Often high school athletes and their parents become frustrated worrying about things they have little or no control over. High school athletes strive for a spot on the swim team, to maintain a .400 batting average, to make the All County team, land a college scholarship or move on to the Big Leagues. Those accomplishments, though, are a product of the process and not a given reward, for athletics are all about the journey and not about the destination. A young man or woman should participate in athletics to learn the lessons of life — individual striving for excellence, discipline, developing a strong work ethic, dealing with failure and the necessity for resilience. The reason an athlete works so hard today is to insure having the maximum amount of success and enjoyment possible in life tomorrow. In athletics, the next game is the only thing that is a given and the idea that there is a big payoff down the road is beyond the young athlete’s control.

A four-year letter man in roller hockey, Evans led the team to a division championship. Evans also was a pole-vaulter on the Columbus track team and this year won the regional championship. Evans is active in campus ministry, a Mas Scholars and a Silver Knight nominee. With a 5.2 grade point average and ranked third in his class, Evans plans to attend the University of Florida. Columbus gave the Outstanding Athlete Award to standout triplesport athlete Gary Bush, who excelled in football, basketball and track. As a wide receiver, he

Positive PEOPLE in Pinecrest

CASEY ANDERSON Casey Anderson, a junior at Palmetto High School, has accumulated about 900 community service hours, earning them in a variety of ways and in more than one country. Her community service involves working with both adults and kids. Anderson volunteered at the first Palmetto Bay camp during the summer following her year in the ninth grade. “I was with the littlest kids,” she says. “I love them. We played games inside, then we went outside and did other activities. They watched movie times and had snack time.” Anderson also worked at a summer camp at Kendall United Methodist Church called the Three Cs Camp, where her sister attended. This past summer, she and a friend volunteered at the Lighthouse Art Camp in Tequesta near West Palm Beach. “I worked with little kids there,” she says. “We were in charge of the pottery room. We helped them mould plates, vases or statues.” Upon arrival in high school, Anderson became a member of Interact. It was important to her to be a part of the club because her mother had been involved in Interact in Colombia and her grandfather was a member of Rotary Club, the Interact sponsor. “They always taught me their ideals,” Anderson says. When she was going into the 10th grade, she moved to England with her mother and her sister. In England, she

continued with her public service activities. She worked with the Volunteer Service Unit and participated in fundraisers that required staying awake for 24 hours. The money went toward creating wells for water in India. She also worked at a charity shop called Barnadro’s, which raised money for the best known children’s charity in England. Anderson also started an Interact Club in England. The club sponsored a duck race on the River Stour, raising 2,000 pounds that was donated to an orphanage in Kenya. When she moved back to Miami, she rejoined Interact, becoming treasurer this school year. Since her return she has been working at Teen Court, a program unique to Miami-Dade County. “If it’s a minor thing, they can choose to go to a court of their peers,” she says. “They can work it off, they can do community service and they have to work at teen court as jury members. They have to apologize (for their offense) and go to classes.” Anderson says instead of just punishing a teen, they go to the root of the problem. “I work as the bailiff/court reporter,” she says. Along with the Teen Court and volunteering with the Junior Women’s Cancer Association shop, Anderson also volunteers at the Children’s Bereavement Center. “I can’t stress enough how great it is for kids,” she says. “It gives them a safe environment to talk or not to talk. Those kids are so little, but they are so brave.” Anderson’s favorite volunteer job was working for the Obama Campaign last year. She’s especially thrilled that she was able to meet President Obama while he was still a candidate. “I really like politics,” she says. “I worked on the presidential debate at school. People were quoting me.” Because of her love of politics, she hopes to go to Georgetown University in Washington DC and major in international affairs. Her backup schools include the University of Florida and New College. Anderson is president of the Social Science Competitors Club and takes part in Model UN. She is a member of Leo Club, the Society Science Honor Society, the National Forensic League, Debate, the Spanish National Honor Society and the National Honor Society.

DENIZEN KOCAK This summer, Palmetto High School junior Denizen Kocak plans to volunteer his services at Doctor’s Hospital in Coral Gables. “Hopefully I’ll be doing some patient interaction and I’ll be running errands for nurses,” he says. “I’m trying to get some experience to see if I want to go into an area I like.” Currently, he’s considering a future in either medicine, math or applied science. Since he’s not certain about the direction he wants to take, he’s trying different things such as volunteering with a University of Miami chemistry professor calculating the relationships between possible variables between molecules. Kocak is a whiz at math. It comes naturally as his father is a math professor at the University of Miami. This year Kocak took Advanced Placement classes in Calculus B-C and Statistics. Next year he’ll take multivariable calculus. His other AP courses this year included U.S. History, English Language and Composition and Chemistry. Over his four years at Palmetto, he will have taken 11 AP courses. Because of his strong interest in math,

Kocak has participated in numerous math competitions. He’s also competed in the Science Olympiad, the Chemistry Olympiad and the Chemathon at Barry University. Kocak was captain of Palmetto’s second team and he hopes to captain the A team next year. He was the top scorer for Palmetto in the Chemistry Olympiad, which is a test taken at school. Along with math, Kocak enjoys sports. This year he played on the Palmetto badminton and golf teams. He was the number two singles player on the badminton team and he was seeded eighth on the golf team, which fields 12 players. This was his first year on the badminton team. “A friend convinced me to join the team,” he says. “It was fun and I enjoyed the practices. We have probably six or seven matches, maybe eight with the GMAC’s and districts.” The Palmetto golf team had another good year. Kocak says the team was third in the state this year and finished second last year. He was not able to play at states this year, but he hopes to be seeded high enough next year to be part of the group that goes to the state tournament. “We have two seniors leaving this year that started,” he says. “There is a lot of competition from some of the younger players coming up.” For community service, Kocak worked part-time at a golf camp and taught children how to play. In teaching the children, he learned something about himself. “I learned that I have a little less patience than I thought I did,” he says with a laugh. “I also learned how great kids can be.” Kocak is a member of Mu Alpha Theta, the Social Science Honor Society, the Science National Honor Society and the National Honor Society. As with many high school students considering attending college, Kocak wants to go out of state for his higher education, possibly to a college in California.

Positive PEOPLE in Pinecrest

HYUN-WOO LIM Palmetto High School junior HyunWoo Lim has roughly 500 hours of community service. Her pet project is the Special Olympics and she is involved in the Special Olympics’ campaign to

Spread the Word to End the Word. The campaign seeks to stop use of the word “retarded” in reference to those who are mentally handicapped or suffer from Down’s Syndrome. As well as participating in the Spread the Word campaign, Lim also volunteers each summer at Camp Shriver, the Special Olympics summer camp. “It’s a sports camp and they play all sorts of sports,” Lim says. “We train them so they are able to compete in competitions.” Lim first volunteered in the summer between her eighth and ninth grades and loved it. “At first, I was searching for a program to start my community service,” she says. “Then I grew passionate about it.” The camp lasts for a month and Lim works 40 hours a week during that period. She says there are about 40 athletes and 20 to 30 volunteers. “You see some familiar faces and some new ones,” she says. “You make a lot of friends.” Even though it’s fun for her, it’s also a lot of work. During the summer I get really into it and I get really thin. We have a lot of sports, but for some reason they love swimming.”

At school, Lim is a member of Key Club. She was vice president this year, so she worked on the club’s numerous community service projects. One of the club’s best known events is the annual peanutbutter-and-jelly sandwich event, where club members donate peanut butter, jelly and bread, and then they all get together to make sandwiches. Those sandwiches are then donated to the homeless who go to Camillus House to eat. Lim is also involved with the Student Council. “I’ve been the secretary of the Class of 2010 for two years,” she says. “I’m vice president of student council for next year. We work on a lot of projects and we guide all the clubs.” Lim is also a member of the National Honor Society, the English Honor Society, Social Science Honor Society, the Spanish Honor Society and Mu Alpha Theta. She also competes in Model UN and says she enjoys the competition, primarily because she wants to work for the United Nations when she finishes college. The Model UN team goes to three competitions per year. At the last competition she attended, she won an honorable mention.

One Saturdays, the Korean born Lim goes to a Chinese school. It started a year ago and says learning the language is challenging. “When I grow up, I want to work in political science or international relations,” she says. Emory is Lim’s number one choice for college. She has visited the campus several times and her sister is already a student there. “I’m actually going to their summer program,” she says. “It should be fun. I’m taking a class in psychology. We’re observing people through fiction and seeing who they are.” The class will be rigorous as the students are required to read 200 pages a night. Other schools on her list if she is not accepted by early decision at Emory include Vanderbilt, George Washington University and Georgetown. Lim has won numerous awards at Palmetto, including the Art Award in her freshman year, the Outstanding Service Award as a sophomore and the Dartmouth Book Award.

Hard work in a home training program is empowering. Should you seek a second opinion on your annuity?

While reviewing a new client’s portfolio recently, I ran across a variable annuity that the client had owned for many years. At one point, the client had seen the portfolio appreciate greatly due to the fact that it was invested entirely in equities. Unfortunately, the client recently saw all of the gains erased, along with some of the initial investment (cost basis), because he was invested 100% in equities. This left the client a little distressed. As we analyzed the portfolio in the variable annuity, my client decided that he was no longer comfortable having any equity exposure in his portfolio. At this point, the conversation shifted to the types of investments he would be more comfortable owning. The idea of fixed annuities arose during the conversation. My client had owned fixed annuities in the past and was still interested in having a taxdeferred investment since he is in a high income tax bracket. Below you will find all of the different options that we took into consideration before we made any decisions. An annuity is a contract with an insurance company. Annuities are

long term investments that grow tax deferred. Variable annuities involve fees and expenses not typically associated with other investments. This tax deferral means that any interest, dividends, or capital gains that are earned inside the annuity are not taxable until the client actually takes a distribution from the annuity. The tax-deferred growth is an important benefit of an annuity for an investor in a high tax bracket. The annuity owner can defer earnings for years, therefore reducing his tax liability. Investing in an annuity within a tax-deferred account such as an Individual Retirement Account (IRA) will provide no additional tax savings. After a few years of compounded growth, an annuity can potentially accumulate a significant amount of tax-deferred growth inside the contract. This is where an IRS tax provision called a 1035 exchange would be beneficial if the contract owner was ever contemplating a replacement of their annuity. The IRS 1035 exchange allows for unrealized gains inside the tax deferred annuity to be exchanged into another annuity without realizing an immediate tax consequence. There are times when replacing an existing annuity to another annuity company could be beneficial. Advantages of an exchange could be as simple as a higher interest rate on a fixed annuity or obtaining additional rider benefits inside a variable annuity. Prior to surrendering an annuity, investors should consider the effect of any surrender charges which may apply in the early years of the contract and any additional fees and expenses associated with the new policy.

Significant enhancements have been made to variable annuity contracts in recent years through contract riders. The benefits range from Principal Protection riders to Lifetime Income riders. All of these riders differ depending upon the issuing insurance company. Unfortunately, my client’s variable annuity contract did not have any of these riders. If the contract did contain one of these riders we would have had the simple solution of keeping the policy as is and simply implementing the rider. Older variable annuity contracts might not have any of these contract rider benefits attached to the existing policy. If a variable annuity contract holder is interested in obtaining these types of riders, they might have to exchange their policy to a different insurance company that offers the desired contract rider benefits. Optional riders involve additional fees. These above mentioned examples are where an IRS 1035 exchange might be needed for the client. For example, if a client originally invested $100,000 and the present market value of his annuity is $200,000, the client would avoid paying income tax on the $100,000 of growth by using the IRS 1035 exchange provision. By using this tax provision correctly, the taxpayer defers paying the income tax on this exchange until a later date. Now what happens if the taxpayer has a loss on a variable annuity? Can they deduct the losses? The answer is yes, just as long as they do not use the IRS 1035 exchange process. The loss has to be realized. This means that the client will have to close (surrender) the policy in full.

This is where having a good accountant is very helpful. Since the IRS does not offer any specific guidance on the deductibility of variable annuity losses we must refer to different IRS Revenue Rulings and IRS Publications for guidance. In the end, my client did choose to go into a fixed annuity because he did not want to worry about the market volatility of his investment. He did move his variable annuity to the fixed annuity but only after he completely surrendered his variable annuity in order to realize the tax losses. He did not use the IRS 1035 exchange provision since this would have disqualified him from realizing the tax losses. During this process we were in constant contact with the client’s accountant in order to make sure that everyone was on the same page. If you are presented with the idea of making any type of changes to existing annuities, it is strongly suggested that you consult your accountant first to make sure that you fully understand your tax implications. Burger aficionados who haven’t found their way to Betty’s Best Burgers don’t know what they are missing. The restaurant is familiar to anyone who has lived in South Miami Dade for any length of time. It was known as Fuddruckers for more than 20 years, but when the time came for the franchise agreement to be renewed, owner Betty Amos decided to go it alone. For a brief time the restaurant was named Amos Sports Grille, but about a year ago she changed to the name to Betty’s Best Burgers. Anyone who travels South Dixie Highway south of Kendall Drive has probably seen the Betty’s Best Burgers sign that stands tall above the busway at the corner of Southwest 104th Street and South Dixie Highway, in front of the Big Kmart. The food remains good and plentiful and the menu is familiar. “We have tweaked it some,” Amos says. “We deleted some things, added some things, but it’s not much different. People tell us it’s better than it was.” The food is fresh, delicious and cooked to order. There are an impressive number of condiments available to put on the burgers or chicken sandwiches, and they are also fresh. What has remained constant is the concept of offering good food at a reasonable price, which is one of the reasons why the restaurant is a favorite hangout for Little League teams and their parents. “It’s still a place to bring your sports teams after the games,” Amos says. The restaurant can hold 270, but even if it’s full, the interior is roomy, so patrons don’t feel like they are sitting on top of each other. There are video games for the kids to play and plenty of

big screen television sets scattered around the room to keep up with sports. Amos is always looking for groups to come in on a regular basis. “Thursday night is motorcycle night,” Amos says. “We have hundreds of motorcycles in the back parking lot. And the first Saturday night of each month, we have a classic car show; and on the third Saturday night, we have a car show, but it’s with newer cars.” Amos says bike night draws plenty of motorcycle riders from as far as Broward County, but it’s a family-friendly group that loves to sit outdoors and enjoy a cookout. “Families bring their kids even on bike night,” she says. “If they don’t ride the bikes, maybe the father brings the bike.” While the majority of patron’s at Betty’s Best Burgers are from the neighborhood, there are some nights when patrons travel a long distance to get to the restaurant. “They come from everywhere on bike night and car night,” Amos says. “We get a lot from Broward on bike night. We never got them from that far when we were Fuddruckers because we had Fuddruckers in Broward.” At one time, Amos owned 14 Fuddruckers, including a big one in Coconut Gove, but now she owns only Betty’s Best Burgers. “You tend to get more involved when you just have one,” she says. “It’s fun and so many of my friends and neighbors frequent the restaurant.” Amos is proud of her restaurant and her employees. BY KARA BISCEGLIA Most college freshman will tell you that their first year is an intimidating one. Many are worried about living on their own, making new friends and, most of all, fitting in to such a new environment. But for two young students, fitting in was no problem at the University of Miami. Halfway through their freshman year, Lauren Lococo and Alex Goldklang made a name for themselves as the Glitter Girls. These two girls made fitting in look like no big deal. Their love and enthusiastic spirit for UM and its football team inspired them to cover their bodies head to toe in orange and green glitter. “The process can get very messy,” said Lococo. “Whoever cleans our bathrooms must hate us.” Before every home game the girls prep their skin with Vaseline and apply the glitter to their face and all other exposed parts of their body. But the glittering and the sports are not the only aspects they love about being students at UM; there are endless benefits. There is a variety of diverse culture, classes and facilities. UM is a place where students can explore all sorts of opportunities, like receiving a scholastic education and constructing long lasting friendships. Lococo said she came onto this campus knowing very few people. But, after spending time at the university, she can now say she has made many friends she believes she will keep for a lifetime. UM offers an assortment of activities and facilities for the student body to attend. The students told me about the dining hall, the on campus gym, the library and an area known as the “green” which shows films for students to watch. These facilities are accessible to students and allow them to engage in university life. And, on top of all that, UM offers a shuttle system to make areas of the campus more accessible. They even have a shuttle that takes students to the local Sunset shopping mall. Lococo and Goldklang were drawn to the mid-size campus because it was surrounded by such a large and diverse city. The sports here, though, really took their hearts and that is what inspired them to go all out for their teams. They have not only been recog-

nized by administrators, but players as well. They were even recognized by ESPN Sports Center. “We literally put a face on our team” Lococo said. Attending UM not only allows the girls to demonstrate their love for their school, but it also allows them to pursue their dreams. Lococo and Goldklang are just as serious about their academics and future as they are about glittering for the football games. Lococo is working in pre-law and is aspiring to be a sports agent, while Goldklang is studying to become an athletic trainer and hopes to one day work with the Big League players. Freshman year may not have always been a walk in the park for them, but being at a school like UM has taught them how to get along with others, embrace their surroundings and maintain their grades. Most of all, these students have brought a new meaning to school spirit. Their drive and desire to be there for their school’s team has impressed fellow students, administrators, athletes and even ESPN. They say that a lot comes with being the UM Glitter Girls, and they hope their legacy will live on long after they graduate.

Palmer Trinity drama teacher makes final ‘curtain call’ BY SUZANNE GOTTLIEB CALLEJA Long time Palmer Trinity School drama teacher Richard Rosen has retired after 26 years at the school. Rosen began directing student plays at Palmer Trinity School in 1983 following his appointment as the school’s drama teacher. He has left a lasting impact on the generations of students he directed. Rosen grew up in Rhode Island and from 1966-69 was in the U.S. Air Force, serving two tours of duty in Vietnam. Rosen attended FIU and received a BS in English. From 1977-1983 he taught theatre and English at Gulliver Prep, then moved on to Palmer School. Rosen says he is involved in theatre for the joy and love of the art form, rather than for his own recognition, a philosophy he has tried to instill in his students. “Through his program, Richard has been providing a creative and wholesome outlet for our students,” said veteran Palmer Trinity faculty member Elena de Villiers. “He has taught his ‘thespians’ about both theater and speech, but mostly he has taught them about responsibility and commitment.” Palmer Trinity faculty, administrators and students school honored Rosen last month as part of Reunion Weekend. “Richard has been an important member of this community for over two decades and will be greatly missed,”

Vintage wine tasting brings new flavors and friends BY LEE STEPHENS

Vintage Liquors & Wine Bar, 11753 S. Dixie Hwy., conducted the second in a series of unique wine tasting events called Vintage Taste of Excellence. Organized in a way to give wine enthusiasts the opportunity to experience a range of exceptional wines perfectly paired with complementary foods, the Vintage Taste of Excellence was hosted by wine aficionado Harry Radcliffe and featured fine wines from France and the United States, along with savory foods from Giuseppe Zuozo. During the three-hour event, tasters were taken on a journey beginning with a 1996 La Grande Dame Champaign complimented by an almond crisp, moving to a Kluge sparkling rose from Virginia, then a hard-to-find Kongsgaard California chardonnay paired with an eggplant rollatini. Radcliffe explained each wine’s character and tasters shared their comments with one another. Red wines featured later in the event included a California meritage by cult wine maker Orin Swift called Papillon,

which was paired with peppery Italian meatballs and sausage. Kobalt, a Napa Cabernet, was paired with a buffalo steak in port wine sauce; and finally a rare 2005 magnum Schrader MMV cabernet sauvignon that aficionados call “Old Sparky” because of the fiery dragon on the label and the $500 per bottle price tag. Check out JCC performing arts camp Linda K. Landy ALPER JCC NEWS I have to admit, I am an American Idol groupie. My ring tone is David Cook singing Time of My Life and I voted for Kris Allen 20 times. But, so far I have avoided being drawn into the other performing arts reality shows like So You Think You Can Dance, Dancing With the Stars, America’s Got Talent, Dance Wars and Nashville Star. Okay, I did TIVO Dancing With the Stars just so I could see Jason Taylor dance and got hooked into their Ballroom Kids competition last season, but, that’s it. The most amazing thing about these reality shows is the kids. Idol top finalists David Archuleta and Allison Iraheta were just 16 years old. One of the Ballroom Kids competitors was eight-years-old; the winners were 13. I wish I could dance like that. What talent. What confidence. What composure. How do they do it? I suspect one factor may be the availability to incredible performing arts programs for kids, like the Dave and Mary Alper JCC’s

Habimah camp for children entering third through eighth grades. Campers expand their horizons and artistic potential in dance, drama, art and music. Under the guidance of a highly-trained and talented staff, campers are immersed in a high level, four-week production schedule filled with rehearsals, set designing, and a final musical performance at the end of each session. We are talking full productions with art, musical theater, dance, drama and detailed sets. Carmen Arvesu has headed Habimah for 17 years. During the school year, she teaches dance and drama at the Devonaire K-8 Center. Her mission is to help kids develop a love for better understanding of musical theater, drama, dance and art. Campers are everything from complete novices to kids who have been performing and dancing for several years. “We encourage everyone and make each camper feel a part of the production,” says Arvesu. “We have a lot of staff to work independently and help those who need more instruction. The most challenging thing is to get the kids to look professional in a very short amount of time. But we share a passion and it comes through.” Campers have at least one class in all areas and extended instruction in their specialty. They get a lot of attention from the young, energetic staff, mostly college students

majoring in the arts and dancers who participate in the dance competition circuit. The drama teacher is actor Henry Albert and sets are designed by Miami-Dade County art teacher Robin Clavan. Counselors help campers decorate the sets and embellish costumes with glitter and rhinestones. In addition to the arts, campers will participate in fitness activities, an instructional water games program and expanded hobby hour choices, including jewelry making, newspaper, dance, painting, ceramics, digital photography, amazing field trips, cooking school, hip-hop, computers and more.

Parents can enroll boys and girls for four or eight week intervals. Session one is June 15 through July 10. Session 2 is July 13 through Aug. 7. There is no camp Friday, July 3. The day is 9 a.m. to 4 p.m., but early and late care is available for all campers from 7:30 to 9 a.m. and 4 to 6 p.m. at an additional fee. There are late-night and sleep over activities scheduled throughout the summer. COOKING WITH JAN At an earlier time, the perception of a typical chef was a rather large individual with a beet-red face covered with stress who yelled “BEARnaise” and “HOLLANdaise” at his staff, and had a personal bad habit of mixing wine leftovers with cognac used for flambéing. Then came the sizzling ’90s, where cooks had to be bald and muscular, poets in their own mind, who challenged the world’s possible and impossible cuisines with dishes such as truffle and chilli marinated shrimp from Thailand in soy-baked coconut or cabbage wontons with sautéed onions. Their creations were endless with never a dull moment in the kitchen and no time to reinvent the wheel. A professional chef is constantly in competition between heaven and hell,

often creating heaven, but usually going thru hell to get there. The battle has swallowed many culinarians over time as demands were raised to levels that nobody could possibly continue to keep up with. Luckily my age and years in the kitchen (27, to be exact) have given me insight into these phenomena, but in the end have left me with expertise and knowledge about what works on a plate, and what does not. My motto has always been: “Learn to perfect the trade before challenging it.” With that said, I urge you to come together around the stove and cook favorite family recipes, and try to find comfort in this interesting period of 2008, a time when uncertainty has had an influence on just about everything, even what we eat. I’d like to suggest that you spend an evening in your favorite restaurant and share a few moments with the staff and company. Now for a few classic recipes not to be forgotten or challenged. PIGS IN A BLANKET (I just love this forgotten delight) Very simple, wrap a favorite “wiener” in

puff pastry and bake 10 min, in a hot 400 degree oven, sauce it with mustard and ketchup. What else needs to be said? MEATLOAF 1 lb ground beef 1 lb ground pork or veal 4 eggs 1 cup bread crumbs 2 cups milk 2 strips of bacon cut into pieces 1/4 cup chopped onions 1/2 cup finely diced carrots 1/2 cup finely diced celery 1/4 cup BBQ sauce Splash of Worcestershire sauce Salt and pepper Mix bacon, carrots, onions and celery; sauté gently for 10 minutes and set aside. Mix meat with salt and pepper and stir for about a minute, add vegetables and mix. Add remaining ingredients and mix. In a loaf pan or baking tray, mold the meat loaf; bake about 45 min at 300 degrees. Serve with mashed potatoes, buttered Brussel sprouts, smothered onions and pan gravy.

CHOCOLATE SOUFFLÉ Serves 8 8 6 oz ramekins coated with butter and dusted with sugar 1 cup flour 1 stick of butter 1 cup sugar 1 cup of bitter-sweet chocolate 2 cups of milk 8 eggs separate whites from yolk Bring milk and sugar to a boil; melt butter with flour and toast into a roux. Add milk mixture and stir at medium heat for 2 min. Add chocolate and let melt while stirring. Place “batter” in mixer and mix for 5 minutes, add 1 egg yolk at a time (8 all in all). Whisk egg whites until stiff peaks, gently fold into batter until totally mixed. Divide into ramekins, bake for 15 minutes at 350 degrees; serve immediately with chocolate sauce, ice cream or fudge alongside. Much comfort to you and yours.

BY LEE STEPHENS A total of 103 Palmer Trinity students gained national recognition for excellent performance on the 2009 National Spanish Examinations. Palmer Trinity students five gold medals, 17 silver medals and 15 bronze medals, along with 37 honorable mentions. “Attaining a medal or honorable mention for any student on the National Spanish Examinations is very prestigious,” said Kevin CessnaBuscemi, national director of the exams, “because the exams are the largest of their kind in the United States, with well over 115,000 students participating in 2009.” Palmer Trinity ranked high in the overall testing, but also gained addi-

tional status with the achievements of six students in Spanish 2, 4 and 6 who qualified as top students in Florida in their category and level. For the past year, Café Med has been the place for area families to go for dinner. Located at The Falls, near Bloomingdales, the restaurant serves a tasty cuisine that includes delicious Italian and Mediterranean dishes, homemade pizzas, pastas and seafood. Formerly known as Bice Grand Café, the restaurant was taken over a year ago by Frank Bernstein and business partner Fred Wright. It had been part of a chain of restaurants, but Bernstein and Wright saw an opportunity, bought the bistro and changed the name to Café Med. It has no affiliation with the restaurant of the same name that was located in Coconut Grove. Bernstein immediately renovated the interior to make the restaurant more inviting. He added a rug to improve acoustics and created a floral centerpiece to help break up the long dining room and give the restaurant a more intimate ambience. There is a private room available for parties that seats 40 and an outdoor patio seats another 50 patrons. Bernstein plans to add a canopy to protect diners from the elements on rainy days. In spite of bank failure, FDIC keeps it ‘business as usual’

Al Sunshine 4 YOUR MONEY The headlines are going to scare a lot of people: “Florida’s biggest bank fails, triggering the biggest U.S. banking failure of the year.” Coral Gables-based BankUnited was taken over by the Federal Deposit Insurance Corporation (FDIC) and a new private investment group has taken its place. According to the Treasury Department, BankUnited failed because of the growing number of defaults on its adjustable rate mortgages. This didn’t come as a surprise, though. Since last year, BankUnited has been on a watch list of troubled banks and was the subject of numerous legal orders from federal banking regulators. The takeover is going to cost the FDIC’s bank guarantee fund some $4.9 billion, and its insurance fund is reportedly depleted by

about 60 percent from its 34 bank takeovers this year. We’re now on a 15-year record pace for bank failures. What does this mean for you and me? For most people, it will be “business as usual.” The FDIC is guaranteeing that your deposits are safe up-to-the-coverage limits. However, it also is a brutal reminder that our banks are still reeling from the mortgage mess of allowing consumers to buy properties they couldn’t afford. In BankUnited’s case, they found themselves at “ground zero” for one of the foreclosure capitals of the country. They tried finding new investors to raise enough money to stay in business, but they finally just ran out of time. The Transportation Trust – Moving Forward The Citizens’ Independent Transportation Trust (Transportation Trust) is the oversight board created as part of the half-cent sales surtax and the People’s Transportation Plan approved by the voters of Miami-Dade County in 2002. Since the passage of the Plan there have been significant improvements to our public transportation system and roadways. These include the addition of millions of miles of new bus routes, the purchase of more than 262 new buses and the funding of 21 municipal shuttle bus systems throughout the County — from Coral Gables to Aventura to Hialeah. More than 173,000 senior citizens and veterans ride public transportation for free under the Golden Passport and Patriot Passport programs.

The first leg of the Metrorail system expansion will break ground this May. This $525 million project — the Miami Intermodal Center/Earlington Heights Connector — will bring Metrorail to Miami International Airport. A new fleet of railcars and Metromover cars are also being purchased. In the transportation area, more than 390 miles of roadways have been improved. A new Advanced Traffic Management System that will ease traffic congestion throughout our community is currently being installed. Traffic circles have been constructed and school safety crossing zones have been improved.

There is, however, much yet to be done. There has been great concern over promises made and the ability to fund those projects. The Trust shares these concerns. The Trust is also encouraged and applauds the candor, honesty and quality of the discussion occurring within Miami-Dade County and the community. Moving? Don’t forget the dog! BY CAROL CARIDAD President, Paws4You Rescue The flux of the economy has had an incredible impact on pet owners. From budget concerns to significant lifestyle changes, people are being forced to adapt, and those changes include the family dog. One reality of this change is the decision to move. Moving is hectic by nature and animals deal with similar stresses in adapting to a new environment. However, there are tactics you can use to ease this transition for you and your dog. One of the best pieces of advice I can offer to anyone moving with a dog is to make arrangements for the dog to stay somewhere — such as at a boarding facility or friend’s home — on the day of the move. This will give you peace of mind knowing that your dog is not going to get lost in the chaos, and it will help your dog stay calm and comfortable. Another important tip is to remember to get a new ID tag for your dog before you move. If something should happen and the dog ends up loose in an unfamiliar area, he or she can be returned to you easily because you have the correct contact information. You can also help the dog’s transition into the new home by keeping in mind that the animal is also adjusting to an unfamiliar place. In times of change it is important for a dog to maintain a routine as this will given them a sense of normalcy. I would also strongly suggest getting them accustomed to the new home room by room and making sure that they still have a place they can go that is their own, whether it is a crate or an area

Paws4You marked off with their bed and toys. Furthermore, use caution if you have a yard at your new home. Spend some time with them in the yard before you let them stay out alone. This will allow you to monitor their activities because as all dog owners know, the dog is bound to find things you never saw, such as holes in a fence or other dangerous items. If your new home is subject to a homeowner association, be sure you know its pet regulations ahead of time. There are often strict rules, including boundaries marking where you are allowed to walk your dog. Moving to a new city? Remember to check up on local ordinances, as well as find the nearest vet and animal hospitals prior to your move. Chances are you will also have to register your dog in the new city. Bottom line is that while moving can be stressful and chaotic, pet owners should make a special list of to-do items just for their animal companions. It will greatly help the transition for everyone and assist you with keeping your dog’s behavior at its very best.

They vary by date, such as Oct. 15 for early decision, all the way into February-March. They also vary by whether it is a state or private school as well. I know that students take remedial classes as Miami Dade College and Florida International University. Do other universities across the nation offer these courses? Yes. In fact, the cost of these classes is now on the rise. According to a recent Higher Education story, millions of students with the high school diploma are not ready for college. The new study calculated that one third of American college students have to enroll in remedial classes. The bill to college and taxpayers for trying to bring them up to speed on material they were supposed to learn in high school comes to between 2.3-2.9 billion annually. Students come out of high school and they’re really misled. They think they’re prepared. Getting a 3.0 and just getting through their high school curriculum is not what they need for college. The University of Miami has a new program for science and math. Do you know anything about this? Yes. The Program for Integration of Science and Mathematics (PRISN) is a pilot program for exceptionally motivated students. It provides a very strong foundation in the sciences and freshmen in the program take integrated lock-schedule courses, including biology chemistry and calculus. This is followed by physics, chemistry computer science in their sophomore year. What is the University of Miami’s “Beyond the Book” program? This is a program that supports undergraduate research and scholarship beyond customary classroom activ-

ities. Researcher awards fund 12 outstanding students and their projects included assessing the climate changes on Caribbean coral reefs, cracking Hepatitis B outbreaks in the Bahamas and probing the socio-economic dynamics of Laotian villages.

10-year exemption granted for connecting to county water BY JOCIE LEMUS Since the time she moved into her home in 1947, Joyce Diehl has been using well water. “There’s nothing like the natural water I get from the ground,” Diehl says. Several years ago, the Pinecrest officials surveyed the community and decided that it would be beneficial to expand water lines to give everyone in the Village access to the county water system. The Village Council launched a publicly-funded water project as a way to modernize the area. “The goal of the project was to provide access for everyone who wanted it,” says Village Mayor Cindy Lerner. Miami-Dade County required residents to hook up to the water lines within 90 days of installation. “There is a significant cost to hooking up to the water system, and it is a property right to be able to use your ground water,” Lerner said. A few years ago, the residents who wanted to stay on well water went before the county to address the issue. “The county gave them a five-year

exemption, but five years is not long enough,” Lerner says. “That doesn’t provide protection or comfort to those residents who are on well water.” Last month, Pinecrest residents again attempted to get an exemption from the Department of Environmental Resources Management. Lerner requested a lifetime exemption, but settled for 10 years.

“It is not achieving what we wanted, but the citizens are better off now than they were before,” Council Member Bob Ross says. “So we’ve kicked the can down the road a little further.” Vice Mayor Jeff Cutler’s home has not yet received the extended water lines from the ongoing project, but he believes that access to county water is important.

“The water extensions will give Pinecrest access to fire hydrants and will assure access to safe water if the ability of the aquifer should become an issue in the future,” Cutler says. “It’s a very promising project.” Residents who buy a house in Pinecrest or decide to renovate also must hook up to the water system. The extension is geared toward retirees and people who have been living in the area for a long time and do not think the investment is worth the cost, Lerner says. The progressing water extension project may take years to complete due to the $20 million estimated cost. “The project will be completed faster if we protect the rights of the residents who want to remain on well water,” Ross says. “We need to determine on the Council level what to do next and how aggressively we need to approach this.” The Council has done continuous work to assure all Pinecrest residents are protected, Lerner says. “I’m excited to get this information out there,” she adds. “It’s something I feel strongly about.”

LET’S TALK CARS The Mazda6 was introduced in 2003 and “zoom zoom” became two of the most popular words in automotive marketing. The hot new sport sedan was the first Mazda to get the company’s sports car technology fused into a five-passenger, four-door sedan. The Mazda6 was the company’s first vehicle designed, engineered, developed and manufactured in the U.S. and the intent was to meet and surpass the American consumer’s needs. The new Mazda6 does that and more. The 2009 Mazda6 rides on a 4.5-inch longer wheelbase (109.8 inches) with wider front and rear tracks, which increases interior room in virtually all aspects. At the same time, two new powertrains give the car more horsepower and better fuel economy. The

MAZDA6i’s new 2.5-liter four-cylinder engine (21/30 mpg) has 170 hp, while the hot new MAZDA6s has a 3.7-liter V6 (17/25 mpg) that produces 272 hp. That’s the same new 60-degree 3.7-liter engine — called the MZI — that was introduced in the Mazda CX-9, the 2008 North American Truck of the Year. The Mazda6i comes standard with a close-ratio, six-speed manual transmission capable of handling all the performance provided by the 2.5-liter MZR engine. An electronically controlled five-speed automatic transmission with a manual shift mode is also available. A new six-speed automatic with manual shift mode is standard in the MAZDA6s. On the outside, the Mazda6 has a pronounced front fender much like the one on the RX-8 and a design that flows from the front fascia through the headlamp, over the top of the front-wheel opening and into the side surface ahead of the front door. A graceful S-curve flows from the highest point of the roof to the lip at the end of the deck lid, with the rear glass seeming to melt into the deck lid for a very sleek appearance. Garden Club’s summer hiatus begins BY LYNN WILLE FICHMAN As the saying goes “all good things must come to an end” and that was true on Tuesday, May 12, as members of the Pinecrest Garden Club marked the end of the season with a luncheon at the Cocoplum Women’s Club on Sunset Drive. About 50 members and guests gathered in the historic room to reflect on the year’s accomplishments and to say goodbye until the club reconvenes in September. The term of the current officers has expired and, in keeping with tradition, the installation of the new slate took place there. Member Gloria Meeks officiated during this process, which began by calling the present officers to the podium where they received a gift and a warm thank you for their service. President Don MacInnes, who has been in office in one capacity or another for the past six years, listed the club’s many activities and good works during his tenure. He thanked all those who have worked with him to keep the club running with the many tasks that have to be performed. In appreciation for all that he has done, member Karen Mashburn presented MacInnes with a lovely paperweight and a gift certificate to Dream Dinners, a local Pinecrest business which offers a variety of prepped meals that are ready to heat and eat. Meeks next called the new officers forward and she delineated what each of their jobs entails. New president Pat Kyle Lawrence will oversee the operation of the club, lead board meetings and act as the representative at all district meetings. First vice president Germaine Butler will plan all programs and field trips. Other officers include second vice presidents Christian Armstrong and Cecilia Prahl, third vice president and treasurer Don MacInnes, corresponding secretary Barbara Pareira and recording secretary Lynn Wille Fichman.

Garden Club Incoming president Lawrence was a founding member of the club and she has been a dedicated board member and contributor ever since. She has been a Pinecrest resident since 1969, where she raised her sons Lance and Scott. She is also the owner of The Plant Lady and Galloway Farms Nursery, where she works with her husband Jim. Her vast botanical knowledge and enthusiasm will be a tremendous asset as the club moves forward and reaches further into the community in the coming year. “I love giving and I love to be around people who inspire me,” says Lawrence. “Those who impact others and have found some way to give inspire me the most.” Her plans for the coming year include the donation of heirloom tomato and pepper seeds to the Sanctuary of Moses in Benin, Africa, which is a school that rescues children who are trafficked and abused. These will be accompanied by instructions on how to compost and turn their biodegradable waste into fertilizer for their gardens. The club will concentrate on the organic green movement throughout the coming year, as well as on finding ways to help others in the community. In October, members and guests will be treated to a lesson in composting and planting an organic garden at Lawrence’s home, where she has successfully grown organic celery, peppers, tomatoes, collards, arugula, lettuces and broccoli. Over the past years, the Pinecrest Garden Club has been a source of inspiration, service and lasting friendships. It has made its mark in the community and as it continues to grow, all those who possess a desire to learn, a love of nature or merely a curiosity are invited to join this dynamic and diverse group. FPL works to limit potential hurricane damage BY MICHAEL GOLDFARB

As part of Florida Power & Light Company’s ongoing commitment to strengthen the electrical infrastructure in Pinecrest, in 2009 the company will inspect approximately 750 poles, clear vegetation from 32 miles of power lines and use infrared technology to examine three main power lines. “We are continuing to invest to make our infrastructure stronger in good weather and bad,” said FPL external affairs manager Ramon Ferrer. “While no system will be immune to the devastating power of a severe weather event, our goal is to minimize damage to critical infrastructure so that we can respond more quickly. These investments are designed to respond to the potential for more frequent, more powerful hurricanes, but are also delivering customer benefits because they enhance day-to-day reliability as

well,” Following the 2004 and 2005 hurricane seasons that saw seven storms in a 15-month period, FPL responded to the state’s call to maintain a high level of storm preparation. FPL embarked on a series of comprehensive investments and improvements to strengthen its electrical infrastructure to better withstand the impact of severe weather, recognizing that no utility can be 100 percent storm proof. The work is also designed to further reduce customer outages through aggressive preventative maintenance projects on its overhead and underground lines and equipment. By the end of 2009, FPL will have made the following improvements and investments since 2006 benefiting the Village: • Inspected approximately 2,330 poles for strength and health, which represents 52 percent of the approximately 4,500 poles in

Pinecrest. System wide, the company is committed to repairing or replacing poles as necessary as part of its comprehensive program to inspect FPL’s 1 million poles every eight years. • Trimmed tree limbs and branches along 82 miles of power lines in the Village. Tree limbs and branches, especially palm fronds, are among the most common causes of power outages and flickers. • Inspected six main power lines using special infrared technology called Thermovision to detect and address issues in power lines and equipment before they become problems or outages. • Upgraded and strengthened several main power lines serving critical roads and facilities near Pinecrest, including Baptist Hospital, South Miami Hospital, Larkin Community Hospital, Jackson South Community Hospital and Miami Children’s Hospital.
