Farmed Caviar THE FRENCH CAVIAR • Sturia have been pioneering sturgeon breeding in France for the past 30 years, developing farming in natural ponds on its own fish farms in Aquitaine, in the south west of France • All their processes are designed not only to ensure the very highest standards of quality for the caviar itself, but also to care for the ecological balance of the natural environment • Particular attention is paid to the water quality and the wellbeing of the fish - a flawless, 100% natural product
RESPECTFUL OF TRADITION • Meticulous selection takes place at every step of the production and maturation of the caviar, and it is a slow process – it takes 8 years for a female to reach maturity • Once a roe has been selected, traditional methods are used to prepare the caviar. Careful hand sorting, and regular tasting, of the eggs are key before the maturation process can begin • The eggs are lightly salted using the Malossol method, which brings out their unrivalled flavour and length on the palate. This traditional expertise releases all of caviar’s balanced, hazelnut flavours
INNOVATION AND CREATIVITY • Innovation is an integral part of Sturia’s philosophy and is seen at every level of the company • Working with internationally renowned scientific partners ensures that they are constantly improving their fish production and care • Sturia is the only French producer working from “the eggs to the eggs” on two species (Baerii and Oscietra)

Sturia breed 2 different Sturgeons Acipenser Baerii (Siberian caviar) and Acipenser Gueldenstaedtii (Oscietra caviar). These two different species each produce caviar with their own specific features
ACIPENSER BAERII named Baerii
ADULT SIZE: 100cm ADULT WEIGHT: 8kg AGE: 7-8 years *average
Also known as the Siberian Sturgeon, this is the smallest of the two species (farmed Siberian sturgeon grows up to 100cm on average and weights 8kgs). This sturgeon produces dark brown caviar which has a delicate hazelnut and fresh buttery taste.
ACIPENSER GUELDENSTAEDTII named Oscietra
ADULT SIZE: 120cm ADULT WEIGHT: 15kg AGE: 9-10 years *average
Recognisable by the fact that is it bigger than its Siberian cousin and has rough skin. Its eggs are lighter in colour and bigger (at least 2.7mm) than Baerii eggs, and will give a firm texture with Iodine flavour.

Oysters A FAMILY COMPANY • In 1880, François Cadoret created the company Les Huitres Cadoret. Since then, five generations followed, improving their experience and knowledge of oyster farming • The genius of the Cadoret forefathers was to place the oysters where the estuary tides and their alternating fresh and salt water would given an unsurpassed taste to their oysters
THE BEST FROM BRITTANY • Their oyster beds are set in Carantec in the north of the Finistère, Brittany – a total of 200 hectares. After 2 or 3 years there the oysters are transferred to Riec sur Bélon estuary to be refined for an additional 6 months • Cadoret is the home of flavour, the sanctuary for oyster lovers throughout the world, chef’s regard these oysters like vintage wines
THE BELON OYSTER • The Belon flat oyster, famous around the world with its inimitable hazelnut flavour was born, and with it the reputation of Cadoret • In addition to producing the Belon, Cadoret has extended their range with rock oysters such as La Perle Noire and other varieties
Seafood Fine de Bretagne
Belon Flat oysters These flat European oysters spend the first 3 years of their lives in deep water, before being brought into the waters of the Cadoret oyster beds in Carantec, Brittany. The final step in the refining process is 2 months spent in the Bélon river from which these oysters take their name
Rock oysters These 3 year-old rock oysters are transferred to the Carantec Bay, Brittany, for a 6-month refining period in high oyster beds used only for this type of oysters. They can take their time to acquire all their characteristic flavour

Rock oysters Gillardeau oysters are cultivated for four years in Marennes-Oléron, Poitou-Charentes. After 9 months in containers placed in oyster parks, they are placed in bags and submerged for more than 3 years in deep water

Australian Wagyu Beef WESTHOLME - THE HISTORY • Established in 1824, Australian Agricultural Company (AACo) - the producer of Westholme - is the oldest continuously operating company in Australia. The mighty Westholme herd was founded on champion Wagyu bulls and cows that came to Australia from Japan more than two decades ago. AACo has carefully built on foundational Wagyu bloodlines to produce the most highly credentialed cattle to ever leave Japan • Strategically bred Waygu are uniquely Australian, born wild and roaming across huge expanses of native Australian grasses before being finished on quality cereal grains. It is this blend of feed and breeding that gives Westholme its signature taste and unique mix of marbling and lean
THE STATIONS AND PEOPLE • Westholme is an expression of the vast beauty of the Australian landscape. It is the story of heritage, stations and people. Westholme brings together expertise, craft and scale to create a singular eating experience every time • Their cattle graze across a network of stations that are stewarded by families who dedicate their lives to the land and to ensuring happy cattle, free from stress. Their people have a collective obsession with crafting the finest Wagyu in the world, from their home to your plate
WESTHOLME WAGYU • Westholme cattle are raised on pristine tracts of Mitchell grass and grain-finished on proprietary blends. Rich marbling - throughout the cut - delivers a signature tenderness and consistent excellence. The consistency of Westholme’s rich, toasty flavour and tender juiciness in every cut reflects the care and attention to detail they bring to every stage of the journey from paddock to plate • The grass and grain work together to deliver Westholme’s intense marbling, complexity and depth of flavour. Westholme has rich, round complex layers of earthy, toasty flavour. It delivers exceptional juiciness, an amazing silky texture and succulent, buttery biscuit flavours • Every Westholme carcass is graded to stringent MSA guidelines, ensuring tender, juicy and flavoursome beef every time

TEXTURE Don’t let the elegant ruggedness of Westholme fool you. It has a gentle tenderness that simply melts in your mouth. Marrying definition and suppleness, its juiciness delivers a mouthwatering sensation.
OPTIC
Meat
A well-defined muscle structure, an acknowledgement of Westholme’s craftsmanship, is densely streaked with a wealth of marbling. Taking on a golden hue when cooked, reminiscent of a setting sun.
WAGYU MARBLE SCORE GRADING Australia is one of the biggest producers of Wagyu beef in the world, and uses its own grading scale, the AUS-MEAT marbling system. This scale goes from 0 (no marbling) and tops out at grade 9, (extraordinary amounts of marbling) and everything above it (scores 10, 11, and 12), are graded 9+.

Exceptional Tenderness & Juicy Flavour The Black Angus bred, develops superior marbling than most cattle, resulting in more tender and buttery flavoured beef. Because of the increased fat content through marbling, the beef has consistent tenderness and a unique juicy flavour that only grain fed beef can produce.

The West Country is the largest, most agricultural region in England. Its environment is one of the richest in the UK. The geographical area consists of the six counties of Cornwall, Devon, Dorset, Gloucestershire, Somerset and Wiltshire, which together make up the West Country region of England. In January 2014, Protected Geographical Indications (PGI’s) for West Country beef were recognised by the European Commission and published in the Official Journal of the EU.
West Country Tenderloin
To comply with the requirements of the ‘West Country Beef’ scheme, producers are required during the inspections to demonstrate the cattle are born, reared and finished within the West Country region. The scheme also requires an extensive system to ensure the health and welfare of the stock based on The Five Freedoms.

Grass Fed Beef From La Pampas • Argentinian beef is grass fed beef that conforms to EU regulation and without Hormones. • Majority of the cattle come from the lush grassland of the La Pampas region. • A mixture of pure breed Black Angus, pure Hereford and cross breed Angus/ Hereford, roam the black soil country where they can live under more natural conditions to be fattened achieving a singular taste and texture. • The cattle are under 30 months of age at the time of slaughter to ensure the meat is tender and while at the same time keep that delicious grass fed flavour. • We deal in the 3 main cuts Tenderloin, Striploin and Ribeye – other cuts are available on request such traditional Sth American cuts - Rump heart, Tri tip and Picanha. • Excellent alternative to British grass fed beef.

GALICIAN BLOND (RUBIA GALLEGA) • Breed of cattle native from Galicia, a region in the North West of Spain • Selection and grading are based on marbling, colour of the beef and type of fat which contribute to a unique rich flavour • A distinctive character of the beef is a deep rich flavour, which is provided by the age of the cow at slaughter, when they are at least eight years old
BASQUE CIDER HOUSE STEAK • It is produced from retired dairy cows. Following a four year dairy cycle, cows retire and naturally grow fat • Simmental or Holstein Friesian cattle are sourced from Germany, Austria, Poland and the Netherlands • They are selected for their marbling and then dry aged for a minimum of 40-50 days

New Zealand Lamb NEW ZEALAND PREMIUM LAMB • TE MANA LAMB™ is the premium range of the New Zealand group, Alliance, one of the world’s largest lamb producers and owned by more than 4000 family-farms • TE MANA LAMB™ is raised in New Zealand’s iconic hill and high country and only 16 committed founding farmers were carefully chosen to raise these animals on their remote South Island • TE MANA means prestige and authority in Maori and it is regarded as ‘food from heaven’. TE MANA LAMB™ is the result of a ten-year farming programme
UNCOVERING A UNIQUE FAT PROFILE • While breeding sheep to be healthier and better adapted to high country environments, Alliance has discovered a sheep with a different type of fat, an intramuscular fat, significantly higher in omega-3 with Wagyu beef‐style marbling • As TE MANA LAMB™ contains naturally-occurring healthy polyunsaturated omega 3 fats it is a very healthy option to put on your menus • TE MANA LAMB™ won the Innovation Award for New Zealand’s Most Innovative Food in 2017 and the New Zealand Food Safety Primary Sector Products and Frozen categories at the New Zealand Food Awards in 2018
LAMB LIKE YOU NEVER TASTED BEFORE • The combination of the finest breed, New Zealand’s unique and diverse landscape, the finishing on chicory and a 21-day aging process results in an entirely new lamb taste experience with outstanding succulence, tenderness and flavour • Its colour is deep pink through to light red, whilst its fresh, lighter-bodied texture is conveyed by its unique higher, but lighter micro-marbled omega fats. The finish is remarkably delicate and clean on the palate • Because of its unique composition, TE MANA LAMB™ doesn’t behave like regular lamb during preparation and cooking. It is more versatile, allowing you to create like never before

Spanish Suckling Pig From Segovia Sourced from Segovia, this Suckling Pig is a real showpiece for any dinner party or function. Roasted to a deep golden brown, Suckling Pig is one of the most typical dishes in the cuisine of Castilla. • Piglets are fed on its mother’s milk and with a diet of top-quality feed and grains, and sometimes even cabbage and cooked potatoes. • Between the ages of two and six weeks, piglets are slaughtered humanely and to the highest EU food safety certifications. • It is traditionally cooked whole, often roasted where the meat becomes unbelievably tender, so succulent that it literally falls off the bone. • The meat is pale and tender and the cooked skin is crisp and can be used for pork rinds. The texture of the meat can be somewhat gelatinous due to the amount of collagen in a young pig.
Spanish Suckling Pig From Segovia ROT116 – ≈5.5kg
• Suckling pig meat has less fat than an adult pig, around 40% less, with the result that it does not increase cholesterol levels

A UNIQUE AND GREAT TASTE • The Pure Iberico Bellota ham has a stunning flavour, lovely and sweet, a beautiful aroma and a tender, not too fatty texture • Their hams in pre-sliced pack have been hand-carved to ensure the perfect thickness so it melts in the mouth • Juan Pedro Domecq won four times consecutive the Great Taste Award (2012 to 2015). Great Taste is simply about taste, not clever branding or smart packaging. In 2014, they also won the “Best Imported Speciality” Gold Fork Awards

A Strong History & Family Heritage Juan Pedro Domecq is a family owned company. Top end food and wine is a family tradition since the first Domecq arrived in Spain in 1816. They started producing sherry and brandies, which are known worldwide. In 1860, they acquired the first stud farm of pure bred Spanish horses for the family. However, the Domecq family always had a second passion, the breeding of animals: 100% Iberico pigs. Mr Juan Pedro Domecq Solis y Díez invented new methods on the breeding, feeding, and sanitary processes applied to his cattle, in search of his dreamt animals. Today, the company is still run by the family, 5th generation of breeders and entrepreneurs represented by Juan Pedro, Teresa and Isabel Domecq Morenés.

Handmade Churned & Kneaded Butter “GIVE TIME TO TIME” IS JEAN-YVES BORDIER'S MOTTO • Jean-Yves chooses traditional methods over industrial processes: it takes 3 days to produce butter by hand (it takes 6 hours for industrial butter) • Bordier is the last artisan butter maker in France still kneading their churned butter in a wooden teak paddles, a technique that has not changed since the 19th century • All the portions and bricks are moulded by expert hands with wooden palettes, to preserve texture
Dairy
A CHURNED & KNEADED BUTTER WITH A UNIQUE TASTE • Only excellent milk is sourced from Brittany and South Normandy, supporting local farmers who work organically and with sustainable practices • Once the cream has been collected it is left to mature slowly for 2 days, developing it’s aromatic complexity • Depending on the season the butter can change aromatic profiles; spring is floral, summer is caramel and autumn is toasted • The Breton salt is added gradually, until the butter begins to ‘cry’ – leaving nothing but complex flavours with a smooth and fudgy texture
A BUTTER FOR GRAND CHEFS & REAL GOURMETS • Butter portions that will grace your restaurant tables • Flavours inspired by chefs, perfect to change throughout the seasons • A look and taste that will make the difference • Create your tailor-made butter: choose your size, shape and flavour • Customise your butter with your name or logo stamped on a butter medallion

Premium Butter & Dairy THE EXCELLENCE OF ISIGNY SAINTEMÈRE PRODUCTS • Isigny Sainte-Mère has a long-standing tradition in the art of making dairy products. With over 300 medals won, Isigny Sainte-Mère is the most awarded dairy company in France
Dairy
AN EXCEPTIONAL LAND • The Isigny region used to be one of Europe’s largest wetlands until the sea retreated in the sixteenth century. It left behind a clay soil with rich alluvial sediments, upon which green grass grows abundantly. For centuries, the region’s dairy farmers have produced exceptionally fine milk, earning a well-established reputation for quality • Thanks to the salty seawater of the Channel, combined with fresh water from the Cotentin peninsula and the Bessin marshes, the region’s climate is mild and damp. The cows which graze these pastures are eating grass which makes their milk rich in mineral salts and trace elements
PDO: A BENCHMARK OF QUALITY • The PDO (Protected Designation of Origin) is an equivalent of the French State AOP (Appellation d’Origine Protégée) label. It is an official mark of quality which recognises the unique characteristics of the Isigny PDO butter and cream based on its outstanding terroir. To ensure the best quality butter and cream, their producers and farmers have constantly improved their techniques while respecting the values of the Isigny terroir. In fact, their cows graze on the succulent and nutritious pasture for more than half of the year OF

Only Isigny’s best creams are selected to be churned into Isigny Sainte-Mère Butter. These creams acquire all their distinctive aromas and organoleptic qualities during this crucial stage: the traditional slow maturation. By respecting theses methods and using their own ferments, the grains of butter that form have an even melting texture.

Ever since settling beside the Norfolk Broads in the early 1900’s the Mack Family have been farming the rich soil of the Yare Valley to produce Extra Virgin Cold Pressed Rapeseed Oil. The seeds are simply pressed by mechanical means then filtered twice for an incredibly pure and wholesome oil. This pure, delicately flavoured and not heat treated oil, is ideal for dressing, frying, roasting, baking and much more, making it a perfect oil for everyday use. It is high in Omega 3, contains Vitamin E and has half the saturated fat of an equivalent Olive Oil. In addition, everything is grown, harvested, pressed and bottled on the farm meaning they have full traceability from seed to bottle.

A Blend of 35 Apples in a Bottle Surette is a French Canadian word used to describe a flavour that is slightly acidulated. The goal behind Surette is to unveil overlooked acidulated flavours by enhancing the natural astringent interactions present in fresh fruits and vegetables. For Apple Surette, they handpicked and coldpressed a blend of selected varieties of apples from family farms located in the village of Saint-Joseph-du-Lac in Quebec. You will be surprised by the delicate hint of residual sugar surrounding a sapid acidity that naturally purifies the palate. Each sip has your taste buds jostling the burst of flavours and fruity fragrance. There are so many ways to use Apple Surette; the only limit is your imagination… You can add it to vinaigrettes to enhance your salads, or add a splash to a dark liquor cocktail. You can use it as a finishing touch to raw fish or grilled meat as you would a great balsamic vinegar. It is also great as a sweet and sour condiment in marinades or as a new ingredient to play with and add to your desserts.

Master Salt Makers Since 1882, Maldon salt has been made with the same traditional artisan methods from the coastal town of Maldon. Maldon Salt is still today a family business ensuring that the salt always stays the same.
Grocery
Four generations of master salt makers have been hand harvesting the naturally formed pyramid crystals that have become Maldon‘s signature. The flakes release their saltiness with sweet precision, a fresh intensity and clean taste. Maldon salt is made like no other, there’s an art in temperature and timing. A slow warmth uncovering the water’s secret, with skilled hands poised over every batch. Traditional methods and time honoured techniques passed down through the centuries, are the reasons why Maldon salt is so unique. In 2010 Her Majesty The Queen was welcomed to the salt works in Maldon. Two years later they was granted a Royal Warrant as official purveyors of sea salt.

Rubies in the Rubble are purveyors of award-winning sustainable condiments who have been around since 2012 and exist to tackle the problem of food waste and create word-class condiments in doing so. They work with farmers and producers to source what they cannot otherwise sell due to being misshapen, blemished, in oversupply or a by-product. From this they make delicious award-winning products, such as their 100% natural ketchup winner in the Casual Dining Innovation Challenge 2019 Awards.

Dry Pasta
A Traditional Process Delverde is based in Fara San Martino, Abruzzo. While the Verde river has been flowing here for millions of years, Delverde began producing high quality pasta in this area in 1967, following the pasta-making traditions of the Abruzzo region. Delverde’s mission is to produce the best pure pasta from the purest water. Captured at the core of the mountain and filtrated by non-contaminated 7-millionyear rocks from the Pleistocene, the water they use to make their pasta is not only extremely pure but naturally cold at 8 degrees celsius. Completely neutral (free of colour, taste or smell), the water from the Verde river is the perfect ingredient to preserve the quality and unique taste profile of the wheat.

Bloody Mary Mix
100% pure squeezed tomatoes. Every bottle contains the equivalent of two tomatoes. Expertly developed in collaboration with mixologists from the world’s finest establishments, Sunraysia Five Star Bloody Mary Mix boasts a perfect blend of spices and flavours to replicate the famous cocktail SUNFSBMM12 – 12 x 250ml
About the Bloody Mary At the origin of the cocktail that made an era is Fernand Petiot, an American bartender working at Harry’s New York Bar in Paris in the 1920’s. One night, Petiot mixed up equal parts of tomato juice and vodka and decided to replicate the recipe when he moved to the King Cole Bar at the St. Regis Hotel in New York City in 1934. As the drink was not sophisticated enough for the New Yorkers’ taste, Petiot revisited his recipe to give it a spicy twist; to the original two ounces of vodka and two ounces of thick tomato juice, he added black pepper, cayenne pepper, Worcestershire sauce and lemon. The rest is history. CONCEPT AND DEVELOPMENT Sunraysia Five Star Bloody Mary Mix recipe was developed in close collaboration with the mixologists and sommeliers from some of the world’s finest establishments. It boasts a perfect blend of spices and flavours to enjoy one perfect Bloody or Virgin Mary. Offering a convenient 250ml single serve size, Sunraysia Five Star Bloody Mary Mix also enjoys a two-year shelf life from date of manufacture. And like all Sunraysia Five Star products, there is strictly no preservatives and nothing artificial. THE INGREDIENTS: AUSTRALIAN TOMATOES 100% Pure Squeezed Tomatoes, the equivalent of two tomatoes in each bottle. Sunraysia Five Star only uses Australian tomatoes grown in the Goulburn Valley and surrounding area of Victoria, Australia. THE INGREDIENTS: TASMANIAN SHIMA WASABI
Mini Bar & Beverages
Shima Wasabi is grown in Tasmania, using Tasmania’s natural advantages of cool climate, clean air and pure rainwater to grow unique and specialised plants. The wasabi powder is freeze dried in Tasmania in a export and FDA accredited facility. Notoriously difficult to grow and taking over 18 months to mature, pure wasabi powder is a scarce ingredient to get. Each plant is also harvested manually as there are no mechanised ways to harvest this specialty plant.

Chilled Fruit Purees A FAMILY BUSINESS WITH OVER 70 YEARS OF EXPERIENCE • In 1946, André Ponthier and his wife founded their fresh fruit company. They expanded, buying more land and planting apple trees, blackberry bushes and raspberry canes • In 1999 Ponthier launched another pioneering range with the chilled fruit purees, a real alternative to frozen fruit purees and very practical whilst preserving the colour and flavour of the fruit
NATURALNESS • Maison Ponthier’s aim is to create purees that are the closest to the raw fruits in terms of taste, colour and smell as possible. The company doesn’t use any additives (colourings, preservatives, flavourings) to guarantee the naturalness of the products
Mini Bar & Beverages
ULTIMATE TASTE • Most of the fruit purees are made from single variety and single origin fruits to deliver the best organoleptic qualities. Maison Ponthier only sources the best raw materials from producers and long-term partners offering the best nature has to offer and fruit varieties associated with a specific climate and terroir. Fruits are only bought and harvested once a year at the peak of their ripeness
Picture credits ©Mathilde de l’Ecotais, Adeline Monnier, Lhoran Dherines
• Maison Ponthier only uses 100% natural pure cane sugar and a maximum of 10% sugar is added to the fruit when some sweetening is required
Key Advantages of the Range • Most purees are made from single variety and single origin fruits • Fruits harvested once a year at the peak of their ripeness • No additives (colourings, preservatives, flavourings) • Only 100% natural pure cane sugar is added • Easy to use and convenient chilled pouch • Long shelf life: 15 months before/12 days after opening
Map of Origin One of Ponthier’s greatest strength is the development of fruit purees based on a single origin.

Not only that but it’s a fantastic opportunity to network and connect with other chefs attending the courses and the chance and the privilege to meet some of my idols.”
