Sustainable Energy Education & Development Support (SEEDS) has awarded a $1,000 scholarship to Andrew Bochnovich, a Honesdale High School senior, for his winning entry in its sustainability essay competition.

Students were asked: If you were an environmental adviser to the President, what would you recommend to promote sustainable energy in rural communities in the U.S.?

SEEDS officials said they received several good essays, but the selection committee unanimously chose Bochnovich, the son of Peter and Amy Bochnovich, as the winner. Bochnovich was recently named his graduating class’ valedictorian.

He has participated in a wide variety

of activities including soccer, track and field, marching band, mathematics and chemistry and drama. Andrew was also 2015’s Scholar of the Year, and served as president of the Honesdale’s chapter of the National Honor Society.

Andrew will be attending the University of Delaware this fall.

When asked about what inspired him about conservation and sustainability, Andrew explained, “It is like what I wrote in my essay, that my teacher always says …

You’re not inheriting your parent’s world, you’re borrowing your children’s, and we have to make sure that our children and descendants will be able to live in a healthy world long after we are gone. If we think about future generations, it helps me think

less about myself and more about others.

The best way I can help others, is to take care of our world.”

This SEEDS scholarship was awarded, due to a donation from SEEDS members, in memory of Michael “Jake” Burkhardt.

• The Pike-Monroe Woodland Owners Group will host a Natural Resource Conservation Service (NRCS) project tour at Resica Falls Boy Scout Camp in Monroe County Saturday, July 9, 9 a.m. to noon. Attendees will tour a property with a variety of forestry practices that were completed with the help of NRCS and the EQIP Forestry program.

Topics will include cover crop tree release, herbicide application, forest stand improvement and an erosion and sedimentation control project. Attendees will also have a chance to see and hear success stories from a local landowner, and ask questions about ap-

plying for funding for their own projects.

• Monroe County Conservation District’s Kettle Creek Environmental Education Center celebrates Bugfest 2016 Saturday, July 9, 10 a.m. to 3 p.m. at the Kettle Creek Environmental Education Center in Bartonsville.

Families with kids ages 4-12 are invited to interact with live critters, as well as displays, games and take home crafts. All-day activities include insect safaris, a butterfly tent, live insects, insect collections, painting with maggots and games. The Insect Olympics will also take place twice at 11:30 a.m. and again at 1:30 p.m. Come dressed as your favorite bug, nymph or caterpillar and participate in the Insect Fashion Show.

There is a $5 admission fee for children younger than 12. Come dressed as your favorite bug and receive a $1 discount on the admission fee. Parents admitted free. No preregistration is necessary. Food and beverages will be available for purchase.

Retailer marks 80th birthday Back in 1936, Ralph Van Gorder rented the bottom floor of the Jenkins Building on Honesdale’s Main Street and placed an ad in the Wayne Independent saying he would buy anyone’s used furniture — “a single piece, an attic full or a house full.”

Although he first named his business the Honesdale Furniture Exchange, it is now known as Van Gorders’ Furniture, a fourth-generation family business with showrooms in Milford, Hawley and Honesdale.

To celebrate the business’ 80-year mile-

stone, it is awarding an $80 gift certificate every month during 2016 through a Facebook contest.

• Zoo Flora, a day at the zoo, is the theme for the Pocono Garden Club annual flower show scheduled for Saturday, July 9, at the Stroudsburg Junior High School, Chipperfield Drive in Stroudsburg. Recently, 13 nursing students were “pinned,” officially marking their graduation from the Luzerne County Community College (LCCC) nursing program at Wayne Memorial Hospital, the third graduating class since the program began. “It’s another proud moment for Wayne Memorial Hospital and for our nursing students,” said James Pettinato, director of patient care services. “We also applaud their instructors, who perform an invaluable function in helping us maintain a continuing pool of qualified nurses.

Many of the students who graduate go on to work at Wayne Memorial Hospital. Since its start, the program has graduated 39 nurses.

BLUEBERRY-BERRY SPLASH 1 (0.13-ounce) package unsweetened cherry drink mix 6 cups white cranberry juice 1/4 cup sugar Fresh mint sprigs Fresh blueberries for ice cubes Mix together the first three ingredients and 2 cups water in a large pitcher until sugar is dissolved. Cover and chill. Before serving, add blueberry ice cubes and garnish with mint sprigs, if desired. Yield: approximately 2 quarts.

To prepare blueberry ice cubes: Using an ice cube tray, add several blueberries to each cube; add water to cover the blueberries; place the ice cube trays in freezer until solid. Remove ice cubes from trays immediately prior to serving.

BROWN SUGAR-GLAZED COUNTRY RIBS 2 pounds country-style pork ribs 1-3/4 teaspoons salt, divided 1/4 teaspoon black pepper, divided 3/4 cup orange juice 2 tablespoons lemon juice 1/2 cup firmly packed brown sugar 1 bay leaf 1-1/2 teaspoons garlic powder 1 teaspoon lemon peel 3/4 teaspoon ginger 1/4 teaspoon cloves Preheat oven to 375°. Cut ribs into single rib portions. Sprinkle both sides with 3/4 teaspoon of salt and 1/8 teaspoon black pepper.

Place ribs on a rack in a foil-lined shallow open roasting pan; bake 30 minutes. Reduce heat to 350°. Turn ribs and bake 20 minutes longer. Pour off fat. Prepare sauce by combining in medium saucepan the orange and lemon juices, brown sugar, bay leaf, garlic powder, lemon peel, ginger, cloves, remaining teaspoon salt and 1/8 teaspoon black pepper. Bring to boil. Reduce heat to simmer, uncovered, until mixture is reduced to 1/2 cup, about 15 minutes. Brush on pork ribs. Return to oven for 10 minutes, turn and brush with sauce. Bake until glazed, about 10 minutes longer. Yield: 4 servings.

CHICKEN BARBECUE KABOBS 2 pounds skinned and boned chicken breasts 1/2 large red onion, cut into fourths and separated into pieces

1 pint cherry tomatoes 8 (8-inch) metal skewers Smoky barbecue rub (recipe below) Preheat grill to 350° to 400°. Cut chicken breasts into 1-inch cubes. Thread chicken, onion, and cherry tomatoes alternately onto skewers, leaving a 1/4-inch space between pieces. Sprinkle kabobs with smoky barbecue rub. Grill kabobs, covered with grill lid, 4 to 5 minutes on each side. Yield: 8 kabobs.

Note: To make steak barbecue kabobs, substitute 2 pounds top sirloin steak, trimmed, instead of chicken.

To make smoky barbecue rub: 2 tablespoons firmly packed dark brown sugar 2 teaspoons garlic salt 1 teaspoon chipotle chile powder 1/2 teaspoon ground cumin 1/4 teaspoon dried oregano Mix together brown sugar, garlic salt, chipotle chile powder, cumin and oregano.

Sprinkle kabobs prior to grilling.

SPICY BEEF AND VEGETABLE SLOPPY JOES 1 pound lean ground beef 1 medium onion, chopped 2 cloves garlic, minced 1 cup chopped zucchini 1 cup chopped yellow summer squash 1 cup sliced fresh mushrooms 3/4 cup chopped green pepper 1 (16-ounce) jar salsa 1 teaspoon dried basil, crushed 1/2 teaspoon dried parsley flakes 1/2 teaspoon dried rosemary, crushed 6 to 8 kaiser rolls, split and toasted In a 10-inch skillet, cook beef, onion and garlic over medium heat until meat is brown and onion is tender; drain fat. Add zucchini, summer squash, mushrooms and green pepper. Cover and cook over low heat for 5 to 7 minutes, until vegetables are tender. Stir in salsa, basil, parsley and rosemary. Simmer, uncovered, about 10 minutes, or until most of the liquid has evaporated. Serve on toasted rolls. Yield: 6 to 8 servings.

1/2 pound turkey sausage, casing removed 1/2 cup grated zucchini, squeezed dry 1/2 teaspoon oregano 1/2 teaspoon salt 1/2 teaspoon pepper 1-1/2 teaspoons sugar 1 tablespoon soy sauce Sliced tomatoes and lettuce Golden onion topping (recipe below) Combine and chop celery, scallions and garlic in food processor. Place in bowl and add turkey, sausage and next 6 ingredients; mix gently until well blended. Form into 6 patties.

Place on grill for about 8 minutes, turning over for 5 minutes. Grill tomatoes 4 to 5 minutes, turning once. Top burgers with lettuce, tomatoes and onion topping. Yield: 6 patties.

To make golden onion topping: 1/2 stick butter 2 Spanish onions, thinly sliced 2 teaspoons sugar 1/4 cup Gorgonzola cheese In a large skillet (not nonstick), melt butter on low heat. Add onions and sugar; sauté approximately 1/2 hour, stirring occasionally, until golden and caramelized, raising heat to medium. Add Gorgonzola; stir until melted.

Serve topping over patties.

Crumble cake and spread evenly in bottom of large oblong pan. Pour drained pineapple over cake evenly. Heat milk and marshmallows in saucepan over low heat until marshmallows are dissolved; pour this evenly over layer of pineapple. Prepare Dream Whip; spread over cake to create a frosting effect.

Sprinkle coconut over top. Chill.

CHOCOLATE-STRAWBERRY PIE 30 chocolate wafer cookies, crushed (1-1/2 cups) 1/3 cup butter or margarine, melted 1/2 cup plus 2 tablespoons semisweet chocolate morsels, divided 1 (8-ounce) package cream cheese, softened 1/4 cup firmly packed brown sugar 1/2 teaspoon vanilla 1 cup whipping cream, whipped 1 pint fresh strawberries, hulled 1 teaspoon shortening Combine cookie crumbs and butter in a medium bowl, stirring well. Firmly press over bottom and sides of a lightly greased 9-inch pie plate. Bake at 325° for 10 minutes.

Let cool completely. Place 1/2 cup chocolate morsels in top of a double boiler; bring water to a boil. Reduce heat to low; cook until chocolate melts, stirring occasionally.

GRILLED CORN-ON-THE-COB Remove from heat; cool to lukewarm. Beat WITH CHILI-BUTTER cream cheese at medium speed of an electric 8 ears fresh corn mixer until smooth. water. The entire genealogy of pioneer John Learn will also be available.

This event is presented by the Pocono Township Bicentennial Committee in collaboration with the Pocono Jackson Townships Historical Society, and is one of several scheduled throughout the summer to mark the township’s bicentennial.
