Nicolette Johnston is the founder and publisher of Colette Publications (Bed & Breakfast Magazine and Chateaux & Castles Quarterly). She received her bachelors degree in magazine journalism from the University of Oregon. She has worked in the financial industry and as a government employee. She published her first novel "Running Away to Europe" in 2017, and blogged from 2009 to 2013 on her blog, Simply Colette. Her passion is photographic storytelling, traveling, visiting museums, historic architecture, and trying regional foods. She has always been fascinated by the idea of owning her own bed and breakfast. She loves interviewing innkeepers and researching historical architecture. She lives in Northern Nevada with her husband, daughter, black lab, two cats, and seven chickens.

Kristi Dement has been a bed and breakfast industry marketing consultant since 2013 and she is a Vendor Member of the Professional Association of Innkeepers International. Rachelle Davila is the owner of the beautiful Aurora Staples Inn Bed & Breakfast in Stillwater, Minnesota, named one of “America’s Most Picturesque Small Towns” by USA Today Traveler. Her inspiring story was featured in our previous issue. Before she purchased her beloved inn, she would take evening walks with her mother walking by the property and talked about 'one day' buying it. Her wish came true. Carrying on the Legacy Make everyday special — sip a little tea! BY: NICOLETTE JOHNSTON

On Mother's Day, we began a new tradition with my 5 year-old daughter, my mother, and mother-in-law by holding our first annual mother's day tea party. It was a joy to see my daughter wear her apron and take pride in her eclectic decorating, our mismatching tea cups and saucers and her insistance to keep the Easter decorations out as well. But we fired up our bumble bee tea kettle (which buzzes when it's ready) and sampled numerous teas, black and white cookies, easy-to-make bitesized BLT sandwichs, and a cinnamon raisin bread grilled triple cream sandwich with an amaretto peach spread from a local farmer. On the table we incorporated handknit doilies and tea pots from both of my grandmothers who have since left this earth. It was one of the best Mother's days I've had thus far. We know the tradition will carry on. I

know we certainly plan to hold some mommydaughter picnic tea parties on our lawn this summer. How we love to lay on our blanket and stare up at the clouds and watch the airplanes fly by. It's a simple pleasure I forget to make time for since being a kid. It's a good reminder to take time out of being busy, and remember to 'just be'. Especially for all those times I say, "Mommy needs to work...(or cook, or clean)" when my daughter looks at me with her big blue eyes and asks for my attention. Prior to launching Colette Publications, I contemplated opening a tea house. There are a few bed and breakfasts and inns that offer high tea. It's wonderful to see those honoring life's special occasions with the tradition of a shared pot of tea, a little something sweet, and a time to sit down and enjoy the moment with those near and dear.

ForFriends Inn Guest (& Guest Blogger) - Sepideh Yeoh After living in SoCal for about 12 years, my husband and I decided to take a trip to the Wine Country and spend a couple of nights at a Bed and Breakfast in Santa Ynez. Our journey began in early January on a Friday afternoon. As we drove on the scenic route passing Ventura, Carpinteria and Santa Barbara, we found ourselves in a narrow winding path with lots of bends and curves pleasing every sense. The hills and fields were all lush green.

The driveway ended with a two-story cottage at the end and a lovely tiny cottage on the right. There was a path with a few steps below the two cottages which led to a grassy area with tables and chairs and a wooden deck with built in seats. Below the wooden deck was another sitting area with a gazebo.

Inside the main building, there is an oversized fireplace and plenty of seating including two large rectangular dining tables. The walls are decorated tastefully by art from local artists. Every detail was carefully and lovingly tended to, making the Inn splendidly charming. Coffee mugs and wine glasses were arranged carefully displaying the Inn’s logo. The floral candle scent filled the room and added warmth to the welcoming ambiance. ForFriends Inn is located in the main hub of Santa Ynez surrounded by restaurants, boutiques, a charming library and museum and an old fashioned saloon. Of course, you can’t be in the wine country and not see wineries offering a taste of their pride and passion. So, what makes ForFriends Inn extraordinary? I believe what makes this Inn special is what makes any business extra special; it’s the love and passion behind the business taking it from any other location to a special destination. Snug Hollow Farm's Strawberry Pie FRESH STRAWBERRY PIE 2 T melted butter 1 T sugar 9-inch shortcrust pie shell, baked Fresh whole strawberries, enough to fill the crust Pat short crust into a 9-inch tart pan with removable bottom. Bake at 375º, approximately 7-10 minutes until lightly browned. While crust is hot from the oven, sprinkle it with melted butter and sugar. Set aside to cool. STRAWBERRY GLAZE 1 cup sugar or honey 1 T cornstarch 1 T red wine vinegar 1 T butter 1/2 cup water 2 cups strawberries [measure before crushing] Crush berries in food processor. Mix with remaining ingredients. Cook and stir over medium heat until clear, about 5 minutes. Let cool. Fill crust with whole berries and pour glaze over fruit. Chill and serve.

In late May and early June, we pick strawberries in Kentucky for pies, jams, shortcakes and eating by the handful. Served with fresh whipped cream, it makes a delicious summer dessert. This recipe also makes beautiful individual tarts and is in the Snug Hollow Farm cookbook, "Hot Food & Warm Memories".

SHORTCRUST 1 1/4 cups all purpose flour 1/4 salt 7 T butter Water Combine all ingredients in food processor. Pulse and add enough water until it begins to stick together. With floured hands, press into a 9-inch pie pan.

njoy a Northern Michigan getaway near Charlevoix at the House on the Hill, a lakefront French country farmhouse style bed and breakfast. Phillip and Marci Palajac bought The House on the Hill Bed & Breakfast in 2009 to fulfill their dream of owning their own business and living an active lifestyle in beautiful Northern Michigan. Coming from the Metro Detroit area, the couple had a long history of vacationing in Northern Michigan their entire lives. Marci has been able to fulfill her dream in the culinary arts by offering a three-course gourmet breakfast each morning. Phillip has been able to use his Doctorate of Business Degree for business development for The House on the Hill, although both of them have a passion for business and entrepreneurship. When asked what Marci enjoys the most about being an innkeeper, she said, “the marketing, the cooking, and the people of course." During the summer, guests can dine al fresco on the porch with a view of St. Clair Lake. Guests can spend their day visiting the Chain of Lakes with free usage of onsite paddle boards, kayaks, a canoe, and paddle boat. The 4th of July fireworks over Lake Charlevoix are not to be missed. A Little Piece of Paradise...

T

his past January, I had the pleasure of meeting Jim and Tammy Holloway at the Professional Association of International Innkeepers conference in Las Vegas. I was immediately charmed by their warm personalities. We mentioned to them we were featuring coastal properties for our summer issue and when they later sent us photos of their beautiful bed and breakfast, we knew they were the perfect fit for our summer coastal issue. The Bay Haven Inn of Cape Charles is a 1906 colonial revival home set in a cozy historic town on the shoals of the Chesapeake Bay in Cape Charles, Virginia. The town has recently been “found” by HGTV Beach Front Bargains, and is listed in Coastal Living Magazines as a "Top 10 Happiest Seaside Towns". The couple strives to keep a relaxed coastal vibe. “My husband and I bought the home in 2011. We opened the inn in 2012 and have loved every moment with the exception of our very tiny kitchen and the fact we had no “downtime” space for us (couch, DR table, etc…) or organizational space for the inn (i.e., a storage room, second laundry room, office, or pantry),” said Tammy. After living and using the space for 5 years they took the time to fully understand what they needed to make their inn more functional, like a bigger kitchen and began remodeling in November of 2017. They couple met in 2004 and were engaged within six months’ time. The courageous duo took a chance not only in love, but also with a leap into the world of bed and breakfast ownership. Jim and Tammy share a love of entertaining, cooking, experimenting with new recipes, and especially welcoming guests into their inn.

Tammy earned both her bachelors and master’s degrees from Radford University. After working in higher education for several years, Tammy became a formal event planner for the American Chamber of Commerce, something she developed a true passion for. Jim was a career man in the Air Force, he graduated from Virginia Military Institute and earned his master’s degree from Webster University. The couple envisioned owning a bed and breakfast in their retirement years, but saw their plans come to fruition much sooner. They realized how precious life was when Jim's mother Polly passed away. They decided not to wait so long to follow their dream. With Tammy hunting for their dream property online, the property they now own Bay Haven Inn, happened to be located in the same county that Polly had been born and raised in. They took it as a blessing from "Miss Polly". After about a year and a half they cleared the abundance of overgrown landscaping on the property, even with Tammy's skills as a Virginia Master Gardener and Jim's skills as a life-long Eagle Scout, they appreciated the help of Tammy's mother, Sarah to aid in the vast undertaking.

A Historical Side -

A Historical Side to Sweet Potato Biscuits From the Bay Haven Inn Blog When Inn Keepers Tammy and Jim Holloway came to the shore they quickly fell in love with the fact they could use so many local ingredients to create unique meals. One of their favorite finds was the ever-plentiful sweet potato! They first tasted the incredible sweet potato and ham biscuit at Stingrays Restaurant, just south of Cape Charles on 13, a stop that is a must for all visitors. Passersby stumble into this find just for gas, (after all it is an Exxon filling station) but then experience a most memorable and authentic meal. So back to the sweet potato biscuit! I was fascinated by this unique combination so I did a little research. Come to find out the sweet potato biscuit goes many years back. The story goes that Thomas Jefferson liked to garden and one of the vegetables he grew were sweet potatoes. In a letter he wrote to Nicholas Lewis in Paris, dated September 17, 1787, he requested “... seeds of the common sweet potato [I mean the real seeds and not the root which cannot be brought here without rotting] ...” His biscuits were served at the first meeting of the First Continental Congress in 1774 and are served today at the famous City Tavern (built in 1773), located in Philadelphia’s historic district at 2nd and Walnut Streets. An 18th century atmosphere with costumed wait staff and authentic colonial menu is maintained. The Constitutional Convention held its final banquet there 13 years after the first meeting.

At the Bay Haven Inn of Cape Charles, Chef Jim Holloway is our official in-house baker, innkeeper and master-of-working through a “honey-do” list! Jim took on the task of creating a unique Sweet Potato Biscuit recipe of the inn. During his research he discovered the Thomas Jefferson Sweet Potato biscuit recipe included nuts and “spices” (such as ginger and all spice). For our recipe we excluded the peanuts and reduced the quantity of spices. Jim also found a recipe he liked from a local woman Susie Mapp, in an old Virginia Eastern Shore Sweet Potato cookbook. He combined elements of both and added his own Jim-Jim the Baker Man twist and voila’, the Bay Haven Inn of Cape Charles Sweet Potato biscuit was born!

Directions: Add melted butter to sweet potato, next add milk and sugar. Combine dry ingredients together (flour, salt, baking powder). Fold the wet ingredients to dry ingredients and do not over mix, just enough to hold together. Dust a pastry board, divide dough in half and work with one ½ at a time. Spread out dough to ½ inch thickness and flip over to dust it with flour again. s a fourth-generation vacationer to Boothbay Harbor, Mark Osborn decided to make it his permanent home when he bought The Thistle Inn in Boothbay Harbor. He befriended his colleagues down the road, the previous owners of the Topside Inn at the time, and it was a good thing he did because even though they were business competitors, they introduced him to Brian "Buzz" Makarewicz.

Helping out their community goes way beyond just buying fresh farm eggs and fresh seafood from the local businesses, they also open their kitchen for members in the community to join them for breakfast on a donation basis, which is in turn donated to local food pantries and charities.

Mark and Buzz later got married in 2013 and Mark sold The Thistle Inn and the two bought the Topside Inn from their friends. They have taken pride to make it their own by remodeling each room. The duo are true foodies at heart, and it shows in their unique New England style dishes that both guests and locals have come to love. They just released their cookbook, "Over Easy and Over the Top," which any seafood lover would be crazy not to own. Mark and Buzz planted 32 fruit trees last year, on their four-acre property. They take pride in using at least one item from their garden with each breakfast they prepare, even if chives are the only things growing at the time, they will use it!

TOPSIDE INN FISHCAKES INGREDIENTS 2 pounds fresh haddock fillets Extra virgin olive oil Salt and pepper 1 egg 1 medium baking potatoes (Yukon Gold or russet) 2 cups panko breadcrumbs Canola oil for frying TARTAR SAUCE 1 cups mayonnaise 1/2 cup chopped scallions ½ cup chopped parsley zest of 1 lemon 1 tablespoon lemon juice 1 tablespoon capers, drained 1 teaspoon horseradish 2–3 dashes hot sauce (tabasco) Optional: 1 handful nasturtium flowers, chopped

Yields: 8 – 10 large fishcakes or 35 mini fishcakes. MAKING THE CAKES Preheat oven to 375. Peel potatoes, dice and boil in a medium saucepan until tender. Drain and press through a ricer (or mash if you do not have a ricer). Try to keep the potatoes dry. Rinse and pat dry haddock fillets, place on a baking sheet, and sprinkle with extra-virgin olive oil and a generous amount of salt and pepper. Turn fillets over and repeat. Bake haddock for 10 to 12 minutes, until it is firm to the touch and the fillets begin to break apart when you push on them. No need to overcook as the fishcakes will be cooked again. Let fillets cool, drain and discard any juice from the pan and place fish in a large mixing bowl. Using your hands, break fillets apart, into small pieces (do not mash). Drain and discard any additional juice. Place eggs in mixing bowl and beat. Place all tartar sauce ingredients into a separate mixing bowl and combine, do not overmix. MAINE FISHCAKES Add beaten eggs and 1⁄2 cup of the tartar sauce to the fish, gently folding in with a rubber spatula. Fold riced potatoes into fish mixture a 1⁄2 cup at a time. You may not need to use all of the potato as you want the cakes to be mostly fish. Add additional tartar sauce if needed and fold in well. You want a fairly wet consistency, but it shouldn’t be runny. Retain the remaining tartar sauce for serving as an appetizer. SERVING Sprinkle a generous portion of panko bread crumbs on a plate, add a dash of salt and pepper, and mix. Using a spatula, carefully transfer one cake “mound” to the panko mixture and gently press it into the crumbs (see chef ’s notes). This forms the flat cake, and helps the breadcrumbs to stick. Flip and press the other side. Push crumbs up on the sides to coat. Remove panko-covered cake and place on a clean baking sheet. Repeat with remaining cakes. Place in the refrigerator until ready to fry. (Keeping the cakes cold will help them retain their shape and make them easier to handle.) Preheat oven to 175. Heat canola oil in a large frying pan. The oil should be about 1⁄2-inch deep and bubble when the cakes are placed in the pan. It is important that the oil be hot enough, or the cakes will soak up too much oil. Fry on medium heat (oil should not smoke) for 3 or 4 minutes, until golden brown. Flip cakes and fry on the other side. Remove the cooked cakes and keep warm on a baking sheet in the oven until ready to serve. SERVING SUGGESTIONS We serve these cakes for breakfast with a poached or sunny-side-up egg; Topside Hollandaise sauce; salmon roe; chive or parsley oil; fresh arugula salad with warm bacon vinaigrette. Since there is potato in the fishcakes, I like to serve something lighter alongside. A fresh salad warmed with a heated dressing or a grilled tomato are perfect options, but you could also just do crispy potatoes. ADVANCE PREP Cakes can be formed and refrigerated overnight (without panko).Cakes with panko can be kept in the refrigerator for up to an hour before frying. After frying, cakes can be kept in a warm oven for up to 30 minutes.

CHEF’S NOTES

This is one of my favorite breakfasts we serve at the Inn. For one thing, it’s delicious. And the fishcakes can be served in so many ways: In addition to breakfast, you can use this recipe to make mini fishcakes, topped with a little extra tartar sauce, as a delightful party appetizer. It’s also a really easy recipe. There is a bit of prep time the day before, but the actual cooking and plating of the dish is fairly stress-free. These fishcakes are a perfect example of adjusting a recipe to suit your tastes. I tend to like bolder flavors, so if someone says add a dash of hot sauce to a recipe, I add four dashes, or six. I also usually use more lemon juice and horseradish when adjusting the seasoning. I also add a generous amount of the tartar sauce to make the cakes very moist, and I do not like to use too much potato, to ensure that the fresh, local fish is the star of the show. I do not add additional salt and pepper to the tartar sauce as I use a lot when baking the fish and the capers tend

to be salty, so you may want to add some to the remaining tartar sauce for serving if needed. Before portioning cakes, fry a small portion of the fish mixture in a pan until golden brown and taste. Adjust seasoning if needed by adding more, lemon juice, horseradish, salt and pepper, etc. To portion cakes, use a medium ice cream scoop and spatula. Scoop and level mixture, then turn out onto a at baking sheet or plastic container. The size of the cakes depends on how you will be using them. We usually get 4 cakes per pound of fish (meaning 8 total cakes with this recipe) for our breakfast dish. For cocktail parties, using a small scoop, we get about 35 mini fishcakes with this recipe. - Mark

AN EXCERPT FROM THE COOKBOOK Maple Gastrique I love vinegar, so any excuse to incorporate it into our dishes is all good with me. Here, the vinegar cuts the sweetness of the maple syrup, adding an unexpected, complex flaror to a hearty dish, such as our Pear and Lentil Hash with House-Smoked Salmon.

Ingredients 1 cup Maine maple syrup 2/3 cup apple cider vinegar (I prefer unfiltered)

3–5 whole dried star anise

1 tablespoon lemon juice

1 teaspoon fennel seeds

½ head of roasted garlic (6–8 cloves), mashed

Place all of the ingredients in a saucepan and heat over medium/high heat. Bring to a boil then reduce and simmer for 10 to 15 minutes, The sauce should begin to thicken. Once it has reduced by 25%, and the sauce coats a spoon, remove from heat and let cool. Remove spices and pour sauce into a squeeze bottle. This sauce can be stored for a couple of weeks in the refrigerator. Bring to room temperature, or even warm a bit, before serving.

An alternative method is to place peeled garlic cloves in a small saucepan, cover completely with extra-virgin olive oil and cook over medium heat for 30 to 45 minutes, at a low simmer. Garlic is done when is has browned a bit and is very soft.

Place butter in a mixing bowl and allow to come to room temperature. Fold in all ingredients, mixing well to incorporate flavors. Adjust to your taste Lay a large piece of plastic wrap on the counter, spoon the compound butter onto the center of the wrap and form into a log, about 1 inch in diameter. Roll the butter in the plastic wrap to create a tube, forcing out an air. Twist the

he Ocean House Bed & Breakfast is not far from downtown Newport, Oregon, but far enough away from town to enjoy a private pathway to miles of beach and tidepools. There are six rooms and a cottage all with private bathrooms.

Signature Pecan Stuffed Croissants with Homemade Raspberry Sauce

Signature Pecan Stuffed Croissants Serves 6 1- 8 oz. pkg. cream cheese, softened 1 tsp vanilla extract 2 Tbsp. sugar ½ cup pecans, finely chopped plus more for garnish 6 sandwich sized croissants ½ cup milk 2 eggs ½ tsp vanilla extract 2 Tbsp. sugar Fresh raspberries Mix cream cheese, vanilla extract, sugar and pecans. Cut croissants in half lengthwise almost all the way thru. Spread 2 tablespoons of pecan mixture on to the inside of the croissant. Close the top & press close.

Raspberry Sauce 1- 18 oz jar. Raspberry preserves Orange juice In a sauce pan combine preserves and ½ jar of OJ. Cook on medium stirring often until mixed well. Do not boil. Drizzle over croissant. Garnish with fresh raspberries, chopped pecans and whipped cream.

Whisk together the next 4 ingredients. Melt 1 tbsp. butter and a little oil on Med-high in a non-stick frying pan. Dip each croissant fully into the egg batter, coating each side. Place in pan and cook for 2 minutes or until golden brown on each side. Top with homemade raspberry sauce.

T

he Yellow House on Plott Creek Road in Waynesville, North Carolina has been completely restored. Guests are treated to luxurious accommodations with ten guest rooms and suites that all have working fireplaces. Six out of the ten guest rooms have jacuzzi size tubs. This year they were honored to be voted “Best of Haywood.” They often receive five-star reviews with praiseworthy comments from their guests. So who is the in-love innkeeping couple responsible for these remarkable accomplishments? Owners/Innkeepers Ken and Kelli Todtenhagen are high school sweethearts. At the young age of fifteen, the first time Kelli saw Ken standing nearby in his white shirt and parachute pants, and before they were even introduced, she told her girlfriend as they were sitting in a common area of their high school (she even surprised herself by announcing so matter-offactly), “I’m going to marry him one day.” Ken and Kelli have been married since 1990 and have five children, three girls and two boys, ranging in ages from eleven to twenty-six. Originally from Florida, Ken had a landscaping business that he sold. Kelli has a talent for interior decorating as well as a background in hospitality. They used to vacation in Maggie Valley and wander around Waynesville. Looking back, they always loved hosting guests in their home. In fact, when Kelli’s friend told her that all four

of her friend’s children said a particular bed and breakfast, “looked just like the Todtenhagen’s house”, it was then that Kelli had a feeling in the pit of her stomach that this was meant to be. Asking herself, “Why can’t we do this?” since they already were making others feel at home when they entertained guests in their own home. They have a gift for taking care of people in a home environment. So “one day” became “someday soon.” Prior to their move, Ken and Kelli never lived anywhere but within a five-mile radius of the high school where they met in Florida. Driving from The Sunshine State with three kids, two pugs, and a guinea pig, there was no turning back. They had major work to do to renovate The Yellow House. With only three days of training with the former innkeeper, Ken and Kelli were left to make decisions as to how they wanted to do things. They went to work right away restoring the Innkeeper’s House, replacing the HVAC, repainting the walls, and removing and replacing the flooring and carpeting. That was just the first project of many to come since the fall season of 2017 when they moved in. The outside landscaping was so overgrown that it covered the entire bottom section of the house, and only the top floor was visible to those driving by. They could not even see their gorgeous pond. They gave the whole inn a good cleaning, removed old furniture and replaced with new furniture and

They have the folded flag and plaque honoring World War II veteran James Williams who was born on the Fourth of July in 1921, and gave his life for America in September of 1942.

In the summer, guests will rent boats and canoes, or enjoy tubing and swimming. Some ride the Smoky Mountain Railroad or go to places like Cherokee which has a casino and horseback riding. Other guests come for pure relaxation. They read about three or four books from The Yellow House library during their stay. Unique to The Yellow House are two pet-friendly rooms each with private entrances. Dogs love to roam their five acres of land with a variety of outdoor scents to track. Guests are really surprised at how much area there is for their pets to run around. Kelli said that people who travel with their pets take good care of their pets. It is not unusual to see an owner relaxing with their furry family member in the hammock. In fact, when you walk on Main Street in Waynesville, NC (or Hallmark Town, USA) you see many people walking their dogs. Most downtown stores allow you to let you bring your dogs in like Mast General Store. The Main Street Bakery (who makes treats for pets) will take your dog’s picture and post it online (if you want them to do so). Pet-friendly restaurants allow pets to sit by their owners in their outdoor seated areas.

Water Fall The sound of the waterfall is like a thousand waves crashing at once. It looks like the long train of a lace wedding dress. White water pours down below into the river where an immense seafoam green swimming hole awaits. the water races over large smooth rocks on the edge of a cliff. It doesn’t slow down or stop for anyone. A vibrant rainbow emerges where the mist meets the sunlight. The waterfall is the backdrop of a mental snapshot. The green of the wild jungle surrounds it and tries to guard it from being discovered. It’s too late… I’m the first to jump in the cold refreshing water.

The Mountain’s Night Sky The large winsome full-moon is a glowing, flawless ivory pearl orb begotten from the omnipotence and perched high The myriad of stars Are sparkling diamonds scattered, chiseled and dangling from the exquisite dazzling black onyx sky. The night sky is a jewelry box— there isn’t a key or a lock. Striking stars steal the free show how they twinkle and brightly glow, like white daisies without a stem. Look, before clouds hide floating gems during the quiet of the night the mountain sleeps without a fight and shows off the jewels of the sky. If they could teach me how to fly, I too would be a gem in the sky, with a small twinkle in my eye… from joyous tears that I would cry.

Nothing above the mountain’s peak is more serene, except for the reason why stars mysteriously gleam. I’m paralyzed by the ornate, luminous display. I don’t want the thief of dawn to take it far away.

Pearls of the Sea A mountain of waves push forward and burst over the lovers of the sea letting in a grain of sand, a flash of light, a vivid memory, settling in hearts; forming a precious pearl, a hidden treasure inside, which they can take with them. They long for the peaceful song to become one with the fall and rise of each breath of the sea. A desire for such moments seems like years slipping through one’s hands like sand, until realizing The rhythmic motion of waves is the heartbeat of the ocean. And therefore; the precious pearls of the sea remind one of something ordinary transforming into something beautiful.

A Peaceful Destination Every year I take a trip by the sea and walk on the beach and curl my toes in the sand. I look for conch shells, so I can hear the ocean whenever I want to. I find a large one… I put it to my ear as though I have picked up a phone But I don’t talk, Instead I listen to the ocean song, as if I’ve heard it for the very first time.

I find joy and peace here. Time stands still until I look at the fast, roaring waves devouring my footprints in the sand, a new place undiscovered by little feet because each wave washes away the evidence of humans. Although the sea never sleeps, it sings me a lullaby in the night… when I’m tired I return to my room at the Inn, where I open a window and fall fast asleep, until the ocean awakes me and serenades me in the morning.

Late Night Visitors of the Lake The Inn was nestled on the banks of the small lake. I awoke to “come with me” and a flashlight shining on my face. We were off within minutes with the blue canoe. The full moon shimmered across the lake. I heard crickets and frogs chirping in the calm of the night. A cool summer breeze, pushed the canoe forward with little effort. We saw two loons, most likely lovers, In the middle of the glass top lake. They thought they had the stillness to themselves until we arrived. There was a little trail of ripples behind them and our canoe. The loons cheerfully sang their vows before they saw us. Then they ran and flapped their wings on the surface of the water before taking off. They had somewhere else to be and we had no other place we’d rather be.


Traveling Eyes The jagged rocks look like stairs leading to the top. As the sky grows dark, the mountain becomes a Christmas tree with a big star resting on its’ peak; The blooming full moon makes my eyes focus on this particular mountain peak. It becomes a part of the sky and a piece of the landscape as if it were a puzzle that is missing a piece, your presence. If you were here with me I’d share the view of the top where all trees reach for the stars… as if they were not very far away. I do not need to climb to a high altitude because… I prefer to climb the majestic mountain with my traveling eyes.

Postcard Masterpiece I see the window frame become the outline… of a masterpiece carved by glaciers. It’s reminiscent of an oil painting that I’ve seen many years before. It demands my attention; here, beauty is not within, but revealed on the outside of the magnificent mountains. The peaks look like upside down hearts draining peace, love and splendor into the surrounding rivers and lakes. The view is perfect… like a postcard, one collects for its alluring beauty, This one is cherished and never mailed.

Spring Mountains The early morning mountain mist disappears like a vapor before my sleepy eyes.

We meet for the first time I step out of the red jeep and my eyes wander and rest on the highest peak -Mt. Charleston. I see natural springs below feeding the pristine rivers and lakes. Butterflies, hummingbirds and songbirds fill empty space with beauty and soft music. The medley of colors is a result of diverse wildflowers that thrive at a high elevation. I take out my camera to preserve this moment because I don’t want to miss a thing. I look for alpine forests that I’ve heard a lot about; I realize it’s an adult playground Everyone wants to climb the highest point by hiking trails, taking a scenic relaxing drive, rock climbing, horseback riding and snowshoeing. I stand at the riparian river I stare at its fast-flowing currents and marvel at the vastness of these marvelous mountains. It will be difficult to say good-bye.

A Sky Island The slow floating clouds surround a mountain peak. The current of blue sky makes the waves of clouds crash among its shore. It is known as sky island for its isolation from desert land below. You’d think that nothing could live among the high altitude; but that assumption doesn’t last. We see bighorn sheep and some of the oldest trees. We encounter other flora and fauna along the way to the top of the peak —the wonder of this mountain is another world mystery of how an island can exist at such a high altitude. The panoramic vista automatically connects me to nature I didn’t know existed.

Vegan Blackberry Coconut Scones Preheat oven to 375 degrees. Makes about 10 scones. 1 1/2 cups organic flour 2 tsps baking powder 1/2 tsp salt 1/4 cup organic sugar 1/3 cup coconut oil 3/4 cup coconut milk 1 cup blackberries 1/2 cup sweetened or flakes

For the glaze: 1/2 cup powdered sugar 1 tbsp of coconut milk 1 tsp of vanilla unsweetened coconut

Sift together the organic flour, baking powder, salt and organic sugar. Add coconut oil (at room temperature). Use a pie dough/pastry blender to mash into little beads. Add coconut milk. Gently fold in blackberries and coconut flakes. Roll out the dough on parchment paper. Add flour if needed. Cut into round circles. Bake them on parchment paper for 16-18 minutes. While baking, prepare glaze. When cool, drizzle with glaze.

Oregon Bed & Breakfast Guild

I

n April, the Oregon Bed & Breakfast Guild organized a #BnbPhotoChallenge19 on Instagram. The challenge drew B&Bs from all over the world to participate in a daily photo challenge. It was a great marketing venture and community building effort to “meet” innkeepers and bed and breakfast owners via social media. The challenge was a success because it gave travelers and other bed and breakfast industry professionals a more personalized look inside each inn. The challenge to post daily encouraged B&Bs who may not regulary post to create a more diverse online presence, while giving travelers a true essence of location, staff, food, and a glimpse behind the scenes of innkeeping.
