Everything about oysters! The salty taste makes the oyster a unique natural product. Here are some facts about this delicacy.
Cutting open oysters
More and more shops sell oyster knives. Of course, you can also buy them at Smakelijk & Meer. To open an oyster, you need an oyster knife. Never use an ordinary kitchen knife. Hold the oyster in your hand between a folded tea towel. Keep the rounded side down. Move the knife from left to right and push it between the upper and lower shell halves. Insert the oyster knife one centimetre into the shell. Rotate the knife a quarter turn. The shell halves are now separate from each other. Run the oyster knife along the top edge of the shell and cut the oyster loose from the top shell. Remove any grit and pour off any excess oyster liquid. Cut the oyster loose from the bottom shell as well and turn over the oyster. Bon appetit!

Oysters are rich in zinc and magnesium. That is why they are good for metabolism, the immune system and fit perfectly in a low-cholesterol and low-calorie diet.

Martin Zeeman - alias The Texel Oysterman - always says: “Chew three times before you swallow the oyster. Then you taste the meaty flavour and there is nothing slippery about it.” Are you less of a raw food fan? Oysters also go well in soup, au gratin, fried or baked.
The Wadden Sea Oyster
The Wadden Sea Oyster comes from Japan! The originally Japanese Creuse thrives well along the sheltered Wadden Sea coast. The abundant plankton from the Wadden Sea gives the Wadden Sea oyster a soft, fresh and salty-sweet flavour. A gem among the oyster varieties!
A pearl?
A pearl is a defence reaction by the pearl oyster to dirt that has gotten into its shell. The outermost layer of the shellfish is called the mantle. When, for example, a grain of sand enters the mantle, it causes irritation. The shellfish reacts to this by covering the unwanted particle with mother of pearl. This creates a round pearl.

Salty, fresh and spicy: with these oyster recipes everything comes together
Oysters & dill The fresh sourness of the raspberry vinegar is delicious in combination with the salty oyster. The dill adds a southern touch to this special oyster.
Preparation
Chop the dill and mix it with the raspberry vinegar, extra virgin olive oil and grapeseed oil. Season with freshly ground black pepper and sea salt. Then refrigerate the vinaigrette for half a day. Open the oysters and remove the oyster from the shell. Wash the shells in hot water and leave to dry. Place the empty oyster shells on a nice plate and place an oyster in each shell. Pour a little of the vinaigrette over it. To finish off, sprinkle a few small tufts of fresh dill over the top.

As an entrepreneur at heart he started a bistro in Amersfoort, since 2015 he is the owner of restaurant Rauw. Recognition: On the door of Rauw hangs a selection of recognitions. The most important is the mention in the Michelin guide which he has been receiving since 2017. 42

There is a cacophony of sound in the evening in restaurant Rauw in Amersfoort. Owner Maarten van der Heide loves it. “As soon as the first guests arrive, for me the show begins. Eating with us is an experience. It’s buzzing, it's bubbling and everything is just right.”

Quality restaurant, just outside the city ring
In the centre of Amersfoort, Maarten had a beautiful French bistro: Jean et alleman. But it was small, the concept was beginning to fail and parking was always a hassle for guests. In Copenhagen, Zurich and Amsterdam, an increasing number of quality restaurants were opening just outside the city. Maarten liked that: “Outside the city ring I could do things my own way: offer good food in a place that is easy to drive to, in a space where I have control over the atmosphere.” It turned out to be a golden recipe, also for Amersfoort. Restaurant Rauw can count on a large fan base since its inception in June 2015. And still more and more people manage to find Maarten and his team.
At Maarten's house
Young and old, rich and poor, exuberant and introverted, from the city or from the village: the audience of Rauw is diverse. The common denominator? The guests come for “simple” good food and an evening’s enjoyment. Maarten: “You should not come to me for a quick bite. I like my guests to make reservations. This restaurant feels a bit like my home. And if I know that you are coming, then I make sure that you have a good night out. From the beginning to the end. First there is a warm welcome, then you get to choose a place where you like to sit, you get a glass of nice, chilled water and - much later when the party is over, this guy with his green glasses comes to say hello. I partly create the atmosphere myself. If I find the evening quiet, I make sure there is a bit of commotion: a chat here, a joke there. Just to bring a little life into the place.”

Pure food
Rauw works with daily fresh products and cooks with the seasons. On the menu you will find classics such as Russian salad, braised chuck or Spakenburg salmon. Maarten: “We go for pure food. Without frills. We pick our herbs from the garden, we make the mayonnaise ourselves, Irish Coffee is served with real, lusciously whipped cream. I like to work with a young team. Because I can still teach them things. They have to be perfectionists to fit in here; for instance, they have to enjoy making the perfect poached egg every time. I believe in simple dishes, the trick is to make them outstanding.” A wonderful product on the menu is dual-purpose meat. This meat comes from cows that were first used as dairy cows. When they reach an older age, they are slowly fattened by a farmer. Then you get beautiful veined and responsible meat. At Rauw, the meat is left for another 28 days to mature. This removes the water from the meat and makes it much more concentrated. I call this whole process “refining” the meat. I think: when you eat meat, make sure it’s good. My people know the whole process of the cow - from the seed to the chop - so that they then prepare the meat with the attention it deserves.”
Graffiti and flowers
For Maarten and his team, it’s all about quality, authenticity and attention. And this is also reflected in Rauw’s interior. The interior cannot be described in one style. It is a mix of rugged, almost industrial, classic and creative. The blue vases from Bunzlau Castle stand out beautifully against the graffiti walls. And the crockery perfectly matches the refined glasses. “I pay attention to detail. Take the fish plates from Bunzlau Castle, for example. I always make sure that they swim in the same direction.”

Russian Salad Russian salad is a classic in French cuisine. This salad is of course best eaten at Rauw restaurant, but you can also prepare it at home and serve it according to Rauw’s recipe. Russian salad can be served as a starter on a plate or as a tasty side order with dinner, BBQ or a buffet.
Preparation
Cut the potato and carrot into cubes and blanch them. Fry the onions slowly for about 20 minutes in sunflower oil and leave to cool. Cut the cow’s tongue into small cubes and mix the four ingredients together. Add mayonnaise until you have enough mass to keep the

Steak sandwich A steak sandwich with delicious gravy, you simply have to try it when you are at Restaurant Rauw or get started at home with this delicious recipe.
Preparation Jus de veau à la Rauw
Put veal legs, drumsticks and beef shanks in a large pan with 2.5 litres of cold water and leave to stand for about 36 hours. Chef’s tip: Pay close attention, as egg whites in the form of foam will rise to the top while heating. Remove this foam regularly with a skimmer. After 2 hours of near-boiling, the following ingredients can be added: leek, white onion, carrot, peppercorns and bay leaf. Chef’s tip: do not let it boil! This would make the gravy

Getting started with baking and serving: Sprinkle the tenderloin that is at room temperature with salt and pepper. Use a very hot frying pan in which you heat a knob of butter until the foam disappears. Sear the tenderloin in it for about two minutes. Wrap the meat in aluminium foil and let rest for a few minutes. Then cut into thin slices. How to serve: Before serving, spread a few nice slices of bread with butter, top with the sliced tenderloin and pour a generous splash of gravy over it.

Tartlet with raspberry filling Preparation tartlet
Mix flour, almond flour, powdered sugar, salt and butter in a bowl to a crumbly dough. Add the egg and knead into a nice smooth dough. Wrap the dough in cling film and leave it in the fridge for at least half an hour. Dust your countertop with flour and roll out the dough to a thickness of about 4 mm. Cut out a circle in the dough with a cutter that is slightly larger than your baking ring. Line your baking rings with it. Place the baking rings with the dough on a baking sheet lined with baking paper. Prick holes in the bottom. Bake the tartlets in a preheated oven, 12 to 15 minutes at 170 degrees.

80 gr. powdered sugar

120 gr. unsalted butter

Bring the raspberries together with the water and sugar to the boil and let simmer for a few minutes. Mix the cornstarch with a small splash of cold water and stir into the compote. Remove the pan from the heat and let cool down. Season to taste with the lemon juice. Preparation Raspberry Mousse: Heat the raspberries together with the sugar and the water

Wrapping with tea towels Giving presents is fun. Presents that are nicely wrapped are even more fun to give! With the wrapping tips below, you can give it a Japanese touch. Origami, the folding of paper into a work of art, is well known to everyone. Furoshiki is an age-old wrapping technique from Japan, where a piece of fabric is artfully folded around a present. I got to work with the beautiful Bunzlau Castle tea towels. Super fun, because besides looking beautiful, the tea towel can of course be use afterwards. A double gift and environmentally friendly as well! It is important to wash the tea towels before use so that they are more supple for folding and knotting. I wrapped a box of chocolates and a bottle of wine. Of course you can also wrap other shapes as well. Nice to let your creativity run free...

1: Spread the tea towel out on the table, with tips up, down and to the side. 2: Place
the box in the centre of the towel. 3: Fold the bottom tip up, over the bottle. 4: Fold the upper tip over the bottle top. 5: Fold the side tip upwards, tightly along the bottle. Also do this on the other side. 6: Fold up again along both sides. 7: Fold both side tips over the bottle. 8: Gather everything together at the top, at the neck of the bottle and tie a

Make your own hand soap Washing hands, washing hands, washing hands... A sustainable and fun alternative is to make your own hand soap. This is easier than you think and you don't need much more than what you already have in your kitchen cupboards to make it..... In such a beautiful soap dispenser, hand soap is not only a necessary evil, but also a beautiful accessory for the kitchen, bathroom or toilet.
This is how you proceed: Grate about 50 grams of Marseille soap. Bring a litre of water to the boil in a pan. Add the

even emulsion. You can add some essential oil for a nice fragrance. I added a teaspoon of Wild Orange oil. Using a funnel, you can easily pour the hand soap into the soap dispenser. This recipe is enough for a number of refills. You can store the remainder in a clean empty bottle.
