Chinese revolutionary who established a republic in 1912 but died in 1925. The hall is a beautiful octagonal structure decorated with a traditional blue tiled roof and a golden slab on which >

are incised four Chinese characters: ‘Tian Xia Wei Gong’ (Universal Harmony and Peace), written by him.

The actual site of the park commemorates where the first president of the republic took his oath in 1912.

On early mornings, you’ll often see elders dancing and performing tai chi here.

To the south of this memorial lies a People’s Park, which marks the historical centre of old Guangzhou.

And to the north is Sanyuan Temple, the largest and oldest Taoist temple in Guangzhou, built 319 AD and decorated in red and gold symbols. Surrounded by trees, the small park radiates an aura of serenity.

The same can be said for the Temple of the Six Banyan Trees, which stands just to the west in its own grounds.

It was built in 537 AD for King Datong of Liang

Kingdom and is listed as one of the top four Buddhist temples in Guangzhou (alongside Haitong Temple, Guangxiao Temple and Hualin Temple). Here you’ll see locals praying for good fortune and happiness at New Year and on special lunar days, but also just relaxing.

To the north of this great arc of greenery sits Luhu Park near the southern foothills of Baiyun Mountain.

This is an extensive park covered by wetlands, hills and grassland, and its name literally means “Lake at the Foothill”. The park certainly lives up to the rural idyll suggested by that name. It’s not uncommon to see people meditating here surrounded by colourful bauhinias in bloom. Although the park was only enclosed in 1948, it contains a number of ancient buildings including Jufangyuan Garden with its

Visitors come to Luhu Park to enjoy typical Cantonese meals at Zhengda Fangyuan, a restaurant full of antiques that stands on the site of an old Taoist temple. They also enjoy yum cha at the longestablished and well-renowned Luming Restaurant.

BAIYUN AND BEYOND Finally, the most northerly in this line of parks is Baiyun Mountain Reserve, 7km north of the city centre and consisting of 30 square kilometres. Known as the ‘First Peak under the Southern Sky’, Baiyun Mountain rises to a height of 2,216 metres, and from the top of visitors can enjoy a grand view of the ‘cloud ocean’

as it rolls below over Guangzhou. The mountain has seven great sights, including the Nengren Temple and the Nine-Dragon Waterfall. It’s a three-hour walk from the entrance to the summit, a route that used to be lined with monasteries. Now it’s mainly given over to woodland, tea houses and pavilions. There’s also a cable car from the main entrance to the Cheng precipice, which marks the halfway point on your ascent.

The name of this precipice comes from Cheng Ki who was ordered to come here to find a herb of immortality for the Emperor of China. When Cheng found it he nibbled a bit, but then saw the bush vanish before his horrified eyes. So full of remorse was Cheng that he flung himself off the precipice, but because he was now immortal he was caught by a stork and borne up to heaven. >

Taoist meditation is gentle and involves sitting, standing or lying down while trying to balance one’s energies and enabling spirituality to develop.

Walking barefoot on cobblestones, walking backwards, clapping hands or striking one’s back against a wall are all useful early morning exercises.

Yum cha is Cantonese for “drink tea”.

These days it refers to morning or afternoon tea taken with small, sweet dim sum dishes.

Today Baiyun Mountain is often referred to as ‘the lung of the city of Guangzhou’. The quality of its fresh air attracts both visitors and locals to make the climb. Guangzhou’s parks extend well beyond the city limits. Some 17km out stands Yuyin Shan Fang, also called Yuyin Garden, which, along with Qinghui Garden, Ke Garden and Liang Garden, make up the Four Famous Gardens of Guangdong. It’s located in the Fanyu District and occupies an area of 1,598 square metres. Yuyin Garden was built in 1867 during the sixth year of the Emperor Tongzhi’s reign. It has an arched bridge that divides the garden into east and west sections. Each section contains its own lake, while around the 300 steps of the garden there are pavilions, terraces, halls, artificial hills and many carvings in brick, stone and wood.

Meanwhile, 20km to the east of Baiyun Mountain in the Tianhe district of Guangzhou there is the South China Botanical Garden, the oldest and largest South Asian tropical botanical garden in China. It’s also known as ‘China’s Green Gem’. As well as hosting thousands of tourists, the garden has also welcomed

many politicians, on state visits, who go there to plant ceremonial trees in the park.

As with so many of Guangzhou’s parks there is much to see and do beyond relaxation. The botanical garden also has a ceramic production area that tells the story of the first pottery to be made in China.

There are also displays on early farming methods and archery and visits to a tree house within the park.

All these sites are much-visited and much-loved.

As the Chinese proverb remarks, ‘A bottle of wine is pleasure for an hour and marriage is pleasure for a year; but pleasure for a lifetime takes a garden.’

One up from perfection There’s a general rule in motoring journalism that has held true throughout the decades: test drive the car. From cold-climate, high-altitude vineyards in NSW, to the warm, beachside estates of Margaret River, and across to the fine pinot noirs found in the cooler wine growing regions of Yarra Valley and Tasmania, the potential from Australia is nearly limitless.

While wine styles from South Australia still excite connoisseurs and collectors, it’s some of Australia’s unique wines that should be on their radar. Not only are some of the lesser-known regions providing exceptional drinking, but they are also worthy of investment.

The Hunter Valley is arguably Australia’s oldest wine region, and famed for wines produced from the white grape Semillon. When young, Hunter Valley Semillons are tightly wound, finely structured and highly refreshing, but with time in cellar (often decades) they mellow and become soft and honeyed.

While Burgundy still holds the wine world’s attention for pinot noir, there are exceptional examples found in other wine regions. For those seeking fine wines, try Yarra Valley, Mornington Peninsula and Tasmania.

Meanwhile, fuller-flavoured red wines shouldn’t be forgotten, but the exploration beyond the traditional Barossa Valley is worthwhile.

Regions that have warm climates and varied soil profiles, like Heathcote and McLaren Vale, are producing wines of exceptional balance and an ability to mature gracefully.

Returning from days at sea to the famed pearling port of Darwin, his father and fellow pearlers would spend many an evening inspecting the prize of their latest find. Entranced by the allure of a sublime pearl cradled in their weathered fingers, they’d discuss its virtues, mesmerised by its lustre and beauty while sharing stories and ambitions.

In his teens, Nick watched his father embark on a journey that would shape the family’s future. Partnering with Japanese pearl culture experts and harnessing his local pearling experience, his father set a framework that would enable the next generation of Paspaley’s to fulfil his dream.

Those dreams have become a reality, and the Paspaley flagship store, set in the heart of Sydney’s buzzing CBD, is a testament to their success. WHAT LIES BENEATH

From its humble beginnings in the 1930s, Paspaley’s pearling fleet has dived the Indian Ocean and Arafura Sea for the extremely rare Australian South Sea pearl oyster, whose binomial name is Pinctada maxima.

Prized for their huge shells of lustrous mother-ofpearl, these solitary sea creatures would occasionally reveal a rare natural pearl, treasured for its incomparable size and magnificence. the ages. The pearls’ high transparency and colour overtone have become distinctly Australian.

Wild Pinctada maxima oysters live in sparsely populated beds in isolated tropical regions of the Indian and Pacific Oceans. In the mid-19th century, the world’s richest beds of Pinctada maxima were discovered near Broome in Western Australia. These pearling grounds soon became the most important source of mother-of-pearl, and still are today.

Paspaley understands that a pristine environment is essential to the production of fine-quality pearls and has long been an advocate for the protection of the seas off northern Australia.

Paspaley nurture its pearl oysters on a remote network of over 20 farms, stretching more than 2,500km across the pristine waters off the north-west coast of Australia – about the same distance as from London to Moscow.

Thanks to strict guidelines set by the Government, Australia is the last place in the world where wild Pinctada maxima oysters still exist in commercial quantities to be used for pearl cultivation. Australia’s carefully regulated quota system has earned them an international reputation as a model sustainable wild fishery; the pearl beds are healthier today than they have been for more than a century.

To fully understand just how rare and valuable an Australian South Sea pearl is, we need to crunch the numbers. It takes a Pinctada maxima oyster two years to produce just one cultured pearl. It is considered a marvel if a Pinctada maxima produces more than one pearl at a time. Due to their rarity, Australian South Sea pearls account for a mere 0.08 per cent of total global pearl production.

means they account for an estimated 21 per cent of the total value of cultured pearls produced in the world each year. While many brands would struggle with the rarity of South Sea pearls, Paspaley embraces it.

MODERN CLASSIC

Paspaley has adopted a ‘pearl first’ design philosophy, using the pearl as inspiration for a piece of jewellery.

Paspaley’s newest collection, Maxima, is a tribute to its mother-of-pearl origins. Celebrating a landmark 80 years in the pearling industry, the 2015 collection harks back to the days when Nicholas Paspaley, MBE first began diving for the Pinctada maxima pearl shell on the isolated seabeds off Australia’s north-west coast.

So what can you expect from the collection?

Think deconstructed teardrop shapes; pieces that are wearable, versatile and elegant, from fashionable split rings and elongated drop earrings featuring white gold and diamonds to long, draping body strands, looping necklaces, bracelets and pendants in yellow gold. You won’t find anything overly manufactured, rather, raw pieces that look like they’ve been naturally crafted.

Places to eat in Sydney 悉尼美食 I don’t think you can go past Rockpool Bar and Grill for a beautiful meal and excellent service. On a different note, I’ve recently been introduced to Saké, a Japanese restaurant in The Rocks, which does some fantastic high-end Japanese food.
