It has certainly been an exciting time for Playa. After countless accolades and five years of providing an unmatched guest experience as The Royal Playa del Carmen, a new chapter has begun.
Hilton’s selection of Playa as its strategic partner in the development and management of all-inclusive Hiltons throughout the Caribbean, Mexico and Latin America reflects their confidence and conviction in Playa’s best-in-class stewardship of all-inclusive resorts. We can now introduce Hilton’s loyal fan base to an entirely new experience, starting with Hilton Rose Hall, Hilton Playa del Carmen and soon, Hilton La Romana.
Playa is uniquely positioned to shepherd Hilton’s growth in the all-inclusive space, and we remain steadfast in our commitment to be the #1 company and manager of choice in the segment.

Firstly, a warm hello to all our new Playa Pulse readers. You should know we created this publication to unite our employees across the globe. I hope you find it makes the distance between us feel a little bit shorter.
As you are all aware, our Playa family has grown exponentially this summer. We have increased to 12,000 hard-working, dedicated, loyal associates. Over the past months, we have spent time getting to know our newest family members and teaching them about who Playa is as a company—our values, our brands, our hotels and who we are as individuals.
As we focus this edition of Playa Pulse on our growing Playa family, I want to take a moment to acknowledge that our associates are engaged, productive and go above and beyond every day at work. Playa recognizes that in addition to our individual commitment, perseverance and wholeheartedness, our success is often driven by the support of our own families outside of work. No matter who in your family is there for you, I want to thank them as well and offer them a warm welcome to our extended Playa family. Allow this issue to be our formal introduction. In the coming pages, you will better get to know your Playa family members from near and far. It brings me great joy to know that our Playa family extends from Fairfax, Virginia to Cap Cana, Dominican Republic and I hope it does for you as well.

Is there one employee or memory that has had an impact on you during your tenure in the hospitality industry?
A general manager called Jerry Best was my first general manager in Los Angeles at Marriott – a 1000 room hotel. What really impressed me is that he knew every employee by name. Unlike myself using the nametags to cheat at the time. He knew something about the employees’ families. As the one of the highest revenue earning hotels in the Marriott chain, this was unheard of. He was an English-speaking American but was able to connect with two to three dozen different nationalities from Asian to Hispanic to European and everything between. It was through his gestures, his facial expressions, his smile, that he could was able to engage with his staff. It was amazing. He recognized who they were and the value of people and how you can move them. Not necessarily by speaking but by understanding.
When we teamed up with Hyatt, two brands were formed which are unique to the all-inclusive experience. Are there any plans to take a similar approach with Hilton? And, if there are plans to expand our relationship with Hilton, what will differentiate our resorts from others that bear the same name?
As a starting point, we will just brand hotels with the Hilton name coupled with the destination. For example, today there is Hilton Rose Hall. It may be “Hilton some place in Cancun” it may be “Hilton someplace else”. We first have to showcase our strategy and our success rates. It’s only then that we will be able to convince Hilton to create two different brands that will differentiate them from the other hotel brands within their collection. I feel it is very, very important to show who we are, what we are, and what we can produce with that. The proof is in the puddin’.
What is the key to managing our high standard of service with our current rapid growth?
Find the right people. Then train the right people. It’s all in the leadership and the goal is to promote from within. It’s all about planning ahead.

From your perspective, what differentiates Playa from other all-inclusive brands?
Like many others who will agree, it’s our people. But more than just people, it is the culture that Playa has created with our people. The company itself is just an instrument, but the reality is that the culture that exists in Playa, the values that we believe in and the people that really believe these values and live them daily is reflected in how we treat our customers. I think that is what differentiates us from others.
Now that the Sagicor deal has been finalized, what’s next?
We will continue to look for opportunities for additional takeovers, existing hotels that may be high producers but also have great potential that we can take on, rebrand them and then continue to increase the positive cash flow long term.
Take Sagicor deal for example. The properties may need refurbishment but they are revenue producers. You make the purchase and because of the sales, marketing and culture, continue to build upon it and little by little we will see an improvement in the brands and quality of the hotels. The alternative is to build from the ground up, such as Hyatt Ziva & Hyatt Zilara Cap Cana, which takes years. The large investment won’t have a return for over two years which is reflected in stock prices in the short term.

THROUGHOUT THE FIRST TWO WEEKS IN JULY, THE ASSOCIATES from Jewel Resorts and Hilton Rose Hall were welcomed into the Playa family during a two-week event series suitably entitled “Welcome to Playa”. The events, which spanned two days across each property, covered a variety of topics including Playa’s philosophy, the company work ethic, the importance of social responsibility and learning more about the Playa resorts in Mexico and the Caribbean.
Moderated by Daniel Reyna, Vice President of Operations in Mexico, the events touted an upbeat vibe and integrated invigorating team building sessions throughout the day such as “sketching your own story” and “finding your tribe”. Whether your spirit animal was a lion or tiger that day, there is no doubt that you left with a greater understanding of who Playa is, our dedication to the people of Jamaica and a greater excitement level for what’s to come.

As part of the alliance, two Playa resorts — The Royal Playa del Carmen and Dreams La Romana—have been converted to Hilton all-inclusive resorts in November. Both resorts will undergo updates throughout 2019 with expected completion dates of 12/1/19.

The Villa and Colonial sections reopened with 165 suites on September 1, 2018.

The two new towers housing an additional 140 suites opened on December 15, 2018, increasing the total guestroom count to 323.




ON A YEARLY BASIS, PLAYA HOTELS & RESORTS’ EXECUTIVE
teams and general managers join forces for three days of learning, sharing and team building. At this year’s General Managers Meeting held at The Royal Playa del Carmen, the topics spanned the gamut and included company growth, F&B, weddings, technology and sustainability. Hand in hand, the teams tried to combat Sargassum, a topic that has plagued the Caribbean and Mexico this past year and motivational speaker, Patrick Henry spoke about what it means to win – one customer at a time. Following the immersive training sessions, attendees enjoyed an awards ceremony followed by dinner at Chef’s Plate to celebrate the successes from the past year. The evening culminated with the distribution of awards for the following categories:

2018 NATIONAL SALES MEETING
THE ANNUAL 2018 NATIONAL SALES MEETING TOOK PLACE AT HYATT ZILARA CANCUN FROM AUGUST 26-29. KICKING OFF WITH A GRAND WELCOME AND FOLLOWED BY A STATE OF THE UNION FROM PLAYA’S CHAIRMAN BRUCE WARDINSKI, THE THREE-DAY EVENT BROUGHT TOGETHER BOTH THE FIELD SALES AND MICE TEAMS TO DISCUSS ALL THINGS PLAYA.
A wow-worthy reception was held on the Zilara beach which armed the sales team with material and firsthand experiences for how to sell weddings and group business for the resorts in the months to come.
With presentations given by human resources, marketing and revenue, the showcase provided the team with a plethora of information on the Playa properties as well as opportunities to live and experience Playa’s values and vision themselves.
Like last year, the team partnered with a local group home. This year, Playa spent time with the children at Casa Hogar Para Niños Esperanza, an orphanage in Quintana Roo, separated by age and gender, that feeds and houses up to 35 children daily. In addition to soft good donations provided, the lasting
impression of spending the afternoon coloring and braiding children’s’ hair won’t soon be forgotten by the children or Playa.
The team at Panama Jack Resorts Cancun closed out the event with an evening that truly spoke to the heart of the brand. With the old Gran Caribe ballroom as the backdrop, the space was transformed taking the team on a journey that included popup performances, a dining experience that you would expect from a 5-star restaurant and décor that payed homage to the destination and vintage Caribbean travel.
On behalf of the entire sales team, a sincere thank you to all associates from Hyatt Zilara Cancun and Panama Jack Resorts Cancun for your time, dedication and passion in making sure this year’s National Sales Meeting was a huge success.

On Mother’s Day we honor motherhood, maternal bonds and the influence of mothers in society. Every year, Playa shows our appreciation to our moms with special events across all our properties.

FUN FACT:
While many countries celebrate Mother’s Day, it is not celebrated on the same day across the globe. This year in the Dominican Republic, Mother’s Day was celebrated on Sunday, May 27 and Mexico celebrated Mother’s Day on Friday, May 10. In the USA and Jamaica, moms were celebrated on Sunday, May 14.




DID YOU KNOW:
In Mexico, to show affection and appreciation for mothers, it’s tradition to begin any celebration with the famous song “Las Mañanitas” either a cappella or with the help of a mariachi.
Father’s Day

Of course, dads need love too. On Father’s Day we celebrate the contribution fathers and father figures make for their children’s lives. At Playa, we honor our dads each year on property and thank them for all they do.

Children’s Day
The International Day for Protection of Children honors children and raises awareness of their rights. Every year, Playa celebrates our employees’ kids—the greater extension of the Playa family— with lots of fun.

MX Independence Day


208 years ago, in the early hours of September 16th, Mexico’s War of Independence began against the Spanish colonial authorities. Mexico’s Indepence Day, otherwise known as “cry of independence” was initiated by Mexican-born people who were of Spanish descent against people of European heritages. The war lasted more than a decade and resulted in the signing of the Treaty of Córdoba which ended the ruling of the Spaniards in Mexico. September 16th is now a national Mexican holiday with workplaces, schools, banks and government buildings closed
and flags proudly displayed. Common celebrations throughout the country include street parades and festivals, dancing, music and an abundance of traditional foods like chiles en nogada. Guests fortunate enough to visit during this time are encouraged to join in the celebration and are treated to fiesta-style activities including games, food, dancing and traditional Mexican-style entertainment to commemorate this important day. It’s a can’t miss celebration for anyone who has not had the opportunity to experience it firsthand.
Jamaican Emancipation & Independence Days

August 1st in Jamaica, otherwise known an Emancipation Day, marks the freedom of all slaves in British colonies. 124 years after the abolishment of slavery, the colony of Jamaica gained independence
from the United Kingdom. The road to independence was over two decades in the making but on July 19, 1962, the parliament of the United Kingdom passed the Jamaica Independence Act with the Jamaican flag being waived for the first time on August 6, 1962.
Both Emancipation Day and Independence Day are considered Jamaican public holidays and are part of a week-long cultural celebration. The three colors of the Jamaican flag—black, green and gold—honor past achievements and provide hope for future success for the country. Black represents creativity and


strength, gold represents wealth and the beauty of the sun and green represents hope and agriculture. From parades to street parties, the day is celebrated by locals and tourists alike allowing them to truly live the country’s motto “Out of Many One People.”

PANAMA JACK RESORTS PRESS TRIPS
Consumer and trade journalists from the US and Canada were given a firsthand look into Panama Jack Resorts during press trips hosted by Panama Jack Resorts Cancun in May 2018. The trips, which featured highlights from the destination, focusing on social responsibility and Playa Green, resulted in noteworthy online and print coverage.

THE REAL HOUSEWIVES OF ORANGE COUNTY AT JEWEL GRANDE
In April 2018 the cast of the American reality tv show The Real Housewives of Orange County filmed an episode for Season 13 at Jewel Grande in Montego Bay. The season, which begins airing July 16, 2019 on Bravo, will showcase Vicki Gunvalson, Shannon Beador and Kelly Dodd during a 4-day, 3-night vacation, including footage of our very own staff and property assets including the Grande Spa. JAWW RADIO REMOTE
Hyatt Ziva Rose Hall came to life as we partnered with JAWW Media + Marketing for a US multi-station radio broadcast and integrated marketing campaign this past September. 7 radio
stations were treated to authentic Jamaica flair, a chocolate showcase and all the resort has to offer. Using a 360 approach, the resort was incorporated into all facets of the multimedia campaign. Broadcasting live from the ballroom terrace, the radio partners shared the guest experience live. Their excitement shined through as they personally shared why their listeners should go “All In”.


JTB MEDIA BREAKFAST
Jewel Grande was the home to the JTB Media Breakfast that was recently held in conjunction with JAPEX. 18 members of trade media outlets spanning Jamaica, US, Canada, LatAM and the greater Caribbean were in attendance.

Collaboration and teamwork resulted in national coverage within USA TODAY showcasing authentic culinary options for breakfast at Hyatt Zilara and Hyatt Ziva Rose Hall.
NEW YORK TIMES
In conjunction with hosting NFL Players at Hyatt Zilara Rose Hall, the team at Hyatt received recognition for their efforts in launching the Granville 404 Project in Jamaica. The article featuring an interview with Brandon Marshall appeared in both print and online.

DYLAN’S CANDY BAR
Hyatt Ziva Rose Hall was the star of the recent promotion hosted by the world’s largest confectionary emporium and lifestyle brand, Dylan’s Candy Bar. Through a partnership with the JTB, the widespread exposure was generated through print, digital and product placements in affluent key markets across the US. The impressions for the project have exceeded well over 20 million as a result!

There is no denying that holidays are a big deal for guests and associates alike. As a result of recent pitching efforts, the events that took place at Hyatt Ziva Cancun in conjunction with the Fourth of July took stage in an article on top-tier outlet, Forbes.com.






































CELEBRITY STAYS
Popular Latin TV host and celebrity Lili Estefan spent a few days with her family and friends at Hyatt Ziva Cancun at the end of June. American actress and talk show host, Vivica Fox—known for her love for Jamaica, celebrated her birthday at Hyatt Zilara Rose Hall this past July. Tamra Judge of the Real Housewives of Orange County spent her most recent vacation with her family at Hyatt Ziva Puerto Vallarta and took to Instagram to show her appreciation. While more lowkey, Jason Terrance Phillips (aka Jadakiss) enjoyed the sun-kissed beaches of Hyatt Ziva Rose Hall this September.
ARGENTINISIMA SATELITAL
During a recent media trip to the region, Playa’s own Giovanni Lara made an appearance on Argentinisima Satelital, a national television show aired in Argentina. The successful trip also included additional media interviews, a sales blitz, trainings and trade shows.
MEDIA TOUR IN BOGOTÁ, COLOMBIA
In early August, PR Director Wally Dagri traveled to Bogota and organized a breakfast with Colombia’s most relevant tourism journalists to inform Colombian media about Playa’s latest news, acquisitions and plans. Almost 20 people attended the event, that aims to attract more Colombian guests to our properties in Mexico, Dominican Republic and Jamaica.

ANOTHER CLASS OF STUDENTS GRADUATE FROM THE PROGRAM AT PLAYA RESORTS PROPERTIES IN MEXICO
In April 2018, Playa Hotels & Resorts hosted the commencement ceremony of its students from the educational and community support program; “YCI Youth Career Initiative”. The new associates have developed career skills aligned to

the values and culture of the company have joined the Playa family.
Francisco Suárez, Regional Director of Training and Development, was the master of ceremonies and explained the YCI self-management model.
The audience saw the impact the program made first-hand as the students gave recognition to the people who most supported them during the program. The students delivered emotional speeches and filmed documentary-style video testimonials that showcased the great teamwork of all those who collaborated to make this program a reality.
Corporate Executives alongside the General Managers took part in delivering the diplomas to company’s new allies. To further signify the impact made during the student’s time on property, each of the 22 students were extended a job offer as part of the commencement.
The graduation ceremony was broadcast through Facebook Live to reach the global supporters of the YCI program around the world. The events commenced with an institutional photo, throwing the caps in the air and a cocktail reception to celebrate the next steps in the students live.

Hyatt Ziva Cancun, Hyatt Ziva Los Cabos, Hyatt Ziva Puerto Vallarta and Hyatt Zilara Cancun sponsored and trained a total of 22 graduates across the four properties.

In conjunction with the global program YCI, Playa Resorts offers teenagers (ages 18-21) in a situation of vulnerability, an opportunity to participate in a comprehensive 6-month training program, spanning 12 different hotel departments, where they attend theoretical classes in tourism and hospitality as well as personal development classes by managers, collaborators and volunteers from partner organizations. Participating students also receive additional support including transportation to and from work, meals during work hours and medical care. By taking this approach, the resorts put forth a tangible, measurable and high impact social responsibility initiative that optimizes the use of hotel resources while helping support the greater community.

HELPING FROM THE HEART
MAKING DREAMS COME TRUE AT PANAMA JACK RESORTS CANCUN
RECENTLY, GENERAL MANAGER MATIAS KLEIN
received a letter from an organization called “Creating Fairy Dust”. Based in Mexico City, the organization’s mission is to carry out charitable actions for terminal children. They seek to fulfill dreams as well as make the lives of the children and their families easier during this time. Their request was simple, they were working to fulfill the dream of a 6-year-old boy named Juan Pablito who was terminally ill. Landlocked in Atlavomulco, his dream was to see the ocean.
HIS DREAM:
Pablito’s dream was to see the ocean, something that many of us take for granted on a daily basis. The team at Panama Jack Resorts Cancun wanted to do more than just fulfill Pablito’s dream. They wanted to provide faith and joy for his entire family in hopes that they would have a moment of escape and above all, have something to remember all their lives.
On May 21, Pablito and his family arrived at Panama Jack Resorts Cancun. Following a grand red-carpet entrance Pablito and his family were welcomed by the entire staff of Panama Jack Resorts Cancun and were adorned with flowers, balloons and an overabundance of sweet treats. Immediately upon arrival, their first stop was the ocean. With squeals of delight, Pablito’s feet touched the sand for the first time. The first time his feet touched a wave was followed by making sandcastles with the Panama Jack team. His room was decorated as he was celebrating a milestone birthday and he even became a pirate and participated in the team’s Pirate Show as part of the celebration. His trip included his first Ferris wheel ride and a visit to the Cancun Aquarium.
ABOUT PABLITO:

Pablito first showed signs of illness at the age of 10 months. Following years of tests and countless hospital visits, he was diagnosed with a rare form of leukemia which is only curable when treated within the year of onset. Pabilito’s mother, who continued to advocate for her son, sought out a physician who would treat him. Following multiple rounds of chemo, he had his first bone marrow transplant, donated by his 4-year-old sister in July 2017 followed by another that November. In December of 2017, Pabilto’s mother was advised that the transplants were considered a failure and the disease had progressed to juvenile acute lymphoblastic leukemia.
It saddens us to report that during the days following Pablito’s stay, his prognosis continued to deteriorate and on Sunday, July 29 Pablito lost his battle with cancer. As much as we wanted to make a difference in Pablito’s life, he also made a difference in ours. Our motto, Service from the Heart, takes on a new meaning when you hear Pablito’s story and the entire team at Playa Hotels & Resorts is honored to have been able to impact his life in his final days and his family’s lasting memories.





RESCUING DOGS, HELPING HUMANS!
AN ONGOING EFFORT MADE BY PANAMA JACK RESORTS PLAYA DEL CARMEN & HILTON PLAYA DEL CARMEN
Supporting the welfare of animals is a cause that’s important to Hilton Playa del Carmen & Panama Jack Resorts in Playa del Carmen. It’s an ongoing multifaceted project that goes far beyond just the collection of food and supplies. Every year, the teams at both properties also donate their time and visit Acción Animal and Sos El Arca, two local organizations that put forth efforts to help rescue, rehabilitate and rehome animals in need. With a focus on education and supporting the welfare of animals at a local level, both organizations share the same beliefs as laya employees. Whether it’s dog walking, bathing the animals or supporting educational efforts, the volunteer efforts of the Playa team makes a difference in these animals’ lives.

RUNNING FOR A CAUSE WITH HYATT ZIVA & HYATT ZILARA ROSE HALL

As everyone knows, our associates in Jamaica are heavily involved with efforts that support the greater community. In May 2018, the Hyatt Ziva & Hyatt Zilara Rose Hall teams participated in the annual MoBay City Run (5k / 10k Run & Walk) in which proceeds help support tertiary education in Jamaica.
The fund, which is a result of the race, provides assistance for students attending UWI and UTECH Western Campuses, Sam Sharpe Teachers Collect and Montego Bay Community College. The Hyatt team was awarded for their participation at the event this year and took home a plaque to commemorate the day.

Steps for Success
“More than 25% of students enrolled in these tertiary institutions are unable to cover their fees in any given semester,” said Janet Silvera, Chairman for the MoBay City Run Organizing Committee. “Since the estimated number of students in our four institutions is approximately 5,000, we are looking at over 1,000 students in these four Montego Bay tertiary institutions each semester who are struggling to pay fees and risk being de-registered or unable to complete their examinations.”
Efforts such as this directly go to support the success of the local community and the students who strive to succeed.

remain an integral part of the Playa organizational culture and this goes down to each of our properties who foster good relations with our neighbors whilst building a motivated, caring and passionate work force.
For the month of July, Jewel Paradise Cove organized a clothing drive where associates collected t clothing items and personal effects to be donated to the St. Ann’s Bay Infirmary, which provides food, shelter, clothing, medical, dental psychiatric, social and spiritual care for the destitute and poor of the parish. These events take place multiple times a year in order to give back to those less fortunate.
Also in the month of July, associates from Hilton Rose Hall Resort and Spa and Jewel Grande visited the Falmouth Infirmary and donated items such as perishable and nonperishable food items, sheets, towels, cleaning products and toiletries. The items were received by a senior representative from the Trelawny Parish Council and the matron in charge of the institution. The adopt-a-school program associated with Hyatt Ziva &
Hyatt Zilara Rose Hall celebrated double success in the month of July. Not only was their soccer team crowned as overall champions in the Montego Bay Area but also ten of their students achieved over 90% average on the government high school transition exams (GSAT). The high achievers along with their soccer team and coaches visited our property for a luncheon celebrating their success. As we continue to open doors for our children, we leave a piece of us – serving from the heart to those who we support and call family.


HUNGER GAMES
FIGHTING HUNGER ONE MEAL AT A TIME IN BROWARD COUNTY, FLORIDA
For the last three years, the associates in Sunrise, FL have dedicated their service hours to fighting hunger in the local community. Feeding South Florida is the sole food bank serving Palm Beach, Broward and Miami-Dade and Monroe Counties. More than 98% of all donations are put back into the community – a statistic that is virtually unheard of among non-profit organizations.
On July 27, 2017, the Playa associates continued their competitive streak and continued to outperform the year over year progress by a landslide. The result of the afternoon of manual labor was fruitful with a total of 13,500 lbs. of food sorted and 11,250 meals distributed – a 23% increase from last year.

As with most of our dietary choices, this is a simple comparison of quality and source. In short, a little pink salt is beneficial to your health.
Can you tell us if there is any way to reap the same benefits of salt from the comfort of your own home?
The overwhelming benefits of salt therapy dates as far back as Hippocrates, who recommended salt inhalation for breathing issues. However, it was in Poland where salt

miners were found to have fewer respiratory issues and an improvement in their skin. From there the phenomenon has grown and today you can enjoy some of these benefits in the comfort of your home. Try a Himalayan Salt Lamp, which runs on an electric bulb to heat the salt and release negative ions. Salt lamps have been found to improve sleep and decrease the effects of sinus related asthma or allergic reactions. Another tool is a Himalayan Salt inhaler. This is a simple container that you can fill with Himalayan Salt and breathe in the salt particles, which strengthens the immune system, decreases inflammation and stress and improves overall mood.
What are the physical and mental health benefits from experiencing treatments that include salt?
Himalayan Sea Salt is extremely popular for releasing negative ions, which is very beneficial. These are the same ions that are found near oceans, mountains and waterfalls as a molecule. As they reach our blood stream they create a mood enhancing reaction that fights depression, stress and exhaustion. By breathing and absorbing these molecules you will experience a state of positive peace and refreshed energy that produces overall balance. That’s why we incorporate salt into our spa treatments.
I hear sodium is bad for you in large amounts, what is the difference between salt and sodium?
Sodium is a mineral that occurs naturally in foods that have not been processed. Salt is made up of 40% sodium and is combined with chloride to make the ingredient we are most familiar with: white table salt. However, sodium is a necessary ingredient for the body to function. We need sodium in our diet and getting the right amount and not too much is the goal. Aim for around 1500mg a day, which is about 1 teaspoon, give or take. Now I know that is not a lot at all, so if you love salt I recommend switching to a Himalayan Sea Salt which will give you the taste you may love with less sodium.

Sodium is a necessary ingredient for the body to function.


How do you incorporate salt into the process of health and wellbeing?
At the Grande Spa we offer heated Himalayan Salt Stone Massage and treatments such as the Himalayan Sea Salt Bush Bath. We even sell Himalayan Salt Stones and Soaks to our guests for at home use. Mixology Madness

On June 7, 2018 the first annual CMI Inter-Hotels Mixology Championship was held in Riviera Maya. Of the 52 contestants representing different hotels within the region that competed, only the top 10 drinks were presented and only the top 3 were named.
Alejandro Perez, the Bar Manager for Panama Jack Resorts Playa del Carmen, secured first place and ensured his placement in the 1921 Tequila sponsored Mixology Contest taking place this month.
“Mixology is different from creating a cocktail. You need to mix, create different syrups, and experiment with ingredients and techniques in order to give new flavors and essence to the drink,” said Perez.
1.5 OZ. RON ZACAPA CENTERARIO SOLERA – 23 YEAR OLD RUM
1 OZ. PEPPER LIQUOR
1/2 OZ. LEMON JUICE
1 TSP. HONEY
1 OZ. HIBISCUS SYRUP
2.5 OZ. COCONUT WATER
3 PIECES ROASTED PINEAPPLE
GARNISH:
1 CHUNK OF ROASTED PINEAPPLE
2 PINEAPPLE LEAVES

1 GREEN BELL PEPPER
1 YELLOW BELL PEPPER
1 RED BELL PEPPER
16 OZ. WATER
16 OZ. VODKA
8 OZ. SIMPLE SYRUP
Using a cocktail shaker, add ingredients and gently muddle with a pestle. Fill with ice and shake vigorously. Strain into an old-fashioned glass, filled with crushed ice. Finish with placing the garnish on the rim of the glass.
Take the 16 oz. of water and place in a pot on medium to high heat until it reaches a boil. Gently place the three peppers in the boiling water and reduce to medium and cook for 15 minutes. Remove the peppers and the infused water cool. Strain the water. Pour the 16 ounces of the infused water into a glass jar, combine with vodka and simple syrup. Mix well. Cull the peppers and cut the flesh of the pepper into thin strips. Add three thin strips into the liquor.
The cocktail Perez designed is appropriately named Soca, which is normally used to define calypso music that has elements of soul. It’s a tropical drink with a twist. He’s shared his secret with us, below. Try it for yourself.

8 OZ. DRIED HIBISCUS FLOWERS
16 OZ. WATER
8 OZ. SIMPLE SYRUP
Take the 16 oz. of water and place in a pot on medium to high heat until it reaches a boil. Gently place the hibiscus flowers into the boiling water, reduce to medium and cook for 15 minutes. Let the mixture cool and strain to remove the remaining flowers. Mix equal parts syrup with the remaining infusion.

BY WAY OF INTRODUCTION, MY NAME IS BRENT TJARKS AND
I am the Executive Director of the Mid-Size Bank Coalition of America, which I founded in 2010. The MBCA is a distinct and singularly focused “self-help” organization for mid-size banks that has the direct involvement of each of its members’ CEOs and most of their management committee members. In my role, I am traveling constantly (last year I hosted about 30 conferences in Hyatt properties in addition to many more individual stays).
Yesterday, my family and I returned from our second visit to the Hyatt Ziva Rose Hall. (We have also visited Hyatt Ziva Los Cabos twice and have a vacation booked to Hyatt Ziva Puerto Vallarta later this year).
As we are already feeling the urge to plan our next visit to Rose Hall, I felt compelled to convey in the strongest possible terms my high opinion of this property and the colleagues who work there and truly provide “service from the heart”.
The level and responsiveness of service, beauty and cleanliness of the resort and beach, quality and variety of dining experiences, overall ambiance, accommodations (especially loved the updated fitness center) and attention to detail were excellent.

Morgan and Michael had a simply elegant wedding ceremony on the West Beach with a gorgeous sunset backdrop that added that touch of romance as they exchanged vows. They chose a bamboo arch that was artfully draped with white sheers, coral roses and white dendrobium orchids. White folding chairs with posies of roses added a lovely touch of whimsy that enhanced the ceremony setting.
The dinner reception was hosted at the Sentry Gazebo overlooking the Caribbean Sea. The team showcased a delectable spread of Jamaican cuisine which included sweet island fruits and rum bread pudding. The blissful couple and their guests partied the night away to the sounds of the DJ and with many visits to the Premium Bar.

DID YOU ALWAYS WANT TO BE INVOLVED IN THE HOSPITALITY INDUSTRY?
Somehow yes, I did. It all started about 15 years ago when I was studying languages, one of my English teachers asked me, “what are you planning to do with your languages?” And I thought, “well that’s a good one.”
I love meeting people from all over the world, as I’m a huge fan of the world’s different cultures and ethnicities. So as a starting point I wanted to move from Morelia, my city in western Mexico, to a more touristic area like Cancun, where I could work in something related to the hospitality industry, where I could meet people and practice my skills. Destiny brought me to Playa del Carmen and suddenly about 5 years ago I was working at a high-end resort.
WHAT IS YOUR FAVORITE PART OF YOUR JOB?
Creating content that inspires people to live, to travel, to dare to do new things, to get up from one’s seat and decide to know the world.



WHAT SKILLS DO YOU NEED TO BE SUCCESSFUL AS A COMMUNITY COORDINATOR?
Communication is the keystone of your business, so work on your communication skills. Be empathetic with your clients. Always think about what would you would expect if you were the customer. Be creative; know your tools; and always try to learn something new. Look how far you’ve come, and always try to overcome yourself.
HOW DID YOU GET THE NICKNAME WIKI?
I didn’t know that I was called Wiki (short for Wikipedia), until several months after I joined Playa. Whenever someone asks for anything or needs help, I always try to provide a response or solution. If I don’t know the response, I look for it and don’t stop until I find it. So, I got the nickname when they knew they could ask me for anything.
WHAT IS A DAY IN THE LIFE OF A COMMUNITY COORDINATOR LIKE?
Like any other job, it’s basically assisting customers and coworkers, but through a digital environment. Reading hundreds of comments from your audience. Responding to guests’ questions. Directing guests’ requests to the appropriate point of contact. Mediating between customers and co-workers to improve or exceed our customers’ experience. Creating beautiful imagery and content to encourage more people to buy our product. Personally, meeting customers from time to time. Even getting up from your desk, and going to a guest’s room to fulfill a request.

6 TIPS FOR THE BEST IPHONE PHOTOS

Photography is all about light. Use the light you have in your favor, and try not to shoot against it, or in an extremely dark atmosphere.

Most smartphones allow you to increase or decrease exposure, don’t be afraid to decrease exposure for a dramatic result on a sunrise or a sunset, this will bring out the silhouettes, and will reduce the excess of highlights. Or increase the exposure for a high key or black and white portrait.

If you want to take a selfie against a light source like in a sunrise or sunset, use the HDR mode and try not to move much since HDR is a blend of two or more exposures. You can use a small tripod for sharper results.
4.
Get closer to your macros in food or flowers, some devices allow you to get as close as 3 inches / 7.5 cm. This will give you a shallow depth of field, and it will turn into a sharper foreground and a soft and creamy background. You can use a small tripod for sharper results.
5.
Try to customize the color correction by playing with the tools you have on your phone instead of using preset filters. Never go beyond 50% above of any tool level, this will turn into a fake or unpleasant appearance. You can even download free Adobe apps that are light and easy to use.

When Wouter Tjeertes joined the Playa Family at Hyatt Ziva & Hyatt Zilara Rose Hall, his official title was Head Pastry Chef. It wasn’t until I met him a month later that I realized his passion was fueled by all things chocolate. Fast forward to 2018 and he’s affectionately known as the resident Chocologist, sharing his passion with guests and his knowledge and technical skills with the pastry team. He is always thinking about how to raise the bar and make a difference both on property as well as within the greater community. I sat down and spoke with Chef Wouter about his journey during a recent visit to Rose Hall.

HOW DOES ONE BEGIN A CAREER IN CHOCOLATE AND PASTRY?
Growing up I always wanted to become a pastry chef. When I was 6 years old on a school trip to the local bakery I found my calling in pastry and this has never changed. My founding education in pastry introduced me to the basics of working with chocolate. Working closely with Master Chocolatier Kees Raat in Amsterdam sparked my love for chocolate further and led me to where I am today. His out of the box creations were revolutionizing the chocolate world those days and his mentorship has helped me immensely.
WHAT INSPIRED YOU TO BE A CHOCOLOGIST?
The title “chocologist” kind of stuck with me ever since I headed Jade Mountain’s tree to bar chocolate project in St. Lucia. This is where I learned how to grow and process cocoa beans into chocolate which made my knowledge come full
circle. At that moment I was the only hotel pastry chef in the world that grew and produced his own chocolate. The title was given to me by the hotel manager at that time.
WHAT ARE SOME OF YOUR FAVORITE FLAVOR COMBINATIONS?
I love to taste and combine things that are beyond your regular flavors. You will find me walking around the kitchens taking bites of all sorts at the same time just to see what happens. Caramelized bacon and sea salt, spicy jerk and chocolate, blue cheese, almond and white chocolate… it all depends on the time of day, the company you are in and the beverage that goes with it. Ruby chocolate is high on my radar right now as well as chocolate and cheese pairings.
DO YOU HAVE A “SIGNATURE” DISH, OR A FAVORITE DISH?
We have just launched our new seafood menu in Calypso, one of our restaurants. The Pina Colada


cheesecake that I developed for this menu together with Nzingha Thompson, one of my team members, is a huge hit and has to be my favorite at this moment. It is gluten free, has a coconut macaroon bottom and passion fruit curd on the side. It just hits all the marks!
WHAT IS YOUR MOST MEMORABLE EXPERIENCE SINCE JOINING THE TEAM AT HYATT ZIVA & HYATT ZILARA ROSE HALL?
We have recreated “the Thinker” by famous sculptor Rodin by carving 60 lbs of chocolate. Sharing this project with my assistant pastry chef Rayon Blagrove was a great experience. My team is very talented and eager to learn which pushes me every day to give back and teach as much as possible. The pastry team really goes the extra mile to ensure we succeed and I am grateful for the support we have been given from the complete Playa family.


WE KNOW THAT YOU HAVE TWO SMALL CHILDREN AT HOME. DO THEY SHARE YOUR PASSION FOR PASTRY?
My 2 boys (Remario, 8 and Dylan, 4yrs) are already savvy in chocolate and prefer artisanal bean to bar chocolate over candy which makes me very proud. They can tell you all about fermenting, drying and roasting of beans, and how to temper chocolate.
IS THERE A MOMENT IN YOUR CAREER THAT YOU ARE MOST PROUD OF?
Creating a live 11.000 tiled chocolate painting in the Museum of Modern Art in New York during a press luncheon in March 2017 is my personal highlight. IF YOU HAVE ONE TIP FOR ASPIRING PASTRY CHEFS THROUGHOUT PLAYA HOTELS & RESORTS, WHAT WOULD IT BE?
Go in with the right expectations. Being a pastry chef often
requires long hours (think Valentine’s Day, Easter and Christmas) where you see more pastry and chocolate than you will see your family. Work hard, listen, and learn, ask questions and respect your mentor, the pastry and chocolate world is very similar to any regular kitchen where the chef is the monarch. If this is your dream then follow it, let nothing stop you and become the best you can be.
CAN YOU TELL US ABOUT HOW THE PASTRY TEAM IS SUPPORTING THE GRANVILLE 404 PROJECT AND WHAT TYPE OF DIFFERENCE IT HAS MADE THUS FAR?
The pastry team was looking for our own way to support the Granville 404 project due to the fact that we are not always able to physically go there ourselves. We came up with the ‘Z’ bar, a unique set of chocolate bars sold in the gift

shops with a percentage of the proceeds going to the project. We have designed our own wrapper and created a signature jerk chocolate bar that makes one of the 3 flavors in each set we sell. We hand mold, wrap and package each bar within our pastry shop. Everybody is involved, from our gift shop team to sales and marketing, we all try to push this product and generate funds for the school. From inception last January till now we have sold almost 750 sets at 15 dollars per set, which should make a real difference in the lives of the children.
