“It has just taken off from there,” Rachel Kuster said. “Art is incredibly important to Bethany. She did not think it was fair that every kid did not have their own box of crayons.”

The Kusters started a website at colorforkids.net which shows Bethany with some of the supplies collected and where they have been delivered.

Rachel Kuster said the project has spread rapidly, with schools in Fort Myers, Florida, Atlanta, Boston and Washington, D.C. working on replicating Bethany’s effort.

“I’ve asked her many times, ‘How long do you want to do this?’ Rachel Kuster said.

“And she said, ‘Until every kid has their own box of crayons.’ And I said ‘Well, there are millions of kids,’ and she said, ‘I know.

I’ll just keep going as long as I have crayons to give.’”

“This is a really good reminder that some of the very best lessons in education have ... everything to do with the children in your school and what’s in their hearts,” Dr. Barry said. “Here’s a little girl making a difference.”

Bethany Kuster began her efforts last November after hearing about an elementary school in Alabama where the children had to share a packet of crayons because there were not enough for all. She approached her teacher, Scott Kupec, about collecting art supplies for those pupils and sending them to the school. Kupec was all for it.

“I really like art and art makes people happy,” Bethany said.

Bethany’s passion for the cause was infectious and soon she had her parents, Rachel and Kraig Kuster, and other students, teachers and principals on board. They shipped art supplies to the elementary school in Alabama and received beautiful thank you cards from the kids, made with their new markers

East Stroudsburg University of Pennsylvania (ESU) professors are used to being the ones doing the teaching, but recently 30 faculty members got a lesson from a Wind Gap fourth-grader on how to bring art to children who have none.

Bethany Kuster, a 10-year-old student at Wind Gap Middle School in the Pen Argyl Area School District, spoke to the ESU College of Education faculty about her project, “Color for Kids,” that has collected and delivered more than 1,200 pounds of crayons, markers, paints and other art materials to nearly 1,000 low-income children around the world within the past five months.

ESU’s education faculty and students are joining Bethany’s effort by collecting art supplies on campus that Bethany and her family can ship to children in need, according to Dr. Terry R. Barry, dean of the college of education.

“What we are looking to do is a servicelearning project with our students,” Dr. Barry said. Education professors will work with student organizations to collect the sup-

Monroe County Conservation District and Monroe County Federation of Sportsmen’s Clubs will sponsor Conservation Camp, Saturday, July 16, through Saturday, July 23. Conservation Camp is a week-long residential program held at Stony Acres, a 119-acre wildlife sanctuary/recreational facility owned by the students of East Stroudsburg University in Marshalls Creek.

Conservation Camp is open to students from 14 years old to this year’s high school graduates and provides young people with hands-on classroom and field instruction covering many aspects of natural resource conservation and management.

Topics include reptiles and amphibians, forestry, trapshooting and firearm safety, stream study, archery, wetlands study, soils and land use, and many others. Presenters include the Pennsylvania Game Commission, Tobyhanna Conservation Association, Blue Ridge/ Cherry Valley Rod and Gun Club, National Park Service, Pennsylvania Bureau of Forestry, and Pocono Wildlife Rehabilitation Center.

Campers will also have the opportunity to experience the Delaware River during a two-day, overnight canoe trip.

Programs covering river ecology, water quality and history of the Delaware Water Gap National Recreation Area will be presented during this 26-mile river journey. Bald eagles, otters, deer and other wildlife have been observed on this trip.

Cost is $200, which includes the $75 application fee and the $125 camp fee.

The application fee must be paid by the student and included with the application. The camp fee may be paid by the student, a sponsoring organization, or by a scholarship. A limited amount of scholarships are available by request.

Wave Hill consists of horticultural gardens and cultural center, all overlooking the Hudson River and the New Jersey Palisades.

There will be a stop at A.J. Messina nursery in New Jersey on the return.

CHICKEN AND RICE SOUP 2 chicken breasts (about 2 cups) 3 cups chicken broth 1 small onion, chopped 2 cloves garlic, minced 2 stalks celery, cut into 1/2-inch slices 3 carrots, cut into 1/2-inch slices 1/2 cup rice, uncooked 1/2 teaspoon curry powder Salt and black pepper, to taste Cook chicken breasts in water to which two chicken bouillon cubes have been added; simmer 40 to 45 minutes until tender.

Remove skin and bones; cut chicken into small pieces and return to soup pot. Add onion, garlic, celery, carrots, uncooked rice, curry powder, salt and pepper. Bring to boil, reduce heat and simmer slowly for 45 minutes. Yield: 4 servings.

To prepare vegetables: In a large bowl, toss ingredients; place around meat loaf.

Bake 45 minutes; carefully stir vegetables to coat with meat loaf juices. Increase heat to 375°; bake 15 to 20 minutes. Let meat loaf stand 10 minutes before slicing. Yield: 8 servings.

1/2 cup currant jelly 1 tablespoon grated orange rind Melt butter over low heat. Stir in flour and cook, stirring, until flour has taken on a light brown cast. Mix remaining ingredients and add to flour mixture. Heat, stirring until slightly thickened. Yield: about 1-1/2 cups sauce.

Do not beat; just mix until blended. Stir in flour, which has been sifted with salt and baking powder. Add vanilla. Place peach slices in bottom of buttered 1-1/2-quart casserole.

Pour batter over top and bake at 350° for 45 to 50 minutes. Serve with whipped cream scented with almond flavoring.

Four East Stroudsburg University student members of the University/Community Concert Band participated in the 69th annual Pennsylvania Intercollegiate Band Festival, held recently at Elizabethtown College.

The students included Mirand Tripus of Moscow on flute, Victoria Kraft on euphonium, Matthew Helbers of East Stroudsburg on trombone and Jacqueline Hoffman on oboe.

The festival consisted of three days of intensive rehearsals and concluded with a Sunday afternoon concert.
