Known in Santa Barbara for the ten years she spent as former Executive chef/co-owner of the Sojourner Café, Edie Robertson is a multi-talented woman whose petite frame conceals remarkable amounts of energy, talent, and kindness. The impish Robertson achieved fame early: a world skateboarding champion while still in her teens, she was also the lead singer of SheRock, an all female rock band that was the first American rock band to be allowed to perform and record on mainland China. After graduating in 1996 from Western Culinary Institute/Cordon Bleu in Portland Oregon as Valedictorian with top honors, she completed her education with an internship at Aqua Restaurant in San Francisco under celebrity Chef Micheal Mina. Chef Edie returned to Santa Barbara in 1997 and became Executive Chef and co-owner of the Sojourner Café until August of 2008. Recently named one of Santa Barbara’s best private chefs by Santa Barbara Magazine.

The couple met while attending the Culinary Academy in San Francisco. Since that time they operated Marguerite’s By the Sea Restaurant in Montego Bay Jamaica. From there they moved to Santa Barbara and were married. They started their career in Santa Barbara in 1981 when Mark worked at the San Ysidro Ranch and then Brigitte’s. Margaret worked at the San Ysidro Ranch, Norbert’s, Downey’s and Brigitte’s. In 1984 They took over the operation of the Montecito Cafe which was located at the San Ysidro Pharmacy. They moved the Montecito Cafe in 1986 to the Montecito Inn and stayed at that location for 30 years. Mark and Margaret own Jane Restaurant on State Street and Jane at the Marketplace in Goleta. Jane restaurants culinary focus is on reasonably priced, simple, made form scratch, no fuss fresh and delicious food, in cozy and warm surroundings with fast and friendly service. Mark and Margaret have been married for 37 years and have 3 children.

Diana Cuttrell is second generation Californian, coming from a family well rooted in the culinary world. Her grandfather established Mother’s Cake and Cookie Company in 1914 and her mother and father were owners of a very successful steak house in Northern California. Diana has always been interested in food and has a great palate. She started her own successful catering business in Santa Barbara in 2009. When she is not in the kitchen cooking, or catering a special event, you can find her out surfing, on horseback or on the tennis courts!

Kaity, a Santa Barbara native, has been part of the Chuck’s Waterfront Grill & Endless Summer team now for twelve years. In 2013, it was her crew that proudly brought home the “Best Chowder” title. With Kaity’s attention to detail, her passion for food and a true love for Santa Barbara hospitality, she stands out as a leader on the restaurant scene here in Santa Barbara. WARNING: As quite the chowder authority, if your entry doesn’t meet Kaity’s expectations, “Boss Lady” will let you know it!!

Recipes

Autumn Clam Chowder with Corn, Anaheim Chili, and Delicata Squash (Serves 6) INGREDIENTS 1 cup white onion (diced) 2 cups celery (diced) 2 large fresh Anaheim chiles (diced) 2 ears of corn (kernels removed and set aside; cobs discarded, saved for stock or other use) 1 small delicata squash (seeded & diced, keep skin on) 2 cups heavy cream 1 quart whole milk ½ cup unsalted butter 2 tablespoons olive oil ½ cup all-purpose flour 3 cups canned or fresh chopped clams with their juice 3 dashes of your favorite hot sauce ½ tablespoon Old Bay seasoning salt & pepper to taste PROCEDURE 1. Begin by heating the butter and olive oil in a large pot or Dutch oven over medium high heat. 2. Add the onion, celery, chiles, delicata squash, and corn to the pot. Sauté for 6 minutes. This is also a good time to add a pinch of salt and pepper. 3. Add the flour to the pot and whisk vigorously until the flour is incorporated. Continue cooking for two minutes, whisking often to avoid scorching. 4. Slowly whisk in the milk and cream. Then bring the chowder up to a simmer and cook for 10 minutes or until chowder thickens. 5. Finish chowder with a few dashes of hot sauce and a pinch of Old Bay seasoning. I like topping mine with oyster crackers for a little crunch. It’s also great with your favorite crusty sourdough bread. Recipe By Avery Hardin


Slow Cooker Corn Chowder Elegant and comforting creamy vegan corn chowder soup is perfect for fall entertaining. Similar to traditional New England clam chowder yet made with sweet maize kernels and potatoes instead of seafood! Pairs well with an extra dry sparkling wine. (Serves:Â 6-8) INGREDIENTS 2 16 oz. bags of frozen organic corn kernels 1 small onion, diced 2 celery stalks, diced 1 carrot, diced 2 garlic cloves, minced 3 Tbsp. of cornstarch 2 tsp. of Himalayan salt 1/2 tsp. of white pepper 1 tsp. of paprika 2 cups of diced yellow potatoes 4 cups of vegetable broth 1-1/2 cups of coconut milk creamer 1 Tbsp. of freshly chopped parsley 1 Tbsp. of freshly chopped chives 1 Tbsp. of freshly chopped thyme Hot sauce (optional) PROCEDURE Add all the ingredients (except hot sauce) into the slow cooker. Cook on low for 4-6 hours or on high for 2-3 hours. Add to a blender to puree. If desired top with hot sauce. Recipe by Danielle Fahrenkrug (Delightful Mom Food) delightfulmomfood.com


Clam, Ham and Yam Chowder (Serves 6) INGREDIENTS 1/3 cup olive oil 4 ounces diced country ham or tasso 4 small diced red chilis, or pinch of crushed red pepper 1 bay leaf 2 cups peeled and diced sweet potatoes 5 garlic cloves, minced ½ tsp. kosher salt ½ cup dry white wine 1 cup chopped tomatoes (fresh or canned) 1 ½ cup low sodium chicken or seafood stock ¼ cups half-and-half 3 lbs. manila or littleneck clams, scrubbed ½ tsp. freshly ground black pepper 3 Tbsps. chopped parsley PROCEDURE Heat the oil in a large skillet over medium heat. Add the ham, chilies or crushed red pepper, and bay leaf and cook, stirring frequently, for about 2 minutes. Add the sweet potatoes, garlic and salt and cook, stirring occasionally, until the sweet potatoes begin to soften, about 6-8 minutes. Add the wine and cook for another minute. Add the tomatoes, stock and half-and-half and bring to a simmer. Cover and cook until the sweet potatoes are tender when pierced with a paring knife. Add the clams, cover, and cook over high heat until the shells open, 6-8 minutes. Discard any clams that do not open and remove the chilis and bay leaf. Sprinkle the chowder with the pepper and parsley and serve with crusty bread. Recipe and photo by James Stefiuk


Lobster Corn Chowder By Chef Brenda Simon

INGREDIENTS 1-2 Lobster Tails, roasted in the oven, reserve shells 1 T olive oil and 1 T butter 3 T Chopped Garlic 1 medium Yellow Onion, diced 3 sprigs Fresh Thyme 2 T Cajun Spice Mix ½ cup Brandy 1 cup water 1 qt Heavy Cream 1 cup half and half 2 ears Yellow Corn, baked in the husk, shucked, and kernels cut 4 slices Thick Smoked Bacon, crispy, diced 2 Russet Potatoes, baked, skins removed, mashed (lumps are ok) Chipotle Tabasco PROCEDURE Roast lobster tails in the shells in a 375 degree oven for about 10 minutes. Remove meat and dice. Reserve. Continue to roast lobster shells until toasty, fragrant and brown. In a large stock pot, sautÊ butter, olive oil, garlic and onion until translucent with the fresh thyme sprigs about 10 minutes. Add the reserved lobster shells and brandy. Boil the brandy until it is reduced by 2/3 and add the water, heavy cream, half and half and the spice mix. Stir to mix well. Reduce heat to medium low. Add the corn kernels, bacon and mashed potatoes. Mix well. Add a few shakes of chipotle tabasco. Let simmer until the flavors have melded. Remove thyme stems and lobster shells and add the cooked lobster meat just before serving. Adjust salt and pepper to your liking.


About Legal Aid Foundation of Santa Barbara County All Chowder Fest proceeds benefit the Legal Aid Foundation of Santa Barbara County. The Legal Aid Foundation is a non-profit law firm that provides free legal services to Santa Barbara County residents who are in danger of homelessness, violence, or financial exploitation. The Legal Aid Foundation assists low-income county residents, seniors, persons with disabilities, and victims of domestic violence and elder abuse. The organization has offices in Santa Barbara, Lompoc, and Santa Maria. Legal Aid Foundation of Santa Barbara County has been providing free legal services since 1959. Many people are unaware that when factoring in cost of living, Santa Barbara County’s poverty rate is estimated to be 23% of all residents. Our vision is to ensure that everyone, regardless of their financial status, has habitable shelter, adequate income, and protection from domestic violence, sexual assault, and elder abuse. Our attorneys and staff are trained to work with people who have little knowledge of our legal system, people with mental or physical disabilities, and people who speak a language other than English. Last year, our Legal Aid attorneys advised or represented 973 families and individuals who needed help during a time of crisis. These clients included survivors of the Thomas Fire and Montecito debris flows who had immediate, critical legal issues arising from these disasters. Our courthouse-based Legal Resource Center attorneys helped an additional 6,525 Santa Barbara County residents navigate the legal system. A generous group of volunteer attorneys also provided outreach clinics in civil law, immigration, and family law matters and participated in the bankruptcy clinic. Student volunteers assisted with interpretation, paperwork, and other special projects. In total, Legal Aid attorneys and volunteers assisted 7,957 individuals and clients in legal matters. On behalf of our clients, Board of Directors, volunteers, and staff, thank you for your support of Chowder Fest so that we can continue to use our legal education to help those most in need.
