CLASSIC FINE FOODS GROUP: OUR STORY 2000-2001: THE EARLY STAGE

FROM 2002: EXPANSION ACROSS ASIA ince then, Classic Fine Foods has continued its expansion S across Asia with the opening of different subsidiaries.

The Classic Fine Foods Company was registered in 2000 and began its commercial activity in 2001 buying the companies that formed the Olivier group. Operating in Hong Kong, Singapore and Malaysia, Olivier was the first company to develop an Asian network of fine food import and distribution companies, answering the needs of foreign restaurants expanding into Asia and the needs of local chefs looking for high quality ingredients from Europe.

2002: Opening of a subsidiary in Philippines

FROM 2004: EXPANSION INTO EUROPE xpansion into Europe shows the vision of Classic Fine Foods E to develop such a network of subsidiaries across the globe that it would become the only Fine Foods company able to support and supply chefs with the products they needed as their careers took them from country to country throughout the world. 2004: Opening of a subsidiary in United Kingdom 2005: Opening of a subsidiary in Vietnam

Classic Fine Foods was bought by Metro in 2015, the leading international specialist in wholesale. Metro operates in 35 countries and employs more than 150,000 people worldwide.

Classic Fine Foods opened its first TheTasteLab by Classic Fine Foods in London in 2016, followed by the opening of another in Singapore in 2018. TheTasteLab by Classic Fine Foods is a place for chefs to meet, share their experiences and learn in a relaxed, yet highly professional environment.

Farmed Caviar THE FRENCH CAVIAR • Sturia have been pioneering sturgeon breeding in France for the past 30 years, developing farming in natural ponds on its own fish farms in Aquitaine, in the south west of France • All their processes are designed not only to ensure the very highest standards of quality for the caviar itself, but also to care for the ecological balance of the natural environment • Particular attention is paid to the water quality and the wellbeing of the fish - a flawless, 100% natural product

RESPECTFUL OF TRADITION • Meticulous selection takes place at every step of the production and maturation of the caviar, and it is a slow process – it takes 8 years for a female to reach maturity • Once a roe has been selected, traditional methods are used to prepare the caviar. Careful hand sorting, and regular tasting, of the eggs are key before the maturation process can begin • The eggs are lightly salted using the Malossol method, which brings out their unrivalled flavour and length on the palate. This traditional expertise releases all of caviar’s balanced, hazelnut flavours

INNOVATION AND CREATIVITY • Innovation is an integral part of Sturia’s philosophy and is seen at every level of the company • Working with internationally renowned scientific partners ensures that they are constantly improving their fish production and care • Sturia is the only French producer working from “the eggs to the eggs” on two species (Baerii and Oscietra)

Sturia breed 2 different Sturgeons Acipenser Baerii (Siberian caviar) and Acipenser Gueldenstaedtii (Oscietra caviar). These two different species each produce caviar with their own specific features

The geographical area consists of the six counties of Cornwall, Devon, Dorset, Gloucestershire, Somerset and Wiltshire, which together make up the West Country region of England. In January 2014, Protected Geographical Indications (PGI’s) for West Country beef were recognised by the European Commission and published in the Official Journal of the EU.

A Strong History & Family Heritage Juan Pedro Domecq is a family owned company. Top end food and wine is a family tradition since the first Domecq arrived in Spain in 1816. They started producing sherry and brandies, which are known worldwide. In 1860, they acquired the first stud farm of pure bred Spanish horses for the family. However, the Domecq family always had a second passion, the breeding of animals: 100% Iberico pigs. Mr Juan Pedro Domecq Solis y Díez invented new methods on the breeding, feeding, and sanitary processes applied to his cattle, in search of his dreamt animals. About the Bloody Mary At the origin of the cocktail that made an era is Fernand Petiot, an American bartender working at Harry’s New York Bar in Paris in the 1920’s. One night, Petiot mixed up equal parts of tomato juice and vodka and decided to replicate the recipe when he moved to the King Cole Bar at the St. Regis Hotel in New York City in 1934. As the drink was not sophisticated enough for the New Yorkers’ taste, Petiot revisited his recipe to give it a spicy twist; to the original two ounces of vodka and two ounces of thick tomato juice, he added black pepper, cayenne pepper, Worcestershire sauce and lemon. The rest is history. CONCEPT AND DEVELOPMENT Sunraysia Five Star Bloody Mary Mix recipe was developed in close collaboration with the mixologists and sommeliers from some of the world’s finest establishments. It boasts a perfect blend of spices and flavours to enjoy one perfect Bloody or Virgin Mary. Offering a convenient 250ml single serve size, Sunraysia Five Star Bloody Mary Mix also enjoys a two-year shelf life from date of manufacture. Notoriously difficult to grow and taking over 18 months to mature, pure wasabi powder is a scarce ingredient to get. Each plant is also harvested manually as there are no mechanised ways to harvest this specialty plant.

TheTasteLab by Classic Fine Foods opened back in 2016 as a place for chefs to meet, share their experiences and learn in a relaxed, yet highly professional environment. We offer a programme of Pastry and Cuisine classes and a variety of events including training courses, workshops and demonstrations. These are run either by our resident pastry chef, Denis Dramé MCA or by some of the world’s greatest chefs, who are willing to come and share their knowledge and experiences. These chefs are often eager to return to give further classes in view of the facilities at their disposal. We are proud of the opportunity we give chefs to hone their skills, learn new techniques and stimulate their creativity. Denis joined Classic Fine Foods to run TheTasteLab. He began his career at the City Bakery in New York. He has worked alongside Raymond Blanc and Benoit Blin at the iconic 2-star Michelin restaurant Le Manoir aux Quat’Saisons and after a spell at Dainesfield House, Denis took on the role of Head Pastry Chef at Pennyhill Park.
