On Dec. 7, 1914, a charter was granted to a group of citizens in Olyphant to operate a fire company. In celebration, a dinner was held at the Regal Room in Olyphant. The principal speaker was Pat DeSarno, superintendent of fire for the Scranton Fire Dept. The company history was presented by Joe Klaptach, Lackawanna County Fire Dept. historian. There were also remarks by Olyphant Mayor (and Treasurer of Eureka Hose Co.) John J. Sedlak Jr. and a benediction by Very Rev. Cub Scouts with Cub Pack 21 in Dickson City recently held their annual Pinewood Derby. Each boy created their car from a block of wood, carving, painting and decorating their car to reflect their own personality. Each car must not exceed a length of 7 inches and cannot weigh more than 5 ounces. Each car must be constructed of pine; the width, wheel and underbody clearance are also regulated. Each scout was presented with a Hot Wheel car, donated by Kobierecki Garage and Body Works, located on Dundaff Street in Dickson City. Divide dough into 12 equal balls. Roll each ball on lightly floured surface with lightly floured rolling pin into a thin circle, about 6 inches in diameter. Place 1/3 cup filling in center of each circle. Brush edges of pastry with beaten egg mixture and fold over to form a half-moon. Press edges with fingers or fork to seal. With spatula, carefully lift each piroshki to oiled baking sheet. Brush top of each pastry with egg mixture and sprinkle with sesame seeds, if you wish. Bake for 25 to 35 minutes or until golden brown. Serve hot with sour cream. Yield: 12 piroshky.

Macaroon Lemon Dessert (A quick treat that is very easy to make.) Chocolate Pound Cake 1 (3.4 ounce) package lemon pudding 7 ounces semisweet chocolate, chopped and pie filling mix 3 ounces unsweetened chocolate, 1/2 cup sugar chopped 2 egg yolks 2 sticks butter, room temperature 2-1/4 cups water 2 cups sugar 6 macaroon cookies, crumbled 4 eggs 1/2 cup frozen whipped topping, thawed 2 teaspoons vanilla Cook pudding according to package di3 tablespoons water rections using sugar, egg yolks and water, 2-1/4 cups all-purpose flour cool slightly. With mixer on low speed, alternately add flour in fourths and buttermilk in thirds; beginning and ending with flour. Pour into prepared pan and bake for 1 hour or until a toothpick inserted in center comes out clean. Remove to rack; cool 10 minutes. Invert to remove from pan; cool 30 minutes before applying glaze. To make chocolate glaze, if desired: Melt chocolate and butter or margarine in small saucepan or in microwave. Remove from heat; stir in corn syrup and water. If too thin, let sit until it thickens slightly. Pour warm glaze over top of cake, allowing it to drip down sides. If glaze is too thick, reheat slightly. Let cake sit several hours before serving. (This cake may be covered and held at room temperature for several days or frozen. Freeze, uncovered, until glaze is solid, then wrap in aluminum foil. Defrost, uncovered, at room temperature.)

Academic Competition

On Friday, April 17, the annual Computer Programming Contest will be held in the Loyola Science Center. Hosted by the Computing Sciences Department, the four-hour competition for high school students will involve using programming languages to solve six computer-programming problems. Immediately following the competition, an awards banquet will recognize the first-, second- and third-place teams. The Friends of Cougar Baseball Booster club, in association with the Valley View High School baseball team, will hold its fourth annual baseball clinic Sunday, March 1, for children from kindergarten through grade six, in the Valley View High School gymnasium.
