At a recent United Way of Monroe County community meeting at Northampton Community College in Tannersville, corporate partners, community leaders and student and staff representatives from Monroe County’s local school districts announced the results of their respective United Way campaigns to a packed room of volunteers and supporters of the United Way. Among those presenting their results, Sanofi Pasteur, the vaccines division of Sanofi announced another record-breaking year of funds raised to support community

services in Monroe County Sanofi.

Sanofi Pasteur and employees raised $300,000 for community services, which included employee donations to the United Way and its partner agencies, together with a company match from both Sanofi Pasteur and the Sanofi Foundation for North America.

In addition, students from Clear Run Elementary raised $700 through a coin drive competition between classrooms.

Tobyhanna Elementary Center students raised $1,500. The student government asso-

ciation sold Twizzlers, students paid for extra recess and staff paid to dress down for a day.

Swiftwater Intermediate School raised $1,150. The student government association sold Smencils (scented pencils) to everyone.

FEB. 4 The Monroe County Conservation District is teaming up with Penn State Extension to co-host the annual Farmers Appreciation Banquet on Saturday, Feb. 4, at the Polk Township Fire Hall in Kresgeville. The Polk Township ladies auxiliary will serve a family style meal and musical entertainment will be provided by the McWilliams’s Brothers.

There will also be other activities including games, door prizes, information booths and giveaways. Doors will open at 5:30 p.m. and dinner will be served promptly at 6 p.m.

It may be hard to think about spring in early February but the birds are starting to think of finding a nest site for the season. On Saturday, Feb. 11, at 10 a.m. there will be a program on bird houses that are easy to build for the area’s cavity nesters.

FEB. 14 The Pocono Garden Club has scheduled its annual social luncheon for Tuesday, Feb. 14, at noon at the Monroe County Conservation District, on Running Valley Road in Bartonsville. Club members are asked to bring a covered dish or dessert to share and their own table setting. Participation is encouraged in the Monthly design titled appropriately “Love Notes.” A parallel arrangement of fresh flowers and materials with Valentine colors. An accessory is permitted. The horticulture entry would be a single branch from a needled evergreen not to exceed 16 inches. Specimen to be in a clear container. The houseplant entry is a violet that is in bloom. Bring in your entries 30 minutes before the start of the meeting.

The Pocono Garden Club will begin with the annual budget report, along with the distribution of the 2017 club directory. Everyone interested in gardening is welcome.

Cancer fundraiser

The fourth annual Carve for Cancer winter festival is set to take over Big Boulder Mountain, on Saturday, Feb. 4. The event raises thousands of dollars for blood cancer.

Carve for Cancer 2017 features live music outside the Boulder Park Lodge from more than 10 bands, raffles, art displays, a rail jam competition, vendor village, food and drinks and of course, skiing and snowboarding.

The event is for all ages and starts at 10 a.m. and goes until 8 p.m. For the 21-and-older crowd, the party continues at Shenanigans of Lake Harmony for the after-party from 8 p.m. to close. The event is free to attend and a percentage of all proceeds from lift tickets purchased that day benefit blood cancer research and those affected by blood cancers.

Usually this time of year I write about the dog days of winter, the unrelenting cold in the center of the season.

It’s hard to do that when just coming in from doing yard work, going for a stroll in the sun and basking in 50-degree temperatures like the area experienced this past weekend.

But the premise still stands. Wines have a season. We can recapture a piece of that season when we need it. If that bitter cold stretch hasn’t come yet, I’m sure it is on its way.

The brilliant, semi-autobiographical book

by Ray Bradbury, “Dandelion Wine,” described the joys of the last summer of childhood, which included a boy picking dandelions for his grandfather to make into wine, a common Depression-era practice. In the depths of winter, sun unseen for weeks, he would emerge from the cellar and pour the glowing “summer in a glass” as a remembrance of warm, bright days plucking the flowers.

Fortunately, there are plenty of wines to take us back to the warmth of summer.

One of my favorites is sauvignon blanc, the steely, citrusy, crisp wine.

Paso Robles pioneer Justin Vineyards has a full-throttle sauvignon blanc. The wine thrives in the hotter growing conditions of California’s central coast. If you think of sauvignon blanc as lean and scrawny, Justin Central Coast Sauvignon Blanc is one that will expand your understanding of the va-

riety. This is rich in the mouth with flavors of passion fruit, green apple and lime. For all that weight, the wine ends clean with a mineral finish. $14. HHHH Geyser Peak Winery 2015 California Sauvignon Blanc is juicy and not quite dry with an even grapey flavor. The wine’s sweetness carries some honeydew to a soft finish. $10. HHH 1/2 Two under-appreciated grapes often can taste great together. Chenin blanc and torrontes come together in Innovacion Chenin Blanc Torrontes Mendoza 2014.

If the bottle seems large, it is. This comes in a 1-liter format and offers beautiful floral smells with vanilla and tropical fruit.

The wine tastes of melon and banana with a rich texture ending with an off-dry finish. It’s great for a party, and you can’t go wrong for the price. $8. HHHH It’s hard to pass up a $5 wine from a wellregarded producer of high-volume wines. Covey Run Washington State Riesling is full of ripe peach smells and flavors of nectarine and applesauce with a fairly sweet, uneventful finish. HHH 1/2 When winter hits, you can find your own summer in a glass.

CREAM OF CAULIFLOWER SOUP 6 cups cauliflower, coarsely chopped 1-1/2 cups onions, chopped 1 carrot, chopped 1/2 small green pepper, chopped 2 small cloves garlic, finely chopped 1 bay leaf Dash dry mustard Dash curry powder 1/2 cup nonfat dry milk Cook cauliflower in pot with just enough water to cover. Bring to boil; lower heat, cover and cook until tender. Transfer cauliflower, together with cooking liquid, to a blender and puree. Return pureed cauliflower to pot and add remaining ingredients, except nonfat dry milk. In a separate bowl, dissolve nonfat milk with a small amount of water; add to soup. Bring to boil; reduce heat to moderate, cover and cook, stirring occasionally until all vegetables are tender. Remove bay leaf. Puree half of soup in a blender; return pureed soup to pot and serve hot. Yield: 4 cups soup.

Warm oil in a large skillet over mediumhigh heat. Add pork chops and brown about 5 minutes on each side. Transfer to an 8x8-inch baking dish lightly coated with cooking spray or oil. Lay onion rings on top. In a small bowl, blend sour cream, mustard and flour; set aside. Add chicken broth and wine to the skillet and boil 1 minute stirring occasionally. Remove from heat. Whisk in sour cream mixture and parsley. Pour over pork chops. Bake, uncovered, until bubbly, about 45 minutes.

Yield: 4 servings.

FRESH APPLE CAKE 1 cup cooking oil 2 cups sugar 3 eggs, well beaten 2-1/2 cups flour 2 teaspoons baking powder 1 teaspoon baking soda 1 teaspoon salt 1 teaspoon cinnamon 1 teaspoon nutmeg 1 teaspoon vanilla 4 cups peeled and chopped Delicious apples 1 cup ground pecans, optional Brown Sugar Icing (recipe below) Combine oil and sugar. Beat in eggs.

Sift together dry ingredients and add to egg mixture. Fold in vanilla, apples and pecans. Pour batter into a 13x9x2-inch baking pan and bake at 325° for 55 minutes. Cool and ice cake with Brown Sugar Icing. Cake will keep moist and fresh for days. Yield: 10-12 slices.

To Prepare Brown Sugar Icing: Bring the first 3 ingredients to a boil, stirring constantly. Remove from heat immediately and stir in vanilla. Beat with a spoon until the icing is cool. Pour over cake and spread evenly.

JELLY-ALMOND CRESCENTS 1 cup unsalted butter 2 cups all-purpose flour 1/4 cup egg substitute 1/3 cup plain cream yogurt or sour cream 1 teaspoon almond extract 1/2 cup seedless all-fruit jelly or jam, no sugar added 1/4 cup ground almonds (not too finely ground) 1/4 teaspoon almond extract 1/4 cup unsweetened shredded coconut (optional) Preheat oven to 350º. Oil a large baking sheet or use nonstick one. In a large bowl, using a pastry blender or two knives, cut butter into flour until it looks like small peas. In a small bowl, bet together egg substitute, yogurt and 1 teaspoon almond extract. Stir egg mixture into the flour and form a ball. Cover and chill for 3 hours to make dough easier to handle. In a cup, mix together jelly, almonds and 1/4 teaspoon almond extract. Divide dough into 4 pieces. On a lightly floured surface, roll each piece into a 10-inch circle and spread with jelly mixture. Sprinkle some coconut on top. Cut each circle into 16 wedges.

Starting at the wide end, carefully roll each wedge into a crescent. Place crescents on baking sheet 1/2-inch apart with point seam down. Bake 15 to 20 minutes, or until golden brown. Remove from oven.

Cool 10 minutes; loosen crescents with a spatula and place each on a wire rack to cool. You can eat these warm, if you like.

Yield: 64 crescents.
