Warm honey. Oak. A trace of marmalade. “Nosing” a single malt whiskey with master distiller Tom is as much a lesson in aroma as flavor. His small, artisanal distillery is so focused on the arcane art of whiskey that they only produce two casks a day. If you love food, the scarpetta is your best friend. You’ve probably used one, even if you didn’t know its proper Italian name. A scarpetta, literally “make the little shoe,” is that last shred of bread that you drag across your plate to chase down the final puddle of sauce. Popping it into your mouth (and licking your fingers) is more than polite; it’s a sincere compliment to the cook. And it’s the kind of tasty connection to local food traditions that we’ve never been able to resist on our travels. As one of our favorite foodies put it, “Wherever I am, whenever mealtime rolls around, I only have two questions: What are the local specialties? And why? Feed me what the natives eat … and if I can also get the backstory for why the curry is so spicy or the pastry has a thousand layers, I’m really in pig heaven!” On a Classic Journeys trip, food is never just about fuel. Every tangle of pasta or slurpy Vietnamese pho or warm, jam-topped scone is the foolproof way into the hearts, homes, and history of the places you visit. It’s tradition to be savored. And heck, food is fun! Trying new tastes, ordering a plate of whatever it is those farmers at the corner table are having, learning what dessert is in a village-on-stilts in the Panamanian rainforest – they’re all adventures as memorable as any zipline ride or mountaintop vista. Of course, the person in the kitchen is the one you really want to know (and our guides do know them). Since the earliest days of Classic Journeys, we’ve cajoled local cooks and chefs around the world to offer our guests casual cooking instructions. In spots as far-flung as Chiang Mai, Havana and Udaipur, you have a chance to lace up your apron and help make the magic happen. In many places, you start with a shopping trip to a market to collect provisions. In San Antonio, Belize, the skill is as fundamental as how to grind corn and grill the perfect tortilla. At the far culinary extreme, our friend Chef Alain – a Provençal chef with two Michelin stars – waves you into his kitchen to cook with him elbow-to-elbow. A glass of wine or two later, you sit down to the feast of all feasts. Have you run across the term “zero kilometer” food? It refers to the distance that an ingredient travels from its point of origin to your palate. As you traverse a few kilometers of your own on Classic Journeys walks, you inevitably get a feel for the true roots of local cuisine. Those purple and red fields along your trail in Peru? Those are the quinoa plants that yielded last night’s side dish. On Croatia’s Istrian Peninsula, your stroll with a truffle hunter unearths the fragrant brown knob of decadence that gets shaved on tomorrow morning’s omelet. And if we tried to list all of the cheesemakers, olive-oil artisans, coffee and cacao growers, not to mention the chocolatiers, lobster fishermen, and gelato wizards who’ve become part of our family, you’ll work up too much of an appetite to continue. A few years ago, one guest chucked his law career after a week with us on the Amalfi Coast to train as a professional chef. It’s a reasonably safe bet that your own career will survive your trip. But it’s always our goal to treat you to gustatory experiences that give you food for thought and satiate you with incredible memories. Have you heard about tectonic snorkeling in Iceland? There’s this patch of 36º water in a remote place called Silfra in Þingvellir National Park. It looks like a pond, but the banks on either side are actually the slowly spreading edges of the North American and Eurasian tectonic plates.
