Autumn is here and that means two popular fall festivals are returning.

Quiet Valley Living Historical Farm will hold its 42nd annual Harvest Festival Saturday and Sunday, Oct. 8 and 9, 10 a.m. to 5 p.m. both days, rain or shine. This year’s theme is “19th Century Tools, Technology & Trends.” In addition to demonstrations and displays dealing with the theme, there will be plenty of traditional skills and heritage crafts demonstrated. There will also be plenty of folk entertainment, good country food, children’s activities, pumpkin decorating, a quilt raffle, horse drawn wagon rides, outdoor brick bake oven and much more.

The New Jersey Frontier Guard will portray French and Indian War soldiers and there will also be a Civil War encampment by the 142nd Pennsylvania Volunteer Infantry Co. Meanwhile Shawnee Mountain will present the Autumn Timber Festival, a weekend full of family-friendly entertainment, music, food and festivities during the prime fall foliage time in the Pocono Mountains, will be held Saturday and Sunday, Oct. 8 and 9, 11 a.m. to 5 p.m. both days, rain or shine.

Featured entertainment is the 2016 Timber Team Ironjack Shows. World Class Lumberjacks straight out of the Alaskan wilderness will give demonstrations and hold competitions in pole climb, log roll, chop, saw and chainsaw.

New for 2016 will be the Classic K-9 Performance Team. This athletic team of canines does tricks and stunts in an interactive show choreographed to music and mixed with comedy and special effects. On stage, live musical entertainment will be provided both days by local favorite The Liz Nordstrom Band. The Lost Ramblers will stroll the festival grounds playing Appalachian music.

Other features of the festival include

David Feimster’s “Sue Wee” Pig Racing, Magician Stephen Christopher’s Traveling Medicine Show, Paul Bunyan Stilt Walker, “Pie Man” the Living Statue, pony rides, balloon art by Aardvark Entertainment, local blacksmith Jim Doherty and saw mill demonstrations. Chainsaw Carvers will demonstrate and display throughout the weekend.

Along with dozens of specialty food vendors, beverages will be available outdoors as well as indoors in the EZ Bumps Saloon.

The indoor Hope Lodge Café will also be open during the festival.

For a spectacular view of the Pocono fall foliage, scenic chairlift rides on Shawnee Mountain’s ski lift will be available from noon to 4 p.m. each day at an additional cost.

• The Monroe County Conservation District (MCCD) will host the 2016 Farm Tour, Saturday, Oct. 1, 9 a.m. to 3 p.m. (rain date Sunday, Oct. 2), to connect consumers with local roducers. Participants will have the opportunity to visit local farms to learn about their available products and farm management. New this year: MCCD is providing transportation to 13 passengers who call and reserve a seat on the bus. Meet at MCCD at 8:15 a.m. Bring a lunch. Brass, percussion and woodwind musicians with previous band experience are welcome to join the East Stroudsburg University/Community Concert Band (UCCB) as it prepares for its Sunday, Dec. 11 concert.

Q: I always assumed that since I am so thin and my BMI has always fallen in the “healthy” range that I was in good shape, but recent test results from my annual checkup proved otherwise. So, why doesn’t being skinny always mean you’re fit?

A.: Dr. Sharon Cline Most of us know at least one ridiculously fortunate man or woman who can eat burgers, fries, milkshakes, and just about anything else they want without seeming to gain even a pound. But the truth is, while there are higher risks for heavier people categorically, your weight doesn’t always determine your health risk, and those skinny friends with high metabolisms may not always be as lucky as we think. In fact, all of us—even if we are thin—may be up against several health risks and not even know it.

For instance, physicians’ understanding of our patients’ total weight and its effects upon the heart has evolved through over time. After years of research, we now know that it’s not a person’s weight that matters most; rather, what’s most important is how much of that weight is fat and where on the body it tends to deposit.

In a research study at the renowned Mayo Clinic in Rochester, MN, scientists compared the weights and body mass index (BMI) statistics with different health markers, and discovered that about 50 percent of people with “normal’ weights and BMIs had a high percentage of body fat as well as heart and metabolic issues, and therefore the same risks of heart

disease. These include diabetes; abnormal cholesterol; an elevated low density lipoprotein (LDL), known as “bad” cholesterol, but a low level of “good” cholesterol, known as high-density lipoprotein (HDL) and high triglycerides, which along with high blood pressure are the risk factors for metabolic syndrome. These findings led to the establishment of a new condition known as normal weight obesity (NWO), and it’s estimated that as many as 30 million Americans have it.

Women with NWO have normal BMIs but more than 30 percent of body fat, and men with NWO present with more than 20 percent of body fat and normal BMIs. It’s important to pay attention to body fat since its accumulation in the belly and around the internal organs, known as visceral fat, can cause low-level inflammation that gradually damages the body’s tissues and blood vessels. The good news is, getting rid of visceral fat can be done. The advice I give to my patients is to limit complex carbohydrates, such as bread, rice, pasta and potatoes as well as concentrated sweets, such as sugar, in their diet. In addition, limit processed foods that are high in saturated fats and add more monounsaturated fats, such as olive oil to their diets.

Omega 3 fats, found in deep water fish, fish oil, and nuts like almonds and walnuts are very beneficial and help to raise HDL. High intensity interval training workouts, or exercise characterized by periods of hard work followed by short rests, are highly efficient in burning fat, improving LDL, HDL and triglyceride levels.

On the flip side, people with normal blood chemistry who are considered overweight but have a body fat percentage lower than 30 percent in women and 20 percent in men can be classified as fit. For example, many athletes fall into this category.

Many of my patients are not even aware of their body fat percentage, and I tell them there is an easy way to estimate the risk for NWO at home by wrapping a measuring tape around their waist, just above the naval. If your weight is “normal” but your waste measurement is more than 35 inches for a woman and 40 inches for a man, it’s possible that you have NWO. Your doctor and many fitness centers can also give you a more exact measurement, so don’t be afraid to ask them to do it. In addition, your doctor can order blood testing for you as warning signs of NWO including low HDL and elevated triglycerides, along with high blood sugar levels and high blood pressure.

Finally, it’s important to remember that we are all responsible for taking care of our bodies to stay healthy both for ourselves and our loved ones. Exercising at least three times each week and eating the right balance of lean proteins, whole grains, fruits, vegetables, “good” fats like omega-3 fats from fish or nuts, such as almonds or walnuts and monounsaturated fats can help to keep our bodies running optimally.

East Stroudsburg University (ESU) biology professor Matthew S. Wallace gained a bit of immortality recently and it comes with six legs, four wings and a talent for disguising itself.

The newly named Selenacentrus Wallacei is a type of treehopper insect that was discovered by two entomologists from the University of Illinois at Urbana-Champaign, and named the genus of the new treehopper after the late Latin singer Selena Quintanilla. But the species moniker, “Wallacei,” is named for Prof. Wallace because the scientists used the ESU professor’s research to help in the insect’s identification.

“I was so flattered and surprised and honored,” Wallace said. “I never thought that would happen, so it’s just a really nice thing.”

Maria Kitchens-Kintz, Ph.D., chair of biology, said the tribute is fitting because Wallace is a highly respected professor of biology and “a world leader in the field of treehopper insects.”

“We are very pleased that someone outside of ESU has named a new species of treehoppers after him,” Dr. KitchensKintz said. “This speaks volumes about Dr. Wallace’s influence in this field, and the enormous respect Dr. Dietrich and Mr. Morris have for him as well.”

For Wallace’s doctoral dissertation, which was published in book form in 2004, he provided numerous descriptions and illustrations of different types of treehoppers.

“That book helped ut a lot in making their decision to call this a new treehopper that they had collected in Texas and Northern Mexico,” Wallace said. “So I kind of put the outline out there.”

Selenacentrus Wallacei is brown and has what looks like a hood covering its body.

Treehoppers sit on plants and suck the sap of the plant but they don’t really do much damage to agriculture, Wallace said.

“Their form is so interesting,” Wallace said. “Depending on the treehopper they can assume the shape of a leaf, of a thorn, of another insect like an ant, there’s so many different things. It’s apparently a way to hide from predators, like a type of mimicry or camouflage.”

identified each year. Those who discover them can be pretty creative in naming them, often simply adding “i” to the end of a name to “Latinize” it. Historically, Latin was the language of science and Latin names are given for species so that scientists of different languages can use the same common name for each creature.

“Sometimes people will name it after their favorite rock band,” Wallace said.

“There’s a new species of louse. Somebody had found a louse that the head looked like Darth Vader’s helmet, so they called it Vaderi.”

The number of people nationwide and abroad who study treehoppers is fairly small so researchers in the field meet each year for a camping trip in Maryland to collect species and exchange information and ideas.

By classifying these insects, scientists can better study them and where they fit into the ecosystem, Wallace said.

“If you’re talking about ecosystem health and health of the environment, treehoppers are definitely a food for other animals, other insects, birds and lizards,” he said .

Wallace himself has named newly discovered species of treehoppers, including one for a treehopper collector about a year ago.

“He’s a guy in Costa Rica who sends me all these pictures when he finds these things and I determined that one of the pictures he sent me was new, that I had never seen it before,” Wallace said. “I named it after him because he had done so much work and it was such a great contribution.”

NOODLE-BROCCOLICHEESE SOUP 1/2 cup chopped onion 1/4 cup oil 1-1/2 quarts chicken broth 8-ounce bag egg noodles 1 (10-ounce) package frozen chopped broccoli 2-1/2 quarts milk 1 pound American cheese, grated Salt, black pepper, and garlic powder to taste Sauté onion in oil in saucepan. Add broth.

Bring to a boil. Add noodles; cook for 3 to 5 minutes. Add broccoli; cook for 6 minutes.

Add milk; heat until hot. Add cheese and salt, pepper and garlic powder to taste. Heat until cheese melts, stirring frequently. Yield: 8 servings.

Sprinkle garlic slices with dash of salt and insert a garlic slice and mushroom strip into each slit. Reroll roast, tying it securely with heavy string, 2 inches apart. Place roast on rack in roasting pan and bake, uncovered, at 325º for 1-1/2 to 1-3/4 hours. Remove roast to serving platter, reserving drippings in pan.

Set aside and keep warm. Cover and freeze pan drippings 10 minutes to remove and discard solidified fat from top of drippings.

Combine cornstarch and water in a small saucepan, stirring until smooth. Add pan drippings, sour cream, dash of salt and pepper. Cook over low heat, stirring constantly, until thickened. Do not boil. Serve roast with the warm gravy. Yield: 10 servings.

Heat until bubbles form around edge of pot. Set aside for 5 minutes and strain. Dissolve cornstarch with reserved 1/4 cup milk. Return strained milk to pot and bring back to a simmer. Add milk-cornstarch mixture and stir constantly until the milk thickens smoothly. Season with cayenne, salt and pepper. Cool. Yield: 1-1/2 cups.

COCONUT-NUT DROP COOKIES 1 cup all-purpose flour 1 cup regular oats 1 cup packed brown sugar 1/3 cup golden raisins 1/3 cup flaked coconut 1/4 cup chopped macadamia nuts 1/2 teaspoon baking soda 1/2 stick butter or margarine, melted 3 tablespoons water 2 tablespoons honey

Combine flour, oats, brown sugar, raisins, coconut, nuts and baking soda; set aside.

Combine butter, water and honey; stir well.

Add butter mixture to flour mixture, stirring until well-blended. Drop by level tablespoons 2-inches apart onto baking sheets coated with cooking spray. Bake at 325º for 10 minutes or until almost set. Cool on pan 3 minutes until firm. Remove from pan; cool on wire rack. Yield: 30 cookies.

FROSTED RAISIN BARS 1 cup raisins 1 cup water 1 cup sugar 1/3 cup shortening 1 teaspoon cinnamon 1 teaspoon cloves 1 teaspoon nutmeg Combine above ingredients in a saucepan; bring to a boil for 5 minutes. Cool.

Then combine: 2 cups flour 3/4 teaspoon baking soda 1/2 teaspoon baking powder Dash of salt Mix with cooled ingredients. Spread in jelly-roll pan; bake at 350º for 25 minutes.
