How to place your order All orders can be placed via email, fax, over the phone. Voicemail orders may be left on our answer phone after office hours. These orders will be processed on the next working day, and delivered at the next available opportunity. We require you at the time that you are placing your order to state company name, account number, name of person placing the order and item codes. The Company will NOT accept any liability for errors resulting from orders placed over the telephone. Deliveries All goods are dispatched and delivered by our own BRC approved refrigerate transport. Deliveries are made Monday to Friday 6am to 2pm. Minimum order for free delivery is £50 to Central London and

Central Birmingham, £100 to Greater London and for outside London and outside Birmingham. The customer is responsible for providing a safe delivery area as Classic Fine Foods will NOT accept responsibility for any goods stolen or damaged after delivery. We prefer a signature at the time of delivery however if this is not available and if no contact was made within 24 hours of delivery then Classic Fine Foods may see it as proof of delivery. Credit terms Credit terms are offered only to applicants which meet our criteria, and negotiated terms must be adhered to. Please ask your Sales Executive for a copy of our Credit Application. New customers will be supplied on Cash on Delivery basis only. All requests for monthly credit facilities must be made by completing an ‘Application for Credit Form’ which can be obtained on request. Obsiblue Prawn Mix De-shell obsiblue prawns and dice into 0.5cm by 0.5cm cubes. Leave on ice. Dice shallots very finely and cook with butter till soft but without a change in colour. Allow it to cool. Dice the chorizo. Wash the spring onions and chop finely. In a bowl, mix the prawn, cooked shallots, spring onions and chorizo. Add extra virgin olive oil, lime juice, lime zest and a pinch of salt to taste.

Black Mushroom Coulis Add mushrooms and salt in a food processor and blitz. Transfer the mixture to a double thickness of muslin and tie into a pouch. Hang the pouch overnight in the fridge with a container underneath to collect the strained liquid. Place 600g of the strained liquid in a thermomix and mix at low speed at 95 degrees celsius. Add gellan and blitz at medium speed for 2 minutes. Pour the mixture into a container and cool over an ice bath. Blitz at an interval of 5 to 10 minutes with a hand blender so that a smooth consistency is achieved. Add vinegar and sugar to a small pan; bring to a boil, then set aside to cool. Add vinegar and sugar to the mixture and blitz using a hand blender. Add white soy sauce to taste. Pass through a tamis and allow to cool in the fridge.
