From the CEO WELCOME TO THE second issue of The Star, a magazine highlighting the thrilling experiences on offer to domestic and international guests, and our local communities, at our Sydney, Gold Coast and Brisbane properties. Earlier this year, we unveiled The Darling at The Star Gold Coast, expanding our portfolio of world-class hotels. We started construction on the transformational Queen’s Wharf Brisbane project and we are progressing with our plans for a Ritz-Carlton hotel in Sydney. These and other developments, in conjunction with our Hong Kong-based partners Chow Tai Fook and Far East Consortium, boast an investment potential of more than $5 billion. They mark the next stage in the evolution of The Star Entertainment Group, adding at least six hotels, scores of new bars and restaurants, and significant additional hospitality and tourism offerings to our properties. In April, we were delighted to be a key supporter of the Gold Coast 2018 Commonwealth Games and provided a world-class hub for athletes and guests from around the world to enjoy. During a wonderful two weeks of competition, The Star welcomed more than 6,500 guests to The Star Grand and The Darling. We also served 120,000 meals and 360,000 drinks as athletes and visitors celebrated daily on the lawn and at our newly opened Nineteen at The Star restaurant and bar. It was a hugely successful Games and highlighted our commitment to producing unforgettable experiences for guests and visitors alike via the 8,000-plus dedicated team members we employ across our properties. Their enthusiasm adds to the excitement of the offerings we hope you will have even greater insight about after reading this issue of The Star. Enjoy.

Home of the Arts and Hit Productions have teamed up to create locally produced Hotel Sorrento. Set in the Victorian seaside town of Sorrento, the play revolves around three sisters reunited after 10 years apart.

Sydney Dance Company will travel north to perform ab [intra] for a Gold Coast audience. The work is the brainchild of Rafael Bonachela and explores the depth of human impulses – hence the name, which means “from within” in Latin.

You’re guaranteed a warm welcome – and some light entertainment – at the entrance to The Darling Sydney thanks to commissionaire Murray Iredale Tell us about your career path to The Darling… I did full-time training as an actor when I was 20 – I had parts in TV shows Home and Away, Water Rats and Fat Pizza, as well as touring with a stand-up comedy show, while also pursuing various roles in customer service. When Sydney Lyric Theatre opened in 1997 I joined as front-of-house staff, then in 2011 the job as commissionaire and doorman at The Darling came up. Because of my natural affinity for talking and interacting with people, I was suited to the role. What’s involved in the job? The bare bones of what I physically do might not seem like much – you’ve got a car pulling up and you’re getting people’s bags – but it’s more about that first impression. My role really is the welcoming, making guests feel

special, bringing them through to reception and making sure everything runs smoothly – bags are collected and delivered properly and the car is looked after. Since I’ve been doing it I’ve expanded the role and made it my own, and I’m even considered the face of The Darling. What do you love about it? I still get to perform as an actor from time-to-time through my agent, but this role gives me the opportunity to use the driveway as my stage. Everyone gets an individualised welcome with me. Because I sing and write songs, guests get their own signature tune that I develop on the spot for them. I suppose, for me, it’s a case of being able to perform all the time. The guests are part of that; they do genuinely get a thrill. It inspires me, and it’s the reason I continue to do it. Have you had any unusual experiences with guests? There have been some funny stories. There was a gentleman one time who was waiting for his wife; they were running late for a flight. The wife comes out and says she’s got to pick some stuff up from Gucci. She’s in her gym gear so I make a quick assessment and say, “It’s on the other side of the complex, but you look fit, so let’s run.” We blaze a trail, cutting through the food court, getting around chairs, bouncing here and there. She gets her product, we pace back, and they make their flight. What’s your work motto? You get energy by giving energy. The more energy you give out, the more people want to give you in return. ◆

T WAS THE EGYPTIANS who first

used the symbol of a five-pointed star in hieroglyphs. Since then, stars have remained an object of fascination and aspiration, emerging as a powerful symbol of luxury and status. However, from Hollywood to hotels, the term “star” has increasingly been tossed around carelessly. In the hotel business alone, just under 100,000 properties are identified by the World Tourism Travel Council as luxury; yet customers still struggle to discern the genuine from the fakes. The rise of user-generated review websites was supposed to bring transparency to the market, but instead, simply created more confusion. For consumers, it has never been harder to determine what makes a good hotel great, and an excellent hotel exceptional. However, one hotel rating system has taken on the task of delivering transparency, meritocracy and meaning to the hotel-based star rating system: the Forbes Travel Guide. The only independent global ranking system for luxury hotels, restaurants and spas, the Forbes Travel Guide anonymously evaluates hotels using a meticulous five-star rating system. “Plenty of people call themselves five-star, but really, are they? This is an actual process,” says Forbes Travel Guide CEO and industry legend, Gerard J. Inzerillo. that The Darling is one of only 199 hotels to be awarded so globally – with other notables including The Ritz-Carlton New York, Central Park and The Rosewood Beijing. “Being awarded five stars by Forbes Travel Guide is such an achievement and puts The Darling among the most reputable in the world,” says Greg Hawkins, managing director at The Star Sydney. “The team at The Darling has worked incredibly hard to create a level of guest service that is truly first-class. They are committed, enthusiastic and, most importantly, fully understanding of the service levels required to ensure our guests enjoy an unforgettable stay.” Service is at the heart of the Five-Star system. Hotels are assessed using a proprietary algorithm that weighs service at 75 per cent and facilities at 25 per cent. “People ask all the time: is there a common denominator between your 199 Five-Stars around the world? Because how can you compare a hotel like the Little Nell in Aspen with some of the Five-Star operations in Macau?” Inzerillo says.

The answer, according to Inzerillo, is achieving alignment between government, the private sector and hotel management, which ultimately creates a culture of service that is dedicated to the guests. “That’s when you get the highest performing hotels in the world. That’s what distinguishes those 199,” he says. Of course, the standards used to rank the hotels are not static. Inzerillo gives an example of a standard where for years, you couldn’t have a Five-Star unless you had a tablecloth in the restaurant; a standard now retired to reflect a different time. Other parts of the review process require environmental and cultural flexibility. How you greet a guest in Bahrain, for example, may be different to how you greet someone in Tokyo. “But the cleanliness of the guest room in Moscow must be the same as cleanliness of the guest room in Vienna,” Inzerillo maintains. As well as using anonymous evaluators, the integrity and transparency of the process is sustained by publishing the standards for the industry, and consulting with the Standards Advisory Committee. The council of 31 hospitality experts (including representatives from the prestigious concierge organisation, Les Clefs D’or, and The Darling Gold Coast’s general manager, John Autelitano), serve a two-year term and offer an industry perspective on the ratings process. However, the core of the process remains service. “Of course, we have some very black-andwhite standards. Did they smile? Did they make eye contact? Those are very simple,” says Amanda J Frasier, senior vice president of Ratings and the custodian of the evaluation system. “But we also have some standards that are a little more specialist. Was there something unique or memorable, or particularly creative or inventive? It varies ever so slightly based on the area [of service] that we’re looking at, but what we’re looking for is that ‘thing’ that made it a little more special for you, more memorable for you.” Inzerillo, who began his career in hospitality as a 13-year-old bellboy from Brooklyn, believes the dignity that drives service is a critical part of a hotel’s success. “In my world, service is nobility of thinking. It’s nobility of doing, because you’re enriching what the great archbishop of South Africa, Desmond Tutu, calls ubuntu – the humanity that draws us all together,” says Inzerillo in his inaugural TedX talk. “We feel very deeply that a guest experience is not defined by the square footage of a bathroom or light fixtures or how much marble a hotel has, but how you feel.” And if you’re staying in one of the 199 Five-Star hotels, chances are you’re feeling good. ◆

YDNEY IS HOME to an abundance of remarkable architecture, from antique addresses built by convicts to contemporary towers boasting conservation credentials. But while the bustling city is an ideal location to appreciate man-made monuments, the New South Wales capital, and bucolic regions that are a stone’s throw from the CBD, also offer a profusion of green spaces that let those seeking solitude really engage with the great outdoors.

THE COASTAL WALKS In the year leading up to March 2017, more than four million visitors spent some holiday time hiking in New South Wales. And while the state is home to impressive multi-day treks, there are just as many easy trails following the coastline close to Sydney. The Bondi to Coogee Walk is as much a Sydney icon as the Harbour Bridge. Devotees turn out daily to traverse the cliff-top trail stretching six kilometres through Tamarama, Bronte and Clovelly beaches in the eastern suburbs. And the bonus – other than the jaw- and cliffdropping views, that is? There’s plenty of opportunity to pause for a coffee break during the journey as seaside cafes line the route. On the northern side of the harbour, the North Head Walk winds from Manly Lagoon through Sydney Harbour National Park. The nine-kilometre loop crosses beaches and follows cliff-tops that are perfect for winter whale-watching. It passes the scenic Fairfax Lookout, and recognises historical locations like former quarantine station, Q Station. Even further north of Sydney, strolling the Bathers Way is the perfect excuse for a day trip to the booming city of Newcastle. The five-kilometre footpath from the lighthouse crowning Nobbys Head to Merewether Ocean Baths guarantees maritime views and the chance to splash at the beaches and sea pools lining the coast. THE GARDENS The city of Sydney offers up 188 hectares of parkland, but that’s certainly not the final number. New swathes of green are being unveiled all the time. Perhaps the most popular of Sydney’s green spaces, the Royal Botanic Garden Sydney, on the eastern side of Circular Quay, is a 202-year-old 30-hectare estate that’s

Scenic World in the Blue Mountains (scenicworld.com.au) has upgraded the famed Scenic Skyway, adding cable cars with glass floors. Passengers can spy what’s below as they float 270 metres above ancient sandstone valleys and past landmarks like Katoomba Falls, the Three Sisters and the Jamison Valley. If that’s a little too pedestrian for your tastes, join the Blue Mountains Adventure Company (bmac.com.au) team for rock climbing, abseiling and bushwalking. All three endeavours provide the opportunity for elevated observations. Prefer a more deluxe skyward experience? The Hunter Valley, a two-hour drive north of Sydney, is one of Australia’s favourite wine regions – and definitely the spot to embark on an early morning balloon flight. Balloon Aloft (balloonaloft.com) invites guests to watch the light of a new day creep across the vineyards while drifting silently above the sleepy landscape, all followed up by a gourmet champagne breakfast. Just the way nature should be served. ◆

HIRTY YEARS AGO, World Expo 88 transformed a derelict industrial zone opposite Brisbane’s CBD into a waterfront playground. These days, it’s known as South Bank. It hugs the Brisbane River with its stretch of parklands, Australia’s only inner-city beach, cultural precinct and slew of restaurants and bars. Sitting waterfront at Stokehouse Q with a plate of fresh oysters or wandering through an exhibition at QAGOMA, it’s hard to imagine this buzzing precinct not existing, so ingrained is it in the fabric of Brisbane. “It really showed the city how we could turn and face the river. Up until then we really hadn’t faced the river,” says Tourism and Events Queensland CEO, Leanne Coddington. Now the river city is experiencing another age of change. Long overshadowed by its seemingly more sophisticated east-coast siblings, Sydney and Melbourne, Brisbane has turned the tide in the past decade, and now the world is turning its attention to Queensland’s capital. Like a high-school friend you haven’t seen in 30 years who turns out to be a supermodel or the founder of Tesla, visitors are quickly realising Brisbane hasn’t just matured; it also now provides the easiest – and friendliest – welcome to Australia. And ever since Lonely Planet called Brisbane “arguably Australia’s hippest city” in 2014, confidence has soared, with an unprecedented line-up of developments, upgrades and Australia-firsts. The biggest change-maker is a strip of tarmac. A second runway for Brisbane Airport will open in 2020, instantly doubling capacity and allowing it to handle more flights per hour than the likes of Singapore’s Changi and Hong Kong International without a curfew.

Following in its jet stream, a new Port of Brisbane cruise terminal has been announced, which will welcome mega-liners to the city. And developed by Destination Brisbane Consortium, a joint venture between lead partner – The Star Entertainment Group – and its two Hong-Kong based partners, Chow Tai Fook Enterprises and Far East Consortium, and expected in 2022, South Bank will be complemented with the opening of the $3.6 billion Queen’s Wharf Brisbane. This slightly forgotten pocket of the CBD will morph into Brisbane’s hottest new precinct. There will be more than 1,100 premium hotel rooms operating under new brands to Brisbane, including The Ritz-Carlton, as well as 50 new

restaurants, cafes and bars. Far from being just a cluster of skyscrapers, though, plans have also been laid for 12 football fields’ worth of public space, and – the crowning glory – an open-air Sky Deck perched 100 metres above the ground. “With the catalyst of the second runway, the cruise terminal, Queen’s Wharf Brisbane – it’s the next generation to take the city again to that next level,” Coddington says. The $1.3 billion runway project is the feather in the cap of a nine-year run of new airlines and flight route announcements and terminal transformations under the leadership of Julieanne Alroe, who was Brisbane Airport CEO for almost a decade before stepping down last month. AULINE CHAN WAS born into a Chinese film dynasty. Her great uncle was the legendary actor Ng Cho-Fan, known as “the South China King of Movies”, and as a third-generation film worker, she grew up surrounded by actors, producers and directors. “As a child, I was always passionate about cinema. So I knew I wanted to get into the arts,” says Chan, who moved from Hong Kong to Sydney in 1980, where she studied directing and editing at the Australian Film, Television and Radio School (AFTRS). Chan started her career in the late eighties as an actress on Australian TV shows Vietnam, Bangkok Hilton and Sword of Honour. “In those days, there weren’t many Chinese actors in the country so I was cast in all sorts of roles from Chinese to Thai and Vietnamese characters, aged from 18 years old to 50 years old,” she recalls. “I played Lien in the [1987 Vietnam] series and I was also an assistant to the director and a technical advisor because of my cultural knowledge about Vietnam. It was the best way to learn – being behind the camera and in front of it.” After a baptism of fire into directing, Chan continued to hone her skills on-set and founded screen company Darkroom Films in 2000. In 2011, she directed the first co-production between China and New South Wales, 33 Postcards. The film, which centred on the friendship between an orphaned Chinese girl and an Australian man (played by Aussie actor Guy Pearce), was screened at 1,100 cinemas in China. It also scored Chan a nomination for the Best Director award at the 2012 International Chinese Film Festival (ICFF) in Sydney. This year, she returned to the ICFF as a jury panellist. Over 1,600 people – including high-profile Chinese actors Zhang Dinghan and Zhifei Wang – attended the festival, held at The Star Sydney Event Centre. Chan, now in her sixties, was blown away by the calibre of films on show. “There is undeniable talent in the storytelling, performances and technical expertise within China. It’s clear that the bigger budget films are up to international standards,” says Chan, who couldn’t pick a favourite out of the impressive festival line-up, which included the action blockbuster Kung Fu Yoga, the drama A Loner and the comedy Never Say Die.

For ICFF president Lanwei Gong, the success of this year’s festival has cemented China’s place on the international filmmaking stage. “The feedback from the jury panel was incredibly positive – they very much liked the Chinese films. The different genres and stories gave the jury a very special cultural experience,” she says. “It’s clear that the Chinese film market is booming and I believe it will be the biggest in the world as more and more Chinese film projects resonate with international audiences.” It’s a solid prediction. Art and the city Meet the leading minds redefining Brisbane’s thriving arts scene

What do you love about your role? The fact that I’m entrusted to curate from a huge palette: all the art forms from all around the world. Theatre, dance, music, opera, cabaret, circus, visual arts – and hybrids of all these forms. I have met many of my heroes, but have also met artists previously unknown to me, but who have astonished me. That’s a privilege. I also love that more than one million people engage with the Festival over just three weeks. It’s the largest arts and cultural event in Queensland. To encounter people having the time of their lives brings a smile to my face. Many festivals take place across Australia. What makes Brisbane Festival stand out? It’s quite a young festival. In its current form, it’s only been around since 2009. The festivals in Melbourne, Sydney, Perth and Adelaide are 30, 40, 60 years old. So we’re not as burdened by history. The Festival can be nimble, different, and enjoy the things that come with youth. And unlike the other capitals, there isn’t a big fringe festival in Brisbane, which means Brisbane Festival can move across a very broad spectrum, from high-end opera through to cheeky cabaret and experimental theatre, and present all with equal pride. It makes it a challenge to curate, but it’s probably a great strength. When choosing artists to showcase, what do you look for? Artists or companies at the top of their game. Great international arts festivals are also churners of the unexpected, so the work we

present should surprise, should offer audiences things they might not otherwise be able to see in a way that leaves a mark. Then, overall, there needs to be a balance – of art forms, of tone, of how city spaces are used. How does Brisbane’s art scene differ from that of Sydney or Melbourne? It’s an incredibly collegial environment, with most of the key players having a considered eye on the greater good. That’s a rare thing for a city of Brisbane’s size. Brisbane is also one of the great circus centres of the world. In Circa, we have probably the best example of “high circus” on the planet. But we also have four or five other circus companies that are really wonderful. These companies perform internationally more often than they do in Brisbane. We can be very proud of their achievements. Thirdly, Brisbane has looked to the Asia Pacific more consistently and over a longer period than the other capitals, particularly in the visual arts. But the other cities are catching up. But not in September. How has Brisbane’s art and cultural scene evolved? In the past couple of years we’ve seen impending possibilities on our doorstep. The new Queen’s Wharf Brisbane development being built, plus the new runway at Brisbane Airport and the 80,000 international students in Brisbane at any given time – it shows the city is a different metropolis now, and we are benefiting from that. What I’ve noticed in the past eight years is there has been a huge reach-out and connection for arts products and attendances. Recently, the Gallery of Modern Art made a statement that they recorded the highest attendance they’ve ever had in their history. We’re seeing that trend in the performing arts, galleries and museums. The idea of Brisbane maturing and becoming more sophisticated is a really good thing. What has been the standout performance at QPAC? I think the two most recent QPAC International Series performances, The Winter’s Tale and Woolf Works, both by the Royal Ballet. The production values were high, the dancers brilliant and the storytelling really clear. It was easy for all the audience to follow and allowed everyone to be emotionally connected with the work. Who’s your dream international performer for QPAC? I’d love to get Yo-Yo Ma here! I think he’s one of the best cellists in the world and I love the connection he has between Western and Asian music. Unfortunately, he doesn’t travel very much. I think it would be enormously successful if he performed in Australia. Does QPAC have any big plans for the future? The Queensland Government will deliver a new $150 million state-of-the-art theatre on the Playhouse Green site at QPAC. The new theatre will further support the significant growth trajectory of our home companies, and enable larger audiences to experience their inspiring performances. qpac.com.au

What do you hope audiences feel when they see a Queensland Ballet performance? People who walk out of any artistic performance, whether it be music, theatre or ballet, should always be enlightened. What’s your all-time favourite ballet? Romeo and Juliet. It’s a timeless story that remains so relevant today when considering all the conflicts in the world. At Queensland Ballet, we’ve been blessed with the privilege of dancing in one of the best ballets in the world in Sir Kenneth MacMillan’s production. How is Queensland Ballet unlike any other company? When you look at our journey over the past five years since I arrived, Queensland Ballet has punched considerably above its weight. Director, Queensland Art Gallery & Gallery of Modern Art (QAGOMA) What does QAGOMA mean to Brisbane? In our most recent calendar year we attracted 2.17 million visitors, with 1.4 million of those visitors being to Gallery of Modern Art (GOMA) alone. So, GOMA has clearly established itself as a must-see in Queensland. If you’re interested in a great art experience you simply can’t visit Brisbane without going to QAGOMA – it sets the tone and character of contemporary art in the state and supports a very diverse ecology of other contemporary art institutions. How does it differ from other galleries? Well, we have a commitment to being the leading institution for contemporary art of Australia, Asia and the Pacific. That’s a pretty large commitment we’ve given to ourselves. In staging our flagship Asia Pacific Triennial exhibition series here at QAGOMA every three years, we’re continually reaching out into the Asia-Pacific region of which we are a part. I think that’s part of our unique DNA here. Within Asia and the Pacific, we’re almost incontestably one of the most influential art museums because we have engaged with contemporary art of the region for a long time. Right from the beginning we’ve been consistently collecting art from the region and from little-known places. If you could get any international artist into the gallery, who would it be? We’ve just done it with Gerhard Richter! Gerhard Richter: The Life of Images was truly the most ambitious thing we’ve ever done with a contemporary artist. We borrowed work from over 32 private and public lenders from around the globe – prestigious collections like the Museum of Modern Art, the TATE, London and the Los Angeles County Museum of Art. He would have been at the top of anyone’s list in terms of attracting an artist of that calibre. What can we look forward to seeing in the next year? Patricia Piccinini: Curious Affection is a major exhibition, on now at GOMA until August 5, 2018, that will change the way you see our relationship as human beings to technology, biology and science. ARLO HOOGSTRATEN (BETTER known as DJ MaRLo)

has just made 15,000 people throw their hands in the air simultaneously. Standing behind the decks at the A State of Trance festival in Sydney, the crowd in front of him is moving rhythmically to his beat. In this moment, Marlo is part DJ, part producer and part shaman. “It is really intense to pop up over the DJ booth and see a huge sea of people screaming with their hands in the air. It’s so overwhelming that you sort of have an out-of-body experience. It’s dream-like,” admits Hoogstraten, who first fell in love with music growing up in Amsterdam and listening to his parent’s vinyl record collection. The Dutchman moved to Australia when he was 13 and started dabbling in music production in his late teens. But it was never his plan to become an internationally acclaimed DJ. “I didn’t have any intention of being a DJ. I actually wanted get into computer animation,” says Hoogstraten. In fact, he only learnt how to produce music so he could add sound effects and background music to his animation clips. After placing seventh in a radio competition for upcoming music producers, Hoogstraten decided to invest his energy into the art and started performing as DJ MaRLo in 2008. Now, he’s one of the worlds most in-demand DJs (he was voted Australia’s top DJ and producer at the Inthemix Awards in 2016), with millions of streams on Spotify and his own label, Reaching Altitude. He’s played to sold out crowds around the globe, including at iconic festivals like Ultra in Miami, Tomorrowland in Belgium and Watersonic in Bangkok. For Hoogstraten, though, nothing beats a home crowd in Australia, especially at The Star Sydney’s Marquee nightclub, where he’s currently a resident DJ. “The vibe is always electric at Marquee. ings, it feels really intimate and personal. People can get right up to the front and I can shake their hands,” he says. Instead of building a trophy cabinet for his accolades, Hoogstraten, 38, prefers to measure his success by the loyalty of his fan base. “It’s really cool to win awards like that, but to be honest, they’re just popularity contests. It’s not a true indication of success at all. If you’re playing to a club of a hundred people and everybody had a fantastic time then you’re an incredible artist,” he says, adding that his one-year-old son, River, listens to his music at home. “I can’t tell if he’s a fan [of my music]. He does a little knee wobble, but it is not consistent with my music more than anyone else’s music.” Someone else who is a fan of Hoogstraten is Tim Waugh, the director of nightclub marketing at The Star Sydney. “MaRLo is a crowd favourite and has been our top drawcard at Marquee for more than three years,” he says. “No other Australian artist has risen through the international trance ranks like him. When MaRLo’s on the decks, it’s Marquee at its best.” For the man behind the decks, DJing is more than spinning records at a club: it’s an art. “As a producer DJ, it is really difficult to produce high-quality music. It takes about 10 years before you get to the point where you’re good. Before that you’re still learning. In that sense, producing is not at all an art form that should be taken lightly. There’s a lot of talent, skill and time involved in that.” With Marquee entertaining hundreds of thousands of music fans every year – all of whom turn out to see the DJs – Waugh agrees. “The art of mixing has evolved immensely over the last few decades. What was once a simple mix between two records now uses very advanced equipment and technology to create studio-style music production live and in the moment,” he says. “These days, DJs can really connect with a dancefloor, taking them on an emotive musical journey like never before. They create a sense of euphoria and unity with everyone in the room. This is what MaRLo does best.” Having spent the past decade refining his craft, Hoogstraten still pinches himself every time he walks on stage. “At the first show I ever played, I thought, ‘Holy crap, someone is giving me money to perform.’ That still happens all the time,” Marlo reveals. “The thing that fascinates me most about music is how it brings people together. I know that’s a cliche, but it’s true. Even if the people in the crowd don’t speak the same language, they all dance to the same beat. There’s something really primal about that. The feeling is amazing.” The backstage perks aren’t bad either. “I always have Japanese whisky on my rider, Yamasaki or Kyushu,” says Hoogstraten. Ah, the sweet taste of success… ◆

T’S NO SECRET that a good steak restaurant needs good meat. It seems the Gambaro family, however, have never settled for good. They’re after greatness. From a humble fish-and-chip shop that opened in Brisbane more than 60 years ago to world-class, award-winning restaurants around the city, the Gambaro family have become The Gambaro Group – a Brisbane-based trailblazer that’s changed the Queensland dining scene one dish at a time. So, it’s not surprising that now they’ve turned their hand to Treasury Brisbane, one of the city’s most beloved properties, the result is nothing short of spectacular. Black Hide by Gambaro at Treasury Brisbane represents the first collaboration between the group and a partner – and Treasury Brisbane couldn't be a more perfect fit. “Like us, Treasury Brisbane has been a long and active member in the local community for more than 20 years,” says John Gambaro, director of The Gambaro Group. He’s certainly excited about the opportunity this new outpost represents. “Without a doubt we will attract a new audience with this exciting new venue,” Gambaro says. “While our business was built on family and community, and while good old-fashioned hospitality never goes out of style, we wanted the right partner to help us continue impressing our existing customers and attract new ones.” In Brisbane, The Gambaro Group has been synonymous with seafood for decades. Now, the opening of Black Hide by Gambaro at Treasury Brisbane represents a highly successful foray into the world of exclusive steak restaurants. Kelvin Dodt, Treasury Brisbane’s chief operating officer, says the decision to bring the Black Hide brand on board was an easy one. “We wanted to use the same award-winning formula in our restaurant but with some delicious twists, including higher-marbled steak cuts and new seafood dishes,” he says. With the opening of the original Black Hide by Gambaro, The Gambaro Group made the unprecedented move of committing to use only Australian-owned beef and cattle company, Stanbroke. It was a bold move, but one that has paid off tenfold, with a slew of Chef Hats, awards and accolades now associated with the establishment. And the new venue continues to offer their world-class Australian steak, but with some exciting new additions to the menu. To cater to the property’s international clientele, Black Hide by Gambaro at Treasury Brisbane showcases world-class Angus and Wagyu cuts that make Australian produce the star of the show. Gambaro expects the inner-city executive lunch-time crowd to enjoy these premium steaks, along with a few of Black Hide’s original signature dishes. “We’re showcasing the very best in fresh, local produce,” he says. “In particular, we’re predominantly using an exclusive selection of world-class Angus and Wagyu cuts as our hero cuisine. Our BBQ short ribs have always been a crowd favourite and we expect they will continue to impress in the new venue.” For John Gambaro, the secret formula for an excellent steak restaurant rests on what is put on the plate.

“There are many factors, but the biggest ingredient for us is the consistency of meat and using one supplier who takes our produce from paddock to plate,” he says. Diners also have the opportunity to taste some of Gambaro’s signature seafood, with dishes that display their loyal local suppliers, like Mooloolaba prawns. This commitment to local produce is extremely important to Treasury Brisbane, with Dodt emphasising the Group’s strength is in “their decades of experience, exceptional guest service standards, passion for the culinary arts, and use of the best Queensland produce. Together these have cemented its reputation as a beloved and celebrated Queensland icon recognised locally and nationwide.” And it won’t just be the business-lunch crowd who enjoy the menu – the restaurant will enjoy extended trading hours to take advantage of Treasury Brisbane’s later evenings and late-night clientele.

The city’s only 24/7 entertainment destination certainly isn’t a blank canvas for Black Hide to move into. The beautiful heritage building isn’t just a prime location overlooking the Brisbane river with a combination of indoor and outdoor spaces. It also has historic features that add character and charm. “Our restaurant is located in one of the city’s grandest heritage buildings, enabling us to blend intricate and cutting-edge design with worldly charm and sophistication,” says Gambaro, who is equally excited by the new design as the historic setting. The original Kitty cocktail bar has been re-imagined into an industrial kitchen with a magnificent bar in front, while the dining room is a mastery of marbled-stone tabletops, rich, earthy colours and concrete, porcelain and timber. There’s a dry-age meat display cabinet that literally puts the produce on a pedestal, a knife display, and an array of artwork and photos showcasing the history of the Treasury building and The Gambaro Group, as well as the restaurant’s paddock-to-plate principles, using Stanbroke as its only beef supplier. Abhishek “Abs” Shahi has his station precisely laid out. Shaker, spirits, wine and even matcha, chai and biscuits are at the ready. Each season, the cocktail menu at Sokyo’s bar is tweaked and tinkered with, bringing in brand new seasonal concoctions and spins on old favourites that never overpower, but instead lend a hand to the Japanese dishes in the restaurant. “For the last few seasons I’ve had the menu focus on a lot of Japanese-inspired flavours and techniques, but this year we’ve started to really focus on the creativity of all the bar staff combined,” Shahi says. “Going forward, everyone on the team will have at least one of their ideas make it into the menu. Japanese whisky and Japanese beers sit alongside all the usual favourites. “Regulars return not just for the drinks but for the service our team offers. We work with people to find what drink will suit them. Whether it’s a new cocktail or a classic, we make sure to start the customer’s night right,” Shahi says. After 10 years of slinging drinks, Shahi has made the transition from pulling beers and pouring shots in nightclubs to becoming the bar manager at Sokyo. Like any young drinker, the art of making and appreciating cocktails came as his tastes and skills developed. “The first few times I visited a dedicated cocktail bar I fell in love with the process. It wasn’t about whipping out drinks as fast as possible. It was an experience with as much craft involved as a chef puts into a dish,” Shahi recalls. He has since brought this ethos into Sokyo and passed it onto his team. The cocktails are more than the drink itself; they’re a show. Each one is carefully and skilfully made with a showman’s flourish, where sight and scent are equally important to the final flavour. The BLD Martini is a perfect example. How did you come to be in the kitchen? I learned how to prepare delicious barbecue and other traditional Cantonese dishes including fish stir-fry in Guangdong, before travelling around China for six years. From

there, I learned from one of Hong Kong’s Four Masters, chef Hui. His penchant for building flavours slowly through simple ingredients taught me many valuable techniques. What influences your cooking? My background is varied. In my early years I learned a lot of Cantonese and Mandarin and spent a lot of time in Hong Kong and America. For those reasons, I like a lot of different flavours and techniques, and like to highlight them all on my menu. Is that why Imperial at The Star has such a large menu? More than 100 dishes! I want dishes that appeal to all types of people from all different backgrounds – Cantonese, Mandarinese, Hong Kong, Beijing, Shanghai, Sichuanese, and not to forget the local Australian. We’re expecting more and more Chinese visitors to travel here from all parts of China, and I want them to be able to find dishes they really like on our menu. At the same time, I don’t want to alienate our local clientele, who love strong flavours and more comfort-style food. You look after all Asian cuisine at The Star Gold Coast. Tell us – what is so exciting about the new Imperial at The Star? When we closed Zen, the restaurant where Imperial at The Star now stands, we undertook a makeover of more than just the space. I wanted to highlight traditional flavours, ingredients and cooking styles from various regions of China because they’re so different. Cantonese cooking uses very light flavours (neither salty nor sweet), with ingredients often steamed, and seafood, garlic and ginger featuring heavily. Mandarinese features strong bold flavours, while Shanghai flavours are sweeter. Szechuan cuisine uses oil and the Szechuan pepper, and Hunan cuisine favours dried chilli. And then there’s also the dishes that our Western clientele gravitate towards – for instance, the pumpkin scallop, because I know that Australians really love pumpkin. What are some of the standout, signature dishes on the menu? Definitely live seafood, especially the Thai lobster. This is a baked lobster with Thai chilli sauce sold at market price. Our new fish tanks allow us to expand the daily seafood offering to include fresh and saltwater fish. The menu will change slightly every few months, adding in some dishes when we find new ingredients, as well as changing some of the more seasonal items.

Where do you source the produce that can be found on Imperial at The Star’s menu? The best ingredients, sauces and spices are imported directly from Hong Kong, to be paired with only the best in local and seasonal produce. It’s very important at Imperial at The Star that we work with everything fresh – especially live seafood, and vegetables. I like to make sure all of my ingredients are the best available in the market. What’s does the future hold for Chinese cuisine in Australia? It’s all about making the produce the hero and keeping things simple and light, rather than being sauce- or flavour-heavy – especially with Cantonese cuisine. We need to become more authentic, using the freshest ingredients, making the best of their natural flavour and not overseasoning them, overpowering the freshness. ◆

SINCE BEING CROWNED Miss World Australia back in 2013, life has been travelling at full speed for Erin Holland – a nonstop parade of charity work, presenting gigs and brand ambassadorships. However, her most recent role, as an on-air anchor for the Indian Premier League cricket series, was her first foray into sports broadcasting. “Cricket is something I grew up with,” she says. “My family were heavily involved. I know a lot about the sport and genuinely watch it recreationally, whether my partner Ben [Cutting, Australian cricketer] is playing or not.” Spending a month in Mumbai, away from her current base in Sydney, isn’t the kind of thing that’s uncommon on her schedule. Sun protection – especially when you consider that Australia has one of the highest levels of UV exposure in the world. “Always use a quality sunscreen before applying your make-up or when heading out to start your day – even in winter,” Golightly advises. “Optimal Pro Defence from ESPA’s range is great for the face.” Let’s not forget about treating your skin from head to heel, either. ALVATORE FERRAGAMO IS known as one of the last fashion houses still offering consumers “old-school” luxury. The eponymous brand was founded in the 1920s by Italian-born Salvatore Ferragamo – or as he was then known, the “shoemaker to the stars” – and his first venture in the cobbler world was a Hollywood-based boot shop, which fast became a mecca for the glitterati. The biggest film stars of the Roaring Twenties, such as Bette Davis, Gloria Swanson and Dolores del Rio, lined up for custom fittings by Ferragamo. At the time, women’s feet were constricted by shoes with laces – Ferragamo’s shoe designs, however, were more open and freeing. In fact, he was among the first shoemakers to utilise the sandal design for women. Ferragamo soon decided American craftsmen weren’t up to the task of making the kinds of shoes he envisioned, so in 1927 he returned to his native country, Italy, and set up a workshop in Florence – a city with a strong tradition of expert craftsmen – and founded the Salvatore Ferragamo brand.

It was in Florence, rich with architectural masterpieces from the Renaissance, that Ferragamo admired one specific building: the Medieval Palazzo Spini Feroni. The 13th-century gothic palace encapsulated the new-found brand’s DNA: expertly crafted and a true reflection of rich Italian culture. With his heart set on the extravagant building, he purchased it in 1938 and moved his atelier to the palace, which still remains the company’s headquarters today. Fast forward to the late 1930s, when a local woman walks in complaining about her pained feet; how with every step she takes she can feel the pebbles through the soles of her shoes, and it’s a light-bulb moment for Ferragamo. To satisfy his customer he invents the platform shoe, raising women to comfortable new heights. Ferragamo’s famous fit was copied across the world. It even managed to entice elusive Hollywood actress Greta Garbo to Ferragamo headquarters, where she claimed to have no shoes that she could walk in. Ferragamo ensured Garbo would never have to take a step in an uncomfortable shoe again by crafting 70 pairs of custom, low-heeled shoes just for the star.

For the charming Audrey Hepburn, Ferragamo created a simple pair of ballerina flats with a strap, and for the ravishing Marilyn Monroe, a unique steel-reinforced stiletto, which was later made famous when it teetered on the edge of a subway grate teamed with an unforgettable white halter dress. While his celebrity customer base sky-rocketed the brand to international fame, so did his innovative designs. The cork wedge, which over the years has been reinterpreted in more contemporary styles, is another Ferragamo icon. The Rainbow shoe, with layers of cork, coloured suede and golden leather, was a bespoke creation for Judy Garland. Not all of the brand’s iconic footwear was crafted by Salvatore himself, however. Following his death in 1960, Salvatore left his daughter, Fiamma, in charge of his empire, where she remained for almost 40 years. As well as playing a key role in evolving Ferragamo from custom shoemaker to a global powerhouse in luxury fashion, she also designed the brand’s most sought-after shoe, the Vara, which has sold over a million pairs since its 1978 launch. A Ferragamo still sits at the head of the table today, with Salvatore’s eldest son, Ferruccio, serving as company president. His intent has been to treasure the fundamentals of the company and his family’s legacy by ensuring it’s kept relevant and always looking forward. With the most recent appointment of Paul Andrews to Creative Director, Women’s Collections, Ferragamo is doing just that. Previously the brand’s Design Director, Women’s Footwear, praise for Andrews’ dynamic vision and success in footwear makes him the perfect fit to lead Ferragamo into the future. One other thing’s for certain: if it weren’t for Ferragamo’s genius designs – that inspired other designers to come, including Andrews no doubt – strolling the cobbled footpaths on our Italian jaunts would feel a whole lot different. ◆

dard-setter; the kind of car used as an exemplar in motor-vehicle design meetings worldwide. Effortlessly elegant yet exceptionally practical, it epitomises what the German manufacturer is known for: form and function combined, at no cost to each other. The second-generation, fourdoor sedan-meets-coupe launched in Cape Town, South Africa in February this year as a completely new vehicle, engineered to be a successor to the A7 Sportback that arrived in Australia in 2011. Immediately, it gained attention for its sleek looks and inherent athleticism. “Getting inside the A7 is like being in a futuristic lounge, with simplicity at the core of all elements of the interior,” says Audi’s communications manager, Shaun Cleary. “As always with Audi, the workmanship is the epitome of precision. The materials have been selected with the utmost care and are handcrafted to perfection.” Speaking of futuristic, the A7’s rear is an unexpected highlight. It’s elegant and tapered like the back of a yacht, but with an eye-catching accent in the form of its single-line tail lights, which put on an animated display when the car is locked and unlocked. The result is a mesmerising effect that’s somewhere between a James Turrell exhibition and a Daft Punk concert. Further personality can be injected with one of the 15 colours in the paint range, customisable interior lighting and an optional panoramic glass sunroof that floods the interior with light but comes with a handy blind to keep the car cool when required. The car’s interior is satisfyingly minimal, with a centre console oriented toward the driver for ultimate control, and two large high-resolution touch displays seamlessly combining infotainment with climate and comfort management.

Versatility is key to the A7 – it’s just as at home on the winding, cliff-top roads of coastal Italy as it is on the urban school run. The former was key in the car’s design. Audi’s designers sought to invoke the Gran Turismo vehicles of days past – fast, streamlined sports cars that originated in Europe in the 1950s and were capable of endurance, stamina and comfort on long drives. Dynamic all-wheel steering and sporty wheel response mean the car is agile and nimble on narrow, steep roads but comfy on long stretches of freeway or traffic. The V6 engine is powerful yet quiet and surprisingly economical thanks to a “mild hybrid system” designed to reduce fuel consumption with clever automated functions. The A7 is full of clever conveniences. It also offers optional boosters like a heated windshield (arguably better suited to European winters, but nice nonetheless), Bang & Olufsen sound system, and optional wipers with integrated nozzles to reduce the dreaded wash-and-wipe mess. So who is Audi’s dream A7 driver? According to Cleary, it’s “people who want their vehicle to deliver driving enjoyment, who want a luxurious vehicle that is a seamless extension of their connected lifestyle, and most of all, who want a vehicle that makes a statement about the kind of progressive individual that they are.” If that’s the case, there’s surely an A7 driver in all of us. ◆

Tell us about Kookaburra Kids… We are a charity set up to support children who live in a family affected by mental illness. We provide that support via respite weekend camps and activity days that they may not normally have access to within their family unit. We also have a mental health education program that addresses the unique needs that these children have and builds their resilience and coping skills. All services we provide are free of charge. We want to make the children’s lives feel like regular kids’ lives. What experiences are on offer? A typical camp will go from Friday to Sunday afternoon. We have around 40 children who attend and 20 volunteer leaders. They are put into small cabin groups where the leaders also stay to make sure the children are fully supported emotionally. They do a lot of craft activities (like a piece of art they can take home, a MasterChef-like activity or screen printing), enjoy evening movie showings, and the typical campsite activities like rock climbing and canoeing. What positive outcomes have you seen? Most kids that come to our camps will be a little nervous when they first arrive. However, I can honestly say that over the past 10 years I’ve never had a child who didn’t want to come back to a camp or do an activity. Part of our education program is that we ask a set of questions prior to them arriving and once they leave camp. We then measure things like what mental health education they’ve learnt, the skills they have on where to go to get help, and their support network. We also receive testimonials from families who commonly say that for the first time they have been able to have an open conversation with their children about mental illness, simply because the camp broke those barriers down and helped the kids understand their parents’ behaviours in a way they can cope with. How many kids does Kookaburra Kids support? We currently have just over 2,000 children involved in our program. We are running in four states, having just opened in Queensland and the Northern Territory in January, and we have offices in Canberra and New South Wales. We would have well over a thousand of those kids in our program attending a camp. Where does funding come from? The camps and activities for the kids in our program are funded by fundraisers, major corporate sponsors

(like The Star Entertainment Group), and generous contributors. It’s all raised through the community and corporate sector. Are there any plans for growth? We are in the process of a national roll-out. The reason we have been able to expand so quickly over the past 12 months has been because of a separate program we are running for children of the Australian Defence Force, where parents have mental illness due to their military service. The Department of Veteran Affairs have funded that program. If funding continues, we hope to expand the program to Victoria and South Australia next year and then Western Australia the year after. ◆
