s the holiday season dawns upon us, our hearts brim with anticipation, joy, and Y E A R S gratitude. Nevertheless, it's crucial to acknowledge that not everyone will share the same level of happiness this year. For some families, this marks the first holiday season without their cherished daughters: Niamh Rolston, Peyton Stewart, Asha Weir, and Deslyn Williams. Their absence serves as a poignant reminder of the profound impact of recent tragedies along our historic highway. The void left by their absence will be deeply felt by their families, friends, Pepperdine University, and our entire Malibu community for many years to come. Our heartfelt thoughts and prayers go out to all those affected by this devastating loss.

As we were crafting this issue of Malibu Magazine (now combined with Malibu Times Magazine), the tragic incident occurred on Pacific Coast Highway, claiming the lives of the four girls. In November, our community came together to honor not only their lives but also those lost on this iconic stretch of road, extending support to grieving families. The White Tire Memorial on Webb Way, serving as a poignant symbol of remembrance, offered a moment for us all to pause and reflect on the lives tragically cut short and the profound void that now resides in the hearts of those who remain. Within this issue, we have allocated a portion of our PCH section to them, where we share their stories, ensuring their memory lives on.

Within the pages of this Winter issue, our annual Food & Wine edition, we invite you to embark on a culinary journey through Malibu. We offer you "A Progressive Holiday Dinner in Malibu" and introduce you to the talented chefs from five eclectic Malibu restaurants who have contributed to a delightful holiday menu for all of us to enjoy. Emily Shane Foundation Fundraiser 'Crystallizing Success' at Sorenity Rocks The Emily Shane Foundation hosted its annual fundraiser at Sorenity Rocks at Cross Creek, providing an enchanting evening for dozens of donors. The event, themed "Crystallizing Success," aimed to support the Successful Educational Achievement (SEA) Program, a cornerstone of the foundation's mission. This program encourages students to perform acts of kindness and fosters social consciousness through mentorship from university students or recent graduates. Sponsored by Malibugives and TransformativePlay.org, the event showcased local businesses and Malibu wineries, including Malibu Solstice, Sura, and Hoyt Family Vineyards. Executive Director Ellen Shane expressed gratitude to Lenise Soren, owner of Sorenity Rocks, for hosting the event and praised her dedication.

Speakers at the fundraiser, like SEA Program tutor Kumari Bilings, emphasized the holistic development of students through good deeds.

Parents, like Jenni Ogden, shared heartfelt stories of how the program transformed their children's lives. The Emily Shane Foundation, a 501(c)3 their daughter, Emily, who tragically lost her life in 2010. The foundation's commitment to helping underprivileged middle school students reflects Emily's values and serves as a lasting tribute. Michel Shane, a respected entrepreneur, recently produced a film called "21 Miles in Malibu," shedding light on the dangers of the Pacific Coast Highway.

Dick Van Dyke's Captivating Photo Exhibit On November 19, Malibu City Hall was filled with excitement as fans and friends eagerly awaited the arrival of beloved patriarch Dick Van Dyke for the opening reception of "Moments in Time." This exhibition, featuring lively portraits by photographer Laura Johansen, captured the essence of Van Dyke's life and career.

Inside the exhibit, guests were treated to images of Van Dyke, the performer, the prankster, and the family man. Among the captivating photographs was one of him celebrating his 90th birthday at Disneyland, and another featured him chatting with David Copperfield with Pee Wee Herman's reflection in the background. The event kicked off with a live musical performance by A Call 2Peace. The audience sang along to their favorite songs from Van Dyke's movies as they awaited his arrival.

When Dick Van Dyke entered, the crowd erupted with applause. At almost 98, he radiated vitality and humor, regaling the audience with stories and answering their questions. He shared that his favorite songs were from "Chitty Chitty Bang Bang" and "Bye Bye Birdie," which earned him a Tony Award. The exhibit showcased Johansen's talent in capturing candid moments, and both to play with light and shadow, creating artistic and emotional depth in her photos.

As the event concluded, the crowd dispersed, leaving with smiles and well-wishes for the timeless Dick Van Dyke. "Moments in Time" will remain on display at Malibu City Hall until January 5, 2024, inviting all to relive the magic of Dick Van Dyke's storied career and life.

Boys & Girls Club Opens 'Third Space' in Malibu The Boys & Girls Club of Malibu (BGCM) celebrated the grand opening of their innovative project, "Third Space," after two years of planning and hard work.

Located in the Malibu Village, Third Space serves as a storefront, gallery, and innovation center designed to mentor and inspire local youth.

The grand opening event, which took place on November 16, was attended by members of the BGCM community, friends, and Malibu High School alumni. Kasey Earnest, the chief executive officer of the Boys & Girls Club of Malibu, expressed her gratitude towards the board members and staff who contributed to the realization of this project. Third Space is meant to be a place for youth to care, connect, and create, complementing their first space (home) and second space (school or work). The gallery section of Third Space will host various brands, products, entrepreneurs, and artists who will engage with the youth through workshops, events, and mentorship and creators, fostering an ethos of sustainability, creativity, and youth engagement. Workshops at Third Space cater to children from grades K-12, offering imaginative sessions and creative workshops. The venue aims to be a hub in the Malibu community, promoting care, connection, and creativity beyond traditional spaces.

December 10 Santa Paws at Malibu Bluffs Park Bring your pups and join the city’s Santa Paws, a free animal-friendly event on Sunday, December 10, from 10 a.m. to 12 p.m. at Malibu Bluffs Park. Humans and their four-legged best friends can participate in an ugly holiday sweater parade.

Local pet businesses and nonprofit organizations will have booths with information and resources for pet owners. Get your photo with your dog and Santa from 10:15 to 11:45 a.m.

December 16 Breakfast with Santa at Malibu City Hall

Through December The Adamson House Experience the annual holiday events at the architectural gem of Malibu, the historic Adamson House, situated adjacent to the Malibu Lagoon.

Docent-led tours have a fee of $7 for adults and $2 for ages 6-17, while children under 5 years old can enter for free. Cash payments are required for tours, with the final tour starting at 2 p.m.

Let it Snow & Celebrate the Merriment on the Pier Malibu Farm prepares locals for the season with “Let it Snow!” During December, every evening at 5 p.m., eco-friendly artificial snow will adorn the pier, offering enjoyment for individuals of all ages.

Postal Annex offers its first holiday event The Postal Annex at Trancas Country Mart is set to launch an exciting new tradition. Named “A Letter to Santa and Loved Ones,” this event invites residents to participate in the festivities on December 2, 9, 16, and 23, from noon to 3 p.m.

During these gatherings, participants will have the opportunity to craft a heartfelt letter to

Santa Claus and deposit it in his special mailbox.

For adults, there’s also the option to handwrite a special message for a loved one or friend..

December 7 Malibu Navy League Toys for Tots The Malibu community and the public are cordially invited to join the Malibu Navy League on December 7 from 5:30 to 7 p.m. to bring a new unwrapped toy for the Toys for Tots toy drive and an evening of light refreshments and camaraderie at First Bank Malibu. Michael Manfredo Welcoming the new year in Malibu for me is a reflective experience where I take myself on a very intense yoga and meditation journey followed by some nature photography.

During my yoga session, insights about the year will often become clear in the quiet Malibu winter.

As I stretch and put myself in different postures, a renewed clarity will arise. Where am I overextending myself? Or maybe I’m playing it too safe, and I’m underextending? Am I bending over backward a little too much? Maybe I need roll myself forward into a new direction? The yoga postures suddenly become a compass and my mat a map. As I feel my nervous system resetting to bring in the new year, I take my eyes off my inner world, and I like to see what magic the winter skies may paint along the Malibu coast. I will have my camera in hand ready for a sunset photo while eyes look forward to the beautiful horizon making me ponder the unknown adventures that lie ahead.

Riding a Stewart surfboard, Errico displayed exceptional skill, gracefully maneuvering through the waves and showcasing nose-riding and turning techniques. She faced off against Kelis Kaleopa’a in the World Title competition and emerged victorious with a 15.83 heat total in the Title Match 2, securing her third world title and second at Malibu Beach. After winning, Errico was carried on the shoulders of her family and coaches to the winner’s platform, where she shared her joy and gratitude with fans. She expressed her deep connection to Malibu and thanked her family and coach C.J. Nelson for their unwavering support. When asked why she believed she won, Errico attributed it to hard work and determination. Her father, Danny Errico, praised the Surfrider community for their support and protection of Soleil in both the parking lot and the water. Jean Pierre Pereat, an avid surfer and instructor, highlighted Soleil’s commitment to excellence and her humble leadership in the water, stating that she shows up even in challenging conditions. Soleil Errico’s victory not only secured her back-to-back longboard championship but she also accomplished it on her home beach, surrounded by the love and admiration of her loyal fans and the tight-knit surfing community of Malibu.

Soleil Errico Shines Bright

he World Surf League’s Women’s Longboard Championship competition at Malibu’s iconic First Point Beach was marked by anticipation, delays, and finally, a triumph for professional longboard surfer Soleil Errico, who is only 22 years old. The competition faced challenges due to the changing tides, giving it a 10-day window to be held. However, the first few days were ruled out due to insufficient surf, and on October 7 and 8, dense fog further delayed the event. On the morning of October 9, there was a threat of more fog, but the sun emerged and the competition was a go. Soleil Errico’s supporters were easy to spot, donning light blue T-shirts that read, “Soleil All the Way—Bring it Home!” Among her fans were surfing legends like Allen Sarlo, who cheered her on. First Point Beach held a special place in Errico’s heart, as it was where she honed her longboarding skills and became part of the tight-knit surfing community after moving to Malibu from Kauai at the age of 14.

Tragedy O Strikes Pepperdine University

The tradition of placing white crosses atop a hill began as a response to another tragic event that affected a Pepperdine student. Liam Staats, a member of Pepperdine’s Sigma Chi chapter, initiated this tradition by installing the original cross on the hill to honor the memory of Alaina Housley, another Pepperdine student whose life was tragically cut short in the mass shooting at the Borderline Bar & Grill on November 7, 2018. Subsequently, the name of Pepperdine student Dev Singh was added to the memorial after his passing on November 4, 2021 in a hitand-run traffic collision. During that time, those commemorating Singh expressed sentiments that resonate with the grief experienced by those mourning the four women students who lost their lives on PCH this year: "Your presence we miss, your memories we treasure, loving you always, forgetting you never.”

Memorial crosses erected, fundraisers launched to honor and assist grieving families

n October 17, tragedy struck as four Pepperdine students lost their lives at the 21500 block of Pacific Coast Highway. Thomas Monthofer, a fellow student and close friend of the victims, took it upon himself to lead an initiative. His goal was to install four white crosses on a hill located on the campus grounds, a solemn tribute to the cherished memories of Niamh Rolston (20), Peyton Stewart, Asha Weir, and Deslyn Williams (all 21).

These four girls were not only seniors preparing to graduate but also cherished members of Pepperdine's Alpha Phi chapter. The devastating incident occurred when a driver lost control of his vehicle, colliding with parked cars and tragically taking the lives of these young women.

Following the students' death, Pepperdine President James Gash issued a heartfelt statement aiming to alleviate the profound sorrow in the Pepperdine and Malibu communities. Monthofer's commitment to erect four white crosses in their memory embodied President Gash's message of solace and unity. To honor the students and support their grieving families, Monthofer launched a GoFundMe campaign, and with his fraternity, Sigma Chi, organized "Derby Days," a weeklong philanthropy event. Its goal was to raise funds for a monument near the white cross on the hill, featuring plaques bearing the victims' names, ensuring a lasting tribute.

Historic stats drive urgent call for immediate safety measures on pch

n the the aftermath of a tragic incident that killed four Pepperdine students, Niamh Rolston, Peyton Stewart, Asha Weir, and Deslyn Williams, hope flickers on the horizon for a safer Pacific Coast Highway (PCH) in Malibu. Despite Governor Gavin Newsom’s recent approval of speed cameras in various California jurisdictions, Malibu remains excluded—nevertheless, resolute figures like Capt. Jennifer Seetoo of the Malibu/Lost Hills Sheriff ’s Station, Fix PCH Action Team, and The Malibu Times remain unwavering in their quest for immediate action to be taken on PCH. To underscore the urgency of this mission, we delve into the historical statistics that highlight the pressing need for improved safety measures along this notorious stretch of road. The Fix PCH Action Team organized a World Day of Remembrance event on November 19 at the intersection of PCH and Webb Way. During this event, an art installation featuring 58 Ghost tires served as a poignant tribute to those whose lives were tragically and unnecessarily lost to traffic violence on PCH. The numbers speak volumes, painting a stark picture of the situation on Pacific Coast Highway through Malibu. From the heart-wrenching loss of young lives to the alarming frequency of accidents and rampant speeding violations, the call for change resonates clearly. These statistics must serve as a clarion call, spurring both officials and citizens to unite tirelessly in the mission to transform PCH into a safer route for all travelers. The time for action is upon us.

Pacific Coast Highway Historical Statistics • 1929: On June 29, a significant milestone was achieved as the Malibu section of the Roosevelt Highway connected a continuous highway from Canada to Mexico. California Governor C.C. Young, accompanied by Miss Mexico and Miss Canada, presided over the ceremonial ribboncutting event. This momentous occasion marked the opening of a picturesque 21-mile stretch of road, inviting a procession of 1,500 cars to revel in the scenic beauty along the way.

• 1942: Starting in May 1942, during wartime, “dim-out” regulations enforced by Southern California civil defense authorities forbade the use of headlights while driving on PCH through Malibu. Tragically, this restriction led to accidents resulting in injuries and fatalities until the dim-out laws were finally lifted on Halloween in 1943.

• 1942: On June 21, John P. Underwood tragically lost his life due to a series of events involving “dim out” laws. Underwood drove off the road, possibly in the vicinity of Rincon, became stranded, and subsequently wandered onto PCH. It was during this time that he was struck by a vehicle driven by Esther Dominguez, the daughter of an LAPD lieutenant who was secretly en route to visit her husband in Santa Barbara. The incident resulted in Underwood’s untimely death, and Dominguez fled the scene.

Dominguez faced legal consequences for her actions. She was acquitted of one misdemeanor hit-and-run charge but was not charged with negligent homicide. The legal proceedings surrounding this tragic incident concluded with this outcome.

• 1985: “Romancing the Stone” screenwriter Diane Thomas is killed in a Porsche driven by her boyfriend at Zuma Beach.

• 1992: Possibly suffering a stroke, actor Ben Vereen is seriously injured when he is struck

by David Foster at 2 a.m. on PCH. • 2010: On April 3, 13-year-old Emily Shane tragically lost her life in a devastating incident involving an erratic and disturbed individual, Sina Khankhanian, aged 28.

Khankhanian was observed traveling at a speed of 70 mph before colliding with Emily near the intersection of PCH and Heathercliff Road, resulting in her untimely death.

• 2019: On September 27, 76-year-old Ronald Fuote of Calabasas was killed by an eastbound Mini Cooper while attempting to run across PCH at dusk.

• 3,000: Citations for speeding along PCH since 2019; Los Angeles County Sheriff ’s Department • 4,000: Collisions along PCH in Malibu from 2013-23. Primary causes are speeding and improper turns, according to Caltrans.

• 6,183: Citations issued along PCH since 2019 by the Los Angeles County Sheriff ’s Department • 18,000: Vehicles per day average daily traffic levels (ADTL) at PCH and Decker Canyon (Caltrans 1990) • 47,000: vehicles per day (ADTL) at Las Flores Canyon Road (Caltrans 1990) • 52,000: Vehicles per day (ADTL) at Cross Creek Road (Caltrans 1990) • 56,000: vehicles per day (ADTL) at Topanga Canyon and PCG (Caltrans 1990) • 57,000: vehicles per day (ADTL) at PCH and Cross Creek Road (Caltrans 1990).

Niamh Rolston, Peyton Stewart, Asha Weir, and Deslyn Williams, all Pepperdine students, were enjoying a night out in Malibu when they met a devastating end in a violent car crash along Pacific Coast Highway, specifically between Carbon Beach Road and Las Flores.

Whether spearfishing or deep sea fishing, guests may be lucky enough to catch a variety of tuna, marlin, wahoo, walu, and mahi mahi from the island’s flourishing reefs and dense underwater ecosystem.

Adventures continue on land. Known as “the Garden Island of Fiji,” Taveuni, a cigar-shaped island, is Fiji’s third largest, with a total land area of 168 square miles.

It had a population of 19,000 in the latest census, with many indigenous Fijian residents.

Take a thrilling tour on 4-wheelers. Explore the area near the island’s massive shield volcano that rises from the floor of the Pacific Ocean. Visitors discover that nearly all indigenous plants native to Fiji are found on Taveuni, which has suffered much less devastation from land clearance than other areas of Fiji.

The island is an absolutely heavenly venue for ornithophiles. Avian enthusiasts may view a total of 22 regional, endemic bird species that have been recorded.

Hikers strive to view the Fiji parrot finch, orange doves, the maroon shining parrot, the Australian magpie, as well as the intriguing but illusive Fiji silk bat. Some lucky visitors also spot the critically endangered Fijian monkey-faced bat, which is found only on Taveuni and is a species only discovered by scientists in 1977.

Bushwalks offer a wonderful way to spend part of a day, and hikers can also enjoy gorgeous waterfalls and panoramic views and may get to see the Taveuni land crabs, the Fiji banded iguana, and unique species of frogs.

No wonder Hollywood has found Taveuni to be a great venue. Fantasy Island was filmed here, and both Avengers of the Reef and Return to the Blue Lagoon were partially filmed amidst the island’s unique environs.

he lore of Santa Lucia begins in the heart of Sweden, the birthplace of Malibu Farm Restaurant’s founder Helene Henderson. As the Scandinavians tell it, Santa Lucia emerges as winter’s icy grip tightens its hold and daylight wanes. The beloved saint brings warmth and light to the darkest season. An enchanting celebration is observed this time of year honoring Santa Lucia or “Saint Lucy,” a symbol of light and hope in Swedish culture.

This unique celebration marks a poignant moment in Sweden’s cultural calendar, bridging communities and generations through a shared appreciation for light, kindness, and the enduring spirit of hope symbolized by the soft glow of candlelight.

The enchanting procession that honors the beloved saint, Santa Lucia, whose name comes from the Latin “lux” meaning “light,” is anticipated by Malibu locals and others who come to witness her arrival at the Malibu Farm Restaurant, a tradition since Henderson opened her first Malibu Farm Café a decade ago.

Wearing a white gown with a crimson sash and a crown wreath of candles on her head Santa Lucia, radiating beauty and grace, leads a procession of singers, each holding a candle adding to the intimacy and warmth of the observance. Her arrival is a symbol of light, hope, and charity. The young women in the processional delight the crowd performing traditional acapella hymnals in Swedish with a few English carols as well.

Robert Monkress, Assistant Manager at Malibu Farm Restaurant, says the yearly event “comes alive.

It’s a festival of lights illuminating the darkest day of the year.”

For the restaurant’s founder, it’s a reminder of her days growing up in Sweden, where the feast of Santa Lucia once coincided with the Winter Solstice, the shortest day of the year. There, communal gatherings, where families and friends huddle around bonfires and share stories, foster a sense of unity and joy. Sweet baked treats, such as ginger cookies and lussekatter, saffron buns are often enjoyed. The key ingredient is the spice, with a rich history in Sweden. The saffron-infused buns are a sensory delight, providing a sweet and aromatic experience that adds to the festive spirit of the holiday season.

Malibu Farm’s tradition evokes not only the honored saint but also serves as a reminder of the rich cultural tapestry woven by the Scandinavian community.

The magical ambiance of Santa Lucia will be celebrated at Malibu Farm Restaurant on December 10 with two performances and dinner seatings at 4 and 6 p.m. Of course, the community is welcome to peek in to witness the glorious spectacle and to hear the sweet, beguiling melodies of traditional songs of Santa Lucia. The event has been captivating onlookers making for standing-room only performances since the tradition was brought to the Malibu Farm Café at the end of the Malibu Pier in 2013. Since the restaurateur opened a second location on the pier, she brought the Santa Lucia processional to the larger restaurant.

Henderson, who calls Malibu home, started cooking classes and backyard dinners at her Point Dume home. They were so successful she opened her first restaurant on the Malibu Pier. There are now Malibu Farm locations in Newport Beach, Tiburon, San Diego, Lanai, New York, and Japan.

Proprietor Wilfredo Barrera, who also owns the ever-popular Tramonto’s and will soon open Ju Ju Kitchen, an Asian fusion place, in Point Dume, has designed a wonderful eatery offering Southern California cuisine with French and Italian influence and a lively, well-stocked bar on Heathercliff where Ollie’s Duck and Dive used to be.

Ciel Orange’s wonderfully fresh and innovative cuisine excites one’s palette. Barrera and his talented team take care to ensure that the presentation of each selection is gorgeously appealing, has the freshest of ingredients, and unparalleled taste. The appetizers are to die for! Try the Brochette, a seafood lover’s dream. It features large, succulent sea scallops and tiger shrimp skewers, perfectly grilled with cherry tomatoes and lemon, intriguingly seasoned with a Tequila Cilantro and lime dip.

Ingredients: • 2 sea scallops • 2 tiger shrimp • 2 cherry tomatoes • 1 grilled lemon • Tequila cilantro & lime dip (Tequila, fresh cilantro, mayonnaise, and fresh lime juice blended)

Directions: Put 2 sea scallops, 2 shrimp, and 2 cherry tomatoes on individual skewers.

Cook on a griddle or grill with butter.

Assemble a plate as a pyramid with shrimp, sea scallops, and cherry tomatoes.

Continuing our experience, we visited The Sunset, an iconic and epic beachside venue housed in a historical beach bungalow where the ocean and sunset views are unparalleled, as is the cuisine. You just can’t beat it! Sitting near Zuma Beach and enjoying the waves, the convivial, cozy bar, and the welcoming staff, the venue offers a diverse mix of seaside elegance and vintage Americana. Indoor and outdoor seating both offer an exciting experience.

Proprietor Franco Simplicio warmly welcomed us. We savored delicious and hearty side dishes, including the ever-popular Lobster Mac & Cheese, with enormous chunks of choice, meaty lobster, and savory Parmesan cheese. Delectable! Everyone’s favorite flavorful Parmesan truffle fries were next. Their perfectly crunchy fries alone justify a trip to The Sunset! To end the array of select choices, Chef Paolo Sicuro blessed us with grilled creole vegetables featuring fresh and flavorful flavored eggplant, onions, yellow and green peppers, and zucchini - perfecto!

Lobster Mac & Cheese

About Chef Paolo Sicuro Born in Puglia in the south of Italy, Chef Paolo was a chef in Roma at Trattoria Polese before coming to America. He smiles as he talks about working at The Sunset. “I feel great to work here because I am near the ocean, and it’s a beautiful place, and we have a wonderful team!” he exclaims.

Chef Paolo has worked at The Sunset on and off since the venue opened in 2005. He’s been the Executive Chef at Via Alloro in Beverly Hills and worked back in the day at the now-shuttered Allegria in Malibu. He’s excited to try new dishes, visit with customers to see how they like them, and sometimes change the menu a bit while always keeping fan favorites.

Ingredients: • 1.5 pounds lobster • 2-3 shallots, finely chopped • Truffle oil (a few drops, to taste) • 2 cups heavy cream • 8 ounces of elbow pasta • 1 cup grated Parmesan cheese • 1/2 cup bread crumbs • Olive oil • Italian parsley • Salt and pepper

Directions: Steam the lobster and take it out of its shell.

On the side, saute olive oil with shallots, add a touch of truffle oil, and add heavy cream.

Cook elbow pasta and mix it with the creamshallot sauce, and then add Parmesan.

Finish with Italian parsley and sprinkle a touch of bread crumbs on top.

Roast at 375 degrees for 30-35 minutes until the sauce is bubbly and the macaroni is browned on the top.

The Surf & Turf was on show for Malibu Magazine and did not disappoint! A beautiful and succulent presentation of a generous portion of lobster seasoned with a creamy tomatoherbed sauce with a large, tender, 8-ounce filet mignon seasoned with a dijon cream sauce nestled on a bed of delicious spinach perched atop a delectable potato cake was satiating and sensational. Chef Enrique and his team use fresh, seasonal, premium ingredients to curate tasty, nourishing meals.

About Chef Enrique A soccer lover when he’s not in the kitchen at Kristy’s Village Cafe, where he has served as executive chef since 2014. Chef Enrique is the idyllic chef, “he grew up in the school of hard knocks,” Kristy Apana, proprietor of Kristy’s, says. “He is amazingly talented, is an exceptionally hard worker, and keeps his cool at all times under pressure.”

Ingredients: • 2 cups chopped shallots • 1.5 tablespoons chopped garlic • 1 bottle brandy • 2 cups heavy cream • 1.5 cups dijon mustard • 3/4 cup whole grain mustard • 1 cup chicken stock • 2 cups veal demi • 1/4 cup Worcestershire sauce • Pinch of black peppercorn • 2 tablespoons butter

Directions: Sweat shallots and garlic in butter.

Add black peppercorn.

Add brandy, flambe, and reduce.

Add cream, mustards, chicken stock, Worcestershire, and demi.

Bring to boil.

Adjust seasoning to taste.

He’s flexible, as evidenced by the fact that when he gets home from a long day serving the establishment’s loyal customers, he is game for eating his five-year-old daughter’s “special cheese sandwiches” that she lovingly makes for her daddy. “It’s just mayonnaise, ketchup, and a piece of cheese between bread,” Enriques says good-naturedly.

About Chef Kate Pelayo Geoffrey’s new executive chef was born in the Philippines and grew up loving food. She earned her professional culinary degree at the Center for Asian Culinary Studies in San Juan City, San Juan, Philippines. Before joining Geoffrey’s as the Executive Chef, she was an executive sous chef for the prestigious TAO Group in Los Angeles and also worked at Wolfgang Puck Catering. Chef Pelayo loves the Geoffrey’s team, and they love her, with Manager Sharon Amos stating, “She is just wonderful to work with and so engaging. Cassava Cake

Ingredients: Cassava cake with macapuno is a traditional Filipino dessert made of grated cassava, coconut milk (fresh is better, but canned also works), condensed milk, and brown sugar. Cassava cake is a popular merienda (snack) or dessert. Importantly, it must be cooked properly because raw cassava is not suitable for people.

Directions: Preheat the oven to 350 degrees and grease a 9 x 13 inch baking dish. Set aside.

Stir: In a large bowl, stir all the ingredients until combined.

Bake: Transfer the batter to the baking dish and bake for one hour or until the sides are puffy and the center is set.

Spread: Take the cassava cake out of the oven and spread condensed milk on top.

Carmalize: Place back in the oven and continue to bake until the top has caramelized. Enjoy!

Dessert Another wonderful late night venue to stop by for desserts is Taverna Tony’s, an epic Malibu location that offers the finest traditional Greek fare and sweets in Malibu, and many customers say well beyond the town. Chef Oreste Di Gregorio and his team consistently serve delicious, delectable fare. However, Malibu Magazine focused on desserts. The baklava is out of this world! It’s a softer and more dense version of the classic than Americans are used to eating and features pistachios, almonds, and walnuts in layers of honey-laced filo.

Consider adding one of the venue’s wonderful coffees. The Greek coffee is superb, and the Taverna notes, “Your fortune is in every cup! Ask for Sketo (no sugar), metrio (medium), or Gliko (sweet).

Baklava About Chef Oreste Di Gregorio

Ingredients: • You will need 18 sheets of filo dough, 3 cups each of walnuts, pistachios and almonds, honey, sugar, and cinnamon.

Directions: Take six sheets of filo dough and brush each sheet with butter, stacking the sheets of filo in a large cooking pan.

Add a mixture of walnuts, pistachios,

Later, he learned under the tutelage of the chef at Prego, who had been trained by the famous Italian chef, Gualtiero Marchesi, who, in the opinion of many, was the most famous Italian chef in the world. “I learned a great skill,” Chef Oreste says. “Cooking is a passion, and if you don’t like it, don’t do it.” Chef Oreste worked in the now-shuttered Allegria restaurant in Malibu, at Moonshadows and The Sunset restaurants as well as at Tra di Noi. Now, he is the executive chef at Taverna Tony, and he and his team are delighted to serve delicious Greek and Italian cuisine to their loyal customers and those who are visiting for the first time. V’s Manhattan V's Restaurant & Bar Ingredients: • 2 oz Rye Whiskey • 1 oz Punt e Mes (a type of vermouth)

• ½ oz Amaro Nonino • 2 dashes Aromatic Bitters • Brandied cherry for garnish

Directions: Gather a mixing glass and fill it with ice to chill the ingredients without diluting the cocktail too much.

Pour the rye whiskey, Punt e Mes, Amaro Nonino, and aromatic bitters over the ice.

Stir the mixture gently but thoroughly for about 30 seconds. The goal is to chill the drink and achieve a slight dilution.

Strain the cocktail into a chilled martini glass or a rocks glass over a large ice cube if you prefer it on the rocks.

ust on the brink of the pandemic, La Montagne des Saveurs, a revered cheese producer from the French Alps, reached out to Debra Bianco, President/Co-Founder of the Cornucopia Foundation. Their goal?
