Amok Amok is one of the most renowned of Cambodia's dishes, popular with locals and visitors alike. A rich coconut-based curry infused with Mekong catfish, Amok exhibits the importance and masterful use of freshwater fish in the Kingdom. The fish fillet is covered with characteristic kroeung, a curry paste of shallots, lemongrass, garlic, turmeric, galangal, ginger and kaffir lime, and thereafter roasted crushed peanuts, coconut milk, and egg are added. Traditionally, everything is wrapped in banana leaves and steamed until it achieves a texture similar to a soufflÊ, however, many modern restaurants simmer the concoction in a wok, with makes for more accompanying sauce. The addition of a subtly bitter local herb, slok ngor, distinguishes this version from other regional variants. The emphasis is on creating a fragrant, zesty, and flavoursome dish that is altogether more delicate than the spicy versions on offer in Thailand, Laos and Malaysia. If fish isn't your favourite food, fear not as there are many variations of amok to suit your palate, featuring chicken, prawns, scallops or tofu. Be sure to try this local delicacy when in Cambodia, it won’t disappoint.

Lok Lak Lok lak is one of Cambodia's signature dishes which is roundly adored by all. A bed of luscious lettuce, cucumbers, onions and semi-ripened tomatoes supports the centrepiece: succulent pieces of beef lightly seared after suffusion in a marinade of palm sugar, garlic, oyster sauce and black pepper. It is said that locals favour virtually raw beef, but most recommended restaurants grill the meat. Served with rice and often dressed with shallots, garlic, fish sauce, sweet basil, green beans and green pepper, the dish pays homage to the Cambodian penchant for combining sweet, salty and sour flavour notes. A piquant sauce of sea salt, black pepper, crushed garlic, and lime juice is provided for dipping. Bistro menus in Phnom Penh sometimes feature lok lak Americain, which substitutes French fries for rice and adds a fried egg. Lok lak is an ubiquitous dish which can be found on the menu of even the most secluded villages or roadside eateries. Wherever the opportunity arises to try it, do not pass it up: you're bound for gastronomic delights!

Pepper Crab No visit to the Kingdom would be complete without a taste of one of its most iconic dishes: pepper crab. Grown exclusively in the soils around the southern riverine town of Kampot, the intense, fruity flavour and unmistakable aroma of Kampot pepper is acclaimed by local and international spice connoisseurs. Pepper crab can be sampled throughout Cambodia, but Kep – a small seaside town located an hour east of Kampot – receives thousands of visitors seeking out the popular delicacy at seaside restaurants close to the famous Crab Market. There are different versions of the dish, which can be prepared using any of the three types of Kampot peppercorn. Traditionally the dish is served with a Chinese-style oyster and soy sauce and a touch of sugar, imparting a sweet and sour flavour, while green peppercorns are left on the vine and stir fried with the succulent crab. The result is a tantalising subtle balance of sharp tanginess and sweet fruitiness.

Exploring Angkor
bayon Angkor Wat may be the jewel in the Kingdom of Wonder's crown, but at its zenith the Bayon temple was the capital and epicentre of the “great city” of Angkor Thom, representing the intersection between heaven and earth. Built almost 100 years after Angkor Wat by King Jayavarman VII, the Bayon was the last state temple to be completed and the only Mahayana Buddhist shrine dedicated to the Buddha. However, its motifs were modified by Jayavarman’s Hindu and Theravada Buddhist successors. Deeper than the carvings at Angkor Wat, Bayon's bas-reliefs and towers were likely originally painted and gilded in gold. An approach via Angkor Thom's magnificent South Gate is unforgettable, with its causeway lined with 54 figures of devas (gods) facing-off against 54 asuras (demons), all grasping the mythical naga (snake), timelessly honouring the Hindu myth of the Churning of the Ocean of Milk.

From the eastern entrance, one can behold exceptional trios of apsaras (celestial maidens) dancing on beds of lotuses on the frontal pillars. Exquisite bas-reliefs of historical scenes featuring over 11,000 figures on the outer gallery wall can be photographed throughout the day. The inner gallery one level up is adorned with fantastical bas-reliefs detailing stories and figures, including Hindu deities Shiva, Vishnu, and Brahma. Natural light in the cloistered galleries and courtyards at each corner allows visitors to admire the grandeur of the Bayon's facets. Now for the architectural climax: the Central Sanctuary of the third level, with its famously serene though enigmatic faces, 200 of which grace its remaining 37 towers. Although generally accepted to represent the Lokeśvara, or compassionate "lord who gazes down" at the world, their striking resemblance to King Jayavarman VII has prompted some scholars to hypothesise homage to him, or perhaps even a King-Lokeśvara composite. In any case, omniscient four-directional faces abound in Khmer architecture, such as at the apex of Phnom Penh's Royal Palace. The central mass is crowned undoubtedly by the same one Chinese emissary Zhou Daguan chronicles; a legendary golden tower rising at the centre of the Khmer Kingdom, flanked by over 20 smaller towers and several hundred stone chambers. These vantage points afford spectacular vistas of the multitude of faces over different levels. Located 1.7km north of Angkor Wat, the Bayon with its “Smiles of Angkor” is a must-see. 如果说吴哥窟是“神奇王国”王冠上的明珠，那么位于通王城（曾作为吴哥首 都）正中心的巴戎寺，所代表的则是佛家天地相交之地。
在吴哥窟面世的一百多年以后，阇耶跋摩七世修建了巴戎寺。作为吴哥王朝 修建的最后一座国家寺院，巴戎寺也是唯一一座大乘佛教圣地，但是其建筑 图案后续曾被印度教徒和小乘佛教信徒进行过修改。巴戎寺建筑的雕刻痕迹 要比吴哥窟的深，其所有的浮雕和塔很可能最初都是镀金的。
走近吴哥通王城宏伟的南大门，城外护城河上架有石桥，桥的两侧栏杆上各 有一排54个雕像，一边是提婆（天神），另一边是阿修罗（恶魔），他们共 同手执那伽（蛇的形象，水神），寓意永远纪念印度教中的著名神话“搅动 乳海”，令人印象深刻。
从东面的正门进入，可以看到寺庙的底层基台雕刻着许多飞天小仙女，翩翩 起舞于莲花底座上。基台外侧廊壁雕刻着故事性浮雕，精美且丰富，共刻画 了11000个人物的日常生活场景，从战场厮杀到生产劳动、集市贸易的生活 图景应有尽有，非常适合拍照。
内层回廊的浮雕装饰主要是神话人物和宗教故事，包括印度教三大主神，湿 婆、毗湿奴和梵天。当自然的光线照进这与世隔绝的回廊和院子里的每一个 角落时，巴戎寺的每一个切面都足以让游客赞赏并感叹其建筑的恢弘壮丽。 巴戎寺最精华之处是位于第三层的四面佛塔群，每个面都有一个高棉人面孔 的佛像，佛像面带微笑，平静安详，神秘莫测。原有49座佛塔200张面孔，

Boasting glorious sandy beaches and its own airport, Sihanoukville is Cambodia's premier beach destination. As Tourism Department Director Teng Huy points out however, “We [also] have fantastic islands... [visitors] will be overwhelmed by their natural beauty.� Visit the jewels off the mainland for a taste of real beach paradise.
A short speed ferry away from the mainland is Koh Rong Samloem, a haven for divers with several outfits running courses and expeditions in the surrounding waters. You can also make a splash with kayaks, stand-up paddleboards or a sleek catamaran. Heart-shaped Saracen Bay on the eastern side has an array of accommodation, from ecological tents to cosy romantic bungalows, whereas the western coast is more upmarket and chilled-out. Here you can take advantage of the gorgeous golden and enticingly named Lazy and Sunset beaches to watch the natural show of the sun's slide into the ocean every evening. The largest of the islands with a personality to match, Koh Rong has 43km of beaches. Spectacular bays and peninsulas yield to grand sandstone rock formations, contributing to its scenic panorama. The interior is carpeted with lush forest nestling seasonal waterfalls, which the adventurous can explore on mountain bikes and motorbikes. Koh Touch, a sandy stretch jostling with guesthouses, is where most of the action happens, including raucous Full Moon parties. But fear not, all the other beaches are blissfully tranquil. Shore-side, try kayaking, diving or snorkelling around small islets and reefs teeming with marine life.
