Michele A. Frailey-Miller has been awarded the Greater Pocono Chamber of Commerce’s ATHENA Award.

In order to achieve this award, the recipient must meet three specific criteria. These are: to assist women to be the best they can be; hold the highest level of professional accomplishments; and provide time and energy to improve the quality of life for others in our community.

Frailey-Miller considers herself not only a leader, but more importantly, a mentor.

“If I can have a positive impact on another woman in the business world, I am a happy person! I don’t mind sharing my experience, successes, and even failures with

them because it may help them to grow into stronger, more confident, proactive and fully engaged members of society,” she stated.

As Chief Operations Officer of Frailey Insurance and Financial Services, she’s happy to say, “Our clients are our extended family; they are the fabric of our community. We strive to keep our focus local, and constantly search for ways to improve and protect the lives of our members. We live to serve.”

People, who work with Michele, know she truly practices what she preaches. She has been instrumental in not only growing the family-owned business, but constantly stays on the edge of innovation, they said.

As a life-long resident of Monroe County,

Michele has become one of its most productive and engaged citizens. She firmly supports the endeavors of non-profit organizations on an on-going basis, evidenced by her most recent volunteer efforts with the Hope for Strength Breast Cancer Fund. In addition to her extensive involvement with numerous formal organizations, she performs personal outreach and support for widows and newly diagnosed cancer patients.

• In the midst the 84,000-acre Delaware State Forest in Pike County is a glaciercarved gem. Thunder Swamp shines with creeks, 45 miles of trails, and unusual flora and fauna. As part of the free series Get Outdoors Poconos, hikers are invited to join a naturalist-led, 1.5-mile outing exploring part of this extensive preserve, Saturday, May 21.

Hikers will follow a rocky path to see evidence of coyotes, big slices of slate rising from the ground, huge boulders covered with moss and ferns, sheep laurel, blueberries, witch hazel and wintergreen. Great blue herons often survey the swamps partially maintained by beavers – a chain of three lodges lines the west side of the swamp.

MAY 18 Stroud Region Open Space & Recreation Commission (SROSRC) is partnering with the Pocono Family YMCA to offer a community incentive lifeguard certification course.

The course will be held Wednesday and Thursday, May 18-19, 5-9 p.m. and Saturday, May 21, 9-5 p.m.

In this course you will learn how to become an American Red Cross (ARC) certified profesional lifeguard. This is a blended class with online, classroom and pool components. All participants must be able to swim 300 yards, tread water and retrieve a brick at the bottom of the pool.

The cost for the course is at the incentive price of $125 plus $35 to the American Red Cross. Refunds will be given to the participants who do not pass the prerequisite (registration fee minus administrative fee of $15 will be refunded).

COUNTRY-STYLE MINESTRONE SOUP WITH PARMESAN CROUTONS 8 ounces dried navy beans, soaked in cold water overnight 1/2 teaspoon sea salt 2 quarts water 1 (3-ounce) ham slice 1/2 cup olive oil 1 Spanish onion, chopped 2 celery ribs, chopped 2 cloves garlic, minced 2 carrots, chopped 1/2 bunch flat-leafed parsley, chopped 1/2 savoy cabbage, cored and chopped 2 pounds kale, stripped from stems and chopped 1 potato, peeled and diced 2 tomatoes, peeled and chopped 1 cup green beans 1/2 pound whole-wheat elbow macaroni 1/2 cup tomato paste Salt and black pepper, to taste Drain beans and cook 1 hour with ham slice in heavy casserole in salted water over medium heat. Continue to add more salted water as the beans absorb the liquid. There should be 2 quarts of liquid at the end of cooking time.

Remove from heat and allow beans to stand in liquid. Heat olive oil in heavy soup pot and sauté the onion, celery, garlic, carrots and parsley for 12 to 15 minutes. Add cabbage, kale, potato and tomatoes and simmer 15 minutes. Remove ham slice from beans. Puree 2/3 of the beans in food processor, using small amount of the liquid as needed to puree. Add pureed beans to the vegetables, as well as the remaining beans and broth.

Return soup to burner and add green beans, macaroni, and tomato paste. Dice the ham and add to soup. Cook 15 to 20 minutes until macaroni is al dente. Salt and pepper, to taste.

For parmesan croutons: 2 tablespoons butter, softened 2 tablespoons olive oil 1 clove garlic, pressed 8 slices French bread 2 tablespoons grated Parmesan cheese To prepare croutons: Combine butter, olive oil and garlic and spread over French bread slices. Sprinkle with cheese and broil lightly.

Ladle hot soup into serving bowls; place croutons on top before serving. Yield: 6-8 servings.

HERB-GRILLED CHICKEN 1/2 cup vegetable oil 1/4 cup cider vinegar 1 egg 1 tablespoon salt 1/4 teaspoon pepper 1 teaspoon poultry seasoning 1/4 teaspoon oregano, crumbled 1/8 teaspoon thyme, crumbled Dash garlic powder Dash paprika 6 broiler-fryer chicken portions or 1 (4 to 5 pound roasting chicken Barbecue sauce (recipe below) Combine first 10 ingredients in a small bowl; beat with a fork to blend. Brush over chicken. Grill chicken, skin side up, 6 inches from hot coals, 15 minutes. Turn and baste with sauce. Continue turning and basting about 30 minutes longer, until chicken is tender but not dry.

For whole chicken: Adjust and secure chicken on barbecue spit so it will turn freely. Brush all over with sauce. Place spit about 6 inches from hot coals. Start spit rotating and roast chicken, brushing frequently with sauce, about 1-1/2 hours or until juices run clear when thigh area is pierced with a fork. Yield: 6 servings.

For barbecue sauce: 2-1/2 cups vinegar 1 tablespoon bottled hot pepper sauce 3 tablespoons butter 1-1/2 tablespoons flavor enhancer 3 tablespoons paprika 1 teaspoon black pepper 1 teaspoon red pepper 1 teaspoon thyme 1-1/2 lemons, sliced To prepare barbecue sauce: Place all ingredients in saucepan. Bring to a boil. Reduce heat and simmer about 8 minutes. Keep sauce warm while using to baste chicken.

Apply sauce after chicken is done.

heavy syrup, undrained 2 pounds pork loin Combine all ingredients except pork loin; blend until smooth. Marinate pork loin in half of mixture; refrigerate overnight.

Refrigerate remaining marinade. Grill pork 1 hour on indirect heat, which means you’re able to cook larger cuts of meat more slowly.

Bank an equal amount of hot coals on either side of the fire grate. Center a drip pan between them. Place pork on the grill directly over the drip pan. Smoke with hickory chips.

Baste often with reserved 1/2 marinade.

Slice and serve. Yield: 6 to 8 servings.

BANANA NUT ROLL (TIP: First spread filling in baking pan, then cake batter. When baked dessert is removed from pan, filling is on top, ready to roll.)

1 (8-ounce) package cream cheese, softened 1 (3-ounce) package cream cheese, softened 1/2 cup granulated sugar 1 egg 3 tablespoons milk 1/2 cup all-purpose flour 1/2 teaspoon baking powder 1/4 teaspoon baking soda 4 egg yolks 1/2 teaspoon vanilla 1/3 cup granulated sugar 1 large banana, mashed (1/2 cup) 1/2 cup finely chopped walnuts 4 egg whites 1/2 cup granulated sugar Powdered sugar Cream cheese frosting (recipe below) Chocolate-flavor syrup (optional) Lightly grease a 15-by-10-by-1-inch baking pan. Line bottom with waxed paper; grease paper. Set aside.

To prepare filling: Combine 8-ounce cream cheese and 1/2 cup sugar in a small mixing bowl; beat with an electric mixer on medium speed until smooth. Add whole egg and milk; beat until combined. Spread in the prepared pan; set aside.

To prepare cake: Stir together flour, baking powder and baking soda in a medium mixing bowl; set aside. Beat egg yolks and vanilla in a small mixing bowl with an electric mixer on medium speed about 5 minutes or until thick and lemon-colored. Gradually add the 1/3 cup sugar, beating until sugar is dissolved.

Stir in banana and nuts. Thoroughly wash the beaters. Beat egg whites in a large mixing

bowl on medium speed until soft peaks form (tips curl). Gradually add 1/2 cup sugar, beating on high speed until stiff peaks form (tips stand straight). Fold egg yolk mixture into egg whites. Sprinkle flour mixture evenly over egg mixture; fold in just until combined. Carefully spread the batter evenly over the filling in the pan. Bake at 350° for 20 to 25 minutes or until cake springs back when lightly touched. Immediately loosen the cake from sides of pan and turn out onto a towel sprinkled with powdered sugar. Carefully peel off paper. Starting with a narrow end, roll up cake using towel as a guide. (Do not roll towel into cake.) Cool completely on a wire rack. Spread top with cream cheese frosting. If desired, drizzle with chocolate-flavor syrup. Yield: 10 servings.

To prepare cream cheese frosting: Combine half of a 3-ounce package cream cheese, softened, and 1/2 teaspoon vanilla in a small mixing bowl; beat with an electric mixer on medium speed until light and fluffy.

Gradually beat in 1 cup unsifted powdered sugar. Beat in enough milk (1 to 2 tablespoons) to make a spreadable frosting. Yield: about 1/2 cup.

SWEET-SOUR BRUSSELS SPROUTS 3 cups fresh brussels sprouts 4 to 6 slices bacon 2 tablespoons vinegar 2 teaspoons sugar 1/4 teaspoon garlic powder Wash fresh brussels sprouts. Trim stems; remove any wilted or discolored leaves. In a covered saucepan, cook sprouts in a small amount of boiling salted water for 10 to 15 minutes or until crisp-tender. Drain. In a skillet cook bacon until crisp; drain, reserving drippings. Crumble bacon; set aside. To reserved bacon drippings add vinegar, sugar, 1/2 teaspoon salt, garlic powder and 1/8 teaspoon pepper. Add brussels sprouts; cook and stir until sprouts are heated through and well coated. Yield: 6 to 8 servings.

Four East Stroudsburg University student members of the University/Community Concert Band participated in the 69th annual Pennsylvania Intercollegiate Band Festival, held recently at Elizabethtown College.

The students included Mirand Tripus of Moscow on flute, Victoria Kraft on euphonium, Matthew Helbers of East Stroudsburg on trombone and Jacqueline Hoffman on oboe.

The festival consisted of three days of intensive rehearsals and concluded with a Sunday afternoon concert.

MAY 29 The Mt. Pocono Rotary will sponsor its 21st annual Community Aviation Day Fly-In Drive-In Breakfast on Sunday, May 29, 8 a.m. to 2 p.m. with this year’s major proceeds benefitting the Make A Wish Foundation at Pocono Mountains Airport.

Tickets for the all-you-can-eat breakfast are $10; $6 for kids 12 and younger. The day’s activities include free airplane rides for children ages 8-17 donated by the Young Eagles EAA program, aircraft, antique cars and military equipment displays, a raffle, the Pocono Raceway pace car, children’s activities and a Memorial Day Ceremony.

• The “Tribute to Veterans” concert will kick off the free summer concert series at the Chestnuthill Township Park on Sunday, May 29, 5-7 p.m. Chris Eckert and Leigh Pollari will perform. Bring a lawn chair, blanket and bug spray. Free refreshments for all veterans.

JUNE 11 Nationally-known and locally-based artist Mark Milroy wants to share his passion for woodblock printing with the community for free. Milroy, who produces images handcarved on wood and printed on a hand-crank press one by one, will offer a no-cost workshop Saturday, June 11, as part of this year’s Honesdale Roots & Rhythm Music & Arts Festival.
