“This really is nice!” said Wayne Memorial Chemotherapy patient Lesley Scott of Milford, as she pulled a pair of comfy socks from inside a Kate’s Wish for Wellness Chemotherapy Comfort Bag. A total of 111 bags were delivered to Wayne Memorial by Kate’s Wish for Wellness members and supporters recently.

Created in memory of Kate Frisch Carmody, the bags were put together with the help of local 4H members. Each bag imprinted with “Kate’s Wish” contained socks, moisturizing cream, a chapstick, water, a book on Love and Strength, hard candy, relaxing teas and more.

“We were surprised and thrilled and very grateful to Kate’s Wish that they thought of us and our patients,” said Marianne

O’Brien, a nurse at the chemotherapy clinic.

The bags were the brainchild of Heather Gilbertsen, who rallied Kate’s Wish supporters to purchase the grey-pink-and-white pouches. “I just wanted to do something to carry on Kate’s legacy of kindness and compassion. She was interested in funding research but she also wanted to help patients like herself day-to-day.”

Kate is Kate Carmody, a Honesdale wife, mother and hair salon owner who battled cancer twice. She beat breast cancer but succumbed to lung cancer at the age of 43 in 2014.

A non-smoker, Kate had a rare form of lung cancer that was chemotherapy resistant. Her family and friends started Kate’s Wish for Wellness to raise money for re-

The Ramble runs 1-4 p.m. Sunday, Aug. 7, starting at Pohoqualine Fish Association in Chestnuthill Township. Participants tour natural highlights along a mapped route, each spot staffed by some of the area’s finest naturalists eager to share their knowledge and love of the McMichael.

There will be a variety of activities, including electro-fishing. New this year is a stop at Mountain View Winery and Distillery in Neola.

Ramble stops will include McMichael Creek at Stone Lake Inn, and Big Woods Natural Area.

Afterward, the traditional after-Ramble party, 4 to 5 p.m. at Pohoqualine Fish Association, a club not usually open to the public.

The seven-month program develops the leadership, interpersonal and managerial skills of juniors and provides real-world experiences in the areas of philanthropy, nonprofit organizations and community service. In addition to the skills learned and topics explored, the opportunities and challenges of northeastern Pennsylvania were discussed as participants networked with community leaders and other students. The Delaware Highlands Conservancy has awarded its annual “Delaware Highlands Conservancy/Yeaman Scholarship” in the amount of $1,000 to Daniel Smith, a 2016 graduate of Delaware Valley High School, and the “Vanessa Van Gorder Memorial Scholarship” in the amount of $1,000 to Molly Mowatt, a 2016 graduate of Wallenpaupack Area High School.

The Yeaman scholarship has been awarded annually since 2004 to a student planning to pursue a field in environmental studies in college. Given in honor of the Conservancy’s founder, Barbara Yeaman, the scholarship is open to students in school districts bordering the Upper Delaware River in New York and Pennsylvania. Officials say the scholarship embodies Barbara’s vision and the dedication of members to protect the Upper Delaware River region now and for future generations.

Recipient Daniel Smith will attend the University of Maine where he will study wildlife ecology. As a wildlife ecologist, Daniel hopes to “research ways to conserve animal populations, specifically species that are on the endangered list.” He currently raises pheasants at his home and eventually also hopes to start his own pheasant farm to do research and assist states in establishing

wild pheasant programs.

The Vanessa Van Gorder Memorial Scholarship was established in 2015 in honor of Vanessa, who tragically lost her life in 2014. A recent graduate from West Chester University with a degree in education, Vanessa was passionate about the outdoors and loved exploring the lakes, rivers and forests of the region with her friends and family.

The Conservancy established this scholarship in Vanessa’s memory and to honor her dream of becoming an educator.

Recipient Molly Mowatt will attend Penn State University Park campus and plans to double major in biology and secondary education biology. In high school, Molly was president and historian of the student council and a member of the National Honor Society, as well a participant in a wide variety of extracurricular activities. With her degrees and love of science, Molly hopes to “provide an effective and enjoyable learning experience for students, and to offer guidance to high school students at a crucial time in their lives.”

CURRY CHICKEN AND RICE SOUP 2 chicken breasts (about 2 cups) 3 cups chicken broth 1 small onion, chopped 2 cloves garlic, minced 2 stalks celery, cut into 1/2-inch slices 3 carrots, cut into 1/2-inch slices 1/2 cup rice, uncooked 1/2 teaspoon curry powder Salt and black pepper, to taste Cook chicken breasts in water to which two chicken bouillon cubes have been added; simmer 40 to 45 minutes until tender.

Remove skin and bones; cut chicken into small pieces and return to soup pot. Add onion, garlic, celery, carrots, uncooked rice, curry powder, salt and pepper. Bring to boil, reduce heat and simmer slowly for 45 minutes. Yield: 4 servings.

1-1/2 tablespoons Worcestershire sauce 2 tablespoons chopped parsley In 1-1/2-quart baking pan, arrange fish in layers. In saucepan, combine tomatoes and liquid, onion flakes, cornstarch, orange peel and Worcestershire sauce; mix well. Cook over medium heat, stirring constantly, until sauce bubbles and thickens slightly. Spoon over fish. Bake, uncovered, in preheated 350° oven 20 to 25 minutes or until fish flakes easily when tested with fork. Garnish with parsley. Yield: 4 servings.

SCALLOPINI MARSALA 1-1/2 pounds veal or eye of round sliced 1/4-inch thick 1/2 teaspoon salt 1/4 cup all-purpose flour 1/4 cup Parmesan cheese 1/2 stick butter or margarine 2 green onions with tops, chopped SALMON WITH ONION 1/4 pound mushrooms, sliced AND CARROTS 3 teaspoons lemon juice (Great slow cooker recipe.)

1-1/2 cups beef broth 2 tablespoons olive oil 1/4 cup Marsala wine 2 tablespoons butter Parsley 4 onions, coarsely chopped Cut meat into small 3-inch slices and 1 (16-ounce) bag baby carrots pound very thin between sheets of waxed pa4 cloves garlic, minced per.

Combine salt, flour and cheese; lightly 1-1/2 pound salmon filet coat pieces of meat in flour mixture. Melt 1/2 teaspoon salt half the butter or margarine in skillet. 1/2 cup wheat germ 2 tablespoons fresh parsley, chopped 1 teaspoon dried thyme Salt and black pepper, to taste Dash of crushed red pepper flakes 1/3 cup grated Parmesan cheese Cut eggplant in half lengthwise. Scoop out pulp, leaving the shell thick enough to hold vegetable stuffing. Chop pulp and reserve. Sauté onions and garlic in oil in a large nonstick skillet until onions are tender.

Add reserved pulp, red pepper, zucchini and mushrooms; sauté about 7 minutes. Stir in tomatoes and next 6 ingredients; cook 2 minutes. Fill shells with vegetable ingredients; sprinkle with Parmesan cheese. Place on ungreased baking pan and bake at 350° for 30 minutes until tender and nicely browned.

Yield: 2 servings.

FROSTED BAKED CAULIFLOWER 1 head cauliflower, rinsed and greens removed 2 tablespoons Parmesan cheese, grated 1/2 cup mayonnaise 1/4 cup parsley, chopped 2 teaspoons lemon juice Salt to taste 2 egg whites, beaten stiff Cook cauliflower in boiling salted water until slightly tender, about 15 minutes; drain well. Combine Parmesan cheese, mayonnaise, parsley, lemon juice and salt to taste; fold in beaten egg whites. Spread mayonnaise mixture over cauliflower and bake at 350° about 20 minutes until brown. Serve at once. Yield: 6 servings.

EXTRA-MOIST BERRY BREAKFAST CAKE 1/2 cup plus 2 tablespoons apple butter 3/4 cup sugar 3/4 cup brown sugar, divided 1/2 cup egg substitute 1 cup sour cream 1-1/2 teaspoons vanilla 1-1/4 cup multi-grain oatmeal, divided 1-3/4 cups flour, divided 2 teaspoons baking powder 1/2 teaspoon baking soda 1/3 cup strawberry preserves

1/2 cup raspberries 1/4 cup blueberries 1/4 teaspoon cinnamon Preheat oven to 350°. Lightly spray 10inch baking dish with nonfat cooking spray.

In large bowl, combine 1/2 cup apple butter, sugar, 1/2 cup brown sugar, egg substitute, sour cream and vanilla; blend until smooth.

Stir in 3/4 cup oatmeal, 1-1/2 cups flour, baking powder and baking soda; mix until all dry ingredients are moistened. Pour batter into prepared baking dish. Drop strawberry preserves by tablespoons on batter; swirl with knife. Top with raspberries and blueberries. In small bowl, combine 1/2 cup oatmeal, 1/4 cup flour, cinnamon and 1/4 cup brown sugar; stir in 2 tablespoons apple butter until mixture is crumbly. Sprinkle over berries. Bake in preheated oven 50 to 55 minutes, until knife inserted in center comes out clean. Yield: 12 servings.

NECTARINE OATMEAL CRUMBLE 6 ripe nectarines (about 2-1/2 pounds), cut in 1/2-inch-thick wedges 1 tablespoon freshly squeezed lemon juice 3/4 cup all-purpose flour 2/3 cup uncooked quick-cooking or old-fashioned oats 1/3 cup finely chopped pecans 1/2 cup packed light brown sugar 1/4 teaspoon allspice or cinnamon 1 stick cold butter, cut in small pieces Mix nectarines and lemon juice in a shallow 1-1/2 to 2-quart baking dish; distribute fruit evenly. Mix flour, oats, pecans, light brown sugar and allspice or cinnamon in a medium-size bowl. Cut in butter with a pastry blender or rub in with fingers until mixture resembles coarse crumbs. Sprinkle over fruit, then press down gently. Bake at 350° for 40 to 45 minutes until fruit is tender when pierced, juices bubble and topping is crisp and lightly browned. Serve warm or at room temperature with lightly sweetened whipped cream or vanilla ice cream. Yield: 8 servings.
