Dickson City youngster makes commitment to the nation

High school graduates have a lot of options.

Go to college (and pile up debt), get a job (if you can) or just sit in your parents’ basement playing video games.

One option few consider: service to the nation.

Larry Menendez of Dickson City is taking the road less traveled. Recently he was one of 150 men and women pledging to perform 10 months of national service as part of the Southern Region’s 22nd Class of the National Civilian Community Corps (NCCC), as a member of FEMA Corps.

Larry is 18 years old. He is a recent graduate of Mid Valley High School. He is also an Eagle Scout in Boy Scout Troop No. 322.

“I first heard about AmeriCorps NCCC FEMA Corps from my mother, after looking at some military options that didn’t come through,” said Menendez. “I decided to serve in another capacity.”

As a Corps member, Menendez will spend 10 months getting things done for America, while strengthening communities and developing his leadership, officials say. Menendez and his team will work on a variety of projects with the Federal Emergency Management Agency (FEMA) in the administration of emergency management and long-term recovery activities.

He joined in July and traveled to Vicksburg, Mississippi. After three weeks of training, he and the other members of his graduating class took part in an induction ceremony.

All the volunteers were asked to write about their feelings about the experience, and Menendez was selected to be a special speaker at the ceremony because officials were so impressed with what he wrote.

At his recent induction ceremony, Menedez was selected to speak.

“I was terrified about coming here. I was scared because I have never been so far away from home before without family close by or for such a long time. I was afraid of what people would think of me or that I would not be able to make friends.

“I was wrong. As soon as I arrived on campus, I was introduced to some of the most amazing people that I have ever met. Everyone was so friendly and welcoming that all my concerns and fears were wiped out.

“It has only been three weeks and AmeriCorps has already changed my life. I have already begun to incorporate what I have learned into my daily life. It appears in the way I talk, how I interact with others, and the way that I go about my daily activities.

“I decided to challenge myself and try to be more social. So far, it’s turned out pretty good, I

am more comfortable around people now. It helps that I have a team who is always willing to listen to what I have to say and help me work through whatever is bothering me.

“I still miss my home and my family, but I’ve realized that while I left one family back home, I have gained a new family here.

“I believe that AmeriCorps is a great opportunity for me to learn important life skills, develop myself as a person, learn how to adapt to new environments, and to do what I love, which is living a life in service to others.”

After his 10 month stint, Menendez will graduate from NCCC with an education award of up to $5,775, which can be used to continue his education.

“I am motivated to live a life in service to others, this is what I love to do,” said Menendez.

The 10th annual Blessed Sacrament Parish Family Festival will be held Friday to Sunday, Aug, 14-16, on the church grounds at 215 Rebecca St. in Throop. Highlights include ethnic foods, live entertainment on Friday and Saturday, and Breakfast & Bingo on Sunday.

The traditional ethnic and picnic foods include pierogies, piggies, potato pancakes, porketta, haluski, sausage and peppers, corn on the cob, homemade jam, a large bake sale with a variety of homemade items, such as pizza, funnel fries, french fries, wimpies, old-fashioned ice cream sandwiches and specialty sundaes. There will also be games for all ages, and a bouncy house. Supervised kids’ games will begin Saturday morning at 9 a.m. The festival will open Friday and Saturday at 5 p.m. On Sunday, there will be a breakfast buffet immediately after the 9:30 a.m. Mass, including scrambled eggs, bacon and sausage. Bingo will begin in the Parish Hall at 1 p.m.

Wine Festival

Jessup Hose Co. No. 2, 333 Hill St., will host its fourth annual Summer Wine Festival Saturday, Aug. 22, noon to 6 p.m. Twelve Pennsylvania wineries will have their products available for tasting and sale. More than 40 other specialty vendors and 10 food vendors, with everything from pasta to seafood, will also be in attendance. There will be live entertainment, games and a basket raffle along with instant bingo available all day.

Joining the University of Success

Local residents were among the 22 rising ninth-grade students who completed The University of Scranton’s University of Success summer institute, which was held on campus recently. The two-week summer institute is the initial event for incoming members of the University of Success, a four-year, pre-college mentorship program.

The goal of the University of Success is to assist participating students to successfully complete high school and gain entrance into a college or university. The program helps students achieve this goal through a variety of activities and services from their current grade until they graduate from high school. The students who completed the summer institute will continue to meet at the University of Success once a month.

The University of Success, offered

free of charge to participants, is funded almost entirely by corporate and foundation grants. Donors to the program include AT&T, Charles A. Stroke Group Wins Award

Annually, the National Stroke Association recognizes individuals and groups for taking stroke awareness activities to new heights. The Marywood University Aphasia Group won the category for 2014 Outstanding Support Group.

The Outstanding Support Group Award honors a stroke support group for

making an innovative and robust impact on the lives of stroke survivors, caregivers and others impacted by stroke through connection, empowerment and education.

The support group hosted a fundraiser at Yogurt City, at which they raised $350 that was donated in honor of their group to the National Stroke Association.

Chicken Soup with Garden Vegetables 6 cups water 2 cups tomato juice 1 cup diced, peeled potato 1 cup chopped onion 1 cup whole kernel corn 1 cup cooked, drained lima beans 3/4 cup chopped, cooked chicken 1/2 cup sliced carrots 1/2 cup chopped celery 2 tablespoons chicken-flavored bouillon granules 1 teaspoon garlic powder 1-1/2 teaspoon Worcestershire sauce Combine all ingredients in a large soup pot. Cover and bring to a boil. Reduce heat and simmer 45 minutes to 1 hour.

Serve hot. Yield: 10 servings.

1 egg white 1/3 cup bread crumbs Salt and black pepper, to taste 1 tablespoon olive oil 1/2 cup ketchup 2 cups beef broth 1/4 cup whole mixed pickling spices, tied in cheesecloth 2 bay leaves Place chuck in large mixing bowl. Add garlic. Beat together both egg and egg white in small bowl, adding bread crumbs, salt and pepper; blending well. Transfer egg mixture to meat mixture; mix well by hand and form into a loaf shape. In a large heavy pot, heat oil over medium heat; add meat loaf and brown 4 minutes; then gently turn and brown an additional 3 to 4 minutes. Slide a spatula under browned meat to make certain it does not stick to bottom of pan. Scrape up bits. Pour ketchup over top and sides of meat loaf; then pour broth around sides; stir with fork to combine with ketchup. Add pickling spices and place bay leaves, one on each side of meat loaf. Bring broth to a boil.

Cover pot; place in oven and bake at 350° for one hour until meat loaf is firm.

Remove from oven; remove bay leaves and spice bag, also. Cool meatloaf; refrigerate overnight. Remove meatloaf from refrigerator about 45 minutes before serving.

Remove fat from top of gravy and place pot, covered, over medium-low heat to warm, about 25 minutes. Cold water may be added if gravy is too skimpy. Serve in 1-inch slices with mashed potatoes. Yield: 4 to 6 servings.

Skillet Chicken Parmesan (Requested by one of our readers.)

4 boneless, skinned chicken breast halves (1-1/4-pounds) 3 tablespoons all-purpose flour 1/4 teaspoon salt 1/8 teaspoon black pepper 1 tablespoon olive oil 2 tablespoons grated Parmesan cheese 2-ounces shredded Mozzarella cheese 2 cups prepared tomato sauce with herbs Pound chicken breasts between 2 sheets waxed paper with meat mallet or bottom of flat heavy skillet to 1/4-inch thickness.

Combine flour, salt and pepper in plastic food storage bag. Add chicken breasts and shake to coat. Heat oil in medium-size nonstick skillet over medium heat. Add chicken; sauté 2 to 3 minutes on each side Spaghetti with Lite Meatballs until golden brown. To prepare meatballs: Mix ingredients 2 pounds ground chuck in a medium-size bowl. Roll into 15 (11 large clove garlic, finely chopped 1/2-inch) balls, using 2 tablespoons meat 1 large egg mixture for each. Refrigerate.

For sauce: 1 tablespoon olive oil 1 large onion, halved and thinly sliced 1/2 pound white mushrooms, sliced (about 3 cups) 1 medium-size green bell pepper, coarsely diced (about 1-1/2 cups) 2 teaspoons minced garlic 1/4 teaspoon dried basil, crumbled 1 (28-ounce) can crushed tomatoes (1/4 cup used in meatballs) 1-1/4 teaspoon each salt and freshly ground pepper 12 ounces uncooked spaghetti To make sauce: Heat oil in a heavy 4-quart saucepan or Dutch oven over medium-high heat. Stir in onion, mushrooms, bell pepper, garlic and basil. Cook, stirring constantly, 2 minutes. Reduce heat to medium, add 2 tablespoons water; cover and cook 5 to 7 minutes, until vegetables are tender. Stir in crushed tomatoes, salt and pepper. Increase heat and bring to a boil.

Add meatballs; reduce heat, cover and simmer gently 15 minutes, turning meatballs a few times. Uncover and simmer 5 to 10 minutes longer until sauce is thickened and meatballs are no longer pink in middle. Bring a large covered pot of water to a boil. Add spaghetti and cook according to package directions. Drain; serve with meatballs and sauce. Yield: 3 regular servings (1, 2/3-cups pasta; 4 meatballs and 1, 1/4 cups sauce, each).

Yellow Squash Casserole 1 pound yellow squash, sliced 1 medium onion, chopped 1/3 cup water 1/4 teaspoon salt 3/4 cup (3-ounce) shredded Cheddar cheese, divided 1/2 cup fine, dry breadcrumbs or buttery cracker crumbs, divided 1/2 stick butter or margarine 2 large eggs, lightly beaten 1 tablespoon sugar 1/4 teaspoon salt 1/4 teaspoon soy sauce 1/8 teaspoon black pepper 1/8 teaspoon paprika Combine squash, onion, water and 1/4 teaspoon salt in a large saucepan. Bring to a boil; reduce heat, and simmer, uncovered, 15 minutes or until vegetables are tender.

Drain and mash squash mixture. Add 1/2 Savory Fish Roll-Ups cup Cheddar cheese, 1/4 cup breadcrumbs, 1 (10-3/4 ounce) can condensed cream and next 6 ingredients; stir well. Spoon of chicken soup into a lightly greased 1-1/2 quart casserole.

Spoon 1 cup of the soup mixture over stuffing. Arrange fish fillets; pour remaining soup mixture over all. Bake, covered, at 350° for 20 minutes. Uncover and bake 20 minutes more or until fish flakes easily when tested with fork. Sprinkle with paprika. Yield: 4 servings.
