If you’re gearing up to host your first Super Bowl party, don’t limit yourself to chips, dips and beer. Plenty of seating, a big-screen TV and a lavish spread of food and beverages are the bare bones of a successful party that will keep your fellow fans asking if you’re hosting next year’s party too.

Place the sofa and loveseat in good viewing positions, then work your way around the room to add more seating. A row of dining room chairs or bar stools behind the sofa and low ottomans placed on each side of the room add more seating for your guests.

Super Bowl Decorations

Hang light-blocking curtains or blankets over the windows to block excess light from reflecting off the TV screen. Football-shaped helium balloons float overhead, while individual chalkboards or dry erase boards allow your friends to plot the next play. Cut coasters from artificial grass, available at home improvement centers, and scatter them about the room, on your coffee and end tables. Alternately, use plastic tablecloths to protect your tables from accidental

spills and water rings. Scatter bowls of popcorn, peanuts, Chex mix and spiced nuts about the room for snacking.

A Super Bowl Worthy Buffet

Half the fun of a Super Bowl party is the feast. In warmer climates, you may spend the morning grilling chicken and ribs, when the weather outside is frightful, simply cook them in the oven. Crock-pots and chafing dishes allow you to keep all the food warm, such as: ribs, chicken, hot links, sweet and sour meatballs, macaroni and cheese, roasted potatoes and nacho sauce. If the buffet table is already full, place the desserts and the Super Bowl cake on a separate table where it’s easy to cut and serve the cake.

While the Super Bowl is always associated with beer, provide an assortment of beverages for your friends. Pitchers of sangria and freshsqueezed lemonade, bottled hard cider or lemonade, red or white wines, sodas, bottled water and specialty beverages, such as non-alcoholic ginger beers and sparkling juices, slake the fans’ thirst. Easy Ground Turkey Spaghetti

Recipe

Ingredients:

1 tablespoon olive oil

1 pound lean ground turkey

3 cloves garlic minced

½ cup onion diced

½ teaspoon salt

¼ teaspoon pepper

3 cups marinara 24-ounce jar

2 1/2 cups low sodium chicken broth

1 teaspoon balsamic vinegar

1 tablespoon italian seasoning

1 tablespoon fresh parsley 8 ounces spaghetti noodles broken in half

Directions:

Place a large dutch oven or large 5-7 quart pot on the stove. Turn the heat to medium high and add the olive oil.

Once the pot is warm spread the ground meat out in the pan to brown. Season the meat with salt and pepper. Stir and break up the meat as needed cooking it all the way through until brown, about 7-10 minutes.

Zucchini Fritters

Ingredients:

1 1/2 pounds zucchini, about 2-3 medium to large zucchini

1 shallot, finely diced

2 eggs, beaten

1/2 cup almond flour salt and pepper, to taste

2 tablespoons olive oil, for frying Sauce: Sour Cream(Optional)

Directions

Grate the zucchini and put into a bowl. Sprinkle with salt, stir together and let stand for 20 minutes. The salt will work to draw the moisture out of the zucchini. Squeeze out the liquid from the zucchini and return to a clean bowl. Add the shallot, eggs, almond flour, salt and pepper. Then stir to combine. Heat the oil in a

Mix everything well. Break the spaghetti in half and add to the pot in small handfuls. Try to spread out the pasta in the pan. Bring the pot up to a boil, then cover the pot and turn the heat down to medium heat to simmer. Cook the pasta covered for about 12-14 minutes or until tender. Stir the pasta occasionally while it cooks to help keep it from clumping. The pasta is done when it is tender. Shut off the heat and let the pasta stand for a 2-3 minutes to soak up a little more of the sauce. Serve with cheese or parsley and enjoy!

Easy Triple Stacked Strawberry Cream Cheese Cupcakes

Ingredients:

Cake Mix

1 box of strawberry cake mix (follow directions on the back of box for cupcakes)

TIP: Divide batter evenly into cupcake liners, filling each two thirds full. Bake for 20-23 minutes and cool completely.

Frosting:

8 ounces cream cheese, softened

1⁄4 cup butter, softened 16oz powdered sugar 1⁄2 cup mashed drained fresh strawberries

Directions for frosting: Blend together the cream cheese and butter using an electric mixer on low speed until combined, about 30 seconds. Add 4 cups powdered sugar, gradually, add the mashed strawberries; blend frosting again on low speed until the sugar is incorporated, 1 minute.

To assemble, remove paper baking cups, and cut cupcakes in half horizontally. Set aside 16 cupcake tops. Pipe frosting onto cut side of 16 cupcake bottoms- I used Wilton 1M piping tip; top each with another cupcake top or bottom. Pipe about 1 tablespoon frosting on each cupcake. Top with reserved cupcake tops. Pipe frosting on cupcake tops. Decorate with sprinkles, if desired. Store in refrigerator until serving.

Easy Stuffed Strawberries

Ingredients: 1 lb fresh strawberries

8 oz cream cheese

1/2 cup powdered sugar

1 tsp vanilla chocolate chips (optional)

Directions: Rinse your strawberries and cut out the stem plus a little more of the center of each strawberry. Then cut off enough of the tip of the

strawberry so that it can stand alone. Next, beat together your cream cheese, sugar, and vanilla until nice and fluffy. Then place mixture in a pastry bag and pipe into each strawberry, adding a little extra to the top. Optional: drizzle with melted chocolate chips. Place in fridge until thoroughly chilled. Don’t make too far in advance or your strawberries will sweat and may become a bit soggy.

A classic charcuterie board (pronounced shar-koo-tuh-ree) board is made of meats and cheeses. You can serve this as an appetizer, as a snack, or even fill it with a few more hearty slices of meat and make it a fun meal! But because these platters are becoming so popular, I’ve decided to add in a few fruits and candies to not only add in some color and texture but to make it festive for the holiday!

My kids love it when I make a charcuterie board! They think it’s so fun to help me decide what to put on and then tell me where to put it. This Valentine’s charcuterie was filled with so many delicious spreads and fruits. It made it hard not to eat it all up before I made it! The best part about these is that you can easily switch things out to your favorite foods and make them your own! I make them for all of the holidays because they are such a hit with friends and family!

Start with the Cheese and Meats Cheese is part of all classic charcuterie boards, so you can’t skip this step! It not only lends itself to a savory taste, but the texture of cheeses is just so different than anything

else on the board. Plus, this is where you can get really creative with the flavors that you choose and then introduce your guests to new flavors. Here is a list of the cheese that I used for this Valentine’s charcuterie board:

When I am making a charcuterie board for a holiday, like this Valentine’s Day, I like to bring in all the fruits in those holiday colors pinks, reds, and purples.

This is my kids’ favorite part of any holiday charcuterie board that I make… The treats!

The candy on this board brings in so much color and then just takes the fun level up a notch. You can go crazy and use whatever kind that you love! Because you are making this during a holiday time then it will be super easy to find themed candy in your seasonal aisle at your grocery store.

INGREDIENTS

1 package Italian Dry Salami made into flowers

1/2 cup Grape Jam

Fruit of your choice

1 bag Cherries

1 package Blueberries

1 package Strawberries cut into half

1 package Raspberries

1 bag Red Grapes

Cheese of your choice

1 package Garlic and Herb Boursin

1 wedge Wensleydale with cranberries

1 brick Sharp cheddar

8 oz Plain Goat Cheese with Pink Food Coloring

Candy of your choice

1 package Lindor Chocolate Truffles

1 bag Conversation Hearts

1 bag Cinnamon Hearts

1 package Chocolate Hearts wrapped

1 package XOXO gummies

INSTRUCTIONS

Over the heart shape charcuterie board, start assembling your board by adding the cheeses. Next, add the salami. I used a small cup and arranged the salami like a flower.

Add in your fruits and fruit jam.

Fill in the board with candies and chocolates. Add roses for an extra touch!

GETTING AROUND THE LOWCOUNTRY

It’s easy to get to beautiful Beaufort County - just a short drive from I-95 or US 17. Both roads run north-south along the east coast of the United States and connect to other interstates and major highways.

Driving south on US 17, exit onto US 21 at Gardens Corner and enjoy the scenic marsh views going approximately 20 miles east into the downtown Beaufort area.

Driving south on I-95, take Exit 33 at Point South and connect to US 21 for a direct route into the center of Beaufort. Driving north on I-95, take Exit 8 onto US 278 toward Hilton Head Island and directly into the Bluffton area and the southern part of Beaufort County. This route connects to SC 170, across the Broad River into the city of Beaufort in the northern part of the county.
