Savoury Range The savoury tart shells are made of wheat flour, butter*, corn or rice flour, sugar, and free-range eggs, as well as vegetable powders for the tulip shaped shells. They have a neutral taste which does not interfere with the flavour of your toppings. *with the exception of the cones and tulips, which are made with vegetable fats.

Recipe for ten 8cm tarts Almond Cream Butter 150g Sugar 150g Almond powder 150g Eggs 150g Apple Puree Granny Smith apples n°1 500g Lemon juice 62g Extras Royal Gala apples Brown butter Large sweet tart shells

METHOD Almond Cream Beat the butter with the sugar and the almond powder. Incorporate the eggs gradually and finish with the rum. Add to piping bag. Pipe into the bottom of the shell and cook 10 min at 180°C. Apple Puree Cut the granny smith n°1 apples into small cubes. Add the lemon juice and vacuum pack. Bake in a steam oven at 100°C for 13 minutes. Garnish the shell with puree. Finish Cut the royal gala apples with a mandoline slicer and fan them out in the bottom of the shell. Butter the top of the tart and cook for 10 min in the oven at 160°C.
