Taylor Community Library has lots do in September

The seasons are changing and Taylor Community Library, 710 S. Main St., is heading into a new season of events and activities. Here’s a look at what’s happening in September: • September Donation: Libraries throughout the Lackawanna County Library System are collecting clean, empty, plastic medicine vials with labels removed to be taken to Mandeville, Jamaica for use there.

• Chick Lit Book Club: Thursday, Sept. 3, at 6:30 p.m. This month’s selection is “Show No Fear” by Perri O’Shaughnessy.

• The library will be closed Saturday, Sept. 4 through Monday, Sept. 7, in observance of Labor

Day. • Purl Girls Book Club: Tuesday, Sept. 8 at 1 p.m. This month’s selection is “Pinned for Murder” by Elizabeth Lynn Casey.

• NEPA Writers Group meetings Wednesday Sept. 9 and 23 at 6:30 p.m.

• Learn the art of coupon exchange Saturday, Sept. 12, at 1 p.m.

• Taylor Historical Society monthly meeting Tuesday, Sept. 15, at 6:30 p.m. Anyone interested in local history is welcome.

• On Wednesday, Sept. 16, at 6 p.m. meet Kathleen P. Manley and Paul R. Mazzoni, authors of “The Freach and Keen Murders: The True Story of the Crime that Shocked and Changed a Community.” Books will be avail-

able for purchase or bring your own copy to be autographed.

• The “Read to a Dog” program resumes on Monday, Sept. 21, at 6:30 p.m. Bring your favorite book or choose one from the shelves. Registration is required.

• The Quilting Book Club’s annual meeting is Tuesday, Sept. 22, at 1 p.m. This months selection is “Stitches in Time” by Barbara Michaels.

Hoping for a Fast Start Vikes’ ‘confidence very high’

Despite suffering through growing pains last year, the Riverside football team never stopped improving, never gave up, and when it got to put the finishing touches on 2014, the Vikings sent themselves into the 2015 season with a flourish that secondyear head coach John Fox hopes his returning players remember.

“Ironically, we scored a touchdown on our last play of the season,” Fox said. “That was kind of the message to the kids, that we fight to the last play, every second, and that’s what they did.

“Almost every single kid is coming back, so if that carries over to this season, hopefully we’ll have a faster start.”

That touchdown against powerful Dunmore seems to have set the tone for this season. There is a lot of talent on the team, and getting off to a better start is not only possible, but somewhat imperative if the Vikings want to make a run for the District 2 Class AA playoffs.

Fox can hardly wait.

“We’re very excited about this season.

We return almost all of our starters, both offensively and defensively,” Fox said.

“The kids worked hard in the off-season, made some significant gains.

“Just the fact it’s my second year, the kids will be more comfortable in our scheme. It’s going to make them feel a lot more aggressive and confident going into the season, where last year, I felt we improved week by week, but we started off slow because it was my first year as a coach, and their first year in the system. This year, we can hit the ground running.”

The Vikings showed some promise early but lost all of their early games, but did get better as the season went along as the team refused to quit.

“We won three of our last four, and had the opportunity to play Dunmore for the league (Lackawanna Football Conference Division III) championship in Week 10,” Fox said. “We learned so much that week; they were a great team. We upset Lakeland, we upset Honesdale, which was

a Class AAA playoff team, and we beat Montrose in the middle, so the confidence was very high.”

Fox recited the list of losses from last season, pointing out that Riverside was playing well enough to battle those teams, but couldn’t find a way to win, something that young teams often have to learn the hard way.

“We were in a lot of games but we couldn’t get through those growing pains, where we would tend to make that one mistake that killed you at the end,” Fox said. “That one interception, that one turnover, that one holding penalty that would keep us from winning some of those games. We faced a lot of adversity, but it helped us grow up.

“I think the kids are excited, and if the kids can build on that momentum from last year, I think we’ll have a shot against a very good Class AAA team in West Scranton” (Fox’s alma mater, which faces the Vikings in their first game of the season).

The Vikings boast a large number of athletes accustomed to having the ball and showing great speed and good hands, starting in the backfield where backs Mikkell Green, a senior who has made the state championships in track in the 200 meters and as part of the 4-by-100 relay team, junior Paul Coleman and senior fullback Phil Sottile will be taking handoffs from returning quarterbacks Kenny Kieler, a senior, and junior Cody Glogewski.

Targets in the passing game will be receivers like junior Nick Sottile, senior Joe Austin, who also was on that Riverside 400 relay team with Green, senior Jonathan Tucker and senior tight end Matt Falon.

Up front, senior Kyle Ludwikowski will be joined by juniors Riley Gaughan and Jake Palonis as the top linemen, with a large number of players vying for playing time and providing depth.

On the defensive front, senior Mason Hughes, junior Billy Nash and Ludwikowski will get a lot of playing time.

Fox goes with a 3-5-3 defensive package, and has the linebackers to do the job as Falon, Phil Sottile, Green, Austin,

The secondary will be manned by Glogewski, Kieler and Nick Sottile.

With all those veterans coming back, Fox expects the team to get off to a quicker start. If those efforts are good enough to generate victories building upon last year’s momentum, then Fox and his team will

make for a dangerous outfit in October, when the pressure rises because the schedule will be made up of division rivals as they all vie for District 2 playoff berths.

At the start of last season, putting Riverside and playoffs together in the same sentence might not have made sense, but this year the Vikings hope to be back on track and picking up where they left off.

Benefit Waterpark Event: The Pennsylvania chapter of the Lung Cancer Alliance (LCA) will hold a “Laps For Lung Cancer” event at Montage Mountain Waterpark Saturday, Aug. 29, 1-7 p.m, Participants can swim laps from 1-2 p.m. A percentage of all food and beverage sales from 3-5 p.m. in the Montage Slocum Hollow Restaurant will be donated to LCA. Elbow Macaroni and Chickpea Soup 2 teaspoons olive oil 2 cloves garlic, minced 1 (14-ounce) can plum tomatoes, drained 1-1/2 teaspoons crushed dried rosemary leaves 2 (14-1/2-ounce) cans beef broth, defatted 2 (19-ounce) cans chickpeas, drained and rinsed 6 ounces whole-wheat elbow macaroni Pepper, to taste 1/3 cup grated pecorino Romano or Parmesan cheese Heat oil in large pot over low heat.

Add garlic and cook, stirring until golden, about 1 minute. Add tomatoes and rosemary; simmer for 5 minutes, mashing tomatoes with a fork or potato masher. Pour in beef broth and 2 cups water; bring to a simmer over medium heat. In a small bowl, mash 1 cup of chickpeas with a fork or potato masher. Stir the mashed chickpeas into the tomato-beef broth mixture along with macaroni and pepper. Simmer, uncovered, until macaroni is tender, about 12 to 14 minutes. Stir in remaining whole chickpeas and heat through. Serve soup with a sprinkling of grated cheese. Yield: 9 cups; 6 servings.

Braised Rump Roast 5 pounds beef or rump roast 1/2 teaspoon garlic powder 4 tablespoons vegetable oil 2 pounds peeled and thinly sliced onions 1 cup water 3 beef bouillon cubes Pat meat dry with paper towels; sprinkle with salt, pepper and garlic powder. Heat 3 tablespoons oil in a large heavy pot over medium heat. Add rump roast and brown on all sides. Remove meat; add remaining tablespoon oil to drippings and stir in sliced onions. Cook until lightly browned and slightly softened. Return meat to pot; spoon some onions over meat. Add water and bouillon cubes; cover and bring to a boil. Place in 300° oven and bake for 3-1/2 hours until meat is tender. Cut meat in thin slices; serve topped with onions and pan juices. Yield: 10 servings.

Molasses-Glazed Pork Tenderloin 1/2 teaspoon granulated sugar 2 slices bacon, chopped 3/4 cup fresh basil leaves, stacked and 1 (16-ounce) package frozen lima beans cut in thin strips (1/2-cup) or 12 pitted ripe olives, quartered 2 (9-ounce) packages frozen Italian Preheat oven to 400°. To prepare orange caramel sauce: Combine water and sugar in small saucepan; stir with wooden spoon until sugar is moistened. Bring to simmer over mediumlow heat; cover and simmer 2 to 3 minutes until sugar dissolves. Uncover and cook until sugar turns amber, 5 minutes.

Remove from heat and slowly stir in reserved orange juice (mixture will bubble vigorously). Return to heat and cook, stirring, until sugar dissolves. Cool; serve with cake. Yield: 12 servings.

Macadamia Nut-Banana Bread 2-1/4 cups all-purpose flour 1 tablespoon plus 1/2 teaspoon baking powder 1/2 teaspoon salt 3/4 cup firmly packed brown sugar 1/4 cup sugar 1-1/2 teaspoons cinnamon 1-1/4 cups mashed ripe bananas 1/3 cup milk 3 tablespoons vegetable oil 1 large egg 1 teaspoon white vinegar 1 cup macadamia nuts, coarsely chopped Combine first 6 ingredients in a large bowl; make a well in center of mixture.

Combine bananas, milk, oil, egg and vinegar. Beat with a wire whisk until blended.

Add to dry ingredients stirring just until moistened. Stir in macadamia nuts. Spoon batter into a greased 9x5x3-inch loaf pan.

Bake at 350° for 1 hour or until a wooden pick inserted in center comes out clean.

Cool in pan on wire rack 10 minutes. Remove from pan and let cool completely on wire rack. Yield: 1 loaf.
