Local churches are planning special Christmas services

The holiday season is upon us and Christmas is already next week. Families are making plans to get together, gifts are being wrapped and houses are decorated with lights and ornaments.

During this joyful time of year, Christmas is celebrated as the Christian recognition of the birth of Jesus Christ. For many, rejoicing in the holiday includes attending the traditional Christmas service and activities with friends and family at local churches. The churches provide various events and times to fuel the festive spirit of the community.

Listed below are some of the services, events, and concerts occurring in the area that you can attend.

• Church of God, Taylor. Sunday, Dec. 20, at 10 a.m. Sunday School Christmas program during worship. Thursday, Dec. 24, at 7 p.m. Christmas Eve Candlelight service.

• Divine Mercy Parish at St. Joseph’s, Moosic.

Sunday, Dec. 20, at 7 p.m. Christmas choir concert.

• First United Methodist Church of Old Forge.

Wednesday, Dec. 23, at 7 p.m. pre-Christmas Eve service. Christmas carols will be sung.

• Moosic Assembly of God Church. Sunday, Dec. 20, at 10:30 a.m. “The King’s Birthday,” a Christmas play about the birth of Christ that will include the scene of the nativity.

Saturday, Dec. 19, from 11 a.m. to 3 p.m. there will be a cookie and nut/poppy seed roll sale. Cookies are $8 per pound and rolls will be $10 each. Thursday, Dec. 24, at 8 p.m. Christmas Eve Vigil. Friday, Dec. 25, at 9 a.m. Christmas Day Divine Liturgy.

• St. Nicholas of Myra Byzantine Catholic Church, Old Forge. Saturday, Dec. 19, at 1-4 p.m.

The UNICO National Cavaliere Joseph Coccia, Jr. Heritage, Language and Culture award was presented to Chris DiMattio at the Eastern Regional Meeting held at the Inn at Pocono Manor recently. The award is bestowed upon an individual who has demonstrated exceptional efforts in preserving and keeping, by word and deed, promoting and preserving Italian heritage, language or culture.

DiMattio was invited into and joined the Scranton Chapter of UNICO National in 1990. He served as president and continues to serve as corresponding secretary and trustee. In 2003, he became UNICO National’s membership and retention director. He traveled the country, met and installed many members and helped the organization grow nationwide.

After three years, he was then elected third vice president and was installed as national president in 2010.

Officials say he helped promote and sponsor many programs, including

“Paesani: The Story of Italian Culture in America,” produced by PBS and WVIA TV; Emmy award winner Michael DiLauro’s Italian heritage films such as “Prisoner’s Among Us, Italian American Identity and World War II” and “La Mia Strada—My Road” fulllength film documentaries of Italian American history.

Through his efforts and the support of the Scranton Chapter, a permanent endowment in Italian studies, heritage and culture was established at Penn State Worthington Scranton Campus.

For the past 20 years, DiMattio has served as president and general chairman of La Festa Italiana, one of the largest events of its kind in the country. Marking its 40th year in 2015, La Festa attracted more than 100,000 visitors.

Chris resides in Moscow, PA with wife Ann, and sons Louis Carlo and Robert Christopher. He is executive vice president and financial advisor at FNCB wealth management services.

There will be changes next fall when the Pennsylvania Interscholastic Athletic Association (PIAA) expands the number of classifications in many of the sports it oversees for the next two-year cycle, the 2016-17 and 2017-18 academic years.

The upshot is that the PIAA will be conducting more state championships per sport, with each classification having fewer schools in it.

Boys and girls soccer, and girls volleyball, are increasing their classifications from three to four.

Boys and girls lacrosse are being split into two classifications.

The PIAA collects enrollment numbers covering grades nine to 11, then breaks down its total number of schools that offer a sport into equivalent sizes.

For example, if there are 600 schools participating in a sport, under the six-classification system, the lowest 100 schools in enrollment numbers would be 1A, the next lowest 100 would be 2A, and so forth.

Riverside For the upcoming two-year cycle, Riverside has enrollment numbers of 176 for boys and 158 for girls.

In the six-classification breakdown sports of football, basketball, baseball and softball, the Vikings will be in Class 3A in boys basketball, girls basketball and baseball; and 2A in football and softball.

In football, officials from both the Scrantonbased Lackawanna Football Conference and Wyoming Valley Conference are expected to meet and see if realignment is needed or if the current format can be used. As it stands now, the Vikings, Dunmore, Mid Valley, Lakeland, Susquehanna and Northwest Area are the Class 2A schools. Carbondale Area and Montrose ended co-op agreements with Forest City and Elk Lake, respectively, in an effort to drop down in classification from 3A to 2A. In softball, the Lady Vikes have Holy Cross, Elk Lake, Wyoming Seminary, Lackawanna Trail, Mountain View, Old Forge, Blue Ridge and Northwest Area as its district rivals.

In boys basketball, the Vikings will battle Holy Redeemer, Dunmore, Mid Valley, Carbondale Area, Lakeland, Montrose and Wyo-

ming Seminary for district supremacy.

In girls basketball, the Lady Vikes will be the smallest school in the classification and will join GAR, Meyers, Hanover Area, Holy Redeemer, Carbondale Area, Dunmore, Montrose, Mid Valley, Lakeland and Holy Cross in vying for district honors.

In baseball, Riverside will compete with Meyers, GAR, Lake-Lehman, Hanover Area, Western Wayne, Holy Redeemer, Dunmore, Mid Valley, Carbondale Area, Lakeland, Montrose and Wyoming Seminary in vying for district honors.

In boys soccer, the Vikings will be 2A. They will have Scranton Prep, Berwick, Nanticoke, Meyers, GAR, Hanover Area, Western Wayne, Holy Redeemer, Dunmore, Mid Valley, Carbondale Area, Lakeland, Montrose, Blue Ridge and Wyoming Seminary as its competition for district honors.

Old Forge For the upcoming two-year cycle, Old Forge has enrollment numbers of 114 for boys and 118 for girls.

In the six-classification sports, Old Forge is Class 2A in all sports except one, football. In that sport, the Blue Devils are in the smallest classification, Class 1A, coincidently with the exact same enrollment number as Lackawanna Trail. Holy Cross is the third Class 1A football program, with 126.

In boys basketball, the Blue Devils will battle Lackawanna Trail, Elk Lake, Mountain View, Blue Ridge, Holy Cross, Northwest Area and Forest City for district Class 2A supremacy.

In girls basketball, the two-time defending state runner-up Lady Devils will join Lackawanna Trail, Elk Lake, Wyoming Seminary, Mountain View, Blue Ridge and Northwest Area in vying for district honors.

In baseball, the Blue Devils will compete with Lackawanna Trail, Holy Cross, Elk Lake, Mountain View, Blue Ridge and Northwest Area for the district championship.

Egg-Bake Sausage Breakfast 1 pound bulk pork sausage 6 frozen waffles, toasted and cubed 1 cup (4-ounces) shredded cheddar cheese 6 eggs, slightly beaten 2 cups milk 1 teaspoon dry mustard 1/8 teaspoon black pepper Maple syrup (optional) In a large skillet, cook sausage until brown; drain off fat. Arrange half the waffle cubes in ungreased 2-quart square baking dish. Top with half the sausage and 1/3 cup of cheddar cheese. Repeat layers.

In a medium bowl, combine eggs, milk, mustard and pepper. Pour mixture over layers in dish. Cover and refrigerate for 4 to 24 hours. Bake, uncovered, at 350° for 50 minutes, or until a knife inserted near center comes out clean. Sprinkle with remaining cheese. Let stand 10 minutes before serving. Cut into wedges to serve.

If you wish, serve on toasted waffles and drizzle with maple syrup. Yield: 8 servings.

Onion Soup 2 tablespoons butter or margarine, melted 1 tablespoon vegetable oil (Corn, Canola, Olive) 2 medium onions, sliced 1/8 teaspoon sugar 2 teaspoons all-purpose flour 2½ cups beef broth 2 tablespoons Vermouth or dry white table wine 1/8 teaspoon freshly ground black pepper ½ cup seasoned croutons (recipe follows) or 1 slice bread, toasted and cut into cubes Combine margarine, oil and onions in a saucepan. Cover and cook over low heat 15 minutes. Add sugar and cook uncovered 10 minutes, stirring occasionally, until onions are a deep, golden brown. Add flour and mix thoroughly. Stir in broth.

Add Vermouth and pepper; simmer 20 to 30 minutes. Place soup in cups and top with Croutons or cubes of toast. Yield: 3 servings; 1 cup per serving.

Seasoned croutons: ½ teaspoon onion powder

¼ teaspoon garlic powder ¼ teaspoon dillweed 1/8 teaspoon freshly ground black pepper ½ stick butter or margarine, softened 4 slices bread Preheat oven to 300°.

In a small bowl, add seasonings to margarine and mix well. Spread margarine mixture on one side of each slice of bread.

Cut bread into ½ inch cubes. Place on a cookie sheet and bake 15-20 minutes, or until crisp and dry. Cool and store in a tightly covered container. Use as a garnish for soups or salads. Yield: 2 cups, or ¼ cup per serving.

Rib Eye Roast with Currant Sauce 1 (4-pound) beef rib eye roast 1 teaspoon salt 1 teaspoon cracked black pepper 2 cloves crushed garlic 1 teaspoon dried thyme leaves For Holiday Currant Sauce 1½ teaspoons dry mustard, dissolved in 1 teaspoon water 1 (12-ounce) jar brown beef gravy ¼ cup currant jelly Preheat oven to 350˚. Combine salt, pepper, garlic and thyme; press evenly into surface of roast. Place roast on rack in shallow roasting pan. Insert meat thermometer so bulb is centered in thickest part. Do not add water or cover. Roast 18 to 20 minutes per pound for rare to medium. Remove roast from oven when meat thermometer registers 135° for rare, 155° for medium.

Let stand 15 minutes before carving.

To prepare currant sauce: In small saucepan, combine sauce ingredients and cook over medium heat 5 minutes until bubbly, stirring occasionally. Carve roast into slices; serve with sauce. Yield: 8 to 10 servings.

Brown Sugar-Pineapple Glazed Ham (Delicious served with cherry sauce!)

1 (6½ to 7-pound) cooked ham, (shank or rump portion) 2 tablespoons whole cloves ½ cup packed brown sugar ½ cup light color corn syrup

1 tablespoon cornstarch 1 tablespoon pineapple juice Remove skin from ham; trim off excess fat and score ½-inch deep in a diamond pattern. Insert a clove in center of each diamond. Place ham, fat-side-up on rack in roasting pan. Cover loosely with foil and bake at 350° for 1 hour.

To prepare glaze: In a small saucepan, combine brown sugar, corn syrup, cornstarch and pineapple juice. Cook and stir over medium heat until bubbly. Remove from heat.

Remove ham from oven; brush generously with glaze and bake, uncovered, 30 minutes more. Cover; let stand 15 minutes before carving. Serve ham slices with cherry sauce. Yield: 15 servings.

To prepare cherry sauce: Drain 2 (16-ounce) cans pitted tart red cherries (water pack), reserving ½ cup liquid. Set cherries aside. In a saucepan, combine ½ cup sugar and 2 tablespoons cornstarch.

Stir in reserved cherry liquid, cherries and several drops almond extract. Cook and stir over medium heat until bubbly. Cook and stir 2 more minutes.

Chicken Drumsticks with Lemon Sauce ½ cup coarsely ground blanched almonds ¼ cup fine dry bread crumbs ½ teaspoon garlic powder ½ teaspoon paprika ½ teaspoon ground red pepper ½ teaspoon salt 1/3 cup soy sauce 12 chicken drumsticks (about 3 pounds) For Lemon Dipping Sauce: 1 tablespoon vegetable oil 2 medium cloves garlic, crushed ¼ cup sugar 4 teaspoons cornstarch 1 tablespoon grated lemon zest (colored part of peel) ½ teaspoon minced ginger root ½ teaspoon salt 1 cup chicken broth ¼ cup fresh lemon juice 2 tablespoons soy sauce

2 green onions, thinly sliced Combine almonds, bread crumbs, spices and salt on a sheet of waxed paper; mix well. Place soy sauce in pie plate. Dip drumsticks into soy sauce; shake off excess and roll in almond mixture. Place on jelly roll pan. Bake at 375° for 40 minutes or until tender and golden brown.

To prepare dipping sauce: Heat oil in saucepan over medium-high heat. Add garlic; sauté 3 minutes. Add remaining ingredients, except green onions; mix well.

Bring mixture to boiling, stirring; simmer 1 minute or until thickened. Stir in green onions. Serve sauce with drumsticks.

Yield: 12 servings; 1½ cups sauce.

Sweet and Sour Ham Balls (A favorite for the holidays!)

2 pounds ground ham 2 cups soft breadcrumbs or 1½ cups dry crumbs 1 cup milk 2 eggs, lightly beaten 1 teaspoon salt ¼ teaspoon pepper 2 cloves garlic, peeled and crushed For sauce: 1 cup packed brown sugar 1/2 cup cider vinegar 1 teaspoon dry mustard 1 cup crushed pineapple with juice Preheat oven to 325°. Mix all ingredients and shape into balls. Arrange on a greased baking pan.

To prepare sauce: Mix sauce ingredients in a saucepan. Bring to a boil and cook, stirring constantly, for 2-3 minutes. Pour sauce over meatballs and bake uncovered for 1 hour, basting frequently. Yield: 8 servings.
