29, 6:30-8:30 p.m. at Shawnee Inn & Golf Resort, may be just what you need.

This night of art and entertainment benefits the Bridges Out of Poverty program of Monroe County, which addresses the issue of poverty by engaging the community and empowering the motivated.

Artwork on display will include: paintings, original prints, jewelry, sculptures, quilts, photographs and more. Each participant will receive a number at the beginning of the evening. When their number

is drawn, they have the chance to select a piece of artwork, but they must act fast, because the next person will be drawn in a minute and ready to take their own artwork!

“This has become a very popular event and keeps growing each year. We have many wonderful friends and volunteers that have donated artwork, so this year’s event will not disappoint,” executive director Michael Tukeva said.

Local artists and special guests will also be creating pieces of art live at the event.

These items will be available through a silent auction at the end of the night.

Hors d’ oeuvres, door prizes and a cash bar will be available during the evening.

Tickets are $60 per person or $75 per

Brass, percussion and woodwind musicians with previous band experience are welcome to join the East Stroudsburg University/Community Concert Band (UCCB) as it prepares for its Sunday, Dec. 11 concert.

Cards for Charity recently raised $2,600 for the Little Sisters of the Poor at Holy Family Residence. The successful fundraiser took place at the organization’s annual card party at the Elmhurst Country Club.

The fundraising party included a luncheon followed by an afternoon of bridge,

mahjong, pinochle and dominos along with a basket raffle. The Little Sisters also sold scones and cookies.

All proceeds will be used by the Little Sisters to provide physical, emotional and spiritual health services to the residents entrusted to their care.

A decade ago, Wayne Memorial Hospital and Good Shepherd Rehabilitation Services forged a partnership that has since benefited more than 2,700 patients. Good Shepherd, an Allentown-based network of rehabilitation facilities, and Wayne Memorial will celebrate their 10th anniversary with an open house on Wednesday, Sept. 21, 4-7 p.m. Everyone is invited, including past patients and their families.

“Many of our patients come back to see us after treatment,” said nurse-manager Judy Eisenhauer, “because we really do put them on the road to independence. And we are so thankful for their appreciation. We hope they come celebrate with us.”

In fact, the unit’s very first patient, Rita Tepperman of Dingman’s Ferry, has visited several times since 2006 and says she will definitely attend the open house.

“I’m excited to go,” she said. “They helped me way back when and I want to say

thank you – again!”

The Wayne Memorial-Good Shepherd Rehabilitation Center specializes in the treatment of many conditions, including stroke, brain injuries, spinal cord injuries, joint replacement, neurological disorders, progressive disease management such as Parkinson’s and multiple sclerosis — and more.

“Our team of physicians, nurses, therapists and aides is uniquely qualified to help our patients regain as much mobility and independence as possible,” said Dr. Scott Epstein, physiatrist and medical director of the unit. “Good Shepherd’s tag-line is ‘Where your comeback begins’ and that’s truly what we’re about.”

The open house will include refreshments, music and opportunities for visitors to ask questions and/or share their stories of recovery.

FRESH BUTTERNUT SQUASH SOUP 2 large butternut squash 1/2 stick butter, melted 1 tablespoon kosher salt 1 teaspoon white pepper 3 cups vegetable stock 1 teaspoon minced ginger 4 ounces heavy cream 1/4 teaspoon nutmeg Honey, to taste

Preheat the oven to 400°. Cut each squash in half, lengthwise, and scoop out the seeds.

On a sheet pan lay the squash flesh side up.

To the melted butter, add salt and white pepper. Brush the flesh of the squash with the melted butter mixture. Bake for about 30 to 35 minutes or until the flesh is soft and squash is tender.

Scoop the flesh from the skin into a soup pot; add the stock, ginger and nutmeg. Bring to a simmer. Remove from heat and puree mixture in a blender. Stir in the heavy cream and return to a low simmer. Season with additional salt, pepper and honey to desired sweetness. Yield: 4 servings.

SCALLOPED POTATO AND ROASTED PEPPER BAKE 1 large onion, chopped (1 cup) 3 tablespoons margarine or butter 3 tablespoons all-purpose flour 1/4 teaspoon salt 1/4 teaspoon black pepper 2 cups milk 1 cup shredded Swiss cheese 2 tablespoons snipped parsley 6 medium potatoes, peeled (2 pounds) 1 (7-ounce) jar roasted red sweet peppers, drained and coarsely chopped Parsley sprigs (optional)

Cook onion in margarine or butter in a large saucepan until tender but not brown.

Stir in flour, salt and pepper. Add milk all at once. Cook and stir over medium heat until thickened and bubbly. Remove from heat and stir in cheese and parsley until cheese is melted.

Thinly slice potatoes (should have about 6 cups). Place half of the potatoes in a 2-quart

Repeat layers of potatoes and sauce. Bake, covered, at 350° for 1 hour 15 minutes.

Uncover and bake 15 minutes more or until potatoes are tender. Garnish with parsley sprigs, if desired. Yield: 6 to 8 servings.

Remove stems from spinach leaves. Steam spinach until wilted.

Combine ricotta, Parmesan, salt, pepper and beaten egg in a large bowl. Stir in spinach.

Heat oven to 350°. Lightly stuff the shells with a spoon, line them into a lightly greased 8-by-11-inch baking dish, and pour sauce over all. Sprinkle with Mozzarella. Bake uncovered 30 minutes or until bubbly in the middle. Yield: 4-5 servings.

ITALIAN CHICKEN ROLLS 4 boneless, skinless, chicken breast halves (1 pound) 2 slices mozzarella or provolone cheese, cut in half 4 thin slices pastrami, ham or turkey ham 1/3 cup Italian-style dry bread crumbs 1/4 cup grated Parmesan cheese 2 tablespoons fresh parsley, finely chopped 1/4 cup skim milk

GREEN BEANS PARMESAN 2 (10-oz.) packages frozen French-style green beans Milk 1/4 cup onion, chopped 1/2 stick butter, divided 2 tablespoons all-purpose flour 1/2 teaspoon salt 1/4 cup grated Parmesan cheese 1 (5-ounce) can water chestnuts, drained and sliced 1/2 cup soft bread crumbs Cook beans according to package directions; drain; reserve liquid. Add milk to liquid to make 1-1/4 cups; set aside. In saucepan cook onion in 2 tablespoons butter until tender; blend in flour and salt. Stir in milk mixture all at once. Cook and stir until thickened and bubbly. Stir in half the cheese.

Add cooked beans and water chestnuts, reserving a few for topping. Turn into 1-quart casserole. Toss bread crumbs with remaining cheese and melted butter; sprinkle on top of casserole. Bake, uncovered, at 350° for 30 to 35 minutes or until bubbly. Garnish with reserved water chestnuts. Yield: 6 servings.

PUMPKIN POUND CAKE 1 cup granulated sugar 1 cup packed brown sugar 3/4 cup shortening 2 eggs 2-1/2 cups all-purpose flour 2 teaspoons baking soda 2 teaspoons cinnamon 1 teaspoon cloves 1 teaspoon nutmeg 1/4 teaspoon salt 1 (15-ounce) can pumpkin 1 cup raisins 1 cup chopped pecans or walnuts

1 cup chopped maraschino cherries Orange juice (optional) Coarse sugar (optional) Maraschino cherries (optional) Beat sugar, brown sugar, shortening and eggs in a large mixing bowl with an electric mixer on medium speed for 2 minutes, scraping bowl occasionally. Stir together flour, baking soda, cinnamon, cloves, nutmeg and salt in a medium mixing bowl.

Add flour mixture and pumpkin alternately to shortening mixture, beating on low speed after each addition until combined. Stir in raisins, nuts and cherries. Turn batter into a greased and floured 10-inch fluted tube pan.

Bake at 350° for about 55 to 60 minutes or until a toothpick inserted near center comes out clean. Cool on a wire rack for 10 minutes. Remove from pan. Cool completely on wire rack. Brush with orange juice and sprinkle with coarse sugar, if desired. Garnish with maraschino cherries. Yield: 14 to 16 servings.

OLD-FASHIONED RAISIN PIE (Requested by one of our readers) 2 cups seedless raisins 2 cups water 1/2 cup firmly packed brown sugar 2 tablespoons cornstarch 1/2 teaspoon cinnamon 1/4 teaspoon salt 1 tablespoon vinegar 1 tablespoon butter or margarine Pastry for double 9-inch crust Combine raisins and water; boil 5 minutes. Blend sugar, cornstarch, cinnamon and salt. Add to hot raisins; cook and stir until clear. Remove from heat and stir in vinegar and butter. Cool slightly. Turn into pastrylined pan. Cover with top pastry or lattice strips. Bake at 400° for about 35 minutes.
