andy Jenkins, the owner of Rustic Underground, is a true Ocean City local — born and raised. His work succinctly captures the laidback vibe and weathered elegance that has made the area a renowned East Coast travel destination. But, it is his newest creation that is attracting attention. While fishing on the Route 50 Bridge, his son caught a big flounder. Wanting to create something that captured the memory of his son’s catch, and using the materials he loved working with, he created his first piece of Rustic Taxidermy. His Rustic Taxidermy work is proudly handmade. The focus is on creating custom pieces that show the true marks of craftsmanship. He starts by laying out each fish by hand, with anatomical precision yet without the aid of a computer. His designs capture the look of weathered materials that have been exposed to the sometimes aggressive wind and waves of the Atlantic Coast. To create the look of oxidized metal and weathered wood is a method he developed on his own, by trial and error.

Jenkins has created the Rustic Taxidermy of mahi-mahi, mako shark, marlin, tuna, rockfish and many other commonly caught area fish. He adds the longitude and latitude coordinates specific to each catch, helping him create a unique narrative for every work of art. Rustic Taxidermy has enjoyed an enthusiastic reception by the public from the beginning, which explains the rapid growth of the business. Jenkins says he focuses on his client’s desires to three-dimensionally capture a memory in time, something that they can display with pride in their homes and share stories about with friends. But the process isn’t easy. Working with steel and cypress to create Rustic Taxidermy requires a combination of equal parts clear vision and craftsmanship. Responding to the Call SUZANNE THURMAN TRANSFORMED A CHANCE ENCOUNTER WITH A SEA TURTLE INTO DELAWARE’S OFFICIAL RESPONDENTS FOR STRANDED MARINE MAMMALS AND SEA TURTLES HISTORY: Suzanne Thurman has always possessed a natural, profound connection to the ocean and a passion for environmental conservation. One day, she discovered a needy sea turtle stranded on the shoreline, and she quickly realized there was nowhere nearby she could take him for aid nor were there any local resources for her to call. Her experience with the sea turtle helped her recognize the need for communitybased support in marine-stranding situations, so she established the MERR Institute, Inc., in 2000. Short for Marine Education, Research and Rehabilitation Institute, Inc., the MERR Institute is today authorized by the National Marine Fisheries Service and the State of Delaware as the official stranding respondents for the marine mammals and sea turtles of Delaware.
BECOME A MEMBER OF MERR Anyone looking for a less handson approach to supporting the organization’s mission may also become a member of MERR. Financial donations are also greatly appreciated and help to ensure MERR can provide its necessary services.
HOW TO HELP: MERR has over 400 volunteers, ranging from office staff and lab helpers to field responders. Community members interested in becoming a volunteer may start by emailing MERR through their website. A two-hour volunteertraining workshop, followed by additional volunteer positionspecific training, are required to officially join the MERR team. cs

HOW IT HELPS: The MERR Institute delivers three invaluable services to the community: 1. Rescue: MERR responds to between 250 and 350 rescues per year, and their coverage area consists of the entire state of Delaware. While they are most known for responding to sightings of turtles that have washed ashore, they also answer calls for countless other animals, especially seals in the winter months. 2. Research: MERR lives by the mindset that research is the key to the future. Its research methods consist of data collection and autopsies of deceased marine animals, which provide insight into how to better protect other animals. MERR’s research has also delivered vital information on threatened and endangered marine species. 3. Education: An essential element for future ocean conservation and a pillar of MERR’s mission is education. Its educational outreach includes programs catered to people of all ages. These programs are attended by thousands each year and cover topics such as conservation awareness, teaching people how to report a stranded marine animal and other environmental topics.

liding through the small coastal town of Bethany Beach, popular and ubiquitous sites of a beach resort crowd the eye. But near the restaurants, shops and rows of beach cottages standing together in a line is a unique home designed with a stylish intention of how to enjoy the town’s gentle, simple charms. Bethany Beach provides the relaxed beach-living appeal that quickly drew in the Blazers and brought back a flood of memories. Kiera Blazer visited Bethany Beach during summers when she was a girl, and her family vacationed there when her sons were younger. But three years ago, when one of her sons visited a friend who had a house in downtown Bethany, she realized this was the ideal spot for their second home. Within three weeks of the eventful visit with their son’s friend, the Blazers purchased a lot and began looking for an architect. After seeing a home that Scott Edmonston, AIA, of Sea Studio Architects, had designed, Kiera called him. “I went to him with a blank sheet of paper,” she recalled. He listened intently and understood instinctively what they were looking for in a second home. The attention to detail that both the Blazers and Edmonston required would demand a builder who shared the same precise standards. One builder’s name was continually mentioned in various circles. It was the name Bruce Mears. Mears designs most of the homes he builds, but ironically had always wanted to work with Edmonston. After reviewing the plans, he knew the project would be a challenge, but he admittedly likes that. “With all the steel in this house, it was like a science project,” Mears said, almost gleefully. The house is clean, open and welcoming. It is modern and angular, but somehow cottage-like. Immediately noticeable is the wall of windows at the front of the house. Though the bank of glass allows onlookers a glance into the home, it also lets in something much more precious: daylight.

When it came to what she likes best about the house, Kiera found it difficult to suggest that she favors any of the many beautiful details over the others. But after a thoughtful pause, and with a chuckle, she gave it a shot. “I love the clean lines and the modern decor, all of the windows, too,” she said. The home also provides bedrooms that will sleep a lot of family friends. It is the benefit of beginning a home project with a blank sheet of paper and an architect who translates a family’s ideas into gleaming reality. The Blazer home has undoubtedly made a visual impact in Bethany Beach, with passing cars, pedestrians and children on bicycles slowing to get a better look at this work of art. Those who once wondered what the impressive structure rising during construction would look like no longer have to guess at the owner’s intention. They have designed their piece of Bethany from the ground up, to enjoy the beach in their own way. cs

erfectly content with the vacation home they had purchased in Dewey Beach in 2015, a tight-knit family from Montgomery County, MD, envisioned years of enjoyment while relaxing at their seaside retreat. But when the lot next door went on the market in 2018, a few discussions took place about acquiring the adjacent land. “Maybe we should buy the lot and put in a pool,” the husband recalled saying to his wife. “If we do that, we’ll need to build a bathhouse and a couple of units above it for guests.” What quickly evolved from those initial conversations was a concept to expand the house across both lots, quite literally, into a spectacular residence that was seamless in its appearance —

as if it had been there all along. After completing the purchase, this giant-sized vision required a massive demolition phase during which the house’s drywall, plumbing and electrical components were removed and modernized from the ground up. The rebuild involved a number of local contractors, including the talented trio of Overture Ultimate Home Electronics, Lane Builders and interior designer Barbara Anderson. Although it has taken more than two and a half years to complete, in large part due to a town ordinance that quells construction between Memorial Day and Labor Day, the time frame seems completely reasonable given the amount of ingenuity, technology and detail in the home. Starting at the top, the rooftop level of the home is reserved for the family’s sunset-viewing deck, which will later be finished with a bar and a high-definition TV. The master suite occupies the fourth level of the home. Its adjoining outdoor deck is accented by a stunning linear gas firepit. Inside, the homeowners enjoy spectacular views of the Bay and understandably don’t want furniture or a TV obstructing it.

To remedy the situation, Overture manager Michael Patille designed a system that secured a 75-inch TV, recessed in the tray ceiling, for viewing TV and the Bay simultaneously. The third level’s features include a professional kitchen, spacious, open living room and the aforementioned swimming pool. Overture secured an eye-catching 86-inch outdoor TV above an entrance so that pool-goers and those on dry land could take in whatever is on from just about any location on the deck. The second level includes bedrooms for the 8- and 11-year-old children, a game room with a pool table and a custom home theater boasting what is supposedly the very first 8K TV on the East Coast. “This is literally the greatest TV ever made,” Patille said. Not to be outdone, the ground level offers its own fun for the family and their guests. Patille repurposed the garage into a sports lover’s ultimate recreational room — highlighted by an 18-sport simulator, which is the most sophisticated ever installed by Overture.

Don’t let your guard down Traditions may change in the wake of COVID-19, but attention to safety shouldn’t COVID-19 has changed many activities that we normally take for granted — some of our summer traditions included. While you may need to take some added health precautions this summer, it’s important to remember some of the age-old summer safety tips, too.
INFECTION PREVENTION • It is especially vital this summer to avoid sharing germs. COVID-19 cases have diminished, but the coronavirus is still out there — along with many others. Continue to avoid large crowds, especially if immunocompromised. Everyone should wash their hands often and avoid contact with people who are sick. If you are sick, seek appropriate care and take steps to avoid infecting others.
TICKS • Going outdoors is more appealing than ever as we continue to keep some social distance. But make sure summer pests keep their distance, too. When going outside — especially in wooded areas — wear insect repellent that contains DEET. Wear long pants and spray it on your clothing, as ticks often like to catch a ride on a pant leg and burrow in later on. When you come inside, do a thorough tick check, shower and toss your clothing into a dryer on high heat.
WATER SAFETY • While at the beach, be aware of dangerous rip currents and wave conditions that can cause even strong swimmers to drown. Check water conditions before heading to the ocean, and swim in lifeguarded areas. If you find yourself caught in a rip current that takes you away from shore — stay calm and swim to the side, parallel to the shore, to break free.
• If you find that a tick has bitten you, remove it immediately with fine-tipped tweezers, pulling upward with steady, even pressure — don’t twist. After removing the tick, clean the bite area and your hands with rubbing alcohol or soap and water. Take note of the bite date, so you don’t forget. If you develop a rash or fever within several weeks of removing the tick, be sure to let your doctor know when it occurred.
• Large waves can take people by surprise and swiftly pull them under. Never turn your back on the water — especially if you’re watching children. Don’t dive headfirst into wavy waters — waves can make it easy to misjudge the depth and cause a neck injury. Equip children with life jackets and never let them swim unsupervised; even adults should never swim alone.
SUN SAFETY • Unfortunately, there’s really no such thing as a “healthy tan.” The tanning of your skin is its way to try to protect itself from sun damage. If you like the sun-kissed look, apply a sunless tanning cream — and always use a broad-spectrum sunscreen of at least 30 SPF when you’re outside. Don’t forget sunglasses to help keep your eyes protected from UV rays that can eventually lead to cataracts and other vision issues.
• Never go swimming alone is a good rule for pools as well, and small children should always be in arm’s reach. “Don’t run” isn’t just a pool lifeguard’s mantra — it’s a safety essential. It is easy to slip and fall in wet conditions, and a head injury plus water is a potentially deadly combination. If you have a pool at home, make sure it isn’t accessible to children unless an adult is present.
• Seek shade, whether it’s a cool patio, canopy of trees, an umbrella or a broad-brimmed hat. UV rays are at their strongest between 10 am and 4 pm, so heading to the beach early in the morning or in the evening are good options (and might help you avoid the big crowds, too).
Remember to apply suncreen of at least 30 SPF every two hours or every 40 minutes when swimming.

President of Nanticoke Memorial Hospital. As COVID-19 hospitalizations continue to decrease across Delaware and Maryland, providers are getting back to the business of healthcare and working to identify what a new normal looks like. “Our goal is to convey to the public that their hospitals and medical practices are safe, ready and waiting to deliver the care they may need, including emergency care,” said Michael Franklin, FACHE, President/ CEO of Atlantic General Hospital. “We want to allay fear and be sure residents understand never to delay seeking emergency or urgently needed medical care.

King of hearts Separated from his wife by thousands of miles due to COVID-19 restrictions, Robert Hall needed open-heart surgery and chose PRMC Robert Hall, 69, an international insurance broker, found himself stranded in Salisbury in April due to COVID-19 travel restrictions — his wife, Mimi, thousands of miles away at their second home, in Paris. Then it happened, again. Severe chest pains. They were like the ones he had three months earlier in France that led to a stent to open an artery 90 percent clogged. A failed stress test proved he needed open-heart surgery, right away, in the middle of a pandemic. “I took a look at what was happening around the world and locally with this virus, made some calculations, trusted my docs that Peninsula Regional Medical Center was the best and safest place to have my heart surgery and determined I couldn’t fold the hand,” said Hall, a former Marine. “It was go all in or play three aces and hope for the best.” The best happened, and Hall continues his relatively pain-free convalescence at home, walking nearly two miles a day and well on his way to a full recovery. “If Mimi ever needed this type of care, I’d bring her home from Paris to have it done here,” he remarked. “I can’t express how courteous and helpful everyone was at PRMC during a very challenging time for them to make this unplanned journey tolerable for me.”

Safe food preparation, cooking and food storage practices, along with personal hygiene, are important to prevent food-borne illness. As we gather outside this summer and enjoy picnics and cookouts, remember the principles of food safety — “The Four C’s.”
CLEAN
Wash your hands with warm water and soap for a minimum of 20 seconds before handling foods, and especially after handling raw meats, poultry and seafood.
CONTAIN
Keep raw food items such as meats, seafood and poultry in separate coolers or containers to prevent juices from raw food products leaking onto produce or dry foods.
COOK
In preparation for grilling or cooking raw meats, it is best to thaw them safely in the refrigerator or use the defrost setting on a microwave. Fully defrosted meats will cook more evenly and consistently.
CHILL

I have four grandchildren. I love them dearly, and I miss them. They live in the Netherlands, and I haven’t seen them in months, except for FaceTime or Zoom. They, too, have quarantined, done remote homeschool and have limited travel. I have learned a lot from them, though. They have had fun. They have spent time outside, in the fresh air. They hike, ride bikes and take long walks. I am hopeful, as we head into summer, we here in Maryland and those across Delmarva can continue to watch our COVID-19 volumes decrease to zero. If we are to survive the summer and prevent continued infection from COVID, I think we should all think more like children. First, wash your hands. Kids love water and love to spend time in the bathroom, washing their hands. We have them wash their hands when coming in from outside, before eating and at bedtime. Preventing COVID means we need to do the same: Wash our hands. When we come home, go into work, visit a friend or family member, handwashing for at least 20 seconds works on germs. Sing “Happy Birthday” (it’s a 20-second song). Use a paper towel or a clean hand towel to turn off the faucet when you are done. This seemingly simple task is one of the key things we can do to prevent the spread of COVID and many other viruses. Second, keep six feet apart from people not in your family and friends circle (those you see and interact closely with daily). Kids aren’t often quick to walk up to strangers. We share with them the need to avoid strangers, which includes avoiding germs like COVID. If at the store or a large gathering, keep your distance from those you don’t know. Third, wear your mask! Kids love to dress up. My grandchildren have princess outfits, cowboy outfits —

they even have a nurse outfit I got for them. We need to embrace our masks. Although uncomfortable, they do a great job in preventing all of us from spreading germs when in a community location indoors. Masks should be worn to cover your mouth and nose, and they should be washed daily. There are lots of creative people making masks. Seek them out and see if you can get a few extra masks. Handkerchiefs and bandanas work well, too. Fourth, my favorite: Get outside and enjoy fresh air. My grandkids love walks, bike rides, swimming and all sorts of outdoor activities. The fresh air outdoors is one of the best ways to avoid germs. The air movement prevents the COVID germs from sticking around. Fresh air is also good for our soul, our psyche, and our mental health. We have done a great job of reducing COVID infections on Delmarva. Let’s all continue to take simple steps to protect our loved ones: Wash our hands, practice physical distancing, wear a mask and get outside to keep COVID away. Harness the inner kid inside of you this summer and stay safe!

Telehealth remains a viable primary care or behavioral health option for those who are unable to see their medical provider inperson. 1 pint grape tomatoes 1 lb asparagus 2 Tbsp olive oil 1 clove garlic, minced Salt and pepper to taste Balsamic glaze

Flip steaks, placing them on an unused, hot grill area to ensure beautiful grill marks, and repeat. Check for doneness and continue to cook until desired temperature is achieved. INGREDIENTS 4 lb chicken wings, cut and tips discarded 1/3 cup Key lime juice, fresh-squeezed 1/2 cup brown sugar, packed 1/4 cup olive oil 6 large garlic cloves, roughly chopped 1/4 cup oregano leaves, loosely packed 1/4 cup parsley leaves, loosely packed 1/2 Tbsp kosher salt Pepper to taste
INSTRUCTIONS Place cut wings in a gallon-sized sealable plastic bag. Place remaining ingredients in a blender to combine until smooth. Pour mixture over wings and marinate for a minimum of 2 hours — overnight is best. Try to turn the bag every few hours, so the wings marinate evenly. Prepare grill and cook over medium heat. Save the marinade and baste the wings every couple of minutes, especially after turning. Stop marinating after 10 minutes of cooking time and discard the marinade.

PATIENCE IS A VIRTUE Bethany Blues head chef Israel Cotoc-Pec has spent plenty of time learning the intricacies of “Little Reggie” — the restaurant’s signature smoker that’s capable of handling roughly 44 pork butts and 40 briskets at one time.
All right, Zach. Let’s talk about the St. Louisbarbecue-style ribs you have going here. What makes Bethany Blues famous for these? ZW: This is our award-winning St. Louis rib. This is 100% hickory-smoked, with no gas assistance. It is all done by hand, the old, old-school way. GLG: Can you walk me through the preparation process? ZW: Sure! The process starts by peeling off the membrane on the backside of the cut. If you don’t, the ribs will be chewy. Then, the spare rib gets trimmed down to the center cut. That’s what the St. Louis rib is. Next, we’re going to put an even coat over the top. They call it a rub — not because you’re massaging it in but because you’re rubbing it over to get a nice, even layer on top. We add a sweet brown-sugar rub on ours. It’s got a little bit of cayenne, salt, pepper, garlic, onion and a few other ingredients, so you’re going to get a nice, sweet heat from it. We don’t season the bottom. Some people do; we do not. Then it’ll go into our smoker for about three and a half to four hours. That is the typical range for our St. Louis ribs. What we’re also known for is chopping this up and tossing it in Buffalo sauce. We call it “Pigs on the Wing.” That’s probably one of the most iconic dishes we have at Bethany Blues.

GLG: Talk about this smoker you’ve got going here. I’ve been in a lot of restaurants and haven’t seen anything quite like this. ZW: This is Little Reggie. We had him custommade in Mesquite, Texas, and brought him here in 2003. We actually had to take the back half of the restaurant off just to get him in. We call it him Little Reggie because we had a former [Washington] Redskins linebacker help us get it in here. He is a friend of our owner, so we named it after him. This is a massive rotisserie-style smoker; you could park your car inside, it’s so big. It’ll fit about 44 pork butts and 40 briskets. It’s smoking 24/7, and everything that you get out of Bethany Blues is 100% hickorysmoked.

GLG: Without giving away your trade secrets, what tips can you share with our readers who want to make St. Louisstyle ribs at home? ZW: My biggest advice for a home cooker is get to know your smoker. Every smoker is a little bit different. Don’t beat yourself up if it doesn’t turn out the way that you wanted the first time — it’s going to take practice. I have a bunch of friends who have been smoking as a hobby for years, and they’re still finding where the hot spots and where the sweet spots are for what they’re cooking. It’s all different, too — a rack of ribs isn’t going to cook the same as if you’re smoking a pork shoulder. For doing a rack of ribs at home, I would recommend brining it and cook it low and slow. Don’t be afraid to check it every now and again, but if you’re looking, you’re not cooking, so let it go. cs

Skip Schlesinger is a retired Realtor/ developer who has competed in and judged competitions for the Kansas City Barbeque Society (KCBS) all across the country. To say he’s obsessed with smoking, grilling or cooking anything in his backyard (his latest endeavor is making pizzas from scratch) would be an understatement. His little corner of paradise is outfitted with three Weber smokers of various sizes, three Weber charcoal
grills, a competition-style smokerand-wood-box, an Old-Carolina-style cinder-block pit (great for clams and oysters, Skip said) and a pizza oven. Even with that impressive arsenal of cooking firepower at his fingertips, Skip said the real stars of his outdoor cooking environment are the various racks of flavored wood — all meticulously stacked and all sourced from his property in Ocean Pines and another local family member’s land.
“I’ve got racks of cherry, racks of oak and racks of maple, all separated by species. I’m old school, too: I smoke with the bark on. A lot of guys take it off, but I prefer to keep it on. The smoke is the most important part of the entire operation. Get your hands on the right wood, and you’re in the game.”
SKIP’S PULLED PORK SHOULDER Preparation: Rinse and pat dry. Rub a light coat of mustard on meat to help the dry rub adhere to the shoulder. Dry Rub: Rub bone-in shoulder with a dry rub, rotating between a sweet layer followed by a layer of heat. There are many flavors available to choose from. Smoker Preparation: When cooking pork, I prefer to use a pecan or oak wood. Cooking Instructions: Put meat on the smoker when the emanating smoke is clear. Smoke at a temperature of 225-250° for 5-6 hours, depending on the size of the shoulder. Spritz frequently with fruit juice, apple cider vinegar or a bourbon cocktail, depending on your preference. Test for doneness. When fully cooked, the shoulder bone should be easily pulled out. Cool and shred. Serve with coleslaw and your choice of BBQ sauce.

Drizzle honey on top of ribs and rewrap. Place back on the smoker for 2 additional hours to render the remaining fat. Remove, open wrap and cool for 1 hour before serving.

Many people think getting a properly smoked sausage is as easy as buying sausage, putting it in the smoker and cooking it until it is done. In fact, there are a few more steps and strategies to get that sausage you fell in love with at your favorite BBQ joint. Our first step is probably the most important. We make our sausages in house and use only fresh pork and beef. We make andouille, kielbasa, jalapeño-cheddar, chorizo and Texas Hot Guts sausages. We also use only Heritage or Berkshire pork for our sausages, which is never frozen, and has a natural higher fat content. If you choose to make your own sausages, you will pay more for pork of this quality, but the results are far worth it. If you choose not to make your own sausages, then seek out a reputable butcher and make sure to always buy fresh. The following steps are important to get that “Snap” skin style that is sought after from a quality BBQ. The first step is to air dry the sausages overnight in refrigeration, with a fan blowing on them, to remove the moisture from the outside of the casing. The second step is that when the sausages have reached the desired temperature in your smoker, promptly remove them and give them a quick bath in some ice water — not enough to cool the internal temperature, just a quick bath. UNCOMMON SENSE According to Jess Pryles, culinary wizardry doesn’t come from a magic spell. “A lot of cooking is just a matter of logic. If you know the principles, a lot of it’s easy,” she says.
BQ is a style of cooking that has no pretense and makes no excuses. If food could walk, BBQ would swagger. It is unapologetically tricky to master but easy to eat. In short: It is perfect. Few people are as ready to share the secrets, tips and reasons to BBQ as the renowned live-fire cooking expert and Hardcore Carnivore brand-founder Jess Pryles. An Australian native, Pryles had visited Texas so often that she eventually relocated there permanently. She says she made the move because of the people and the food, but BBQ lovers know it was probably the food. The lure of BBQ is multifaceted. Pryles thinks one of those reasons is that using live fire to cook is primal. The kind of cooking she and other BBQ experts are passionate about is a visceral experience. Your senses are engaged as you see the fire lick the sides of a pan or smell the fragrant smoke wafting around you. ANCIENT APPEAL Pryles thinks that barbecue’s enduring legacy stems from its primal quality, in which groups of people gather to have their senses engaged by lapping flames as they cook raw food in the open air, just as it has been done for thousands of years.
Diving deep into the lifestyle of live-fire cooking and the BBQ scene can be a daunting task, as Pryles is quick to acknowledge, but she gives scholarly advice on how to get started. “There is a correlation between the quality of gear and the quality of cooking,” she explains. She encourages experimentation with what you may already have available before investing in a large smoker or pit. Using a charcoal grill reconfigured to use wood is an inexpensive way to begin. One of the reasons pellet grills have become popular is because they are easier to use, and pellets provide consistency. As an acknowledged meat advocate and expert on BBQ, Pryles is constantly asked questions about how to cook TexasBBQ-joint-worthy food. Responding to those questions is a role that suits her well, and she answers with knowledge and enthusiasm that flickers like fire. “A lot of cooking is just a matter of logic. It is a delicate meat, and heat removes moisture. It’s about principles, remember.” BBQ is not always easy, but it is worth the time and effort. It is a way to slow down, connect with what you are cooking and be around those who appreciate the results. It is worth the time spent to master cooking in this unique way. INSTRUCTIONS Heat your smoker or pellet grill to run at 250-275°. Sprinkle the salt and about onethird of the meatchelada seasoning over the wings, then toss them to coat. Lay them in the smoker and cook until they reach an internal temperature of 145-150°. This will take about an hour. As the wings are nearly finishing smoking, heat the fryer/oil. It needs to be at least 350°, preferably 375°. If you are frying in batches, allow the oil to come back up to temperature between each batch. Place the wings into the fryer and cook for 2-3 minutes, until the wings have turned a crisp, deep-golden color. Drain briefly, then sprinkle over remaining seasoning, tossing to coat. Serve wings immediately.

GRILLED RIB-EYE STEAK WITH BROWNED GARLIC BUTTER INGREDIENTS 1 x 2.5 lb rib-eye or cowboy steak 1 stick of salted butter (4 oz), divided and softened 6 cloves of garlic, crushed 1 Tbsp fresh parsley or thyme, chopped 1 Tbsp Hardcore Carnivore Black seasoning or 2 tsp salt INSTRUCTIONS Start by making the garlic butter. Place half the butter in a small saucepan over medium-low heat, and cook until butter starts to foam and brown, about 3-4 minutes. Add the crushed garlic to the pan, and cook over low heat another 5 minutes, stirring occasionally, until garlic browns but does not burn. Remove from heat and allow to cool. Once cooled, combine the garlic butter with the room-temp butter. Add the parsley and mix well. Spoon the butter mixture onto a piece of plastic wrap, and roll into a tube shape, sealing the ends. Refrigerate until firm, at least two hours. Preheat a grill for two-zone cooking. The grill should be on medium-low heat, 300-350°. Pat steak dry with paper towel and season well on both sides with Hardcore Carnivore Black. Place the steak onto the cool side of the grill, away from the heat, and close the lid. Cook to desired temperature. When the steak is at its desired internal temperature, remove to rest under foil for 10 minutes. While the steak is resting, crank the grill heat to 500°+ to sear. Once the grill is hot, sear the steak for 1-2 minutes per side to achieve maximum crust. To serve, cut a few pats of butter from the log, and quickly place on top of hot steak to melt. Serve immediately. cs
