On Saturday, Jan. 7, join the Conservancy, Brookfield Renewable and other local environmental organizations for Eagle Day, a free afternoon for the whole family at the Wallenpaupack Environmental Learning Center in Hawley. There will be “Live Birds of Prey” presentations with Bill Streeter of the Delaware Valley Raptor Center (two opportunities at 1:30 and again at 3 p.m.) and hands-on activities provided

by Lacawac Sanctuary for all ages to learn about eagles and other native birds.

You do not need to register in advance for this program, but it is very popular and seating is available on a first-come-firstserved basis. Doors open at 1 p.m.

If you’re interested in eagle watching on your own, the Upper Delaware Visitor Center, 176 Scenic Drive in Lackawaxen, is provided by the National Park Service (NPS) and is a center of information for visitors looking to learn more about viewing and protecting eagles. Visitors can pick up information about the bald eagle in the

Upper Delaware River region, get maps and directions to eagle viewing locations, watch a short film and view new interpretative exhibits. The Visitor Center is staffed on Saturdays and Sundays in January and February, 10 a.m. to 4 p.m.

The Delaware Highlands Conservancy has also partnered with the NPS and the New York State Department of Conservation to maintain well-marked eagle observation areas open to the public. These viewing blinds are also staffed by Conservancy volunteers on weekends through the winter season, and visitors can look through binoculars and spotting scopes to see bald eagles in the wild. The Upper Delaware River region is one of the largest wintering habitats for eagles in the northeast United States because of abundant clean water and large, undisturbed stands of trees. Protected lands in Pike and Wayne Counties provide a safe haven for these migratory birds, as well as breeding eagles that live here year-round.

Feel free to bring your own moss (there will also be several types on hand to choose from), natural objects, and a miniature figurine if you’d like to add some unique character to your take-home terrarium. The Delaware Highlands Conservancy will hold a series of eagle-watching events all winter long, including guided bus tours and Eagle Day at the Wallenpaupack Environmental Learning Center.

The guided eagle-viewing bus trips are scheduled for Saturdays, Jan. 14 and 28 and Feb. 4 and 11. Learn from an expert guide and take a scenic drive on a heated bus throughout the Upper Delaware River region to look for and learn about bald eagles and their habitat.

The temperatures have been rapidly plummeting in Northeast Pennsylvania these past few weeks. Many locals are looking beyond the holidays to the months of January and February with a sense of impending dread.

Then there’s the ski enthusiasts, who couldn’t be happier about what’s looking to be a particularly snowy, frigid winter.

With that in mind, here’s what you can expect at Pocono ski resorts this winter.

There will be plenty of activity at the six ski resorts in the Poconos.

“Now that Mother Nature has cast a cold spell upon us, I think guests to the Pocono Mountains are looking forward to another great winter season,” said Carl Wilgus, president and CEO of the Pocono Mountains Visitors Bureau. “From snowmaking and snowsports programs to lodging and dining options, the region’s ski areas have more to offer than ever before.”

• Jack Frost/Big Boulder in Blakeslee is joining the popular snow blast movement with its SMI snowmaking fan guns, which the resort touts as improving the overall ride and slide experience on the trails. Also,

the resorts are boasting newly refurbished lodges, expanded food options and enhanced rental equipment.

• Tannersville’s Camelback Mountain Resort is continuing its expansion this season with Galactic Snowtubing, which offers nighttime laser-lit lanes and an LED light show. In addition, there’s the new Base Camp Lodge and the Camelback Lodge, a multi-million dollar “ski-in-ski-out” hotel that was crafted around the Aquatopia indoor waterpark.

Wayne Memorial Hospital employees donated two car loads of gifts for seniors to be distributed by the Wayne County Area Agency on Aging. WMH Social Services Manager Mary Burgio said she had been given names of 32 Wayne County seniors who did not have family and could use a few items, ranging from simple things like stamps and pens to a toaster oven.

“The response from hospital staff was overwhelming,” said Burgio, “it really warmed my heart.”

• Known for its family- and beginnerfriendly ways, Shawnee Mountain in Shawnee-on-Delaware has made a number of improvements in the run-up to the season, among them the installation of 3,000 feet of new snowmaking pipe, as well as portable, energy-efficient fan guns.

And, there’s new ALGE wireless electronic timing equipment for the NASTAR recreational ski racing program and youth development racing school.

Wayne Memorial Hospital’s Mobile Mammography project is likely to become a reality in 2017, thanks to the AllOne Foundation out of Wilkes Barre. AllOne awarded the hospital $200,000 for “vehicle adaptation and implementation strategy for the delivery of mammography services at numerous locations delivered via a telemedicine system in a mobile van.”

WMH grants and development manager Jack Dennis noted that the mobile mammography project has been several years in

“The Wayne Memorial Hospital auxiliary raised $100,000 for the project last year,” he said, “and we had a $156,475 telemedicine grant from the USDA rural utilities program.

This grant from AllOne helps us close the funding gap. We’re very grateful to them.”

The mobile mammography project was conceived for rural residents who are unable to access regular annual screenings due to transportation challenges. Early detection of breast cancer is key in fighting the disease.

AllOne also awarded Wayne Memorial Community Health Centers, an independent affiliate of the hospital, $30,000 for prenatal services, including educational tools for prenatal breastfeeding classes and a special scale to help assess milk transfer for babies who are not gaining weight appropriately.

“I think many moms want to breastfeed but find they have nowhere to turn if things don’t go as planned,” said Kara Poremba.

“With this grant money, most patients in labor and delivery will now get a visit from

an internationally board-certified lactation consultant such as myself to help them begin their breastfeeding journey successfully.”

Poremba, the Healthy Beginnings Coordinator at the Honesdale-based Women’s Health Center, added that outpatient consults will also now be more readily available for discharged patients to deal with a wide range of lactation issues.

Both the mobile mammography program and the additional breastfeeding aid are expected to start up in the next six months.

2016 Chevy Trax Entry Price: $20,300 Price as tested: $27,525 This week, we’re behind the wheel of the 2016 Chevy Trax, introduced in 2015 and the first Chevy compact SUV/Crossover since 1989 when the Chevy/GEO/Suzuki “Tracker” roamed the nation’s highways.

Known as Chevy’s ”city-smart” SUV, Trax offers an agile ride, a double overhead valve turbocharged Ecotec 1.4 four-cylinder engine and more than enough interior room to comfortably seat a six-foot tall adult in the backseat.

Our tester came in top-line LTZ trim with frontdrive mechanicals, although Chevy also offers an all-wheel-drive (AWD) option for the three Trax models available.

The entry LS starts at $20,300, while midclass LT begins at $22,645 and our tester starts at $25,230. The AWD option adds $1,500 to the LS, LT or LTZ models, assuring your new Trax will have some “Chevy Tracker” fourwheel traction DNA added that comes in handy during off-road ventures or inclement weather conditions.

Already a success for General Motors in foreign countries, Trax is built in South Korea and marketed in 66 global markets.

Similar in dimensions and mechanicals to the Buick Encore, consumers can save several thousand dollars if they decide to go with the Chevy model instead of the upscale Buick.

Following a week of driving that found us make several 100-mile jaunts, I’m pleased to report that the Chevy Trax will probably continue its consumer attraction and solid sales. Although no one single element was outstanding or overly impressive, the entry LS at $20,300 offers great value for those working on a budget that need a nice little crossover vehicle. Fuel mileage is decent as 2WD owners can expect 26 city and 34 highway while the AWD crowd will appreciate 24 and 31, respectively.

The Ecotec engine develops 138 horses with power transferred via a six-speed Hydramatic transmission. Thanks to the turbocharger, which feeds more air and fuel into the engine as RPMs rise higher and higher, even 138 horses feels like 175 when the turbo kicks in, resulting in 148 lb. ft. of torque. Overall, Trax still won’t win any speed contests or impress a Camaro SS enthusiast, but you’ll be able to merge on a 65-MPH freeway or pass on a two-lane country road when conditions are right.

Notable cabin features include 15 different storage bins, including a two tier glove box that features a USB connector and auxiliary jack on the upper box. Standard fare includes remote keyless entry and start, OnStar 4G Wi-Fi hotspot, MyLink seven-inch color touchscreen with AM/FM Stereo and SiriusXM Satellite/ Bluetooth, all the powers, tilt and telescopic, air conditioning, cruise and much more. Also notable are stability control, fourwheel anti lock brakes, 18-inch tires on nice aluminum wheels, rear vision camera, traction control and daytime running lamps.

Our tester came with upscale standard features that cost extra on the lower price models.

Included are driver six-way power seat with adjuster, deluxe cloth and leatherette seating, leather wrap steering wheel and rear park assist which helps in parallel situations. A $900 power sunroof option and a $500 “Midnight Edition” option featuring all-black aluminum wheels, jet black interior seating, unique front and back carpet floor mats and special black granite exterior metallic paint brought the final tally to $27,525 with $895 delivery included.

Important numbers include a wheelbase of 100.6 inches, 2,805 curb weight, 35.5 turning circle, from 18.7 to 48.4 cu. ft. of cargo space, 6.2-inch ground clearance, and a 14-gallon fuel tank.

Chevy Trax is an easy to drive, multi-functional small utility vehicle that serves well as a passenger mover or an off-road, fun weekend companion. It rides well on the freeway, is a great city traffic companion and generates decent fuel mileage in a nice compact design.

It competes with compact SUVs from Kia, Mazda, Hyundai, Nissan, Jeep, Ford, Subaru, Honda, Toyota and Buick, all of them worthy contenders and some better buys when Trax pricing goes above $25,000.

Chevy Trax may not offer “more or better” in most categories when doing comparisons, yet it’s definitely worth a test drive based on price, mechanical platform and the excellent safety ratings. However, if you plan to spend $27,500 and up on a Chevy Trax, my recommendation is to look for better buys ala Chevy Equinox that starts at just $23,100 or Chevy Envision, where pricing begins at $28,700.

Likes: Overall design, interior room, turbo engine, ‘Five Star’ safety rating Dislikes: Cargo space less than competitors, ride a bit bumpy on secondary roads, $27,500 is too much for a Chevy Trax.

New TVs donated by Santa’s elves Two of Santa’s elves showed up at Wayne Memorial Hospital recently bearing “smart” TV sets. Judy Reese and Florence Sadauskas, donated the TV sets on behalf of their non-profit group, the Scranton Telecom Pioneers.

An organization of roughly 400 retired telecommunications employees, the Telecom Pioneers routinely collect “wish lists” from charitable groups and try their best to fulfill them through monetary donations from members, raffles and other events.

In addition to the TV sets, which will be installed in family waiting rooms on two patient floors at the hospital, the Telecom Pioneers make “ouch” pillows for patients at Wayne Memorial to help ease any discomfort they might have.

Both James Pettinato, director Patient Care Services, and John Conte, director Facility Services, thanked the ladies and the Telecom Pioneers.

Recently the Pocono Medical Center presented its donation of an automated external defibrillator (AED) through the Moyer Foundation to the Trinity Episcopal Church in Mount Pocono.

In addition to its worship services, the Trinity Episcopal Church serves as a host congregation for Family Promise of Monroe County providing shelter, meals and support services for families without homes. Family Promise is a non-profit, non-denominational organization for homeless families in transition and part of a national organization founded in 1986.

Trinity Episcopal Church is also hub for its community offering support groups, recreational programs, and many other reoccurring community-based programs and events. Providing the AED through the shared mission and vision of Pocono Medical Center and the Moyer Foundation offers the assurance that should an emergency arise, the church will be wellprepared.

Let me wish everyone a Happy and Healthy New Year 2017. If you are planning a party, or having a nice family get-together, and would like to prepare something different, here are some great recipes that your family and guests will love. Enjoy, and God bless.

BACON-WRAPPED SHRIMP 10 bacon strips 20 fresh basil leaves (large leaves work best) 20 uncooked medium shrimp, peeled and deveined 1/4 cup of your favorite barbecue sauce 1/2 cup finely crumbled Feta cheese Preheat oven at 375°. Prepare bacon by cutting each strip in half widthwise; set aside. Wrap one basil leaf around each shrimp. Wrap a piece of bacon around the shrimp, and secure with wooden toothpicks. Place in a foil-lined 15-by-10-by-1inch baking pan. Bake for approximately 14-16 minutes, or until bacon is nice and crisp. Next, brush the shrimp with barbecue sauce; sprinkle with cheese. Bake an additional 2-4 minutes until appetizers are heated thoroughly. Yield: 20 shrimp appetizers.

MEATBALLS IN BEER SAUCE 2 slices bread, crust removed and cubed 1 can beer, divided 1 pound ground beef 1/2 cup low-fat Mozzarella cheese, shredded 1/2 cup onion, chopped 1 tablespoon butter 2 tablespoons brown sugar 2 tablespoons cider vinegar 2 tablespoons beef stock 1 tablespoon flour (optional) Black pepper, to taste Soak bread in 1/2 cup beer. In a large bowl, combine beef, cheese, pepper and soaked bread. Mix well and form into 32 cocktail-sized meatballs. Arrange in a single layer on a cookie sheet. Bake at 350° for 15 minutes. In a frying pan large enough to hold all the meatballs, sauté onion in butter until tender. Stir in sugar, vinegar, stock and remaining beer. Thicken with flour, if desired. Simmer over low heat for 10 minutes. Drain meatballs and add to sauce in pan. Simmer for 20

minutes, stirring occasionally to mix well.

Serve on a warm serving plate or bowl with toothpicks. Yield: 32 meatballs.

PORK CHOPS WITH BROWNED GARLIC BUTTER 1-1/2 teaspoon salt 1/2 teaspoon onion powder 1/4 teaspoon garlic powder 1/4 teaspoon white pepper 1/4 teaspoon dry mustard 1/4 teaspoon sage 1/4 teaspoon cumin 1/4 teaspoon thyme, crushed 6 center-cut pork chops, cut 1/2-inch thick 2/3 cup all-purpose flour 3 tablespoons Olive oil 3/4 stick butter 2 cloves garlic, minced 1 teaspoon parsley 1 teaspoon hot pepper sauce 1 teaspoon fresh lemon juice 1 teaspoon freshly ground black pepper Combine first eight ingredients in a small bowl; mix well. Sprinkle each side of the pork chops with 1/4 teaspoon of the seasoning mix. Rub seasonings into the chops with your fingertips. Combine flour and any remaining seasoning mix in a pie plate. Dip both sides of pork chops into flour mixture to coat; shake off excess.

In a large skillet, heat oil. Cook chops over medium heat for 6 to 8 minutes per side, or until golden brown. Drain on paper towels. In a 1-quart saucepan, heat butter until almost melted. Add garlic and cook over medium-high heat for 2 to3 minutes or until the foam on the surface is light brown. Stir in the last four ingredients. Cook until sauce is lightly browned.

Immediately drizzle over pork chops.

Yield: 6 servings.

Transfer to a large bowl. Bring medium pot of water to boil; add carrots, cook until crisp-tender, about 5 minutes. Remove from water, using slotted spoon. Add green beans to same water and boil 5 minutes; drain. Add carrots and green beans to lima beans and peas; cover and refrigerate. Place cider vinegar in small bowl; gradually whisk in oil. Season with salt and pepper and add to cooked vegetables. Refrigerate mixture at least 2 hours. Drain marinade from cooked vegetables. Add celery, tomatoes, cucumber and green onions to salad.

To make dressing: Combine mayonnaise, sour cream, Dijon mustard, 1 tablespoon dry mustard, salt and pepper. Add more mustard, if desired. Mix dressing into salad. Refrigerate until well chilled.

Garnish with lightly shredded carrot.

Serve well-chilled. Yield: 20 servings.

LEMON MERINGUE CHEESECAKE 25 shortbread cookies, such as Keebler Sandies, finely crushed, about 2-3/4-cups crumbs 1/2 stick butter or margarine, melted 4 (8-ounce each) packages cream cheese, room temperature 1-1/2 cups sugar 1 container mascarpone cheese or sour cream 4 eggs 2 egg yolks 1/2 cup lemon juice 2 teaspoons grated lemon zest

1-1/2 teaspoons vanilla For meringue: 1-1/2 tablespoons meringue powder, such as Wilton’s 6 tablespoons cold water 1/2 cup + 2 tablespoons sugar Wrap outside of 9-inch springform pan with double layer of aluminum foil. To make crumbs for crust, place cookies in plastic food storage bag; press out air and seal. Using a heavy can or rolling pin, crush cookies; transfer crumbs to bowl.

Stir in butter until combined; transfer to pan. Using bottom of measuring cup, press onto bottom and 1 inch up side of pan. Bake at 350º for 12 to 14 minutes until lightly browned; reserve.

At high speed, beat cream cheese until very light and fluffy, about 4 minutes.

Reduce speed to low, beat in sugar.

Increase speed to high; beat 2 minutes.

Reduce speed to low; beat in mascarpone or sour cream, eggs, egg yolks, juice, zest and vanilla until smooth, 4 minutes. Pour batter into crust. Place springform pan in large roasting pan; fill roasting pan with hot water halfway up side of springform pan. Bake 1 hour, 30 minutes or until cake is set and center moves slightly when pan is jiggled. After about 1 hour, if cake is browning too quickly, loosen cover with foil. Cool on rack 1 hour; cover and refrigerate at least 8 hours.

To prepare meringue: Preheat oven to 375º. Run knife around edge of cheesecake; remove side of pan. Transfer cake on springform pan bottom to jelly roll pan. Combine meringue powder in bowl with water and half of sugar; beat at high speed 5 minutes. Gradually beat in remaining sugar, beat until stiff, about 5 minutes. Using back of spoon, spread meringue over cake top. Bake until lightly browned, about 8 to 10 minutes. Ready to serve in 5 hours. Yield: 16 servings.
