#1 Fresh Cucumber Watermelon Summer Salad!

Ingredients: 

1 large English cucumber, spiralized or sliced into thin even slices

1/4 of a medium watermelon, cut into cubes or balls using a melon baller

a handful of fresh mint leaves, thinly sliced

2 Tbsp fresh lemon juice


1 Tbsp lemon zest

1 Tbsp avocado oil or extra virgin olive oil

1/3 cup feta cheese, crumbled

sea salt and freshly cracked pepper

Ingredients: 

2 English cucumbers, thin sliced

10 radishes, sliced thin

1 small red onion, thin sliced

1/4 cup fresh cilantro or parsley, chopped

2 orange bell peppers, thinly sliced

3 Tbsp. extra-virgin olive oil

2 Tbsp. fresh lemon juice

2 tsp. apple cider vinegar

2 fresh garlic cloves, pressed

Sea salt and fresh black pepper, to taste

2 green onions, sliced finely

fresh cilantro and/or mint, chopped

Ingredients: 

1 lb. cooked chicken breast, shredded

OR 1 lb. grilled chicken breast, sliced

3-4 hard-boiled eggs, quartered

1 avocado, sliced

4 medium tomatoes, sliced

2 hearts of romaine, rinsed and separated

2 Tbsp extra virgin olive oil


1 Tbsp organic cider vinegar

sea salt & freshly cracked pepper, to your taste

Fresh lemon wedges for serving.

2 medium avocados, diced

2 English cucumbers, sliced evenly

6 tomatoes on vine, sliced

1 medium red onion, sliced


1 cup mozzarella pearls

2 Tbsp extra virgin olive oil, or avocado oil

3-4 Tbsp fresh lemon juice

1 Tbsp dry Italian seasoning

sea salt and pepper, to your taste

Fresh dill weed, or parsley for garnish

2 Tbsp low-sugar balsamic vinegar

1 medium ripe avocado, sliced

1/2 cup cherry tomatoes, cut into halves

1 small fresh beet, shredded

1/2 small red onion, finely sliced

3 Tbsp watercress

2 large free range eggs

3 cups organic baby lettuce greens

Homemade Hummus ingredients: 

1 15-ounces of chickpeas, rinsed and drained

1/2 cup of tahini

1/4 cup of fresh lemon juice

3 fresh cloves of garlic

2 Tbsp extra virgin olive oil

2-3 Tbsp water

sea salt and freshly ground black pepper
