A private reunion was held late at night in the cargo terminal of Newark Liberty International Airport recently. There was no flag-waving by gathered family and friends — just a lone Army staff sergeant waiting while a terminal attendant cut the nylon ties that sealed a crate — a crate that held his beloved friend. As the ties fell away and with the mere calling of his name, Navy Chief Nathan bounded out of his crate and into the arms of Staff Sgt. Sean Harrigan of Dingsmen Ferry. They were together again.

European-born German Shepherd Nathan began his service after undergoing a year of training in Italy as a military working dog, or MWD. For the nine years following his successful completion of that training, he saw continuous service in India, Kuwait,

Europe, Iraq and Bahrain as a hunter of improvised explosive devices, or IEDs. It was in Bahrain that he and Harrigan began the year-long partnership.

Nathan and his fellow explosive-detecting MWDs, capable of a 98 percent bomb detection rate, were trained to sniff out minuscule amounts of a wide-range of explosives while searching entry points, patrolling within secure installations and at checkpoints. According to Harrigan, Nathan’s job-specific modus operandi was to retreat five feet from a device he had detected, lie down facing the potential killer and await its disposal. When asked how many such finds Nathan had detected, the answer was “countless.”

After his retirement, Nathan remained at the U.S. Naval Air Station in Sigonella,

Sicily, while Harrigan’s worked to bring him home to Dingmans Ferry.

After the clearing of the red tape, the only remaining obstacle to his homecoming was the payment of $602 in transportation fees.

Stepping up with donations to clear the way were three local area veterans organizations: VetStock; the Combat Veterans Motorcycle Association; and the Marsch-Kellogg American Legion Post No. 139 in Milford.

These days, Navy Chief Nathan can sometimes be found at the Legion post where, in recognition of his service, Legion members continue to honor him with the permanent installation of a doggie bed and an endless supply of treats, ear-scratching and head pats.

District’s Kettle Creek Environmental Education Center, 8050 Running Valley Road in Stroudsburg will hold its “building for the birds” program. It may be hard to think about spring in early February but the birds are starting to think of finding a nest site for the season. On Saturday, Feb. 11, at 10 a.m. there will be a program on bird houses that are easy to build for the area’s cavity nesters.

The horticulture entry would be a single branch from a needled evergreen not to exceed 16 inches. Specimen to be in a clear container. The houseplant entry is a violet that is in bloom. Bring in your entries 30 minutes before the start of the meeting.

The Pocono Garden Club will begin with the annual budget report, along with the

vide basic needs and self-sufficiency training.

Nearly 300 people attended the concert and were greeted by feature artist Mary McDonald and a community choir and orchestra of more than 100 individuals.

Drain and reserve the lime juice, after all of the avocados have been coated. Next, add the salt, cumin, and cayenne and mash using a potato masher. Then fold in the onions, jalapeno, tomatoes, cilantro and garlic. Add 1 tablespoon of the reserved lime juice. Let sit at room temperature for 1 hour and then serve with your favorite nacho flavored chips, crackers or veggies. Yield: about 3-1/2 cups.

SKILLET TACO CASSEROLE 1 pound lean ground beef 1/2 cup onion, chopped 1 (8-ounce) can tomato sauce 1/3 cup water 1 (1-1/4-ounce) envelope taco seasoning mix 2 eggs 1 cup milk 1 (16-ounce) can red kidney beans, drained 1-1/2 cups + 1/2 cup Monterey Jack cheese, shredded 10 taco shells, coarsely crushed (about 2-1/2 cups) 1 cup lettuce, shredded 1 small tomato, chopped 1/4 cup pitted ripe black olives, sliced In a large skillet, cook ground beef and onion until browned; drain fat. Stir in tomato sauce, water and taco seasoning mix into meat mixture; heat through. Remove from heat. Beat eggs; stir in milk. Add a small amount of the tomato sauce mixture

TENDER CHICKEN BITES 3/4 pound boneless, skinless chicken breasts For marinade: 2 tablespoons fresh orange juice 2 tablespoons dry sherry 2 tablespoons fresh basil, minced 2 teaspoons sesame oil 3 tablespoons light soy sauce 2 dried red chilies 1 tablespoon toasted sesame seeds Combine all marinade ingredients; blend well and set aside. Cut chicken breasts into 2-inch cubes and set in marinade mixture for 2 hours. Remove chicken cubes from marinade; place on broiler rack. Broil 3 to 4 minutes per side until chicken is thoroughly cooked.

Serve chicken with toothpicks on platter decoratively lined with lettuce. Yield: 6 servings.

CAJUN-SEASONED CHICKEN BURGERS 1/4 cup garbanzo beans, drained and mashed 1 egg, beaten 2 tablespoons dry bread crumbs 1 to 1-1/2 teaspoons Cajun seasoning 1/4 teaspoon salt 1 pound ground raw chicken 4 hamburger buns or Kaiser rolls, split Chili sauce, taco sauce or ketchup Cajun Seasoning (recipe follows) Combine mashed garbanzo beans, beaten egg, bread crumbs, Cajun seasoning and salt in a medium mixing bowl.

Add ground chicken; mix well. Shape mixture into four 3/4-inch-thick patties.

Preheat oven broiler and place patties on ungreased, unheated rack of a broiler pan.

Broil 4 inches from heat for about 6 minutes. Turn patties over; broil 7 to 8 minutes more until no longer pink in center.

Toast buns, if desired. Serve patties in buns with lettuce leaves, slices of tomato, chili or taco sauce. Yield: 4 servings.

To make cajun seasoning: Combine 2 tablespoons salt, 1 tablespoon ground red pepper, 1 teaspoon ground white pepper, 1 teaspoon garlic powder and 1 teaspoon ground black pepper in a container with a tight-fitting lid. Store, covered, at room temperature. Yield: 1/4 cup seasoning.

MEATBALL AND MOZZARELLA HOAGIES 1 pound ground beef 1/2 pound ground pork sausage 1 (14-ounce) jar spaghetti sauce 1 clove garlic, minced 6 Italian Rolls, split 4-ounces shredded mozzarella cheese Mix ground beef and pork sausage; shape into 1-inch balls. Cook in a large skillet over medium-high heat for 10 minutes or until browned. Drain meatballs, discarding the drippings. Combine spaghetti sauce and garlic in skillet; add meatballs. Cook over medium heat, stirring occasionally, about 12 to 14 minutes, or until done. Place roll halves, cut side up, on a baking sheet; broil 5 inches from heat (with electric oven door partially opened) 2 minutes or until rolls are slightly toasted. Spoon meatball mixture onto bottom halves of bread; sprinkle evenly with mozzarella cheese and top with remaining bread. Serve immediately.

Add potatoes and bacon. Mix gently, but thoroughly, over heat. Serve hot. Yield: 6 servings.

CREAMY COLESLAW 7 cups (1-1/4-pounds) cabbage, coarsely shredded 3/4 cup chopped green bell pepper 3/4 cup sliced green onions 3/4 cup mayonnaise 2 tablespoons cider vinegar 2 tablespoons granulated sugar 3/4 teaspoon celery seeds 3/4 teaspoon salt 1/2 teaspoon freshly ground black pepper Mix all ingredients in a large bowl until well blended. Cover and refrigerate up to 3 days. Serve chilled with slotted spoon. Yield: 8 servings.

KITCHEN TIP Clean your cutting boards: Wash chopping boards and blocks with hot water and soap and let them air dry. If you are extra concerned about bacteria, forget plastic and use wooden boards instead; food-borne bacteria have a harder time surviving on wood.

• Waggin’ Tails Pet Rescue needs volunteers to help save more dogs. Waggin’ Tails Pet Rescue is a group of volunteers based in the West End of the Poconos, who have been rescuing and re-homing dogs for years.

Volunteers are needed to help with adoption days, animal transport, fundraisers, and more. Foster homes are also urgently needed in order to save even more dogs and cats.

• The Pocono Mountain Division of the Fire Department New York retirees will meet on the last Thursday of the month, March through November, at 2 p.m., at the Eagles Lodge at 1210 N. • Monroe County Bible Clubs of “BCM International” will be conducting Inter-de-

nominational “Released Time Bible Classes” for Monroe County publi school children in Grades K through six. Home-schoolers are also welcome. Free parental permission slips (with schedules and times) to attend are now available for these one-hour weekly Bible Classes. They are held at a church facility near the school. Transportation is provided by ‘Bible Club’ approved local volunteer drivers.

• Western Pocono Community Library needs your help in collecting items for the Pleasant Valley Ecumenical Network (PVEN). PVEN offers assistance to low income families or families that have hit hard times by providing food, clothing, or other assistance as necessary. To donate non-perishable food items at the library for PVEN, stop in and place items in the red wagon near the entrance.

• Notre Dame Elementary, 60 Spangen-

burg Road, East Stroudsburg, hold bingo (all paper games) special games and progressive jackpot the last Saturday of the month at 7 p.m. Doors and Kitchen open at 6 p.m.

• Downtown Stroudsburg will host “First Saturday in the Burg” events for people of all ages the first Saturday of each month in downtown Stroudsburg. The monthly event will include sidewalk sales, food and drink specials, live music and art at participating businesses all day on Main Street and neighboring streets in Stroudsburg.

• Celebrate Recovery, a Christ centered 12-step recovery program, meets at 7 p.m.
