From the CEO WELCOME TO THE third issue of The Star magazine. It comes at an exciting time for the organisation as we pursue our vision of becoming Australia’s leading integrated resort company. Over the past three months we have reached key milestones in our efforts to deliver quality tourism offerings across South East Queensland and Sydney. We have broken ground on the first Dorsett hotel to be built in Australia. This popular brand, with more than 50 hotels around the globe, will be part of a $400 million tower we are developing at The Star Gold Coast.

Once completed, we will have three hotels and around 25 food and beverage outlets at the Broadbeach Island property, plus a raft of entertainment options including The Star Gold Coast theatre, where leading local and international acts appear on a regular basis.

There is also potential for a further four towers to be built at The Star Gold Coast precinct, where our investment, and that of our partners Chow Tai Fook and Far East Consortium, is around $850 million over the past three years. We are also involved with our partners on a $3.6 billion transformation project at Queen’s Wharf in Brisbane and in lodging a development application for a Ritz-Carlton hotel tower with apartments in Sydney.

It is relevant, then, to reposition our brand to local and international Chinese communities.

As a leading Australian tourism and entertainment operator who acknowledges the potential to welcome millions more Chinese visitors to Australia over the next decade, we have a compelling story to tell. So, I am proud to reveal our new Chinese name: 澳洲星亿. In English, it translates to “millions of stars” and reflects the myriad high-end offerings our properties have f0r – and will continue to deliver to – domestic and international guests.

This magazine showcases some of those experiences. I hope you enjoy it.

Punters at Royal Randwick will collectively hold their breath when the world’s richest turf race, the $13 million The Everest, takes place. The newest addition to the Spring Carnival, the thrilling race is already a pinnacle event on the Australian racing calendar.

Experience one of William Shakespeare’s greatest tales, Julius Caesar, on stage this summer. The political thriller set in Ancient Rome will be directed

by James Evans and star Kenneth Ransom as Caesar.

The production will tour to 28 venues across Australia.

Centred around Yang Zhichao’s Chinese Bible, a monumental installation of 3,000 notebooks and diaries inscribed between 1949 and 1999, Chinese Bible Revolution and Art in China will also feature other celebrated contemporary Chinese artists, including Zhang Xiaogang.

Specially created for The Australian Ballet by the world’s most in-demand choreographer, Alexei Ratmansky, Cinderella will have all the elements of this classic fairytale that you know and love – with some delightful surprises added to the mix.

Dubbed the Oscars of the East, the Asia Pacific Screen Awards honour cinematic excellence from 70 countries. In its first decade, APSA has seen more than 2,500 films in competition belonging to countries that are home to some 4.5 billion of the world’s people.

British-Australian bass-baritone and international rising star, Duncan Rock, makes his Australian principal debut at Opera Queensland. Rock takes on the title role of a striking new production of one of Mozart’s most renowned works, Don Giovanni.

The Isuzu Queensland Open is a golf tournament that allows both professionals and amateurs to compete against each other to join the list of champions. Played at The Brisbane Golf Club, the event is a key stepping stone for many young golfers, so be on the lookout for fresh talent.

How did you land at Treasury Brisbane?

I’ve been here since Treasury Brisbane opened. In March this year, I celebrated 23 years working here. I started as a commis chef, which is what you become when you qualify from being an apprentice. Slowly, I moved through the ranks. I still love to get into the kitchen and get my hands dirty, but I do it less than I’d like to.

What do you love about your job?

Every day is different and is a challenge that presents new things to do. It’s really never mundane, particularly in the banquet space, which may have internal events hosted by The Star or external guests coming in. Everyone wants something a little different, funky, new – which means every day is a new day.

From where do you draw inspiration?

Everywhere. I try to get to Melbourne once a year, which has really been the mecca, traditionally, for Australian restaurants.

But hopefully by the time Queen’s Wharf Brisbane opens here, we will be challenging them.

In terms of chefs, is there anyone you admire?

I don’t have a favourite chef, so to speak. Guys like Anthony Bourdain, who has unfortunately passed away, was a real talent. He really took a different angle and was inspirational.

Any food trends you predict becoming the next big thing?

It’s tricky with trends. But I do think what you could use as a standard is the fact that everything that’s old is new again. One of our most popular dishes four to five years ago was deconstructed rocky road. At the end of the day, a rocky road chocolate is something from your childhood, but to serve it deconstructed with chocolate sauce and cherry and lime flavoured gels was seen as really cutting edge. So, who really knows? The question is: how do you make old dishes new?

What is a must-have dish at Treasury Brisbane?

Fat Noodle has a couple of signature dishes, like the fat pho noodles. They’ve been on the menu for five-and-a-half years.

Personally, I love the chicken pad see ew at Fat Noodle.

tee off at their choice of close to 40,000 golf courses worldwide, as golf continues to thrive as both a sport and a pastime. So it’s no small feat, then, that one Australian city offers more golf courses per square kilometre – and per capita – than almost any other place in the world: the Gold Coast.

With over 35 courses in close proximity to two international airports in Queensland, the Gold Coast is considered one of Australia’s prime golfing destinations. You can credit a magical mix of year-round good weather, a welcoming atmosphere and a variety of golf courses that offer everything from relaxed resort rounds to championship layouts.

“You can go for a golf trip for five days and easily play 10 days’ worth of golf,” says David Brett, chair of Golf Queensland. “The courses themselves are rated highly and you get the ability to play in beautiful weather on asgood-as-anywhere golf courses, knowing that you’re going to get value for money for the time you’re there.”

Former Australian professional golfer and local legend, Wayne Grady, best known for winning the US PGA Championship in 1990, agrees. “You can come here for a week and play different courses every day and really make it a good holiday,” Grady says.

“We’ve got a good group of high-quality courses here on the Coast. My personal favourite is Lakelands, which is a Jack Nicklaus-designed lake course. It has a balance of good, strong holes and a couple of short par 4s that require quite a bit of thinking.

It’s a very strategic course, and it’s a typical Nicklaus course where you’ve got to put the ball in the right place. That’s why I like it – it’s got everything.”

Grady’s other top picks include the challenging par 72 Greg Norman-designed The Glades, which he describes as “a good test”; while for amateurs, he recommends Palm Meadows, a 250-hectare par 72 course designed by leading golf architect Graham Marsh.

One of the hallmarks of the golf scene on the Gold Coast is its accessibility. Courses cater to everyone, from those after a social round to challenge-seekers looking to improve their game – as well as professionals.

It’s no coincidence that the Gold Coast is host to the second biggest competitive golf tournament in Australia, the Australian PGA Championship (set to be held from November 29 to December 2 this year). The tournament is a flagship event on the ISPS HANDA PGA Tour of Australasia and is co-sanctioned by the European tour, taking place at one of the Gold Coast’s top-rated courses, RACV Royal Pines.

Locked in to host the event until 2020, RACV Royal Pines offers 27 holes that can be configured into three distinct 18-hole golf courses on undulating terrain. The course underwent an $11 million-dollar redevelopment in 2014 in preparation for hosting the PGA Championship, and is described by Brett as “a must-see, must-play golf course.”

Yet among those who know the Gold Coast best, one course keeps coming up in regards to the best places to play: Links Hope Island Golf Club, an 18-hole links-style golf course (that also features an aquatic driving range) designed by five-time British Open champion, the late Peter Thomson.

Set your GPS for Wolgan Valley in the Greater Blue Mountains World Heritage Area. A scenic two-and-a-half-hour drive north-west of Sydney will deliver you to a pristine Australian wilderness ripe for exploration and deep relaxation.

Wolgan Valley has long flown under the mass tourist radar – reserved instead for the country’s elite – but that doesn’t mean its hidden treasures are any less spectacular than the Blue Mountains’ more famous sights.

Geographically, it’s breathtaking, its dramatic escarpment capped with fascinating rock pagoda formations. Historically, it’s exciting, rich with ancient Indigenous art and the ghostly ruins of an abandoned mining town. Its rugged mountain trails are ideal for adventurous types seeking an outlet for their adrenalin, but it also offers a peaceful haven for nature-starved city slickers. from the road into Wolgan Valley are still gobsmacking – but if you’re driving, try not to be distracted: you’ll need to keep your eyes on the sharp twists and turns! You can treat yourself to a safer view at Wolgan Valley Lookout along Wolgan Road.

The landscape may look untouched, but Australia’s first people inhabited this fertile area for thousands of years. Take a glimpse at their history book at Maiyingu Marragu (Blackfellows Hand Cave), just off Wolgan Road. The huge rock overhang was once a meeting place for Aboriginal clans in the area and features a number of hands and weapons stencilled with ochre on the cave walls.

For a more recent history lesson, continue on to Newnes, deep in the heart of the valley. In the early 20th century, this historic village was a hub of industry, complete with an ambitious rail line privately built to service a lucrative shale oil mining operation. Strikes, outdated technology and competition from imported oil sealed the mine’s – and the town’s – fate in 1936, but many relics of the past, including the

Newnes Hotel, crumbling industrial buildings and rare shale oil coke ovens, remain.

Industry’s loss was nature’s gain – since the Wolgan Valley Railway was abandoned, its longest tunnel has been claimed by a colony of glowworms. The tunnel’s dark, damp environment offers these minuscule critters – the bioluminescent larvae of a fungus gnat – the perfect conditions for luring prey. The result is an other-worldly light show that twinkles like the night sky across the tunnel walls. To find the tunnel, follow the old rail line from Newnes (11km each way), or take the Glow Worm Tunnel Road from Lithgow or Clarence for a shorter walk from the nearby car park. Alternatively, you can book a Glow Worm Tunnel Hike with Wolgan Valley Eco Tours (wolganvalleyecotours.com.au) for a half-day guided experience, complete with headlamps and morning tea.

While this beautiful region is a doable day trip from Sydney, it’s hard to resist lingering in its cool green embrace. Nestled between the Gardens of Stone and Wollemi National Parks, Wolgan Valley is a popular spot for sports like rock climbing and mountain biking, but it’s perhaps best discovered on foot.

Wildflowers, including the pretty native vine that gave the valley its name (its cream, star-shaped blossoms are known in the local Aboriginal language as “wolga”), are prolific in spring and summer, and going softly on the trails will make you far more likely to spot a koala, wombat or wallaby.

One of the standout hikes in the area is the track to Donkey Mountain, its 350-metre-high summit offering panoramic views of the valley. The trail is steep and demanding, passing through tree fern forests, slot canyons and distinctive rock pagodas, but awe-inspiring 360-degree views are your reward.

If you’re not an experienced hiker, a guided tour is a good option – try Wolgan Valley Eco Tour’s Donkey Mountain Hike, or the two-day Wolgan Valley Walk with the Donkey Mountain extension offered by Life’s An Adventure (lifesanadventure.com.au).

travelling to a destination handpicked for us but largely unknown. From our elevation, the landscape stretches under the sun like a miniature world. The high-rise buildings of the Brisbane CBD break the sky behind us, the mountains of the Great Dividing Range create a barrier to our side, and a smudge of placid Pacific blue edges the horizon.

As we head south, the headwind gives the helicopter a gentle shake to remind us where we are. Below lies a geographic patchwork of wineries in neat green rows and faded strawtinged pastures dotted with cattle.

“We cover a lot of ground, and we can do it in such a spectacular way,” says Captain Mike Jarvis, as our helicopter comes into land at Kooroomba Vineyard and Lavender Farm in the Fassifern Valley.

Swooping past the restaurant and scattering the free-range chickens by the vegetable patch, the noise from the rotors draws a small, curious crowd from the cellar door.

“If you arrive in a car, you arrive in a car,” grins Jarvis, nodding towards the group snapping photos of our arrival on their phones. “When you arrive in a helicopter, you’re a rock star.”

It’s hard not to feel like one right now. We’re part way through a Flying Food Safari operated by Pterodactyl Helicopters, a customised and exclusive tour that offers over 100 landings at wineries, pubs and restaurants everywhere from the Scenic Rim to Stradbroke Island in Queensland.

After transferring to the helipad from our hotel in Brisbane’s CBD, we fly to our first destination, Ironbark Ridge winery on the outskirts of Ipswich. Although Queensland isn’t traditionally known for its wine, there are around 150 wineries operating in the state, and Ironbark Ridge boasts six acres of handpicked vines.

We land in the back paddock, scattering a mob of kangaroos that bounce off into the nearby scrub. Within minutes of landing, we share a glass of chardonnay at the cellar door with the owner, a retired doctor, in a historic mining cottage with a galvanised iron roof from the 1920s.

What would have taken hours takes minutes as we fly south to our next destination, Kooroomba, which along with the winery and lavender shop, also has a renowned fine-dining restaurant showcasing regional produce, including a signature dessert of lavender ice cream. While we eat, Jarvis lets a few of the kids climb into the helicopter for a photo, and they wave us off as we continue on.

From there, we head west, rising up and over the Great Diving Range that slices the east coast of Australia from the water. The landscape shifts into an even expanse, cut into neat pieces by roads, railway lines and paddocks. It is flat, dry and rural, geographically close to the Gold Coast and Brisbane but, culturally, all country.

We land the chopper in the back garden of the Royal Hotel in Harrisville, upsetting the dogs tied up in the parking lot and sending dust flying high past the galvanised steel roof of the iconic hotel.

“The idea is to bring the city to the country,” says Jarvis as we head inside, where framed black and white photos document the history of the hotel, which is close to 100 years old.

“We like to take people to places you’re not going to run across by accident – and if you’re in the Royal Hotel, you’re having a beer with a guy who has just come off his tractor.”

True to his word, we do, joining the locals at the bar, meeting the publican, and toasting a great day of flying.

IT’S NO SECRET the Gold Coast has entered a golden age. Its

weather, rich culture and endless sights have long attracted domestic and international holidaymakers, but the Gold Coast has now increased its reputation as a liveable city.

Much like Xiao Lu’s ice-smashing, all of the women in the exhibition are shattering stereotypes of Chinese women. For Raby, it was most important for the exhibition to show Chinese women in all of their complexity, power and creativity. “There are so many stereotypes in the West and in China about how Chinese women should look, conform and behave,” he says. “All of the artists in the show challenge those stereotypes, which is what I wanted to do.”

As well as celebrating the strength of female artists, Raby wanted to start a conversation between Australia and China that goes beyond politics. At the Sworn Sisters exhibition, which opened in May, the conversation flowed freely among the crowd of 300. “It was a big event and everyone was so happy and excited to be there.

“He selected a horse last year called She Will Reign, which is owned by 20 battlers from Western Sydney. So here you have a partnership between bricklayers and labourers, and a Chinese billionaire. That’s what I love about this race; even though it’s called the sport of kings, it’s for everyone.”

Along with international punters, the race has attracted the world’s best sprinters to Royal Randwick – including Shoals, The Star-acquired filly owned by Arrowfield and Pinecliff Racing. Shoals has won over $2 million in her career, and Arrowfield chairman John Messara is putting his money on her to take out The Everest race this year. “With three Group 1 victories on her record, Shoals has the kind of star power that can light up Royal Randwick. We think she is a great chance to win the race,” he says.

The real winner, though, is the economy.

In its inaugural year, The Everest race boosted Sydney’s economy by $100 million, and this year V’landys predicts that amount will be even greater. “Because The Everest brings so many people into Sydney, it has an enormous impact on the economy. I think this year will be even bigger. Racing itself generates $3 billion for the New South Wales economy, and The Everest will play a big part in that in the future,” V’landys says.

The local fashion industry also does a roaring trade during the Spring Racing Carnival, V’landys notes – and, not surprisingly, the guests trackside at The Everest are some of the best dressed in the country. Nic Cerrone hopes his trophy will again inspire the high-fashion stakes this year.

“The beauty and elegance of diamonds has always inspired the world of fashion and significantly raises the stakes for the glitz and glamour on the red carpet,” says Cerrone, who describes his diamond-encrusted trophy as “unique, exciting and glamorous.” The same can indeed be said for The Everest race itself.

“Because The Everest brings so many people into Sydney, it has an enormous impact on the economy. Racing itself generates $3 billion for the NSW economy, and The Everest will play a big part in that in the future”

What was the inspiration for starting your label?

I used to play basketball professionally, then entered the corporate world and found that suits didn’t fit me well. So I learned how suits were made and from there I had a business idea to start making custom suits for men.

What sets Wil Valor apart from other brands?

We sit down with our clients and find out who they are, what they do. We really ask the questions about what they’re interested in and what message they want to send. We then look at their colour palette – their eye colour, skin complexion – and their personality. We take all that and create garments for them.

It’s really a personal touch. I think that’s the difference between us and other people; our understanding about who people are and our dedication to not settle.

What should men look for in a good suit?

The first thing is the fabric. A lot of people say fit is most important; I think colour is the most important because having a good-fitting suit in the perfect colour is better than a perfect-fitting suit in the wrong colour. A lot of men come in and say, “I want a black suit.” I always ask, “Why is that?” The majority of the time it’s because they think they should have a black suit. We try to guide people to a palette that suits their complexion, rather than what they think they should have.

Does Brisbane fashion differ to that of Sydney and Melbourne?

We seem to think Melbourne and Sydney have it all, but they are rather boring compared to us. Brisbane is a bit more flamboyant and adventurous. And we do that through our colourful palette. I guess you could say we can do that because of the weather. When it comes to Australia, we’re an evolving product here in Brisbane. I think we’ve been leading, just quietly, for some time. It will just continue, and developments like Queen’s Wharf Brisbane will only help.

How were you introduced to fashion?

I remember in high school reading my sister’s magazines and thinking that the images were all so pretty. I found this liking for the clothes I saw, which grew stronger and stronger.

Then I started to wonder, how do they make these things? How do they make it happen?

And that curiosity got me really fascinated in the industry. Eventually I got the chance to study it and follow my passion.

As a designer of wedding couture, how do you want to make brides feel?

I want them to feel like it’s their own day.

That’s what I really want. They’re so delighted that people are so happy to be there for them.

And that’s what the whole experience of getting the dress made is all about – getting to that moment.

What makes a George Wu wedding gown so unique?

The structure. It’s not just the fabric; other designers can get that fabric. There are secrets inside of our dresses that totally change your body, which is different from just making a dress fit. Our dress moulds you in a way that sets our product apart.

What do you love about the Australian fashion scene?

I find Australian fashion to be very approachable. Australian culture is very easy-going, and we’re really accepting of different cultures. That easy-goingness transcends into our fashion; it’s not intimidating. You feel like you’re included in the community, rather than excluded.

How did you get your start in fashion?

I graduated with a Bachelor of Fine Arts & Fashion Design from Queensland University of Technology, majoring in Fashion. Then I won a competition with my Graduate Collection, which allowed me to show at Australian Fashion Week. From there I started a wholesale account.

From where do you draw inspiration?

I love the opposite interactions between things – masculine versus feminine, dark versus light. Those polar opposites are always interesting to me. You can see this in my designs through black and white. There’s a play between masculine and feminine elements, although I do think it feels like quite a feminine collection. There’s also a dark romanticism to it through the silhouette.

What do you see as the key difference between Australian and international fashion?

The lifestyle and climate definitely influence fashion in Australia, naturally. I also think culture. There is a long history of fashion in some areas of the world, more so than here.

At the same time, we all pull inspiration from somewhere, and that’s what is cool about Australia. We’re a young, contemporary country, but we’re a melting pot of everything. I think that keeps us interesting.

resident chefs – and truffle lovers – are on their knees with noses buried in the dirt, face-to-face with a labrador-cross-dachshund named Shadow. Each year, Chase Kojima from Sokyo and Kiyomi, and Dany Karam from BLACK Bar & Grill, rug up and travel hours from Sydney into the Southern Tablelands of New South Wales to hunt for little black nuggets of pungent buried treasure.

This year, family-run truffle farm Terra Preta, just outside of Braidwood, played host to the trip, with truffle-hunting dog Shadow leading the charge. While truffles don’t usually make an appearance in Japanese cuisine, executive chef Kojima doesn’t shy away from adding as much of it to his menu as he can. “Truffle is definitely something I look forward to once it gets into season,” Kojima says. “You can smell it when you’re here and it makes you excited.”

The Terra Preta farm has the distinct, earthy smell of truffles wafting in the air. While difficult to spot from the surface, the truffle dogs make quick work of smelling out the exact spots to dig. Kojima and his fellow hunters are invited to carefully excavate any that are found, first scraping the top soil away, then smelling for that rich aroma that indicates it’s ready to be removed. “When you’re digging for the truffle, you have to be careful you don’t accidentally damage it. As truffle’s popularity rises for chefs and diners alike, you can expect to find it making its way into sushi, mains and even desserts this winter. “Now, people in Japan use truffle. People now know that you have to actually dig under a tree with your truffle dog, and it’s a lot of work to get this. You can only get it during this time of the year.

But I don’t even think traditional chefs know what this is,” Kojima says.

“There are so many different ways I like to eat truffles.

I like just shaving it over a warm tempura and asparagus. But my favourite is the way I serve it: with sea urchin and toro sushi with some crispy seaweed. Truffle complements tuna and tuna belly very well. The richness and fattiness of the tuna with the truffle taste is just magical.

When I add truffle, I’m looking for that complex aroma.

It’s hard to describe. You can only get it from a truffle.”

After a couple of hours of hunting and braving the cold, the hosts at Terra Preta invite the chefs to sit around a bonfire and finally sample some of the haul. On the menu are truffle-and-cheese toasties cooked in the flames, and homemade pumpkin soup from a mug with a generous shaving of truffle on top.

While the toasties are already packed with more truffle than anyone would need, Kojima finds even more to shave onto his plate, blanketing his lunch in the good stuff. “It’s so nice and seasonal and special. I want people to try it and understand it, so I like to use a generous amount. Don’t be cheap – put a lot on!” he enthuses.

With the hunt over, the dogs sleeping and the chefs fed, the chill and rain sets in, marking an end to the visit. While The Star chefs are running back through the pine forest at the mouth of the farm, they’re excitedly chatting and planning what they’ll do with truffles this season. Whether served on wagyu steak, a bowl of pasta or shaved on top of sushi, truffle season is most definitely here.

is one of Australia’s oldest and most iconic wineries. Next year, it will celebrate its 175th anniversary – and according to Peter Gago, the chief winemaker at Penfolds, it’s thanks to the brand’s winning ethos.

In 2001, while celebrating its 50th birthday, Grange was listed as a heritage icon by the National Trust of South Australia, further cementing Penfolds’ pivotal role in the evolution of winemaking in Australia and worldwide.

The shine is yet to wear off. The recent release of magnums of both the 2008 and 2010 Grange vintages (available to try at BLACK Bar & Grill at The Star Sydney, Kiyomi at The Star Gold Coast, and to selected guests inhouse in both regular and large format magnum/double magnum offerings) mark 60 consecutive vintages of Penfolds Grange. Both have been awarded perfect 100-point scores by acclaimed wine critics and publications.

“Magnums offer a great conveyance for longer-term cellaring, and/or a better opportunity to share more glasses. The better vintage of these two? Only time will tell,” Gago says.

For this award-winning winemaker – a maths and science teacher before spending his days among grapevines – the passion grows with every drop. His favourite observation over the years? “The rising culture and inclusion of wine. Yes, it remains a beverage, but it’s much more.

Wine and food, wine tourism, cellaring? No longer for the chosen few. It’s for everyone.”

When did you fall in love with wine?

It was less of an epiphany, and more of an immersion. As my teenage years disappeared at Melbourne University, my interest in wine ascended, organically. Earning an income a little later assisted … as did the sharing of vinous treasures with friends and family. I often refer to the “grip of the grape” – the more you engage with wine, the stronger the interest. I didn’t resist.

What does a typical day for a winemaker look like?

Rarely are any two days similar.

During harvest, it’s hour by hour – vineyards, winery, tasting-bench.

The rest of the year, it’s blending, bottling, travelling. Oh, and a continuum of tasting and trialling (the fun bit!).

We hear you have an impressive home cellar…

I’m a bit of a bowerbird when it comes to wine. I collect. But, I also open and share… honestly!

I’ve collected wines now for many decades, from everywhere. I joyfully study the form, and I’ve been very lucky when it comes to the odd acquisition. Perhaps it may be wise for me to stop there!

Do you have a career highlight?

One prize I treasure is the Winemakers’ Winemaker award I accepted in Dusseldorf in 2012 – only the second time awarded by the Institute of Masters of Wine and The Drinks Business magazine.

La Prairie was onto something, but it was a risk. How would consumers feel about rubbing roe from wild beluga (found mainly in the Caspian and Black Sea) on their faces?

The ultimate pursuit of youthful, glowing skin prevailed, however, and La Prairie launched its first caviar product, Skin Caviar Dermo Beads, in 1987 with instant success – a triumph that sees the product still on shelves today.

Like the ingredients, the product’s application process is also rather unorthodox. Forget the standard floral-scented cream; La Prairie’s Skin Caviar features caviar-like beads, containing the extract that is now sourced from Siberian sturgeon. When pressed into the face, a burst of nutrients and vitamins is released that promises to instantly help restore the appearance of firmness and lift to the skin.

The Skin Caviar Collection has become synonymous with La Prairie, and its iconic cobalt-blue packaging – which was also a risk when it was launched into a market saturated with white moisturiser bottles – is prominent in buyers’ minds. “People automatically think caviar equals blue, which equals La Prairie,” Besant says.

However, part of the brand’s product appeal is that it’s multi-sensorial. “It’s not just the results on the skin, but the pleasure of use. We work with spas that really have a holistic approach. Come have a massage, have some tea after. It’s what our brand is about – the experience.”

As the only spa in Sydney to stock La Prairie, manager of The Darling Spa at The Star Sydney, Chontell Johnson, says the alignment makes perfect sense. “We chose La Prairie as our luxury brand because it’s aligned with our desire to provide our guests with the highest level of opulence in service, facility and, of course, skincare,” Johnson says. “La Prairie is innovative, forward-thinking and supportive, which works in synergy with our need to be the same for our guests.”

The hero treatment on The Darling Spa menu is the Skin Caviar Lift Facial – an hour-and-a-half treatment aiming to instantly firm skin and perfect tone and texture. This is achieved with La Prairie’s Skin Caviar Liquid Lift being applied to the face and eye area using warm globes for ultimate absorption, followed by a relaxing massage with Skin Caviar Crystalline Concentrate to transform even the dullest of complexions.

“Each treatment has been specifically designed by La Prairie to provide an experience that is unique and exclusive to the brand,” Johnson adds. “While the treatment is not only relaxing and luxurious, the results are actually measurable.”

Where else in the world can we see Lasvit creations?

Enthralling pieces from our company are on almost every continent. The best lighting installations decorate the Prince Mahidol Hall in Bangkok, the Dubai Opera and the Parisian Peninsula Hotel. Recently, Lasvit embellished terminals of Changi Airport in Singapore and the lobby of Atlantis Hotel in China.

What was the inspiration behind the Astral Tower’s new installation?

I wanted to create something magnificent and glowing that draws people into the lobby. The installation is a light sculpture inspired by the shining star in the darkness of the universe; the glowing star that attracts everything.

What are the finer details?

The installation is dynamically lit. The lighting effects are controlled through an application installed on an iPod that allows activation and deactivation of the installation, selection of the appropriate lighting mode, or the setting of brightness using the scrollbar. There is also the option to choose the colour of light from the set scale, with eight pre-programmed lighting scenes to select from. Each has its own colour, motion, and speed.

Why is this installation such a unique creation?

Not only does it stretch to the height of more than 10 metres, but a total of 686 pieces of hand-blown Czech glass are fixed to its body, which makes the installation incredibly heavy. We used hand-blown Bohemian crystal glass rods with fluting and organic bubbles made in the glassworks in the Czech Republic.

What was especially challenging was the special dynamic lighting. It reflects the traditional approach of Bohemian perfection, which enables the light to naturally spiral down the column and gently illuminate the lobby.

If “the journey is the reward,” as the popular saying goes, we should be spending those mind-numbing airport commutes or bumper-to-bumper traffic jams feeling a little bit special.

In the spirit of making every moment count, Royale Limousines has unveiled a new fleet of luxury cars to take The Star Sydney’s guests where they need to go. And for those fostering a penchant for the finer things, there are a couple of new additions that might pique your interest.

The head-turning 2008 Rolls-Royce Phantom Drophead Coupe is a hand-built masterpiece combining the British manufacturer’s instantly recognisable styling with an open-top approach perfect for Sydney’s sunshine.

Valued at $1 million, the stately model is in keeping with the motto of company co-founder Sir Henry Royce: “Strive for perfection in everything you do.”

Every single Rolls-Royce takes 450 hours to make, requiring 60 pairs of hands, including those of craftspeople specialising solely in wood and leather. The Phantom Drophead is distinct for its striking teak decking, inspired by the J-class yachts of the 1930s, and its length – a whopping 5.6 metres from top to tail.

The original Phantom was engineered to have a drive designed to, in the words of the company itself, “lower the pulse.” Indeed, a hand-welded spaceframe that’s as rigid as a Formula 1 car and a double-insulated floor help keep noise, vibration and harshness to a minimum.

For long-time chauffeur John Parker of Royale Limousines, being behind the wheel of the Drophead is a soothing experience. “It’s a feeling of not wanting to go fast, of wanting to cruise,” Parker says. “It’s a big car, but it’s so easy to drive. The way it moves, it calms you down.”

The reactions it inspires on the street, however, are anything but serene. Parker says both the Phantom Drophead and the 2017 Ghost on Royale’s fleet can incite a special kind of hysteria. He recalls one evening when a celebrity passenger was delayed coming out of an event, leaving him to wait with the car outside the hotel. “I spent an hour and a half on the driveway having pictures taken – people were going gaga over the vehicle,” he laughs.

For an entirely different on-road experience, thrill seekers might want to opt for the fleet’s 2007 Aston Martin V8 Vantage, a high-performance vehicle with an arresting sports design that proves why the British carmaker is James Bond’s go-to. Capable of going from 0-100km/h in five seconds, it’s the antithesis of the leisurely Rolls, with one of its drawcards its unmistakable growl.

“With the Aston Martin, once you get it above a certain rev range, the baffles drop away in the exhaust system and it changes the note of the exhaust quite considerably,” Parker says. “You know when you’ve hit that part of the acceleration because you feel the car really take off. When I’ve got a passenger with me, I alert them to the fact they’re going to hear a noise they’re never going to hear again.”

When it came to designing the Gulfstream G650, engineers threw out all previous plans, went back to the drawing board and put together a whole new design that was purely performance-driven. The result? The G650, a jet that redefines how air flows over its long and unfettered wings to deliver speed and an incredibly smooth ride.
