Ropes Course at Kalahari

Gorilla Grove Treetop Adventures is now open at Kalahari Resorts and Conventions. The new outdoor aerial adventure features eight ropes courses composed of 87 elements and designed for all levels from kids to beginners and experts, officials say.

“This new amenity is a perfect fit for the culture of recreation in the Pocono Mountains,” Todd Nelson, owner of Kalahari Resorts and Conventions, said. “It gives guests the opportunity to experience the beauty of the wooded setting of the course while challenging them with physical activities that range from easy with children’s courses close to the ground, to extremely difficult expert tree to tree challenges.” said Nelson.

In addition to the ropes course, the new park will feature quad racing zip lines, the only zip line attraction of its kind in the region. Four at a time, guests can race to the zip line finish to compete for the fastest time.

NOV. 8 The Pocono Garden Club will hold a general meeting on Tuesday, Nov. 8, at 1 p.m. at the Kettle Creek Environmental Education Center, Running Valley Road in Bartonsville.

The Club Design committee will present a member project “Creating a Harvest Centerpiece.” Members are asked to bring a container no larger than 8-10 inches in diameter.

Also an assortment of dried flowers, grasses and/or seed pods from your garden. Artificial fall flowers, candles, pumpkins or any kind of fall figurines may be included. Members and guests are encouraged to participate in the monthly design titled “autumn’s splendor,” a vertical arrangement in beautiful fall hues. The horticulture entry is a collection of dried plant material including flowers, grasses, seed pods, etc., placed in a container of the exhibitor’s choice. Five or more specimens to be included. A begonia, which may be flowering or not, is the houseplant entry.

WMH builds helipad More than 200 adults — many of them first responders — and children turned out for a grand ribbon-cutting ceremony, marking the completion of Wayne Memorial Hospital (WMH)’s helipad at 1839 Fair Ave. in Honesdale. A Geisinger Life Flight chopper was on site and open to all to climb aboard and investigate.

WMH CEO David Hoff thanked the WMH auxiliary for funding most of the $124,000 cost of the site. Project One Step, in partnership with Pocono Alliance, will hold its fourth annual benefit choral concert on Saturday, Nov. 5, at 7 p.m. at the Stroudsburg High School auditorium. This year’s featured artist is Mary McDonald of Knoxville, Tennessee, a 35-year veteran in the field of sacred music. She will be sharing the stage with more than 100 local musicians of the Project One Step Community Choir and Orchestra.

All seats are reserved and may be purchased for $15 each online, at the door or at participating churches. There is also a discounted price of $10 for senior citizens and students.

All proceeds from this event will be distributed to agencies in Monroe County that

work to provide food, clothing and/or life training skills and education for under resourced families. Collection bins will also be set up in the lobby at the concert so that attendees can directly donate nonperishable foods, new clothing or housekeeping supplies to these organizations.

1 cup water 1 tablespoon sweet basil 1 tablespoon oregano AUTUMN SOUP 1 tablespoon ground cumin 1 cup onions, chopped 1 teaspoon Italian seasoning 3 tablespoons butter or margarine 1 teaspoon salt 1 (16-ounce) can pumpkin 2 (6-ounce) cans tomato paste 1 (10-1/2-ounce) can condensed For cheese mixture: chicken broth 2 pounds Ricotta cheese 2 cups water 2 eggs, beaten 1/2 cup instant mashed potato flakes 1 teaspoon salt 2 teaspoons dried parsley flakes 2 tablespoons fresh parsley, chopped 3/4 teaspoon dried dill weed 1/2 cup grated Parmesan cheese Salt and black pepper to taste, 1 tablespoon dried oregano if desired 1 pound lasagna noodles, cooked 1/4 cup low-fat plain yogurt 2 pounds Mozzarella cheese, Dash nutmeg thinly sliced In a large saucepan, cook onions in butter To prepare meat sauce: Brown sauor margarine until tender. Add pumpkin, broth sage and ground beef. Remove from pan and water; blend well. Bring to a boil; reduce and brown onions in meat drippings. Add heat and simmer 15 minutes, stirring occatomato puree, water and seasonings. Cover sionally. Stir in potato flakes, parsley, dill, and slowly simmer 2 hours. Add tomato salt and pepper; simmer 5 minutes, stirring paste and meat to the pan. Simmer 3 more frequently. In a small bowl, combine yogurt hours, stirring occasionally. and nutmeg; mix well. Ladle soup into serving To prepare cheese mixture: Combine all bowls; spoon a teaspoon of yogurt mixture ingredients and set aside. onto each serving. Yield: 5 (1 cup) servings.

Place potatoes in lightly greased 2-quart Bake at 350º for one hour until golden casserole; sprinkle with salt and pepper. Top brown. Yield 4 servings. with thinly sliced onion; sprinkle with crushed thyme. Place ham on onion and add milk.

Cover and bake at 350º for 1 to 1 1/2 hours ZESTY SAUSAGE LASAGNA until potatoes are tender. Yield: 6 servings.

For meat sauce: Here are some hauntingly delicious recipes for you to try.

1 pound Italian sausage, skin removed 2 pounds lean ground beef 1 large onion, chopped 2 (30-ounce) cans tomato puree

SWISS STEAK 2-1/2 tablespoons flour 1/2 teaspoon salt

1/4 teaspoon black pepper 1-1/2 pounds boneless steak (round, chuck or rump) 2 tablespoons shortening 1-3/4 cups canned stewed tomatoes 1 large onion, thinly sliced Mix together flour, salt and pepper.

Sprinkle half of mixture on one side of steak; pound in with mallet; turn meat over and repeat pounding. Melt shortening in large pan; add meat over medium heat and brown well on both sides. Add tomatoes and sliced onion; cover and bake at 325º for 2 to 2-1/4 hours until tender. Yield: 4 servings.

PUMPKIN-CHOCOLATE CHIP CAKE 2 cups sugar 1-1/4 cups vegetable oil 4 large eggs 1 (16-ounce) can pumpkin 3 cups all-purpose flour 2 teaspoons baking powder 2 teaspoons baking soda 1 teaspoon salt 1-1/2 teaspoons cinnamon 3/4 cup semisweet chocolate morsels 3/4 cup walnuts or pecans, divided Beat sugar and oil at medium speed of an electric mixer 5 minutes. Add eggs, one at a time, beating just until yellow is not noticeable. Add pumpkin; beat at low speed just until blended. Combine flour, baking powder, baking soda, salt and cinnamon; add to pumpkin mixture. Beat at low speed 2 minutes. Stir in chocolate morsels and 1/2 cup walnuts or pecans. Pour batter into lightly greased and floured 10-inch tube pan.

Sprinkle with remaining nuts. Bake at 350º for 1 hour an 10 minutes or until a wooden pick inserted in center comes out clean. Cool in pan on wire rack for 30 minutes; remove from pan and cool completely.

HALLOWEEN FACE PAINT 1-1/4 teaspoons cornstarch 1/2 teaspoon water 1-1/4 teaspoons cold cream 1 drop food coloring Mix all ingredients together with a Popsicle stick. Use a muffin tin to separate colors. Apply to face with fingers.

HALLOWEEN PLAY DOUGH 1 cup salt 2 cups flour 4 teaspoons cream of tartar 2 cups water 2 tablespoons oil Food coloring Mix together over low heat. Knead when done. Keep in airtight container.

Halloween Kitchen Tips: • When slicing off the top of your pumpkin, slice it on a slant. This prevents the lid from slipping into the pumpkin.

• Use a cookie cutter to cut your child’s sandwich into bats or pumpkins.

• Make jack-o-lantern flashlights for your child by drawing pumpkin faces on the lenses of the flashlights with a washable marker.

• Place a little warm water inside your jack-o’-lantern and using tongs, add a piece of dry ice. An eerie fog will come creeping out of your pumpkin.

• To get the best photo shots of kids in their Halloween costumes, kneel down so your camera is eye-level with them, not high above.

• For a fun Halloween snack, fill clear disposable gloves with popped popcorn, placing an almond at the tip of each finger for “nails.”

Caroline Verkaik, who has been a Stroudsburg area resident for 11 years, will represent Monroe County this spring in the Mrs. Pennsylvania United States pageant, a preliminary for the Mrs United States pageant.

Verkaik is mother of six: four of her own and two from her current husband’s previous marriage.

“I am very excited and honored to have been selected,” she said. “I am not just competing in a pageant. I am joining hundreds of married women all over the world and the United States who have decided to be a voice for others. I feel very honored that I am now a citizen of the United States for the last 10 years (she was born in Kenya) and I can represent the many beautiful married women of my county for the title of Mrs. Pennsylvania United States with other county representatives from all over the state of Pennsylvania.”

Verkaik said her platform is “understanding depression and other mental illnesses, with the focus of bringing an end to the rate of suicide or attempted suicide especially in our young children.”

She said her goal is to reach as many families as she can through speaking engagements and volunteering.
