In 2017, the festival of light, music and ideas set a world record with the Dreamscape installation – made of 124,128 lights, it became the world’s largest interactive lighting display. Do you remember when a whale-shaped hot-air balloon that had, uh, 10 mammaries hanging from it, flew over Canberra? The mastermind behind this controversial work was Australian contemporary artist Patricia Piccinini, who will be holding her largest exhibition Curious Affection at Brisbane’s Gallery of Modern Art. The Star Gold Coast’s master chocolatier, Surath Perera, invites you to indulge your sweet tooth
What’s your career background? I trained as a pastry chef at a hotel school, then was given the opportunity to go to Switzerland (where pastry and chocolate is famous!) to specialise further. I had the passion to specialise in the chocolate area and went to one of the most prestigious chocolate academies in Switzerland, where I ended up living for 11 years. I did my diploma and became a chocolatier. I came to Australia, via Auckland, New Zealand, in 1997, and joined The Star Gold Coast in 2014. Why chocolate? I was born with a chocolate background – I grew up on a cocoa plantation in Sri Lanka. We used to make footballs out of the cocoa pods! Then, as a pastry chef, chocolate was always around. I had the artistic touch for sculptures and things like that.

What does your role involve? I oversee the chocolate desserts in our restaurants, reporting directly into the head pastry chef, as well as anything to do with our chocolate promotions. I focus on the most important calendar dates – from Valentine’s Day to Mother’s Day and Easter. For these, we come up with showpieces (like the 2.2-metre high Easter egg we created this year and a 1.8-metre Christmas log last December). I enjoy getting the whole team involved and sharing my experience and knowledge. Do you have a favourite creation so far? One of the highlights was a big tractor made out of chocolate (a chocolate driver was even sitting on top) that I got to present to Parliament House in Canberra. Where do source your ingredients from? I work with single origin chocolate from different countries – Dominican Republic, Madagascar, Ghana; the list goes on. These countries have the ideal climates for growing cocoa. I’m also working with some local ingredients from Australia’s first cocoa plantation up north in the Daintree Rainforest. Our cocoa usage at The Star Gold Coast is very close to five tonnes (around 5,000kg) per year. What’s the must-try dessert at The Star Gold Coast? Our signature “Garden Chocolate Patch” at Garden Kitchen & Bar – it features chocolate soil, chocolate mushrooms, chocolate truffles and caramel sauce filling a “flower pot”. What do you love about your job? The things you can do with chocolate are endless. I transform my creativity into chocolate. When the guests see these kinds of creations, it wows them. Dessert is the last thing to arrive on the table, so I want to make sure that everyone leaves satisfied. ◆

BY A 70-kilometre stretch of beach, backed by 100,000 hectares of World Heritage-listed rainforest and crisscrossed by 400 kilometres of canals, the Gold Coast has been an enviable destination for holidaymakers in search of the sun since its beginnings as a sleepy surf hamlet 60 years ago. In his 2015 Beyond the Horizon Future Gold Coast report, leading Australian demographer Bernard Salt described the Gold Coast as a city “that has been willed into existence by the Australian people, and willed into existence because of the fundamental demand for lifestyle and leisure.” But in 1958, there was also a touch of clever marketing involved to capture the public’s imagination. “It was born out of an entrepreneurial spirit,” explains Dean Gould, executive director for corporate affairs and strategy at the Gold Coast Tourism Corporation. “It was real estate and business people who came up with the name ‘Gold Coast’, because they thought it had more appeal than ‘South Coast’, which was what it was previously called.” The Gold Coast Town Council was established in 1958; its first high-rise was built in 1959, and the city hosted its first international event, the World Waterskiing Championships, in 1965. Fast forward to 2018, and the city is hosting a more ambitious event: the XXI Commonwealth Games. curtain call. “The Gold Coast has never looked so good,” Gould says. “We’ve never had such a sustained influx of private and public expenditure in the city.” The investment has propelled the city’s growth in three key ways. The first has been the estimated $1-2 billion expenditure on the Games, including $200 million on sporting infrastructure located throughout the city and a brand-new $37 million cultural precinct. The second is the fast tracking of planned public works in the area, including its flagship light rail system, which runs along the main tourist corridor and connects to the Brisbane rail line. Lastly, a major impact has been the influx of private investment, particularly in tourism, leisure and retail. This includes the $670 million refit of the Pacific Fair shopping centre, making it the fourth largest shopping centre in Australia, and up to $850 million being invested to transform The Star Gold Coast.

“We see enormous potential for the region in terms of long-term tourism and economic growth,” says Geoff Hogg, The Star Entertainment Group’s managing director for Queensland. “The Gold Coast’s reputation as a must-visit destination continues to strengthen with both leisure and business travellers, so we are working to create a broad offering that will help to support this well into the future.” Along with the refurbishment of the 596-room existing hotel The Star Grand, the fully integrated resort in Broadbeach has just opened The Darling, a luxury suite hotel. The Darling offers 57 suites, butler service and a spectacular rooftop infinity edge pool that teeters five metres over the lip of the building. “We see The Star as being a destination within a destination,” Gould says. “Not just because of the grandeur of it, but because the impact and breadth of what’s on offer there is absolutely breathtaking.” While the Gold Coast has traditionally been a family destination for Australians, the area has begun to attract a more discerning traveller, drawn by the new luxury hotel openings, an increasingly sophisticated dining and nightlife scene, and the glorious sunshine and beaches, both of which the Coast offers in abundance. International visitor numbers have also spiked, with Gold Coast Airport considered one of the fastest growing airports in the country. The introduction of direct international flights from Hong Kong, Kuala Lumpur, Singapore and Tokyo has allowed the Gold Coast to emerge as a gateway city, freeing up the area’s reliance on Brisbane Airport. But it’s not just the tourists who are flocking. While tourism and construction have been at the core of the economy for decades, the population of the Gold Coast has exploded to just over 600,000, making it the sixth largest city in Australia. In 2050, the city is expected to double in size, with 1.2 million calling the Gold Coast home. Twenty per cent of the current population run their own business, and in response to this entrepreneurial growth, the Gold Coast Business

Hub is set to open at Burleigh Heads, backed by a $60 million investment by government and the private sector. Additionally, a 200-hectare health and knowledge precinct has been established at Parklands, with the Athlete’s Village set to be transformed into apartments and retail after the Games. This kind of accelerated infrastructure development is a key legacy of hosting the Commonwealth Games. However, for the city by the sea, the real impact of hosting the Games comes from showing the world what the seaside metropolis has achieved; a chance to showcase its evolution from domestic to world-class destination. “It’s a pretty upbeat feeling at the moment,” Gould says. “The Commonwealth Games really represents something more than a mega sporting event. It represents a very deep and philosophical coming of age of the city.” ◆

HE WILDLIFE IS the star of the
show on idyllic North Stradbroke Island. Every year between April and November, migrating humpback whales occupy the deep blue surrounding the island, which can be found 30 kilometres from Brisbane in Queensland’s southeast corner. Locals and visitors alike gather at The Gorge to see the majestic giants frolic just a stone’s throw from shore. It’s a treat to wander the iconic North Gorge Walk at dawn. The 1.2-kilometre trail winds past grazing kangaroos, sleeping koalas and chortling birds as the sun rises above the waves to the east. Those with the patience to pause by the water will likely spy dolphins, rays, turtles and tropical fish. While the whales and kangaroos get all the glory, it’s one of Stradbroke’s smallest creatures that is becoming the latest star in this island’s show. The native bees buzz around the bush during the hottest hours of the day and provide a soothing soundtrack to island life. An innovative partnership between North Stradbroke’s Aboriginal community and The Star Entertainment Group – the owners of the Treasury Brisbane and The Star Gold Coast – sees a trial program harvesting “sugarbag” native honey from hives hidden around the pristine island, known as Minjerribah to the traditional land owners. according to local customs before being used as a signature ingredient in menus created by chefs at the two Queensland hotels. Australia’s leading native bee expert and former CSIRO entomologist, Tim Heard, says each hive should generate around one kilogram of honey each year. “We have around 1,500 species of bees in Australia, with this particular species producing a unique and earthier taste sensation that is lighter and has a runnier consistency than normal honey,” Dr Heard explains. “The hives are being placed in different terrains and locations around the island, such as by the coast and in bushland, to see if their locality provides different flavours or different honey production rates, which will be reviewed during the trial.” The Quandamooka community is embracing the program. They not only see it as a chance to establish an artisan micro-food business on North Stradbroke Island, but also to pass traditional skills down to a new generation of the Indigenous population and develop an eco-cultural experience for visitors to enjoy. If you’re exploring North Stradbroke, be sure to pause when you hear the native bees buzzing about and give these miniature members of the island’s population the attention they deserve. ◆

Similarly, the appreciation of Chinese art has a long history in Australia. It’s a passion that continues to flourish on the streets of Sydney.

EAST MEETS WEST Back in 1973, the first Biennale of Sydney was held to showcase thought-provoking works from the Asia-Pacific, which made it the first art event in Australia to focus on Asia and its contemporary art. Since its inception, the three-month long exhibition has showcased the work of nearly 1,800 artists from the region. Of the 70 artists to be featured in the 21st Biennale of Sydney this year (March 16 – June 11), 27 hail from Asia. One is the controversial, and often celebrated, Chinese artist Ai Weiwei. He’ll bring with him two large-scale works that premiered at Prague’s National Gallery in 2017. “Crystal Ball” is a 1.7-tonne crystal sphere and the largest work Ai has ever created. “Law of the Journey”, an all-black, 60-metre inflatable boat filled with more than 250 oversized figures, intended as a representation of the global refugee crisis, will take over one of the industrial caverns on Cockatoo Island in Sydney Harbour. “The artists in the 21st Biennale of Sydney have been chosen to offer a panoramic view of how opposing interpretations can come together in a state of equilibrium,” says artistic director Mami Kataoka on the Equilibrium & Engagement theme of this year’s event. “The history of the people of Sydney collectively reflects the history of the world in the 20th century, in particular the movements and migration of people and cultures away from conflict. My hope is that the artworks in this Biennale will serve as a catalyst for thought for all of us.” Works will be displayed across seven galleries and locations, including the Museum of Contemporary Art, Sydney Opera House, 4A Centre for Contemporary Asian Art, Carriageworks and the Art Gallery of New South Wales (AGNSW). biennaleofsydney.com.au ART HISTORY While AGNSW is participating in the 21st Biennale of Sydney, it isn’t the only contribution it makes to Asian art. There are two permanent spaces in the gallery that are dedicated to displaying art from our Eastern neighbours. Spanning two floors, within this space the AGNSW has displayed some of the finest pieces of art in China’s rich history. In 2007, the gallery welcomed priceless pieces of jade sculptures from the Palace Museum, located within Beijing’s Forbidden City; 2008 saw the lost sixth-century stone buddhas of Qingzhou pay a visit; and in 2010, probably the AGNSW’s biggest feat – 10 complete terracotta warrior statues shipped from Xi’an and put on display.

Most recently, the gallery brought ceramics, sculptures and mural paintings dating back to China’s Tang dynasty (618-907 AD). HE NAME JOHN Frost is synonymous with a throng of hit musicals. If you’ve been to the theatre sometime in the past three decades, then chances are you’ve sat in the audience of a Frost production. Grease – The Arena Spectacular, The Rocky Horror Show, Wicked and We Will Rock You are just a few of the productions that have earned Frost his position as a powerful player in the theatre world locally, on Broadway and in the West End. A creative businessman with two Tony awards on the mantelpiece, “Frosty the Showman” (as he’s dubbed in the industry) isn’t exiting this stage anytime soon. In fact, his current show, The Book of Mormon (Broadway’s hit musical written by South Park creators, Trey Parker and Matt Stone) has finally made its highly anticipated arrival in Sydney – and set a record for the highest grossing on-sale of any musical theatre production in Sydney’s history… Was that expected? I saw The Book of Mormon about three months after it opened on Broadway and I remember knowing instinctively that Australia would embrace this show. It’s highly entertaining. It’s extremely funny, humour Australians like. It’s a special show, and these sorts of shows don’t come along a lot in one lifetime. I knew it would just fit with the Australian psyche perfectly and it was worth fighting for to get an opportunity to co-produce it in Australia. It’s broken box office records [around the world] and they’ve played to capacity wherever it’s gone. Now it’s Sydney’s opportunity to see it. How do you describe the show? For me, it’s the perfect musical because it has something for everybody. It’s beautifully constructed with a great book, great songs and great staging. every market is different so you can’t afford to take your eye off the ball with any show, particularly with The Book of Mormon because it’s so unique. You’ve said the hardest part of any production is raising the money. Who are your investors? A lot of our investors own or co-own a racehorse. I think it’s [because of] the fun of the gamble and the roll of the dice. They understand that when you put a horse in a race it can come first, second or third and hopefully you make some money out of it. In theatre, a show is either going to be a whopping success, a success, or it’ll break even and you’ll get your money back. If a show goes belly up and lose all its money, they understand that it was a gamble. Do you consider yourself a risk taker? Oh God yes, without a doubt. My whole business is a gamble. No show is a laydown affair. Every business opportunity, every show, is different and one doesn’t have a crystal ball. What have you learned about gut instinct in this business? I think you’ve got to trust it. I found that as I’ve gotten older (and either sillier or wiser) that I must learn to trust my instinct first up. And quickly handing them over. “The projects we work on don’t belong to us. In a way, we midwife them – we bring them into being – and the most exciting thing is when they’re embraced by the community they’ve been made for,” says Francis-Jones, who has “delivered” some of Sydney’s most iconic buildings in his 37-year career. Born in the United Kingdom, Francis-Jones studied architecture at the University of Sydney in the early 1980s before he began practising at firms in New York, Los Angeles and Paris. Architecture Award for Public Architecture, the 2012 Australia Award for Urban Design, and the 2013 City of Sydney Lord Mayor’s Prize. That same year, FJMT became the first Australian firm to win the World Building of the Year prize at the World Architecture Festival for the Auckland Art Gallery Toi o Tamaki, which was designed in association with New Zealand’s Archimedia. When designing the building, which took seven years to realise, Francis-Jones wanted to capture the community’s aspirations for the future. “We wanted the art gallery to be deeply connected to Auckland and the culture of New Zealand. We used local Kauri [timber] to create tree-like canopies – and when the building opened, the visitors really loved it. One of the most satisfying things for an architect is when a building is instantly owned and embraced by the community,” says Francis-Jones, who hopes his next project, the proposed Ritz-Carlton Sydney at The Star, will be embraced by the Pyrmont community. With panoramic views over Darling Harbour, the $500 million Ritz-Carlton hotel and residential tower will take the form of a mighty twisted spiral. Francis-Jones looked to the character of Pyrmont for inspiration. “We wanted the tower to be formed by the environment around it. The building is shaped to get sunlight into the public space, to mitigate wind effects, and to share views with neigh-

NSW BLUES coach Brad Fittler is more qualified than most to talk about what State of Origin means to rugby league. His appointment ahead of the 2018 season was the culmination of a lifelong love affair with the toughest form of the game. Long before he was coaching and playing for the Blues, Fittler was like many other wide-eyed adoring young fans captivated by the legend forged by inaugural captains Arthur Beetson and Tommy Raudonikis back in 1980. “I remember as a kid I was more nervous the week leading into a State of Origin game than I was playing,” Fittler recalls. “I can’t really explain that feeling but I’m sure that’s what happens to other people. It’s in their bones.” If State of Origin is in people’s bones it is in Fittler’s blood, as the former Blues captain still holds the record for most appearances (31) for NSW. The last of those came in 2004, his final year of first grade, when then-coach Phil Gould pulled him out of representative retirement for one last shot at State of Origin glory. “My last memory as a player is in 2004 when we won the decider to clinch the series,” Fittler remembers. “I was lucky enough to score a try and there are some specific moments in that game that are etched in my memory forever, so I’m very grateful that my last memory is a good one.” His first memory of State of Origin was when he was plucked from Penrith’s first grade side as a fresh faced 18-year-old to play in game two of the 1990 series. While the now 45-year-old’s recollections are a little hazy, he remembers distinctly the magnitude of the contest and the hype that surrounds the series. “It had a pretty big impact on me; just the standard of the game,” Fittler says. “That feelURRENT

For a contest to have such a small history but be so intense, that’s what really makes it so special.” Perhaps that explains why Fittler now feels the burden to add to that legacy as a coach. He has coached first grade with the Sydney Roosters, the City Origin team and, most recently, Lebanon, who were one of the surprise packets of the 2017 World Cup. However, coaching the Blues is by far his toughest assignment to date. “The job has become so much more than the three games,” Fittler says. “The NSW organisation is doing such a brilliant job and it is about making our brand one of the most recognised, respected and trusted brands in the marketplace, and that all comes down to winning. So we need to win.” That’s easier said than done when you’re coming up against the greatest team in Origin history. The Maroons have won 11 of the last 12 series. The Blues seemingly had last year’s Shield in the bag in game two, only for the “never say die” Maroons, led by Johnathan Thurston, to claw their way back into a series they would eventually win comfortably in the decider. “It is a very tough job we have on our hands,” Fittler concedes. “It is about lifting the everyday standards of the players. We have to have the best players week to week to turn up and win a State of Origin series. It’s no fluke that week in and week out Queensland have had the best players in the competition, so we need to turn that around.” Fittler faces a tough ask to do what many of his predecessors couldn’t. Graham Murray, Craig Bellamy and Ricky Stuart have all failed

to win a series since 2005, while Laurie Daley managed only one win from five attempts. Fittler’s approach and ethos will be simple: “I want us to be a team that puts the jersey first. That attitude comes out in so many different ways, so that is one thing we will be trying to push. Making sure the team comes before the player.” It’s a fighting philosophy, and Fittler knows when you play Queensland they will have their entire state behind them, no matter the venue. “I would have to say there aren’t many states as patriotic – not only in Australia, but worldwide. But we are playing a game of footy against 17 players, so we need to work hard for our teammates, and that’s the most important thing.” Many feel that the future of the game is threatened by Queenslanders – that both the players and fans have a greater passion for State of Origin football. Fittler isn’t buying it. “Our record hasn’t been fantastic lately, but we keep filling our stadium, and NSW fans keep coming to support. At the end of the day, the Origin games have always been the best games of the year with the most intensity and the standard of footy so high. While that is the case, it will always sit high on the calendar as one of the most watched programs every year.” Bring on the 2018 instalment. ◆

HERE ARE TWO types of restaurants
on the Gold Coast. Restaurants that cater to the tourists, and restaurants that cater to the locals. Kiyomi is neither. That’s according to Chase Kojima, celebrity chef and heavyweight restaurateur. He established Kiyomi to cater to anyone and everyone, with the aim that all those people should leave his restaurant extremely happy. What’s the winning formula in this equation? It’s good service, and really good food. Kiyomi has won a chef’s hat three years running, and has the awards and crowds to prove why. Since opening in 2014 as part of the transformational rebrand of Jupiters as The Star, Kiyomi has redefined Japanese dining on the Gold Coast. An influx of new restaurants, cafes and bars hasn’t hampered the super-sleek venue’s position at the pinnacle of the food scene – mainly because Kiyomi’s team have created their own culinary style. “Over the last two years, the Gold Coast has become cooler and more fun every day, but we haven’t changed our style because it’s uniquely our own,” Kojima says. “We’re uniquely cool, and on the Gold Coast, that really works.” There’s no doubt Kiyomi is the cool kid on the block. That’s not just because of the fluorescent, super-sized UV art installation created by Tokyo-based artist Houxo Que aka Questa. Chase Kojima comes with his own very illustrious credentials. His Sokyo restaurant at The Star in Sydney is rated as one of the best in the country, and his creative style, combining traditional Japanese dishes with the drama and flair of modern culinary trends, is what really sets him apart. At Kiyomi, he has pushed the team to make “every edge sharper”, and that includes a menu that isn’t afraid to have a bit of fun, without sacrificing quality. The izakaya-style menu focuses on different styles of Japanese cuisine – sashimi, tempura, the Binchotan grill, mains and desserts – with Aussie flavours, and the heavy influence of citrus, all the hallmarks of Kojima’s signature style. Special dishes are regularly updated based on seasonality and events, but it’s the signature dishes that have an almost cult-like following among regulars. These include a Hiramasa kingfish ceviche, where thinly sliced kingfish sashimi is seasoned with salt and pepper, sauced in a sweet, tangy, spicy, citrus miso sauce, adding green chillies and red onion, and topped with julienned, deep-fried potato. Kojima designed this to be served at the start of the meal, to open up the palate and get people’s appetites started. This could be followed by a tuna sushi roll that’s extra special – the sushi rice is compressed and pan-fried to create a crispy outer layer of rice, the tuna marinated with spicy aioli, topped with thinly sliced tuna sashimi and garnished with shiso. It looks like sushi but is a completely different experience for your taste buds. And then there’s the piece de resistance: a Blackmore wagyu inside skirt marinated in fermented rice koji that release more amino acids, making the beef even more tender, before it’s cooked on the grill and topped
with fresh Tasmanian wasabi. The cut is a rarity locally, but Kojima has worked hard to foster relationships with his suppliers. When it comes to seafood, these relationships are vital in ensuring Kiyomi has the best of the best Australian produce. The team prefers to use tried and tested suppliers they work with across the three venues, who fly their catch up to the Gold Coast daily. “There’s a big cost, but it’s definitely worth it for the quality,” Kojima says. “Our suppliers work very hard for us so we get all the best stuff. And that transition; catch, prep, ship, they have it down to a tee. The suppliers actually drive to the airport and ship it.” Suppliers from all over – Darwin, South Australia, Tasmania, even further afield like Japan – are vital to the end product. However, when it comes to vegetables,

the restaurant keeps it local. “I live mostly in Sydney, so when I go to the Gold Coast, I can tell there’s a big difference between Queensland vegetables and New South Wales vegetables,” says Kojima. And with that in mind, the team tries hard to support local producers. The problem becomes quantity, but the tactic is, “we try to be really, really nice to them, so they want to share their amazing produce with us.” It’s not just the suppliers that are willing to go the extra mile. Many of the restaurant’s staff are part of Kojima’s culinary family, having made the sea change from Sydney’s Sokyo to the Gold Coast. Chef de cuisine Yonge Kim has returned to the fold after holding down the fort at Sake Restaurant and Bar in Melbourne. Sous chef Winston Law runs a tight ship, while Lenny Lim is the specialty sushi chef. Kiyomi’s team aren’t just here for the coastal living – they’re here to help the restaurant raise the bar of the Gold Coast’s food scene up towards the sky. ◆

Current wine trends to look out for... Shiraz is a classic, but it has really picked up again. A lot of people are drinking more Barossa Shiraz in either what we call the traditional wave or the new-style wave. The latter is more concentrated, not overly oaky, well-balanced and has a red-fruit delicacy to it. An Australian Shiraz always comes back in style; you can’t go wrong. The wine most frequently underrated... Anything from NSW. For me, promoting local wines from the state is important. You
go to Melbourne or Adelaide and the wine list is full of wines from Mornington Peninsula or the Barossa Valley. A lot of New South Wales wines are looked over by Sydney restaurants. There is some beautiful Pinot Noir and Italian grape varietal coming up from the Mudgee and Orange area. And, of course, the Hunter Valley always has magnificent wines. When creating the perfect wine list... It shouldn’t be just about taste; it should also be about quality. You want the best from a region. If we’re talking Shiraz from the Barossa then you want a traditional one; a cool climate and a savoury one. Price doesn’t even come into the equation. It just has to be a good-quality wine to make it on my list. A good wine collection includes... Rare vintages, obscure wines and natural, organic and biodynamic wines. Include wellknown international and domestic brands, as well as smaller labels. There’s no hard and fast rule to a good wine collection. Just choose quality. Reds you can’t get enough of right now... Most of the alternative Australian grape varieties like a Sangiovese or Barbera. Meal best paired with red... I’m a traditionalist. I always opt for a local red and good piece of steak, with the bone attached as it adds a more savoury element. So I’d pair a rib eye with an Italian Sangiovese. This blend always has a quiet taste with a savoury element, red cherry flavours and good acidity, which is most important. Acidity can cut through the fat of the protein and allows the flavour to keep growing on the palate. The key to pairing steak with wine... A crucial point is to ask yourself if the cut of meat is grain fed or grass fed. If you go grass-fed, look at the Cabernet grape varietal, which all have capsicum, pepper and berry flavours. For grain-fed steak, pair it with a wine from the Rhone Valley, France, like a Grenache. Always start a meal with... Champagne and seafood. Really fresh, delicate seafood goes beautifully with Champagne. You can break the rules if... You choose the right wine. You can play around with modern Australian cuisine and pairing. Have white wine with a steak if you want to, just make sure you have a wine that suits the steak. ◆

Will benefit from five or more years in a temperature-controlled cellar. 3. 2012 Yalumba The Caley Cabernet Shiraz, Barossa Valley/ Coonawarra, $825 Colour: Medium purple with a hint of water rim. Nose: Shows dark fruit, cocoa powder, brown spices, roasted nuts, black olive, white truffle and violet aromas, refine oak handling. Palate: Concentrated and well-balanced weight on the palate, silky texture, very refreshing and integrated acidity with refined, polished tannins and texture. Finishing long and wonderfully silky on the palate. Peak drinking: Drinks well now. Will benefit for 10 to 20 years in an underground cellar.

Sydney foodies are raving about the “omakase” sushi experience at Sokyo, the creation of chef Chase Kojima at The Star Sydney. Translating to “leave it up to you”, the Japanese phrase “omakase” is used by patrons when handing the food selection over to the chef rather than ordering a la carte. Take a
seat at Sokyo’s sushi counter and let chef Takashi Sano decide what’s on the menu. Starting price is $130 per person; bookings are essential as the experience is limited to a few spots per night.

At The Star Gold Coast’s sleek and lavish new bar Cherry, designer drinks are the star attraction. A seasonal cocktail menu has been crafted by expert mixologists to include all the classics, including the Cosmopolitan, Espresso Martini and Caipirinha, as well as signature flavour combinations and infused spirits. AS THE OWNER of 10 Commonwealth Games gold medals, retired Australian swimmer Ian Thorpe regards the event with fondness. “I competed in my first Commonwealth Games when I was 15 in Kuala Lumpur, then my second one was in Manchester where I had one of the best swims of my career. So for me, they’re good memories,” Thorpe recalls. What’s your career background? I studied architecture in Germany and have worked throughout Europe and Australia. I have been lucky enough to be involved in many large projects such as a new international airport, demanding Heritage Listed projects, restaurants and discerning high-end retailers. What do you love about your job as senior design coordinator for The Star Gold Coast? I love the interaction with all the varied stakeholders – from art consultants to construction contractors – but perhaps best of all is seeing all the hours of hard work reviewing thousands of drawings and material specifications transform into such a high-quality product. It is very rewarding. I have always loved the relationship between design and construction and bringing these together is what I have most enjoyed on The Darling project too. What was the inspiration for the interiors of The Darling? The coastal life of the Gold Coast – the sun, the blue skies, the water and even the patterns left by waves in the sand. These elements are combined with breathtaking views and wonderful natural light to produce a showpiece of Gold Coast luxury. Each area has its own personality and interpretation of the coastal life idea, but all fit together to produce a journey for guests as they move through the building. The lobby is luxurious and timeless, and uses a combination of stone, turquoise in artworks, curved forms on the stone columns, and water reflections of crystal chandeliers to represent the ivory of our coastline. Moving into the darker theme of the hotel, the corridors are dressed up with gold and crystals. The journey reaches its peak upon entering the rooms with a tranquil opulence in earthy stone and carpet palettes, orange and gold highlights in the chandeliers, and a range of luxurious textures in the form of wall coverings, curtains and artwork. How does it differ from The Darling in Sydney? The Darling on the Gold Coast certainly has a very different feel to The Darling in Sydney – and so it should. The Darling in Sydney uses darker and moodier tones and suits its position in the centre of Australia’s largest city. At The Darling on the Gold Coast we’ve referenced our wonderful coastal lifestyle throughout, but without overstating it. It is captured in the colour palettes, the materials and even in the small details with references to items such as surfboards and oars or corals and clams.

Do you have a favourite feature? Externally, it has to be the curved balconies – their flow and continuous lines, and the way they hug the building in such a subtle way. They are massive pieces of glass fibre reinforced concrete, yet look so subtle and elegant. Inside, my highlights would be the chandeliers. Each has been carefully designed to complement the space. In the hotel corridors they are simply spectacular, and the combination of chandeliers and water feature in the lobby are magnificent. How were the textiles and furnishings sourced? We sourced the highest quality textiles and furnishings locally and from the USA, Europe and China. A number of these are bespoke items including chandeliers manufactured locally and in Prague, stone from Italy, and wallpaper specially made with mother-of-pearl or glass bead. Most of the artwork was commissioned and made for specific areas with an aim of supporting local artists on the Gold Coast and within Australia. The imported carpets were specially designed for individual areas of the building and furniture for the rooms were designed in the USA and individually made in China.

Were there any creative challenges? Each area had its own challenges, but with so many great designers working together, we were certainly not short on creativity! In fact, having multiple interior designers was perhaps the biggest challenge. Every designer brings a unique style and diverse ideas and trying to marry and blend those without compromising anyone’s inspiration was a challenging task. If I had to choose one area, it would probably be the lobby because of its importance as the first impression for guests. It is also an area that needs to combine functionality without sacrificing luxury or that welcoming feel, and I believe we have definitely achieved that. What do you hope guests notice? The Darling is exclusive and the aim has always been for our guests to feel the uniqueness of the place throughout their stay, starting with the “wow” factor as they enter the property. We have worked hard to ensure the luxury finishings foster that exclusive environment while still providing a cosiness and warmth for guests to feel at home, immerse themselves and create personal memories at The Darling. ◆

the test of time usually do so because even when they’re measured against modern technology, they still come out on top. That’s why the centuries-old hammam spa is more popular than ever. These old-world spas are commonly found in Morocco, Turkey and throughout Europe, but you needn’t travel that far for the experience. You’ll find the Moroccan Hammam Ritual Treatment right in the heart of Sydney, at The Darling Spa at The Star. If you were to go through history books, hammam spas, or variations of the hammam spa we know today, have existed since the Roman Empire. At the time, they were known as bathing houses and were used for practical reasons, rather than therapeutic. While we now consider bathing a private activity, back then the public bath was a place for people to not only cleanse their bodies and relax, but also to socialise. As the popularity of the Roman bath slowly declined, it boomed throughout the Middle East instead. It’s during this time that a name for the East’s take on the Roman bath was coined: hammam. An Arabic word, hammam means ‘spreader of warmth,’ which is fitting considering one of the idiosyncratic features of a hammam is that the treatment room is heated to a toasty 40 degrees. “The intense heat helps to expel toxins from the body,” explains Cecilia Ferreyra, spa manager at The Darling Spa who has been trained by Moroccan beauty brand, Mira’s Hand, on how to provide guests with an authentic Moroccan experience. “Heat also helps relieve any tension in the body and allows muscles to relax. ucts we use are Moroccan. It’s a complete different experience to any other spa in Sydney. It’s often very new and different for guests. So it’s also educational. The more comfortable a guest feels the more they’ll enjoy the process.” Which leads me to my next point: push any inhibitions you may have aside. This is a two-and-a-half-hour full-body treatment where you’ll spend most of the time stripped down to disposable underwear so that the therapist can exfoliate your whole body. “It’s an intense treatment because of the deep exfoliation you receive,” Ferreyra says. “We use Moroccan savon noir, known as black soap, which is rubbed into the skin and over the whole body with an exfoliating mitt. Even if you’re a regular exfoliator, you’ll still see rolls of skin come off.” But don’t freak out – the more dead skin that comes off, the better. “It means the skin can rejuvenate. For people who have regular spray tans or extremely dry skin, this treatment will transform their skin,” Ferreyra adds. The deep scrub is followed by an application of rhassoul clay, along with rose water from the Moroccan Atlas Mountains. You are then wrapped in cloth and left to rest while the clay and heat draws toxins from your body. To help you unwind, you’re treated to a scalp massage with argan oil, making this a total head-to-toe treatment. Finally, once the clay is rinsed off, your body is coated in rich oils and the treatment is wound up with a one-hour full-body massage. Hello, bliss. ◆

Enter Galleria Automobilia Classic Car Gallery, a veritable feast of rare cars available for your perusal at The Star Sydney. Perhaps the ultimate outing for those who feel as though petrol runs through their veins, this showcase of some of Ferrari, Mercedes and Bugatti’s most iconic vehicles launched on January 24 of this year and will remain at The Star indefinitely. But even visitors who don’t consider themselves revheads will find the legend of the cars on show entirely captivating. For if you can’t appreciate the intricacies of the cars themselves, you’ll be fascinated by the stories of how they came to be. Many of the showroom’s Ferraris had their design and production overseen by the late, great Enzo Ferrari during Europe’s golden age of racing, each of them boasting a backstory worthy of a Hollywood film. Take the 1973 Ferrari 246 Dino Coupe, which was named in memory of Enzo’s first son Alfredo ‘Dino’ Ferrari, who tragically died in 1956 at the age of just 24 from muscular dystrophy. The car honouring him is the only model to come out of the Ferrari factory not bearing its iconic prancing horse badge (it instead bears the name ‘Dino’ on its front) and it contains the 1.5 L DOHC V6 engine Alfredo helped his father design months before his untimely death. The Galleria’s 1959 250 Testa Rossa was one of a series of cars born of Ferrari’s efforts to produce safer vehicles after European motor racing’s safety standards were altered in 1958 following a series of famously bloody – and occasionally deadly – accidents. The most horrific of them all was the 1955 Le Mans disaster. French driver Pierre Levegh was killed along with 83 spectators, who died when they were struck by flaming debris that flew into the grandstand due to the force of Levegh’s collision with British driver Lance Macklin.

This historical significance, plus their reputation as some of the most successful racecars of all time, has made the Testa Rossa one of the most valuable models in the world. Different versions of the car have consistently broken world records by fetching exorbitant prices at auctions. In 2011, a 1957 250 Testa Rossa – the model’s original prototype – sold for roughly $21.1 million. There are more recent models on show in the Galleria too, like the highly covetable, super-fast 2017 Ferrari 488 GTB. Starting at around $460,000, this mid-engined supercar can reach speeds of over 330km/h. Add to that a 360 Spider and 575M, both from 2004, plus a 1994 348 Spider with a stunning tan interior, and you’ve got a full set of vehicles that exemplify the Italian carmaker’s benchmark-setting design. Each one is a collector’s item, in line with Enzo Ferrari’s mantra that “you should always build one less car than the market demands.” The oldest car in the showroom is a bright blue 1927 Bugatti Grand Prix racer, pulled out of years of storage to go into the Galleria as a testament to the work of Ettore Bugatti, one of Italy’s most famous car manufacturers. Providing a stark visual contrast to this classic racer is the Galleria’s 2012 Mercedes SLS Gullwing that, true to its name, looks ready to take flight thanks to its instantly recognisable levitating doors. Not exactly a low-key ride, the hand-assembled, twodoor supercar from the German manufacturer is a celebrity magnet and has been driven by everyone from tennis legend Roger Federer to comedian Eddie Murphy. For snap-happy visitors to the Galleria, it also makes for a pretty impressive photo op. Alternatively, you can nab the Instagram post dreams are made of in the showroom’s 1959 Mercedes 190 SL, a regular in retro television shows and films that evokes the kind of old-school glamour exuded by Grace Kelly. If you’re not content with just window-shopping – no problem. Every car here is up for sale and prices are available for serious buyers on request. After all, recent figures have shown classic cars are the best-performing investment of the last decade. That means you can have your slice of history and eat it too. ◆

What’s the history of the Currumbin Wildlife Sanctuary? It was opened in 1947 by Alex Griffiths, a flower grower and bee-keeper. He started feeding the birds because they were attacking his prize-winning gladioli, and that inadvertently attracted more birds. So he gave up on flower growing and focused on the birds. It turned into a bit of an attraction, so in the 50s and 60s he really started to promote it and it was pretty much the first tourist attraction on the Gold Coast. In 1976, he gifted it to the National Trust of Queensland. It’s been owned and operated by the Trust ever since. How many visitors does the Sanctuary attract a year? About 600,000 come through a year. What can you expect on a visit here? A true unique Australian experience. You can get up close with our native wildlife, particularly kangaroos, koalas, wombats – those iconic species. We do it differently to lots of other zoos. As a sanctuary, we don’t have lots of cages. We’re a very open environment and quite a large property with a multitude of different ecosystems – from subtropical rainforests and forest fringes, through to massive creek and lake systems. Tell us about your newest attraction, Lost Valley? Lost Valley was the brainchild of our CEO Jonathan Fischer, a way to reinvigorate a part of the Sanctuary that was closed for many years. It’s a five-acre precinct housing a whole heap of exotic species from the Gondwana era. The pinnacle of that area is the rainforest aviary, one of the largest walk-through aviaries in the Southern Hemisphere. In that, you have free-flying birds and ring-tailed lemurs, so it’s great for visitors to get up close to those. You also operate the Currumbin Wildlife Hospital… It started in the 1980s to treat our internal collection. It grew, and in 2009 we opened the dedicated Wildlife Hospital, a state-of-the-art facility and one of the biggest in Australia dealing with wildlife. We now see over 10,500 animals a year brought in to us from members of the public or picked up from our wildlife ambulance. All animals are treated for free and returned to where they were picked up from. Which resident animal impresses the crowds most? The one that surprised us, that we didn’t think visitors would enjoy as much as they do, is the capybara – the world’s biggest rodent. People love looking at him. Do you have a favourite experience to recommend? I love the koala experience because you get inside the koala enclosure and learn about them in detail from a keeper. I also love going on the behind-the-scenes tour that gives you a good idea of how well these animals are looked after and the amazing attributes they have. ◆
