EXCEPTIONAL 20 YEAR EXPERIENCE • The sturgeons are farmed using extensive breeding techniques in natural ponds on their own farms located in the South-West of France • All their processes are designed not only to ensure the very highest standards of quality for the caviar itself but also to care for the ecological balance of the natural environment • Particular attention is paid to the water quality and the well being of the fish to propose a flawless, 100% natural product
RESPECTFUL OF TRADITION •
Meticulous selection takes place at every step of the production and maturation of your caviar if you are to enjoy only the best, and it is a slow process - it takes 8 years for a female to reach maturity
• Once a roe has been selected, traditional methods are used to prepare the caviar, with careful sorting - and regular tasting - of the eggs before the maturation process can begin
INNOVATION AND CREATIVITY • Innovation and R&D are an integral part of Sturia’s philosophy and are to be seen at every level of the company • They are working with internationally renowned scientific partners to improve their fish production • Constant striving for best practices and innovation explains the success of the brand and its position as market leader for so many years

A FAMILY COMPANY SINCE 1852 • Strasbourg has been known for its production of foie gras since the 18th century • The company Georges Bruck has been passing the foie gras tradition down, from father to son, for over a century and a half and producing the Foie Gras de Strasbourg
A RESPECT FOR TRADITIONAL RECIPES • They are still working with the traditional recipes that established the reputation and fame of Georges Bruck •
Rigorous selection and permanent control of raw materials, small-scale artisan production and a carefully-guarded secret as to the 12 seasonings that give the foie gras its inimitable flavour
THE HIGHEST QUALITY STANDARDS •
The livers are sourced from geese raised on smallholdings with the famers using traditional production methods. The birds are all free-range, and fed exclusively on natural foodstuffs – no GMO allowed!
•
The choice to use only birds from such smallholdings ensures not only livers that are packed full of flavour and so a more flavoursome foie gras but also, and most importantly, that the birds are well-treated and their welfare given pride of place

THE RESPECT OF THE SEA ENVIRONMENT •
Rosso Di Mazara wild red prawns (Aristaeomorpha Foliacea) come from the South-West coast of Sicily and are fished in deep sea between 500 and 1000 feet using advanced equipment and techniques
•
It is the only red prawn in the world with the “Friend of the sea” certification, guaranteeing the respect of the sea environment and the marine species thanks to fishing methods that don’t damage the marine habitat
THE ONLY PRAWN IN THE WORLD BEING SULPHATE FREE •
Rosso di Mazara is proud to use the unique technology of “Prawnfresh”, a substitute to sulphates discovered by the “Life Quality” CE’s program and guaranteeing the excellent organoleptic properties of the prawn as well as its colour, texture and odour
• The prawn has an intense taste with a lightly sweet flavour and a pleasant sensation of smoked notes at the end of the tasting
A 100% MEDITERRANEAN PRODUCT • Rosso Di Mazara went through thorough genomic tests so they can guarantee each client that they buy prawns fished in the Mediterranean Sea •
They worked with Parco Tecnologico di Lodi to conduct a series of experimentations to find a method enabling the identification of the difference between the red prawn from Mediterranean (Aristaeomorpha foliacea) and the red prawn of Mozambique origin

ORGANIC FARMING •
Situated in the beautiful Dee valley in North Wales Rhug Estate has been organic for nearly 20 years certified by the Soil Association. Rhug is one of the few remaining true field to plate organic operations
•
Rhug Estate organic farm produces award-winning Aberdeen Angus beef, PGI status Welsh lamb, Welsh salt marsh lamb and chicken. At Christmas time they produce award-winning organic turkeys and geese and also supply organic pork
HIGH COMMITMENT TO ANIMAL WELFARE •
By not using pesticides or artificial fertilisers on the farm, and using natural remedies rather than conventional medication of their animals, they produce healthy animals that give tender, flavoursome meat
• All of the livestock enjoy a 100% organic diet and live a stress-free existence ranging outdoors on clover rich pastures
PRIORITY TO NATURAL RESOURCES • The provenance and traceability of their meat is ensured as all their animals are bred on the farm and nourished on feed that has been grown on the farm • The animals are slaughtered locally, in a family run abattoir and the meat is then returned to their purpose-built state-of-the-art cutting and maturation plant

Rhug organic beef is sourced from their national award winning Aberdeen Angus herd, located on their coastal farm near Caernarfon (Wales). Its ability to finish off grass at around two years of age means it doesn’t have to be fed with high levels of grain. After slaughter, in the local abattoir on the edge of the estate, the primals are dry aged for 35 days and butchered in Rhug Estate’s own cutting plant, packed and despatched.

An Exclusive & Delicious Seasonal Lamb Rhug Salt Marsh Lamb comes from their coastal farm near Caernarfon (Wales). The company runs a flock of North Country Mules chosen because they are hardy, good mothers, prolific and ideally suited to this environment. The fields are washed by the sea in the winter and therefore grow special grasses and herbs such as sea lavender, samphire, sorrel, thrift and other saltmarsh grasses. This unique environment imparts the lamb with its distinctive and very special, sweet, light flavour that is so sought after by top chefs throughout the world. Salt Marsh Lamb is seasonal because as the grasses die back in the winter the flavour diminishes. This is the very best of Welsh Lamb. Available from May to December.

Free Range Pork Rhug Estate Pork comes from organic farms in the UK. The boar is a pure bred Duroc or Hampshire. The sows are a mix of 50% Duroc (their father), 25% Landrace 25% Large White (their mother), resulting in these two crossbreds which are best suited to the organic outdoor conditions. The pigs are reared outside in individual huts and as soon as they are big enough they can roam out onto clover rich pastures and are completely free range. They lead a natural stress free life with the ability to socialise with other pigs which we believe all contributes to the quality of the meat

The Best from Japan WAGYU - a Japanese beef cattle breed – derive from native Asian cattle. ‘WAGYU’ refers to all Japanese beef cattle, where ‘Wa’ means Japanese and ‘gyu’ means cow. This selection favoured animals with more intra-muscular fat cells – ‘marbling’ – which provided a readily available energy source. Wagyu is a horned breed and the cattle are either black or red in colour.

The Best from Australia Wagyu cattle are born and raised in a naturally clean and safe environment. Wagyu is a breed of cattle genetically predisposed to intense marbling that’s why it is widely renowned for its “melt-in-your-mouth” texture and flavour. Black Angus beef is derived from superior Black Angus cattle, grain fed for 150 to 170 days on a specifically formulated high energy grain diet. Their cattle are only bred from the best bloodlines and are independently verified as being 100% Black Angus, having no added hormones and being free from antibiotics.

A UNIQUE PROCESS • We are proud to offer you two original products that will definitely add a unique touch to your menu: Galician Blond Beef and Basque Cider House Steak • Galician Blond Beef: cows and oxen are reared for beef only and at the top level can reach a grand age of 17 • Basque Cider House steak: the product is named after a tradition of Basque farmers exchanging beef for cider at the Cider Houses
GALICIAN BLOND (RUBIA GALLEGA) • Breed of cattle native from Galicia, a region in the North West of Spain • Selection and grading are based on marbling, colour of the beef and type of fat which contribute to a unique rich flavour • A distinctive character of the beef is a deep rich flavour, which is provided by the age of the cow at slaughter, when they are at least eight years old
BASQUE CIDER HOUSE STEAK • It is produced from retired dairy cows. Following a four year dairy cycle, cows retire and naturally grow fat • Simmental or Holstein Friesian cattle are sourced from Germany, Austria, Poland and the Netherlands • They are selected for their marbling and then dry aged for a minimum of 40-50 days

• Domecq produce the most exclusive iberico products in the market, by slaughtering only 3.000 pigs
A UNIQUE & GREAT TASTE •
Domecq's Iberian meat products came from unique pigs, which go much further than what the norm requires for highest quality; The pigs are sacrificed with a minimum age of 21 months, spending so at least 2 acorns seasons
• Domecq´s Iberian meat is very juicy, tender and with a inimitable taste

HANDMADE REAL FOOD SINCE 1932 •
In 1932 Ethel and George Hepburn created the recipe for their bacon and ham cure. The same recipe and method is still used today, three generations later, perpetuating the tradition of great British bacon
A PROCESS THAT TAKES TIME •
The pork is gently cured then allowed to rest and mature giving the bacon its integrity. The personal touch is given to small batches of the meat with maturing times designed to develop the fullest flavour and so produce a unique product
BRITISH PORK QUALITY •
76
All the pork comes from Essex and Suffolk and is freedom food approval and RSPCA inspected. The breeds used are Landcrace crossed with Duroc and Hampshire and their diet is one of barley, wheat and maize

ONLY 100% PURE-BRED IBERICO PIGS • Based in Jabugo, the birthplace of Iberian pigs, Juan Pedro Domecq is a family owned company being a pioneer in ham business • They control all stages of production, from the breeding and rearing of their exclusive breed “100% pure Iberico pigs” • They only produce the “Lampino” breed because they consider it to be the best
AN EXCLUSIVE HANDMADE PRODUCTION PROCESS • The pigs lead a full life of several years roaming free in the dehesas • They forage for a very natural diet including vast amounts of acorns & herbs • Hams are naturally cured in the company’s own cellars in the Jabugo area under the constant care of their Master Ham-Maker
A UNIQUE AND GREAT TASTE • The “Pure Iberico Bellota ham” is often described as a stunning flavour, lovely and sweet, a beautiful aroma and a tender, not too fatty texture •
98
Juan Pedro Domecq won four times consecutive the Great Taste Award (2012 to 2015). Great Taste is simply about taste, not clever branding or smart packaging. In 2014, they also won the “Best Imported Speciality” Gold Fork Awards

A Strong History & Family Heritage Juan Pedro Domecq is a family owned company. Top end food and wine is a family tradition since the first Domecq arrived in Spain in 1816. They started producing sherry and brandies, which are known worldwide. In 1860, they acquired the first stud farm of pure bred Spanish horses for the family. However, the Domecq family always had a second passion, the breeding of animals: 100% Iberico pigs. Mr Juan Pedro Domecq Solis y Díez invented new methods on the breeding, feeding, and sanitary processes applied to his cattle, in search of his dreamt animals. Today, the company is still run by the family, 5th generation of breeders and entrepreneurs represented by Juan Pedro, Teresa and Isabel Domecq Morenés.

"GIVE TIME TO TIME" IS JEAN-YVES BORDIER'S MOTTO • Jean-Yves chooses traditional methods over industrial processes: it takes 3 days to produce butter by hand (6 hours for industrial butter) • The last artisan butter maker still kneading his churned butter in a wooden cylinder • All the portions and bricks are moulded by expert hands with palettes, to preserve texture
Dairy
A CHURNED & KNEADED BUTTER WITH A UNIQUE TASTE • Only excellent milk is sourced from Brittany/ South Normandy, supporting local farmers who work organically or with reasonable practices • Kneading develops complex flavours with a smooth and silky texture • Plain and aromatised butters, all balanced in mouth; as well as 2 seasonal creations per year

The Finest Speciality Vinegars These balsamic vinegars use not grapes, as it is usually the case, but apples and pears from Eastern Switzerland. The fruits are made into cider using a traditional recipe and methods and, without adding any colourings, flavourings or preservatives, the cider is then sealed into oak barrels and so begins the long wait while nature takes its course.

Flavoured Croquetas The concept of croquetas offered by Don Bocarte is based on the combination of two textures, two flavours and two colours inside the same croqueta. All croquetas are made from the finest raw materials available on the market. Texture and creaminess are provided by the milk and cream from Cantabria (North Spain). Don Bocarte kept the traditional process for the preparation, finishing the croquetas by hand, which give it a homemade look.
