A team from Pleasant Valley High School won the Monroe County Envirothon, held recently at the Kettle Creek Environmental Education Center.

A total of 21 teams from six local high schools participated in a competition to test their knowledge of the environment.

Participating schools were: East Stroudsburg Area High School - South, Evergreen Community Charter School, Pleasant Valley High School, Pocono Mountain East High School, Pocono Mountain West High School and Stroudsburg High School.

Free Composting Classes

The Monroe County Municipal Waste Management Authority (the Waste Authority) will hold three composting classes this year. They will be held Saturdays, June 11, Sept. 10 and Oct. 8, 9-10:30 a.m.

The classes are free and composter bins will be available to purchase at cost. One lucky winner will receive a free backyard composter. All classes will be held at the Monroe County Waste Authority facility in Blakeslee, and a certified master gardener will be teaching the classes. In order to participate, you must register. NEPA BlogCon, the region’s only blogging and social media conference, has announced a nearby location and dates for this year’s STEM education day camp: Squirrel Girls Tech Camp (SGTC): Monday through Friday, July 18 through 22 at East Stroudsburg University.

Squirrel Girls Tech Camp offers the opportunity for girls in grades four through six to explore STEM topics in an encouraging, creative and confidence-building environment.

The curriculum incorporates a variety of media and hands-on activities, including lessons on computer science and programming, animation, game creation, digital music, robotics, internet safety, graphic design and digital etiquette. The experience at camp continues on with additional software to keep creating and building at home.

The camp will e open to 25 registrants at a cost of $50 per child. A limited number of scholarships are available for families unable to pay the registration fee, thanks to the generous support of NEPA BlogCon attendees and sponsors.

From 1987-2005, Boyle served as a member on the Pennsylvania Alliance for Environmental Education where she was the public relations director from 1994-1996 and the PAEE Statewide Conference Site and public relations chairperson in 1993. JUNE 17 The Monroe County Conservation District is partnering with the West End Park and Open Space Commission in sponsoring the sixth BioBlitz, funded by the Kettle Creek Environmental Fund, on June 17-18 at the West End Regional Park on Merwine-Hilltop Road in Chestnuthill Township. A BioBlitz is designed to be part-contest, part-festival, parteducational event and part-scientific endeavor that will bring together scientists from Monroe County, Academia, the Monroe County Conservation District, and the public in a race against time to count the species of plants and animals living on the park’s 244 acres.

The BioBlitz will begin at 3 p.m. Friday and ends 24 hours later. Teams of scientists and helpers will be sampling the fauna and flora of the entire property in a methodical count of what lives there. There will be ample opportunity for the public of all ages to get involved by accompanying the teams in the field or by observing and helping to count and sort a variety of species at the BioBlitz headquarters. You can help for a few hours or just stop by to learn about the process. Kids of all ages can observe and learn about how scientists do their jobs in the lab and the field.

VEGETABLE SALAD 1 large onion, chopped 3 cups medium cucumbers, chopped 1/4 cup chopped green pepper, chopped 2 tablespoons oil 2 cups medium carrots, chopped 1/4 teaspoon garlic powder 1 medium green pepper, chopped 1 small onion, finely chopped Salt and black pepper, to taste 1 (6-ounce) can V-8 cocktail 1 (8-ounce) can tomato sauce 1 (8-ounce) bag curly noodles vegetable juice 1/4 cup vinegar 1 cup sour cream 2 to 3 tablespoons prepared horseradish 1 cup small curd cottage cheese 1-1/2 teaspoons Worcestershire sauce 1 tablespoon sugar 1 cup canned peas, drained Salt and black pepper, to taste Combine cucumbers, carrots, green pepper 1 cup Cheddar cheese, shredded and onion in large bowl. 1 (14-1/2-ounce) can Italian-style stewed tomatoes 1 (6-ounce) can tomato paste 1-1/2 teaspoons dried Italian seasoning, crushed 1 egg 2 cups ricotta cheese or cream-style cottage cheese 9 no-boil lasagna noodles 1 (8-ounce) package sliced mozzarella cheese 1/4 cup grated Parmesan cheese Fresh basil (optional) In a large saucepan, cook beef and sausage until brown. Drain off fat. Stir in tomato sauce, undrained tomatoes, tomato paste, Italian seasoning and pepper. Bring mixture to boiling. In a mixing bowl, beat egg slightly with a fork. Stir in ricotta or cottage cheese.

To assemble: Spread about 1 cup of the hot meat mixture in the bottom of a 3-quart rectangular baking dish (for microwave cooking, the dish should be microwave-safe). Cover with 3 lasagna noodles, making sure noodles do not touch the edge of dish, so that they can rehydrate properly. Cover with another 1 cup of meat mixture, one-third of the ricotta mixture and one-third of the mozzarella cheese.

Repeat with 2 more layers of noodles, meat mixture, ricotta cheese and mozzarella.

Sprinkle with Parmesan cheese. Bake or microwave as directed below.

Baking directions: Cover with foil and bake at 350° for 30 minutes. Uncover and bake 10 to 15 minutes more until cheese is brown and noodles are tender. Let stand 5 minutes before serving.

Garnish with basil, if desired. Yield: 8 maindish servings.

Microwave directions: Cover with microwave-safe plastic wrap; turn back one corner to vent. Cook on high power for 17 to 20 minutes, or until hot in center, turning dish twice. Let stand 5 minutes before serving. Garnish with basil, if desired. Yield: 8 main-dish servings.

PEANUT BUTTER SHEET CAKE (A favorite requested by one of our readers.)

1 cup water 1/2 cup vegetable oil 1/2 cup creamy peanut butter

1 stick butter or margarine 2 cups all-purpose flour 1 teaspoon baking soda 2 cups sugar 2 large eggs 1/2 cup milk 1 teaspoon vanilla Peanut butter frosting (recipe below) Combine first 4 ingredients in a saucepan; cook over medium heat, stirring constantly, until smooth. Combine flour, baking soda and sugar in a large mixing bowl. Add eggs, milk and vanilla. Beat at low speed with an electric mixer until blended. Add peanut butter mixture; mix well. Pour batter into a greased and floured 13x9x2-inch pan. Bake at 350° for 30-35 minutes or until a wooden pick inserted in center comes out clean. Cool completely in pan on wire rack. Spread frosting on top of cake. Yield: 15 servings.

For frosting: 1/2 cup creamy peanut butter 1 stick butter or margarine 1/3 cup milk 4-3/4 cups sifted powdered sugar 1 teaspoon vanilla To prepare frosting: Combine first 3 ingredients in a medium saucepan; cook over medium heat, stirring constantly, until smooth. Remove from heat. Add powdered sugar and vanilla, stirring until mixture is of spreading consistency. Yield: 2-1/2 cups.

CRUNCHY BAKED APPLES 4 medium baking apples 1/3 cup firmly packed brown sugar 1/3 cup chopped walnuts 2 tablespoons light corn syrup Wash and core apples. Peel about 1 inch from top. Place apples in deep casserole.

Mix brown sugar, walnuts and corn syrup.

Spoon into apple cavity and on top. Add about 2 tablespoons water to casserole.

Cover and bake at 350° about 35 minutes or until tender.

Recently several individuals were recognized for their outstanding efforts and service at the annual Members and Friends of the Kettle Creek Environmental Education Center’s dinner.

• Eric Argot of Scotrun was named 2015 Conservation Educator of the Year. Argot, a second-grade teacher at Tobyhanna Elementary Center, was recognized for his work running the TEC Green Team for several years. The team collects paper and plastics to be recycled instead of ending up in the dumpster. He is also in charge of keeping the nature trail at TEC clean of trash and debris.

TEC students use the trail to study the natural resources surrounding their school.

• Michael Carr of East Stroudsburg was named Volunteer of the Year. Carr started volunteering with Kettle Creek in 2008 as a student at Northampton Community Col-

From their coordination of the MAPS bird banding research at Kettle Creek since 2000 to the Saw-Whet Owl banding project they conducted last fall, their programs have documented the bird populations at Kettle Creek.

• The 2016 Stanley Becker Environmental Resource Scholarship went to Dana Petrosino of Blakeslee. It was established to recognize an outstanding Monroe County High School student who has chosen to pursue an environmental major at college.

Without hesitating, East Stroudsburg University (ESU) graduate Colleen Sullivan sold her car and packed her bags. In just over a month, she will travel to Kyrgyzstan as a Peace Corps volunteer.

“I’ve always wanted to do this,” she said.

“It’s about giving back to the world, and that is so important to me.”

The international service organization of the United States sends Americans abroad to tackle the most pressing needs of people around the world. Peace Corps volunteers work at the grassroots level to implement positive change in different countries.

Sullivan’s interest in the Peace Corps stemmed from a woman who inspires her every day. When she was about 15-yearsold, Sullivan would listen to her dad tell stories about her aunt who spent in the Peace Corps and her career working as a Foreign Service Officer and living in a different country every three years.

“I always admired her for having the courage to live all over the world,” she said. “I knew I wanted to do that one day.”

Sullivan will be spending the next two years of her life teaching English in Kyrgyzstan, while living with a host family she has never met. Once she arrives in Kyrgyzstan she will meet 25 other volunteers from around the country. Moving to a developing country, Sullivan will need to adjust to living without running water and learning a language that she has never spoken.

She spends hours each day studying Kyrgyz and skyping with the volunteer hosts from Kyrgyzstan who have taught her the basics of the language.

“Everything I learn about Kyrgyzstan just makes me more anxious to get started,” she said. “I’ve been looking into this opportunity for years, and I cannot believe it is finally happening.”

It took two applications for Sullivan to be admitted into the Peace Corps and follow in her aunt’s footsteps. After being rejected the first time when she submitted her application during her senior year at East Stroudsburg University, Sullivan dedicated her time to becoming a volunteer. She traveled to Nicaragua, where she taught English, and spent her summer volunteering with the Boys and Girls Club in Bethlehem, Pa. “I was not ready to give up,” she said. “I knew if I worked hard enough, I would be able to join the Peace Corps someday.”

Sullivan, a resident of Easton, Pa., credits ESU for preparing her to go on what she considers her “biggest adventure yet.”

“Everything I learned in the classroom at ESU gave me a better understanding of cultures around the world,” she said.

“Every little bit of knowledge gives me the confidence I need to succeed.”

After her two years abroad, Sullivan plans to enroll in a graduate school program and continue her education. She will take the GRE and apply to graduate school all while living in Kyrgyzstan. Just like her aunt, she hopes to one day work as a Foreign Services Officer.

Sullivan’s bags are packed, and she is more than ready to head to Kyrgyzstan in the beginning of May.

• On Saturday June 18, Quiet Valley Living Historical Farm will open for their 53rd Summer Tour Season starting with their ninth annual summer garden party. Visitors coming to the farm for the historic tour will experience guides portraying family members going about a typical day on a homestead in the 1800s. In addition to the tour, folks will have a chance to involve themselves in a variety of garden-related activities. Tour a typical Pennsylvania German kitchen garden, get help with garden basics, sample yummy things made with fresh herbs and vegetables and take home some recipes.

At the outdoor brick oven herb breads will be baked and samples shared. Sign up by noon at the bake oven and make a small loaf yourself (one per family). There will be new adventures at the party including Foods with Funny Names, and fairy garden art. The Children’s Area will have lots of summer craft fun and bubble making for the younger set.

This event is sponsored in part by a Pennsylvania Council on the Arts Project Stream grant.

A Victorian Tea will be held at 2 p.m.

Ages 8 and older can enjoy the tea sandwiches, fresh baked cookies, scones and cake, along with herbal teas and lemonade.
