“The General Slocum Disaster ... was entirely the result of human error, corruption and greed,” Vojnovic added. “For many years I have wanted to do artwork based on the event that could reach people in a different way than an historical text or illustration.”

FLOUNDER IN TOMATO SAUCE 1 tablespoon olive oil 1/2 green bell pepper, thinly sliced 1 small onion, chopped 1 large (28-ounce) can tomatoes, chopped 1 clove garlic, minced 1 teaspoon oregano 1/4 cup fresh basil, minced 4 flounder fillets Parsley In a large frying pan, sauté in oil the bell pepper and chopped onion. Add tomatoes, garlic, oregano and basil. Cover and cook over low heat for 7 minutes. Remove cover and cook 20 minutes. Place flounder in single layer over the tomatoes. Cover pan and simmer 5 to 10 minutes, until the fish is opaque. Sprinkle with parsley. Yield: 4 servings.

Dash of fresh parsley and basil Thin spaghetti Clean crabs; sauté in vegetable oil.

Season to taste with salt and pepper. When crabs turn red in color, add garlic, tomatoes, olive oil, parsley and basil; simmer 30 minutes. Taste while cooking to see if more seasoning is needed. Serve sauce over thin spaghetti and serve crabs on the side.

THE BEST SEAFOOD DINNER 1 sheet (one half 17-3/4-ounce) package frozen puff pastry, thawed 8 small fillets of sole, (3-ounce each), divided Pepper to taste 4 ounces smoked salmon, cut in small pieces 2 tablespoons butter or margarine, softened 1/2 teaspoon lemon juice 1 egg yolk, slightly beaten Hollandaise sauce (recipe follows) Cut pastry in 4 squares. On lightly floured surface roll each into an 8-inch square. In SOY-GLAZED SALMON center of each square place a fillet. Sprinkle Marinade: lightly with pepper; set aside. In blender or 3 tablespoons reduced-sodium soy sauce processor whirl salmon, butter and lemon 1-1/2 tablespoons orange juice juice until smooth. Spread down center of 1-1/2 tablespoons honey each fillet; top with remaining fillets. Bring 1 tablespoon grated gingerroot pastry up around fish to cover completely; 1/8 teaspoon hot-red-pepper flakes trim excess with kitchen scissors. Pinch Salmon: 4 (6-ounce) salmon steaks (3/4-inch thick) seams to seal. Place seam-side down on foil-lined heavy (or double lightweight) Cooking spray cookie sheet; chill overnight. Brush pastry Marinade: In small bowl, mix mariwith beaten yolk. Bake in bottom third of nade ingredients. 1/4 pound green beans, cut in thirds 4 red boiling potatoes, quartered, then each quarter cut into 3 pieces 1/2 pound mushrooms 1/2 cup yogurt Salt and pepper to taste Place carrots in single layer in steamer basket; steam 10 minutes. Add beans and potatoes to steamer and steam 15 minutes.

Add mushrooms and steam until carrots are tender, about 5 minutes more. Spoon into serving dishes. Spoon 1/4 cup yogurt over each serving and season with salt and pepper. Yield: 2 servings

BANANA UPSIDE-DOWN CAKE 1 cup firmly packed light brown sugar 6 tablespoons (3/4 stick) unsalted butter, softened 2 large ripe bananas, sliced 1-1/2 cups cake flour 3/4 teaspoon baking soda 1/2 teaspoon baking powder 1/2 teaspoon salt 1 cup mashed ripe bananas (about 3) 1/2 cup buttermilk 1 teaspoon vanilla 1-1/4 cups sugar 1/3 cup vegetable shortening 2 eggs Preheat oven to 350º. Using electric mixer, cream light brown sugar and butter in medium bowl; blend well. Spread brown sugar mixture over bottom of a 9-inch square baking dish with 2-inch high sides.

Arrange banana slices atop brown sugar mixture, covering it completely. Set cake pan aside.

Combine flour, baking soda, baking powder and salt in a small bowl. Mix mashed bananas, buttermilk and vanilla in another small bowl. Using electric mixer, cream 1-1/4 cups sugar and shortening until fluffy.

Add eggs, 1 at a time, beating well after each addition. Add dry ingredients alternately with creamed mixture, mixing until just combined. Pour batter over bananas in pan. Bake until cake pulls away from sides of pan and tester inserted in center of cake comes out clean, about 45 to 50 minutes.

Transfer to rack and cool slightly. Turn cake out onto serving plate. Serve warm or at room temperature. Yield: 6 servings.

ESU grad student works against pest The exotic-looking spotted lanternfly has the potential to do serious damage to Pennsylvania’s vineyards, fruit trees and timber industry, which is why the research that Kelly Murman, an East Stroudsburg University (ESU) graduate student, is doing is so important.

Murman, a master’s degree candidate in biology, is working this summer with the U.S. Department of Agriculture and the Pennsylvania Department of Agriculture on a study that could help find ways to eradicate the lanternfly before it can spread across the state.

“They’re very striking, beautiful insects but they’re still pests,” Murman said.

According to the Pennsylvania Department of Agriculture the lanternfly poses “a significant threat to the state’s more than $20.5 million grape, nearly $134 million apple, and more than $24 million stone fruit industries, as well as the hardwood industry in Pennsylvania which accounts for $12 billion in sales.”

Murman, of Avoca, is monitoring the growth and habits of the insect at seven sites around Berks County, which is the county where the invasive species was first seen in the United States in September 2014. The insect is native to such Asian countries as China and India and USDA officials suspect it arrived in the United States accidentally through international trade. To date, lanternflies have also been found in parts of Bucks, Lehigh, Northampton, Chester and Montgomery counties.

The lanternflies at Murman’s research sites are enclosed in big mesh bags surrounding nine different types of plants so they can’t get out. Murman reports on what they are eating, how many survive and other aspects of their life cycle. The idea is to figure out how to disrupt their life cycle.

“Ideally, it’s better to understand what’s going on, especially in the immature stages so you can control the fly before it’s a reproductive adult,” Murman said. “If you can kill a pest before it has a chance to reproduce, that’s just a bonus.”

Murman was recommended for the volunteer job by ESU Professor of Biology Matthew Wallace, Ph.D. She had asked Wallace, an entomologist, if he knew any suitable projects for her to get some independent study credits and he checked with his contacts in the Pennsyl-

vania Department of Agriculture. They passed the request to a USDA research entomologist who is running the lanternfly program.

Wallace was glad to recommend Murman for the work. “She’s one of the best students I’ve ever had,” Wallace said. “This is an important project. I wouldn’t have suggested her if I didn’t think she could do it. It’s very important data she’s collecting.”

It’s critical for researchers to understand which plants are most likely to be harmed by the lanternfly.

“They all suck sap from various plants and that’s where the problem comes in,” Wallace said. “They feed on economically important crops.”

The pests also excrete a substance called “honeydew” and a kind of sooty mold grows on the honeydew which can coat the leaves to the point where the plant can’t get enough sunlight to photosynthesize, Murman said.

“So they can cause damage to the plant in that way,” she said.

At some point in their life cycle, the insects need to feed on a shrub called “Tree of Heaven,” which is also an invasive species.

“The way that this pest spreads a lot of the time is called hitchhiking,” Murman said. “If someone parks in a parking lot near a tree line and leaves his or her window open even a crack because of the heat, that person could leave with a spotted lanternfly in the car and transport it someplace else.”

“I think we stand a good chance because people love their wine and they love their beer,” Murman said.

The presentation will look at a unique society that evolved from the logging railroads of Pennsylvania in the 1800s.

Forester Dick Cary will share unique logging photos, including images of the specialized locomotives and trains, logging camps, loggers, their cabins and families, most of which are extinct today.
