The Purrfect Café The cat is out of the bag: the coolest café in Paris is Le Café des Chats. If you want the company of friendly French felines as you sip your café au lait, head to the Marais district. This café, which attracted queues of more than 300 people on its opening weekend in the summer, is home to 12 rescued cats. All were chosen by owner Margaux Gandelon, for their gentle nature with other cats as well as people. She allows them the run of the café both

day and night (apart from the kitchen, of course) and is adamant that the cats’ happiness and safety is paramount. Customers must follow a few house rules, such as don’t pick up the cats while they are asleep and don’t feed them any food. Gandelon believes that “purr therapy” can help her cat-loving customers relieve conditions such as arthritis and rheumatism, as well as lower blood pressure. lecafedeschats.fr

A variant of traditional lawn polo, snow polo is played on a smaller field, which makes for decisive action and incredible speeds. January sees the two biggest nights of the Scottish calendar: Hogmanay (New Year’s Eve, if your Gaelic is a little rusty) and Burns Night. The latter, on 25 January, celebrates the birth of the late great poet Rabbie Burns in 1759, whose works include ‘Auld Lang Syne’. Dubai’s finance district might not be a likely spot for a glamorous beach club, but that’s exactly where Purobeach chose to open their latest lifestyle concept – a cool and cosmopolitan pool deck club. Perched on the sixth floor of the Conrad Dubai hotel, Purobeach’s first beach bar in the Middle East

(it has venues in Palma, Marbella, Vilamoura and the Black Sea) opened in October. Free Wheelin’ Tel Aviv’s Design Museum Holon is playing tribute to the humble bike. Its exhibition, ‘Free Wheel – Cyclepedia, Iconic Bicycle Design’, will look at its development in last 300 years history and how the structure – two wheels, a solid frame, handlebars, saddle, pedals and propulsion system – has barely changed since its inception. There will be 43 iconic and strangelooking bicycles from the private collector of Austria’s Michael Embacher on show, plus 20 bikes that were manufactured in Israel. Until 22 March, dmh.org.il

That’s not a sonic screwdriver! Former Doctor Who star Matt Smith wields a knife in musical thriller American Pyscho It’s not unheard of for musical theatre to accommodate monstrous characters –Sweeney Todd, for instance. Now Patrick Bateman, the New York investment banker with a penchant for Huey Lewis & The News and brutal murder, continues the tradition in American Psycho at the Almedia Theatre in London. Oddly, he's played by Matt Smith, known as the tweedy time-traveller in the long-running BBC Sci-Fi series, Doctor Who. Bret Easton Ellis’s original novel caused much controversy when it was published in 1991, and the film adaptation, starring Christian Bale, caused equal furore nine years later. But Duncan Sheik, the American who wrote the music and lyrics to this crowdfunded show, promises the musical, to be set in the 1980s, won’t be too gory: “Certainly in American Psycho there is a very black comic element and a satirical aspect to it. The evening certainly isn’t doom and gloom and terror.”

Sheik wrote the stage show with Roberto Aguirre-Sacasa, perhaps best known for Glee and the West End sensation, Book of Mormon. A PLACE OF LEARNING When Cesis’s town library closed for refurbishment this summer, it left the Latvian town without somewhere to go, grab a book and get into a good story. That’s why architectural students from Riga University designed and put up the Story Tower, a standalone community book exchange made out of recycled goods. Standing at 6m tall and resembling a giant wooden lamp, the tower was made in just three days using a frame of reclaimed timber and 2,250 tiles made of recycled Tetra Pak food packaging to create a waterproof shell. The structure, which contains shelving crammed with books, is designed to be semi-permanent and will stay in the town square until the library reopens in 18 months’ time. tourism.cesis.lv

Budapest: A Runner’s City

Eszter Boda, founder of Running Tours Budapest, tell us why she loves lacing up her trainers and pounding the streets “I started to run when I was nine. I’ve never been a top racer, but my trainer used to say that I was persistent and passionate. At university I was too busy having fun, but in the past two years I’ve been running almost every day, pushing myself to do longer distances and hill work. I’ve lived in Budapest for the past six years. I am now in Buda, which I find more comfortable for living and more suitable for running. Budapest is a runner’s city: it offers hills, inner city parks, a beautiful riverside and a unique recreational island named after a Hungarian king’s daughter,

Margaret. All these places welcome runners, but this capital has more than that. Budapest has its own unique charm, and you experience this immediately while running through the city. The city still wears the scars of the past, but is undergoing impressive renovation at the same time. You’re likely to jog past an upscale business office next to a dilapidated old building with machine gun bullet holes in the wall. My friend Agnes and I started Running Tours Budapest in December 2012. As a runner and a traveller, I knew that combining sightseeing with running is fun and saves time, especially if you only have a short time in the place. You just can’t beat the feeling of breaking out of your hotel with your sneakers on, ready to explore and for some real action.

PLAISIRS D’HIVER Fly to Brussels Voted Europe’s most original Christmas Market, 240 wooden chalets line the streets between Grand Place and Place St Catherine for two kilometres of unadulterated Christmas fun in the Belgian capital. The usual seasonal crafts and the festive foods will be on sale, but to maximise excitement, jump on the 35m toboggan, glide on the 200ft-long skating rink, or even risk some of the market’s famous ‘smoking chocolate’. 3. LISEBERG Fly to Gothenburg Scandinavia’s self-styled ‘Christmas City’ comprises a 90-year-old market and amusement park. Illuminating Gothenburg’s harbour with five million lights, it is Sweden’s biggest and most atmospheric Christmas market. There are 40 different attractions, including an ice rink (pictured), design and craft fair, cabins selling chocolates, cheese and herring (well, this is Sweden) plus Santa’s grotto. A Portrait of Paris Jean Claude Gautrand’s coffee table book displays the photographer’s favourite shots of Paris. It also now comes in a pocket-sized edition The French capital is one of the most photographed cities in the world, so it’s fitting that one of the earliest ever shots, by Louis Daguerre, is of the Boulevard du Temple in 1838. Such images “inaugarated a love story between photography and the capital, and as a result [Paris] was the first city to acquire a photographic record of its history,” writes Jean Claude Gautrand, photography expert and renowned snapper, in his book, Paris, Portrait of a City. It’s a visual celebration of Paris’s most iconic landmarks, shot by legends such as

Marville, Doisneau, CartierBresson and Gautrand himself (although the pocket-sized edition doesn’t contain all the same photos). Along with the Arc de Triomph, completed in 1836, many landmarks emerged in parallel with photography’s evolution: the Nouveau Louvre, Baron Haussmann’s controversial broad boulevards with Belle Epoque street furniture, the Eiffel Tower and Sacre Coeur. Spanning more than a 170 years, the images encompass early photographs, taken with a silver plate, of organ grinders and flower stalls, evocative colour prints of wartime-occupied Paris and the trendy, Left Bank world of Serge Gainsbourg and Jane Birkin.

Romanian pop starlet Inna is one of Europe’s most popular female singers. She tells us about her life in the limelight Inna is extremely good at getting herself noticed. Last year the 27-year-old became the first European female artist to surpass one billion hits on YouTube. Since the title track from her debut album Hot topped the European dance charts in 2009, she’s won two MTV Europe Music Awards and over a dozen MTV Romania Music Awards. “The last five years have meant a lot to me,” she says. “I have achieved things I never even dared to dream.” Currently that dream sees her in Los Angeles, working on her fourth album with Pitbull, the rapper whose Midas touch has boosted the careers of Christina Aguilera and Chris Brown. The star-studded surroundings of LA are a far cry from her hometown of Neptun, a small resort on the Black Sea. This is where Inna, born Elena Alexandra Apostoleanu (Inna is a nickname given to the singer by her grandfather) found her voice.

“Singing definitely runs in my family,” she says. “My mother and grandma were singers and I grew up with music in my house. I can’t see my life in the future without music.” Inna’s popularity is down to more than just her voice. She’s refreshingly approachable for a pop princess, encouraging fans to come up to her when she’s out and about. Fan clubs have sprung up around the world, and the Romanian = branch has launched a Facebook campaign to get her to represent the country at the next Eurovision Song Contest. “My fans did it last year too!” she says. “I have always said it would be an honour to represent Romania, but my schedule doesn’t allow me to give my full energy to the competition.” A large chunk of Inna’s time is devoted to philanthropic causes in Romania, from environmental issues to children’s rights. “I always like to get involved in cases regarding children, they need help and our support to grow up in decent conditions,” she says. “Then I started my own campaign, Bring The Sun

Exotic Eats in the Emirates When dining in Dubai you will find that the hardest cuisine to track down, oddly enough, is the local one. With an indigenous population thought to be as little as five per cent of the city’s total, perhaps it’s not surprising that traditional Emirati dishes are sidelined in favour of international cuisine. Bedouin fare may be in short supply, but food from almost every continent is on your doorstep. From Los Angeles to Baku, here are Dubai’s top five international eats.

1. Baku Caspian It’s a sign of just how friendly they are at Baku Caspian that they’ll even send out a car to pick up groups of customers keen to sample their contemporary Azerbaijani fare. Dishes includes bug ulama (slow-cooked lamb) and meat-and-pomegranate-stuffed pancakes. There’s also the chance to have a blast on a shisha pipe. 2. Lime Tree Café In a bizarre way, the Lime Tree Café is perhaps the closest you’ll get to ‘traditional’ Dubai cuisine. Since foreign investment exploded, this original location on the distinctive, Miami-esque Jumeirah Beach Road, has enjoyed a huge clientele of rich expats. It’s here you’ll find some of the original Jumeirah Janes; idle, affluent housewives, drawn to the airy café for strong coffee, delicious carrot cake and gossip. 3. Ketchup Dubai has a long-standing love affair with celebrities – prior to the financial crash, famous faces lined up to attach their names to vast projects around the city. Today things are more grounded, which is perhaps why Ashton Kutcher chose to launch Ketchup, a burger restaurant, in the Downtown area. 4. Vogue Café Print media titles across the world are currently looking to diversify their brands. Perhaps unsurprisingly, Vogue has chosen to do so in considerable style, opening a handful of restaurants in a select few locations around the world. The latest is in the Dubai Mall, the world’s biggest. The name café is a misnomer – this is a restaurant serving posh international cuisine, including lobster spring rolls and wagyu beef burgers. 5. Options There are hundreds of Indian restaurants around Dubai, little surprise given the thousands of people who traverse the Indian Ocean for work. iotr Fortuna, chef at London’s Baltic restaurant, knows a thing or two about Polish cuisine. For one thing, he’s Polish (London has been his home for the past eight years, but he’s originally from Krakow), and for another, he’s crazy about food, especially the rich and diverse flavours that come from his home country. Like many modern Polish restaurants, Baltic challenges the idea that dumplings, cabbage and meat dishes make for stodgy fare. Baltic’s flavoursome, modern Polish cuisine is comfort eating, without becoming too heavy on the stomach. And Piotr tells us the secret lies in how you use the ingredients, the seasonings you choose and the subtle little twists on classic dishes. “Thanks to Poland’s dynamic history, we borrow a lot of ingredients and flavours that aren’t indigenous,” he says. “Taste this bozbash, a lamb stew. You could say it’s more a Georgian, or Armenian, than Polish dish. But before World War II, there were a lot of Georgians and Kazakhstanis in Poland, and we welcomed their influence in many of our dishes. Our twist on the bozbash is the addition of saffron, coriander, cumin and fresh pomegranate.”

On our visit to Baltic, Piotr prepares for us his favourite dishes: a golonka salad, pierogi, the bozbash and apple fritters. The salad of sautéed golonka (slow-cooked, salt-cured pork knuckle), pickled green cabbage and leniwe (similar to gnocchi) melts in the mouth. He follows this with a classic Polish dish, pierogi – dumplings made from unleavened dough and typically stuffed with potato or meat. “Every home in Poland has their own special pierogi recipe,” says Piotr. “We pan-fry ours, which is quite unusual, often they’re steamed or boiled. As you can fill them with anything, you can even have pierogi for dessert, but here I’ve filled them with potato, cheese and spring onion.” And finally, with a flourish, Piotr presents us with a plate of apple fritters. A simple dish but this time unexpectedly light and fluffy. “We use baking powder and yoghurt in the batter to make our fritters exceptionally light. We also use three or four different types of apples, from acidic to sweet, to add depth of flavour.” Paired with cinnamon ice cream, they’re a delicious finale to our modern Polish meal. As summer is so hot in Dubai (a scorching 40˚C plus), savvy travellers prefer to jet off to the UAE in winter months. Instead of hiding away in one of the city’s fabulous air-conditioned malls, you can dine alfresco at Italian-style waterfront restaurant Bussola (bussoladubai.com), jog along Dubai’s Marina, try horse riding at the Emirates Equestrian Centre or kite surfing at the appropriately named Kite Beach.

The island of Cyprus has a climate the envy of the rest of the Mediterranean. Away from its livelier resorts you’ll find unspoilt natural beauty in its vineyards, woodlands, valleys and mountains. Plan a walking holiday to the Trodoos Mountains, with pine-scented forests, roaring waterfalls and spectacular panoramas of the island. Don’t go too high; the highest peak reaches 2,000m and has snow in the winter.

Absorb some Vitamin D and culture in Spain’s southernmost city: Málaga (pictured). Pablo Picasso was born here and a museum inside the superb 16th-century palacio displays more than 150 of his works of art. An 11th-century Moorish palace is next door, with beautiful mosaics, patios and baths. Ascend to Castillo de Gibralfaro for magnificent views of the city and the golden sands of the Costa del Sol.

ost-war London was hungry for change – a spirit captured by the Festival of Britain in 1951. The old railway sidings and warehouses of the South Bank were swept away, making way for the concrete modernism of the Royal Festival Hall. Next to it, the 91m-tall Skylon sculpture pointed skywards like a rocket, seeming to herald the advent of a new, Space-Age era for the city. A showcase for the arts, science and design, the Festival was a ‘tonic to the nation’ – and the lift that Londoners needed after the terrors of the Blitz. Another boost came a year later, when a 25-year-old Princess Elizabeth was made queen: gun salutes fired, crowds camped overnight and flags waved furiously on the Mall. But while national pride was high, new, outside influences were also creeping in. In 1953, the first imported coffee machine hissed into action at The Moka at 29 Frith Street, and Soho’s coffeehouse culture was born. Here, and also at La Roca and 2i’s, kids sipped espressos and flirted with rock ’n’ roll; Cliff Richard and Hank Martin both played at 2i’s, where a young Marc Bolan briefly manned the counter. This was the decade that the teenager was born – and London felt the first stirrings of rebellion. Jiving crossed the Atlantic and whipped the dancefloors of the Lyceum and Hammersmith Palais into a frenzy, while Teddy Boys postured in tight drainpipe trousers and backcombed their Brylcreemed quiffs.

WHERE TO GO TO EXPERIENCE THE 1960S IN LONDON TODAY MENDOZA MENSWEAR The menswear at Mendoza’s (pictured right) has a dapper 60s vibe, from its sharp suits and slim, tapered trousers to its rounded tab-collar shirts, often made from rolls of original 60s fabrics. s Time magazine announced in April 1966, 60s London was swinging – blazing a trail in pop culture and style with a newfound, contagious self-confidence. Times were a-changing with dizzying speed, and so was the city: “Everything new, uninhibited and kinky is blooming” wrote Time’s reporter, in a rapturous 13-page article. In 1963, Please Please Me had reached No 1, unleashing Beatlemania; by 1966, John Lennon would mischievously claim the Fab Four were “bigger than Jesus”. Fans’ ‘mop tops’ evolved into collar-length hair in tribute to their heroes, while girls queued for hairdresser Vidal Sassoon’s ultra-modern geometric crops and ‘bobs’. Dubbed “the Face of 1966” by the Daily Express, London-born teenager Twiggy defined a new kind of beauty: fresh-faced, waifish and eternally wide-eyed (in part thanks to three sets of fake eyelashes). Followers of fashion and shocked out-oftowners came to gawp at Carnaby Street’s boutiques – not least after one shop had the bright idea of putting half-naked ‘living mannequins’ in its window. Bohemians and bands hung out on Denmark Street, with its dive bars and cramped recording studios; The Rolling Stones and Jimi Hendrix were among the acts to lay down tracks on the street nicknamed Tin Pan Alley. In 1968, Camden’s Roundhouse hosted what many said was the gig of the decade: an all-nighter with The Doors, making their first – and last – UK appearance.

he Beatles had split, Hendrix was dead and the economy was sinking fast: entering the ’70s, it was clear that London’s Summer of Love was over. With coal miners on strike and limited electricity, the Three-Day Week was briefly introduced, while power cuts put the lights out even in Piccadilly Circus. As the economic situation toughened up, so did the city’s cultural scene: this was the decade when punk came snarling on to the streets. A band called the Sex Pistols were its rebellious ringleaders, led by a wild-eyed frontman who went by the name of Johnny Rotten. Formed in London in 1975, the group soon became notorious; gigs often ended in punch-ups, while a sweary tea-time TV appearance scandalised the nation. Fashion was one way to identity London’s tribes, from glam-rock Bowie and Queen fans in sequins and spandex to disco kids in flares and wide-collared shirts. The punk look was more DIY: ripped-up T-shirts, safety pins and often an impressive mohawk. On the King’s Road, Vivienne Westwood and Malcolm McLaren’s shop SEX epitomised the new spirit of rebellion – their ‘Two Naked Cowboys’ T-shirt design got its wearer arrested. Up in north London, Camden’s music scene had Madness propping up the bar in the Dublin Castle pub, while Blondie and the Ramones played Dingwalls. In the mid-70s, a weekly craft market sprang up next to Camden Lock; planned as a temporary affair, it became the area’s biggest attraction.

HEAVY LOAD CLUB This ‘vintage rock club’ has a weakness for 70s greats such as Led Zeppelin and Lynyrd Skynyrd: the ‘psychedelic light show’ and trippy projections add to the effect. ith Margaret Thatcher installed at Number 10, a new spirit was in the air: in 1980s London, money talked – and began to reshape the capital. The ‘Big Bang’ reforms of October 1986 transformed the banking sector: the computer age arrived and London joined the international players. Money flowed in like water, and Champagne corks popped in City bars. Brick-sized mobile phones and Filofaxes became the new status symbols, while the ‘Yuppie’ – short for ‘Young, Urban Professional’ – entered the Oxford English Dictionary. As the City grew, it looked to the east, erecting shiny new office blocks in London’s derelict former docks. But not everyone got up early and went to a desk in the City. For others, 80s London revolved around its fashion scene and underground club culture, documented by style magazines like i-D and The Face. For the early part of the decade, at least, the New Romantics reigned; undeterred by their eyeliner and frilly shirts, girls swooned over the Spandau Ballet. Boy George held court at London’s coolest club, Blitz, and dressing up was crucial: at Taboo, the doorman held a mirror up to clubbers and asked, “Would you let yourself in?” London’s fashion scene changed with lightening speed, from leotards and leg-warmers to Vivienne Westwood’s Pirate Collection, or Katharine Hamnett’s slogan T-shirts; Hamnett famously wore one when she met Margaret Thatcher, much to the Iron Lady’s disapproval.

MALMÖ’S FOOD REVOLUTION Copenhagen may wear Scandinavia’s gastronomic crown, but across the water, Swedish neighbour Malmö is cooking up a storm Words by Steve Vickers / Illustrations by Elin Svensson

sking a local to recommend a nice place for dinner can elicit a strange response when you’re in Malmö. Instead of suggesting some swanky restaurant or hotel, they’ll often reply with the name of another city – Copenhagen. And who can blame them? The Danish capital – twice the size, infinitely more fashionable, and endlessly written about by food critics – is just 30 minutes away by train. And with 13 Michelin-starred restaurants, including Noma, often named best restaurant in the world, there’s no shortage of ‘nice places’ to eat. But while Malmö has no Michelin-starred restaurants, now there’s a reason for its residents to give their own city a chance. “What we’re seeing now is quite a revolution,” says local food expert Hanna Tunberg, over coffee at Café Simpan. It’s a candlelit place in the old workers’ district of Möllevången, full of tattooed students and scribbling artists.

“Some of the interest in Copenhagen’s food has spilled over into Malmö and in some ways, things are actually moving quicker here,” she says. “We’re leaving the experimental Noma-style food and going deep down into the roots.” Simple, quality-focused food projects have become the new cool in this Swedish city across the water from Copenhagen, with a growing number of restaurants, cafés and takeaways offering affordable organic food. At the grocery shop Ronnebygatans Ekolivs (ekolivs.se), unpaid volunteers help to run things in exchange for discounts on organic vegetables and dairy products sourced from the surrounding area, as well as the chance to sit in on occasional gigs. Even local schools and hospitals are involved; the city council has announced plans to make all of the food it provides organic by 2020. Malmö’s small size and its location in Skåne – the relatively warm county in the far south of Sweden – should make that goal easier to reach.

of place that’s giving Malmö a reputation for doing things differently. I order the day’s special at Tapori Tiffins (taporitiffins.se), a South Indian kitchen specialising in vegan, ayurvedic meals. A minute or two later I’m given a steamy-hot bowl of lentil soup with vegetable-stuffed dosas (fermented pancakes) on the side and a creamy coconut chutney to dip them in. It’s light, fresh and, at SEK80 (€9), one of the cheapest lunches in town. Chefs here have started running their own cooking classes so that customers who like the food can start making their own versions at home. Across Malmö, new twists on more traditionally Swedish flavours are also

becoming popular. In the city’s medieval centre, where half-timbered buildings house busy, cinnamon-scented cafés, I meet former Swedish Masterchef contestant Pernilla Elmquist, a upbeat blonde lady. Having always loved food, Pernilla tells me that she thought about opening a restaurant, but feared it would have been too expensive. So she began looking for alternatives. Copenhagen, with its well-established street food culture, gave her a brainwave: why not sell fresh, Nordic food from a trailer on the street? And better still, why not do it in Malmö? “Copenhagen’s so close,” she says. “I go there whenever I need inspiration. But when it comes to food right now, Malmö is

Yet in many ways, Skåne feels more like a part of Denmark than Sweden; in fact this f lat and fertile area did once belong to Denmark. Then in 1658, the Swedes scored a triumphant victory in the Second Northern War and took it for the crown at the Treaty of Roskilde. Today, instead of the pine forests found across most of Sweden, a drive through the county reveals tall beech trees, even taller wind turbines and freshly ploughed fields brimming with potatoes, pumpkins and root vegetables. But despite the abundance of local food, Malmö’s markets are surprisingly diverse. On Möllevångstorget, the city’s main market square, the smells of freshly picked Thai coriander, stinky English cheese and rich Turkish coffee meld among the market stalls. It’s one of the most ethnically diverse places in all of Sweden, with a food culture to match. To help locals make the most of the ingredients available around the square, Hanna and her colleagues at Mat Karavan (matkaravan.nu) run guided food tours. “It wasn’t meant to be, but it’s become a kind of reverse integration project,” she says. Swedes and foreign visitors taking the tours get the chance to try exotic products such as sausages from the Balkans and herbs from Southeast Asia, and then learn how to use them as part of a healthy diet. A short walk away from Café Simpan and the square, hidden inside a neglected-looking 1960s shopping centre, I discover Mitt Mat (which translates as ‘My Food’) – a new food court. With cheap, flavour-packed food from Latin America, India, Italy and Indochina, much of it organic, it’s the kind

It’s had a lot of immigration and there are people here from all over the world – and that makes it really interesting for food.” Pernilla’s trailer, Nordic Street Food, sets up on a private plot of land at Smedjegatan 20. There she turns out healthy takeaway food, including flatbreads from central Sweden packed with slow-cooked beef, celeriac cream and – in the winter – apple chutney. “It’s Swedish food, the kind we might cook at home,” she says. “But it’s like it has put on a new suit.” Having a place from where to sell her food makes Pernilla one of the lucky ones. Street food has never really been a part of Swedish culture and the city authorities – keen to avoid losing valuable parking spaces – have yet to grant permits for vendors who want to operate permanently on public land. “We want to open a place that serves simple food done well, with lots of flavour and character,” says young chef Mathieu Williams, whom I later meet across town. He and his wife Hanna, who have a trailer called This Must Be The Place, on Östra Varvsagaton, are among those holding out for a permit. Throughout December, when a Christmas market takes place on Stortorget, Mathieu – who currently works in the kitchen at the city’s best-known restaurant, Bastard, on Mäster Johansgatan – will have permission to sell food from the trailer. It’s a temporary gig, and there’s no guarantee that it will convince the authorities to let the street food trend catch on. But this is a city with an open mind, and Mathieu believes it’s what the locals want. “People in Malmö are quite receptive to things that are different,” he says. So who knows? Maybe some day rather than recommending the next city, the locals will be suggesting places closer to home.

PERNILLA’S HEAVENLY PICKLED HERRING

Ingredients: ● 5 matjesillfiléer (cooked herring) ● 10 small delicate beets ● 10 new potatoes ● 50g hazelnuts ● 2 red onions ● 100g butter ● A handful of chives and dill, finely chopped ● 360ml sour cream, piped ● Fusion: 120ml cup vinegar, 64g sugar, 180ml water

Method: 1. Preheat the oven to 170˚C. Wrap the beetroot in foil and bake for two hours. Remove then cut into small pieces. 2. Boil the potatoes in salted water. Let them cool, then cut into small pieces. 3. Toast the hazelnuts in a dry pan then coarsely chop. 4. Make the fusion, cook onions in it until shiny and soft with a little bite. 5. Brown the butter. 6. Cut herring into small pieces. 7. Line the bottom of deep plate with potatoes. Add herring and beetroot, then butter, piped cream; sprinkle with onion, nuts and herbs.

BEST FOR DOWNHILL: GUDAURI Fly to Kutaisi The ski discipline of downhill has one simple rule: go as a fast as you possibly can – or should that be as fast as you dare? A great place to try this is the newly developed resort of Gudauri in the Greater Caucasus Mountain Range of Georgia. The south-facing slopes on Mount Sadzele offer over 50km of long blue, red and black runs, with only a few corners, allowing you to get up to some serious speeds. What’s more, with piste elevations reaching over 3,000m (also accessible through heli-skiing) the resort is decidedly snow-sure from December to April. Ski jumping has been part of the Winter Olympics since the first games in Chamonix, France, in 1924. Competitors take off from a 100m-long jump and soar up to 150m into the sky on giant skis, offering one of the closest experiences to flying that can be had. It may take years of specialist training to attempt those kind of heights, so how can an amateur experience it for just NOK60 (€7.50)? It’s all thanks to the ski simulator ride at Holmenkollen, overlooking the city of Oslo, which recreates the sights, sounds and sensations of the jump. BEST FOR BIATHLON: BANSKO Fly to Sofi a Originally a military exercise for Norwegian soldiers, the biathlon combines cross-country skiing with shooting and is a test of stamina, skill and precision. Competitors race cross country on skis, pulling up at rifle ranges to fire at targets. Impressive accuracy on the shooting range wins extra time. To give it a try, visit the Bansko Biathlon Centre (biathlon-bansko. com) in Bulgaria’s Pirin Mountains. The centre has a purpose-built stadium and shooting range at 1,600m, with three cross-country courses up to 10km long. If you’re none to steady with that aim, the resort is also known for slalom and super combined (that’s slalom and downhill run).

BEST FOR CROSS-COUNTRY SKIING: G: VAL GARDENA Fly to Venice Treviso Combine the smooth slide of snow with the endurance of long-distance running and you’ve got a serious calorie burner: cross-country skiing. Val Gardena in the Italian Dolomites is ideal for flatland skiers, with plenty of trails, all against the beautiful backdrop of the mountains’ distinct, razor-like peaks. BEST FOR BOBSLEIGH & LUGE: LA PLAGNE Fly to Grenoble Bobsleigh and luge are not for the fainthearted, as they involve hurtling down an icy chute at top speeds in search of the ultimate adrenaline rush. The French resort of La Plagne caters for those seeking mere short bursts of exhilaration, as well as those after more face-stretching speeds. You can tackle the 1.5km course one of three ways: a group of four can try the relatively sedate 80km/h four-person Bob Raft; go it alone on the Speed Luge for a white-knuckle 90km/h ride; or go all out Bob Racing with your own pilot taking you and two friends up to 120km/h. BEST FOR CURLING: ANDORRA Fly to Barcelona Curling is an icy version of bowls, in which players slide heavy, polished stones, each weighing 20kg, across a sheet of ice onto a target. A test of both brain and brawn, the team sport has been dubbed ‘chess on ice’. If you want to give it a go, head to the Palau De Gel (palaudegel.ad) in the resort of Canillo, Andorra, where curling nights are held at the Olympic ice rink three times a week. An hour match followed by dinner is €36 per person, or if you don’t fancy dinner, just €25. Matches take place on Monday, Wednesday and Friday evenings. Maybe later I’ll tell you the secret on which Maybe we’ve we ve built our republic,” says Saulius Pilinkus, with a grin, as we walk over a small iron bridge. We are now crossing the border into Užupis, a tiny independent state in Vilnius, Lithuania’s capital city. I smile back. I want Saulius on my side. Firstly, he’s an ex-Soviet army soldier, Lithuania’s former chief of security, a founder of Užupis and, so he informs me, head of the small state’s secret service. And secondly, I’m here on my own covert mission – a fact-finding operation to discover how this neighbourhood became an independent state, so I can create my own breakaway nation. Just think – I could set taxes, form my own footie team, create my own currency and write a tuneful national anthem. If I hurry we could even qualify for next year’s Eurovision Song Contest. Read on, learn, and you too might be able to create your own republic.

Life was hard, food was in short supply, money was scarce, fo artistic freedom was illegal and people outwardly – subscribe to had to – at least outw the Soviet way of thinking. But in the early 1990s, as the Soviet empire crumbled, Lithuania (the first country to break free, in 1991) started to reclaim its history, heritage and culture. “During the Soviet times, everything was grey,” says Saulius. “And then, after Communism fell, the colour came back. We started to realise we could be whatever we wanted to be, and do whatever we wanted to do.”

RULE #2 You need an inspiring figurehead Saulius takes me to meet Romas Lileikis. A poet, musician and film director, Romas is the president of Užupis Republic. “Užupis is like a film,” says Saulius. “Romas is the director and we are all the actors.” The great grandson of a great Lithuanian artist, there are songs about Romas’s forefathers. “And now there are songs about him,” Saulius smiles. “He is a great leader of our time. He was the first to say maybe we can do things a different way. He wasn’t ‘officially’ elected, but everyone knew he was the one leading the movement, and we all wanted him to become our president.”

Choose your location carefully As I stroll through Užupis with its president and head of secret service, I try to come up with a good name for my nation. The Claire Republic? That would be a better name for a nightclub. The State of Claire? Hmm, sounds like the morning after a crazy night. I enquire about the Užupis name. “It was formed from an idea of being together,” President Romas Lileikis tells me. “It is not an organised community, but it’s the idea that attracts people,” he says. “When you have many people, you have a responsibility to your name.” Užupis translates literally as “other side of the river”. “When we first came here, the main street was called the Street of Death,” says Romas. Not an ideal location for a utopian society, I suggest. “Well, what do you do to overcome death?” Romas asks. “You be creative. Of course, no one can overcome death, but creativity can live on even after we die.” About 20 years ago, students and artists began to move in, attracted by cheap rents and beautiful, dilapidated buildings. It ceased to be a no-go area, and become a place of inspiration and free thought.

The constitution was written by President Romas Lileikis. “It is based on paradox,” he tells me. “It is connected and also contradictory but it is against only one thing: the aggression that comes from inside of us.” Right. Užupis also has its own mascot, an angel in the central square (the state is often referred to as the Republic of Angels), its own national anthem, currency and flag (a white hand on a blue circle with a hole in the middle). “The hole in the hand is the meaning of Užupis,” Romas says. “You can live in Užupis, you can love Užupis but you cannot have Užupis. It’s a place to which we all belong but it cannot belong to you.” At this point, I stop making notes. Perhaps I can do without a constitution. After all, the UK, New Zealand and Israel have all managed okay without one.

It has to be official So far, I’m having a lot of fun. But wait, this is a fact-finding mission. And not a lot about Užupis seems to be built on hard facts. I ask Romas if the Lithuanian government recognises his self-declared republic? Surely this uncalled for display of autonomy led to riots, troops on the streets and seizure of all media outlets? “When we asked permission from the municipality for our independence, there was a long silence,” he says. “And then finally they wrote one thing: ‘You are allowed to organise the humouristic event that Užupis Republic declares independence’. Later we had another letter, saying that we were allowed to celebrate the anniversary of the independence of Užupis Republic. That was the moment it became real.” So, each year, on 1 April, Užupis celebrates its birthday. There’s a procession through the neighbourhood to the statue of the angel, beer flows from the pump in the central square and everyone parties. Hold on – April Fools’ is the day Užupis became a republic? “Nobody is afraid of 1 April,” shrugs Romas, “so it seemed like a good day to say something serious.”

RULE #7 Know your enemy In any republic, you have to watch out for political factions, and Užupis is no different. “The separatist party is getting together tonight,” Saulius tells me. “Do you want to see what they’re up to?” Of course! As the light starts to fade, I follow him up Užupis’s main hill. A heavy bassline of a lively Soviet-style dance tune thumps through the darkening sky. “Ah! The party!” Saulius says. I was expecting a clandestine meeting, not a rave. As we walk up the driveway to a large house, a man in a thick camouflage jacket came to meet us, holding a glass of home-made brandy. “Meet our prime minister. He is a separatist,” Saulius

Don’t take yourself too seriously “You know,” says Prime Minister Sakalas Gorodeckis, as he hands me another cup brandy to take the edge off the early evening chill, “it’s all a joke.” Well, by now this does not come as a big surprise. I look around at the ‘separatist’ event with the DJ spinning the decks, kids dancing and people chatting and drinking while warming their hands on a make-shift log fire. The separatist ‘leader’ – revealed by Saulius to merely be a dentist – halts the proceedings to tell everyone that the soup course is now ready in the kitchen. Of course, Užupis isn’t a real republic. Its constitution is not law and President Romas Lileikis won’t be holding summits with Lithuania’s real President, Dalia Grybauskaitė, any time soon. “You know, it is all a bit of fun, but in Soviet times we couldn’t have dreamed that our lives could be like this,” Saulius tells me as the light fades from the sky and the party really gets under way. He smiles. “If you want to do something, just do it. THE GOLDEN HORN BY BIKE Snaking its way west from the Bosphorus Straits, the Golden Horn is a surging waterway that cleaves European Istanbul in two. This eight-kilometre inlet is trimmed by residential neighbourhoods, such as historical Greek Fener, trendy Silahtarağa, newly hip Fatih and the former Jewish enclave of Hasköy. With Istanbul On Bike, you can explore this lesser-known area on two wheels. “Of all of our excursions, our personal favourite is the Golden Horn Tour,” says planner Dario De Santis. “It takes you to the very traditional districts of the city, in a quieter and less touristy area.” The four-hour tour pedals from Istanbul’s Sirkeci Train Station (the terminus of the legendary Orient Express) westwards along the Golden Horn’s banks. It takes in the Eyüp Sultan Mosque, the city’s ancient Byzantine walls and the Bulgarian St Stephen Church (which was flatpacked in Vienna and floated to its reassembly point in Istanbul in the 1890s). Each tour is adjusted to match the fitness levels of individual clients. Dario explains: “Our customers include couples, groups of friends, professionals and families. Usually they are averagely fit people who practise some sports or ride a bike back home.” The Golden Horn Tour costs TRY136 (€50) per person, based on four participants. SREBRNA GÓRA Srebrna Góra is a picturesque village in southern Poland, dominated by the vast mountain fortress built by Frederick II to be the largest of its kind in Europe. Today, there’s still plenty going on, with tourists flocking to the region throughout the year – many for its first-class cross-country skiing facilities, with 30km of runs to explore in the Bardzkie and Owl Mountains. Even the most seasoned globetrotter will find something here for them. The presence of former rulers and soldiers can be felt in the unsettling fortress dungeons, while every monument has its own unique story and the wind carries the spirit of Liczyrzepa. And the views are incredible,

with the meadows, mountains and fortress tops all providing superb vantage points from which to watch the breathtaking landscape unfold. Yet it is possible that this beautiful area could be enriched even further, by complementing its existing winter facilities with a downhill ski slope. SUWAŁKI Set among the postcard-perfect glacial landscapes of north-east Poland – surrounded by serene lakes, hills and thick forests – Suwałki is one of the country’s most beautiful destinations and deserves a visit from any lover of culture, nature or the great outdoors. In the city itself, which is renowned for the cheeriness and kindness of its inhabitants, many of the most prominent tourist sites are located in the neoclassical buildings that line Kosciuszko Street. These include Konopnicka House, the family home of Nobel laureate Czesław Miłosz, the residence of renowned painter Alfred Wierusz-Kowalski and three exquisite churches, as well as the restored Constitution of May 3 park and Maria Konopnicka Square. The best way to take this all in is on the Suwałki Cultural Paths walk, which should take two to three hours. It’s not all about the past though, with European funding contributing to a number of modern facilities such as a new community centre with a 700-person auditorium, a water park and the Poland-East Science and Technology Park. In addition, hotel owners here have also benefitted from EU support, meaning there’s no shortage of places to stay – especially when you take into account the modern campsites located close by. During the summer, the Suwałki Blues Festival attracts visitors from across the world, who swarm to see the planet’s best blues musicians play the two outdoor stages in the centre of the city. Notable for its high level of professionalism and perfect organisation, the festival has now been running since 2008, with the 2014 edition taking place on 10-12 July.

Those that venture outside of the city are rewarded with a magnificent collection of old monasteries, palace ruins, ornate wooden buildings and religious monuments scattered across the nearby countryside. Plus, with the Wigierski National Park and Suwałki Landscape Park in its immediate vicinity, the city also provides the ideal base from which to explore the most beautiful parts of Suwałki and eastern Mazuria. The region is appealing in summer – when visitors can canoe down the Czarna Hańcza river, sail on Lake Wigry, follow the many cycle routes, climb the observation tower of the monastery in Wigry and visit the lookout point in Smolniki – but is at its finest in winter. It is then that the ice-covered lakes shimmer in the sun and the trees are cloaked in snow – a spectacular sight worth the air fare by itself. Winter also afford the opportunity for outdoor recreation, with well-maintained ski slopes and cross-country routes designed to take advantage of the region’s unique glacial features. Alternatively, visitors can take a sleigh ride with torches, climb aboard the Wigry narrowgauge railway and enjoy a feast beside the fire as they tuck into a variety of local delicacies. And, after a long day outside, there’s no better way to relax than with a trip to the banya: massage yourself with the birch twigs, swim in an ice hole and let all your worries fly away with the smoke from the furnace and the steam from the hot stones.

BOLESŁAWIEC Next summer, Bolesławiec – located in south-west Poland, midway between Wrocław and Berlin – lives up to its title as the ‘Polish Capital of Ceramics’ with an interactive five-day event that will highlight the finest parts of this welcoming region and the exquisite pottery that it produces. The Bolesławiec Ceramic Festival will take place on 20-24 August, 2014, when it will feature one of Europe’s largest fairs for ceramic art, providing visitors with the chance to own an original piece by a pottery master. KSIA˛Z˙ CASTLE Perched upon a rocky promontory and boasting sublime examples of numerous architectural styles, from gothic to baroque to neoclassical, it’s little wonder that Książ Castle is regarded as the ‘Pearl of Lower Silesia’. Located in Wałbrzych, 70km from Wrocław, Książ is Poland’s third-largest castle, and one of its most beautiful. Originally built at the end of the 13th century, it’s best known as the former residence of the von Hochberg family. And it still bears the marks of aristocratic rule, with landscaped gardens, a large courtyard circled by mythological statues and royal lions guarding the gates all pointing to its blue-blooded past. Despite this splendour, the castle also has its dark side, and is considered one of the Old Continent’s most enigmatic buildings. When the Nazis seized control in 1941, they destroyed a number of historical chambers and created a series of underground tunnels – the function of which remains unknown – while the unexplained excavation of prisoners’ hands adds another mystery. Today, the castle attracts tourists from across the world, with its unique combination of size, history and location leaving an unforgettable impression on every guest that visits. KÓRNIK From gorgeous natural environments, to historical relics, to perfect landscapes for outdoor pursuits, there’s something for everyone in Kórnik. Foremost among the town’s attractions is the 14th-century Kórnik Castle and its handsome outbuildings, carriage house and pavilion. S I G H I S OA R A One of Europe’s best-preserved Medieval towns, Sighisoara stands alone as the most charming cultural and historical site in Romania’s enchanting Mureş County. This is in no small part due to its wealth of fascinating attractions, such as the 14th-century Church on the Hill, which towers above the town from its spot on the highest point of the citadel – which is itself remarkable in that it remains inhabited to this day. Later, it became known as the birthplace of another famous figure, Vlad Ţepeş – better known as Vlad the Impaler – who acquired worldwide notoriety as Dracula, and was born in the city of Sighişoara. In more recent years, the “land beyond the forest” has enraptured Prince Charles of Great Britain, who discovered the region’s Saxon villages and has been a regular visitor ever since – making him possibly the foremost champion of this wonderful land. This is just a small selection of what’s waiting to be discovered, with Transylvania’s long and storied history leaving traces worthy of visiting everywhere you look. One of photography’s trailblazers, although less well-known to the wider public, is Csonka Geza – one of the most celebrated photographers of 19th-century Tîrgu-Mureş. Many of his photos now reside in private collections, although he

did leave one accessible piece of his legacy near the city centre: the Villa Csonka. One of the most beautiful private residences to be built over a century ago, it now represents one of Transylvania’s most important historical monuments. The villa has recently undergone a vast restoration project, with the first half of the renovation completed in early 2013. This ambitious urban architecture project was possible when the estate was returned to the city to provide two strands of its tourist offering: both a new hotel resort and a prominent item of local history. Now, the old architecture of the estate – built in secession style – blends perfectly with both the garden in front and the modern buildings that predominantly house the accommodation units of the new Hotel PRIVO. “Visit Transylvania!” is more than an exhortation. or the second year in a row, Ukrainian winemaker Shabo has won special acclaim at the prestigious Mundus Vini tasting competition, once again proving that its products can stand their own against those from the world’s more established wine regions. The Mundus Vini valuation rules are notoriously rigid, with more than 1,000 companies from around the world submitting samples to be professionally evaluated by more than 300 jury members from 46 countries. It’s little wonder then that the European Union officially recognise the awards here as an international standard of quality.

In the last two years, Shabo has been the only Ukrainian representative to medal at the event, with its Classic Brut and Classic Brut Rose both picking up a silver medal in the autumn 2013 competition – the 13th in history – in Germany. Its still wines were also widely lauded, receiving a diploma, while during this same timespan, the company has won 26 medals in total across a variety of venerable international competitions. So what are the secrets to Shabo’s success? “First of all: the grapes,” says Vaja Iukuridze, the company’s chairman. “Since 2004, and especially for our sparkling wines, we have produced the best grapes. Brett Crittenden – a senior judge at many international wine competitions, and one of Europe’s most respected experts – commented on the excellent quality of Shabo wines, noting that the Classic Brut and the Classic Extra Brut were characterised by “a perfect balance of taste”, while the pink Classic Brut Rose exhibited a “stunning colour”.

In a move to maintain its remarkably low prices, Wizz Air has announced that 26 of its upcoming order of Airbus A320 planes will be converted to the Airbus A321 aircraft. The A321 has the same wingspan as the A320 but is seven metres longer, enabling it to accommodate 40 extra passengers per aircraft. This extra capacity will alleviate high demand on Wizz Air’s most popular routes while keeping fares low. The A321 also has a longer range than the A320, so aircraft can travel further. These new planes will fly to new destinations recently added as part of Wizz Air’s recent ‘Go East’ expansion, such as Israel, Azerbaijan, the UAE and Russia.

Andreea-Denise’s Cozonac recipe Ingredients: ● 60g fresh yeast ● 250g pecans, chopped ● 1kg all-purpose flour ● 300g white sugar ● 5 eggs ● 500ml milk ● 250g butter, melted ● 2 tbsp cocoa powder ● ½ cup raisins ● Zest from one lemon

A Recipe for Success Andreea-Denise Filip, the Romanian WIZZ Ambassador, explains why a slice of cozonac revives memories of her childhood “For me, being part of Wizz Air was something that I dreamt about for a long time. Now that I am a WIZZ Ambassador I have the chance to inspire people. The competition to be an Ambassador in Romania was very tough, but when I found I’d won I was so happy, excited and grateful to all the friends, colleagues and Wizz Air facebook fans that voted for me,” says 23-year-old Andreea-Denise Filip. As well as being an inspirational cabin crew member and a passionate Ambassador for Wizz Air, Andreea-Denise is also a passionate cook.

“The interesting thing about Romanian food is that the recipes are cherished like a cultural legacy,” she continues. “I have many dishes that I like, but my favourite that I eat could all the time is ma˘ma˘liga˘, polenta mixed with butter, traditional cheese and soured cream.” But Andreea-Denise’s all-time top Romanian food is cozonac. “This Romanian dessert reminds me of my childhood. My grandmother always used to cook it for me. Cozonac is a kind of sponge cake filled with a delicious mix of cocoa, nuts and raisins. Method: 1. In a saucepan heat the sugar, milk, butter and lemon zest. 2. Take the yeast and mix it with 2 tbsp of warm milk, 2 tbsp of sugar and 1 tbsp of flour. Let the mixture rise. 3. In a big bowl add the flour and five egg yolks to the yeast mixture and mix well. Then, add in the warm milk mixture. The more you mix, the fluffier the dough will be! Then add in raisins and let the dough rise. 4. Separately, combine pecans, 5 tbsp sugar and 2 tbsp cocoa powder into a food processor. Add the five egg whites, mix and set this aside in the fridge. 5. Divide the dough into three pieces. Oil a surface and roll out one third of the dough. Spread one third of the pecan mixture on top then repeat two more times. Put each roll in a buttered bread pan and let it rise again. Coat the mixture with egg wash and sprinkle with sugar. 6. Bake at 350̊C for about 35-45 minutes. Let the cake cool completely – then eat!
