The restaurant industry is a particularly tough one, but this new business could be building the type of fan following needed to thrive for decades. He and his partner opted to add “a ton” of inventory, improve on the selection, lower the prices and introduce a rewards program that was one

Two years later, his customer base loved him enough to name Bubbles

Liquor World the Best Liquor Store in Castle Rock, an award Krier said reflects the Bubbles effort to put the customer first. “If there is a customer nearby and they need you, drop what you’re doing and take care of the customer,” he said. “We emphasize customer service. Growth takes care of itself.”

At the time, store manager Coy Theobalt had seen a trend of more people moving their personal use to Mac computers and, with a growing market in iPhones and iPads, he knew the writing was on the wall. CCM Staff hen newlyweds Ted Manzanares and Lisa Burmeister opened the Orchard Day Spa, they did it with a vision. For Burmeister, her vision was to make women beautiful. For Manzanares, his vision was to make his bride happy. Three months after they opened their spa on Dacoro Lane, her client list of nearly 500 gifted the couple with a trio of Best of the Best awards, including the Best New Business in Castle Rock, and the couple had no problem when the honor came on the eve of their honeymoon.

The store had been a dream in the works for years, and when Burmeister opened the doors, she did it with no small flair. The Orchard Day Spa offers medical skin treatments from injectable fillers, to Botox, medically based facials, epidermal leveling, chemical peels and laser treatments. Limelight treatments treat pigmentation, laser hair removal, skin tags, toenail fungus and teeth

whitening. More traditional treatments include eyelash extensions, airbrush makeup, waxing and facials. “We feel very, very blessed to get the Best of the Best awards,” Burmeister said. “I love the fact that I have a loyal following of people that felt confident enough to vote for us. At this point now I feel like we need to live up to that title.”

He leaves his craft brewing to master brewer Jim Stinson in a decision that has netted Drabing and his sibling partners Mike and Diane Drabing “tons” of awards, including world beer cups, Great American Beer Festival Awards, Colorado State Fair awards and recognition as the 2012 Colorado Community Media Best Brew Pub in Castle Rock. The Rockyard American Grill & Brewing Co. opened in April 1999 and was named with a tongue-in-cheek reference to the Douglas County jail, right down the street. Drabing’s willingness to take risks with flavors and flexibility in the brewing process, with attention to consistency and quality, has helped fill a niche in a market he says covers a “wide variety of taste spectrum.” His favorite offerings at the moment include the Buddha Nuvo, which he likens to a chardon-

CCM Staff ngie’s Restaurant in Castle Rock began as one of those deals that just don’t happen anymore. The family-owned restaurant was purchased in 1965 by Mike McCaffrey Sr., who traded a 1950 Cadillac and paid the back taxes to purchase the restaurant, which bears the nickname of the gentleman who started it all, said owner Mike McCaffrey Jr. McCaff rey Sr. eventually handed the restaurant, complete with its family recipes, to his sons, who run the Castle Rock and Littleton stores with

Theatre of Dreams knows a trick or two of the best

CCM Staff t was a magic carpet ride around the world that brought Joe and Carol Givan full circle to Castle Rock. The couple met while performing at Houston’s Magic Island, a five-star restaurant filled with rooms featuring a variety of magic acts. The two continued to run into each other over the years, with Joe Givan taking his award-winning illusions from Los Angeles to Japan and Carol Givan with her flash magic on cruise ships around the world. When they finally decided they had enough with their “outrageous” phone bills, they chose his home state of Colorado as a landing pad, and in 2003 opened the Theatre of Dreams with a vision to bring top-notch magic acts to Castle Rock. Their strength lies in their international reputation to draw illusionists, mind readers and hypnotists from around the world for private performances that include wedding rehearsal dinners, reunions, corporate and birthday parties, as well as public per-

formances throughout the year. “Magic is the perfect ice-breaker,” Carol Givan said. “You’re breaking reality and you’re seeing it live. Just the shock value and the amazement. The surprise takes them out of their everyday thinking. When one of their group members is involved in the show itself, that’s a lot of fun. They remember it forever.”

spices things up CCM Staff s with many successful restaurants, Santiago’s started with one great recipe in somebody’s mom’s kitchen. In this case, the recipe was green chile and the mom was Rachel Morales, who roasted jalapenos on the grill, then gave them to her kids to peel by hand. One of those kids was Carmen Morales, who says it burned like crazy. Nevertheless, she grew up to open the first Santiago’s under three guiding principles. The food has to be fresh, because she doesn’t like leftovers. Customers need to be greeted with a friendly face, because you only get one chance to make them want to come back. “Third was a humble approach of not naming the restaurant after oneself, but to name it after a saint,” says Morales. “After all, not all new businesses are successful, and we would need all the help we could get.” Clearly, it worked. Santiago’s has grown to more than 20 locations throughout the metro area and beyond, from Englewood to Fort Morgan. The key to Santiago’s burritos and other dishes, of course, is the green chile. It’s so popular now that they started shipping to out-of-state customers who can’t get enough, and it’s also available in grocery stores. Locals can get it for every meal – on huevos rancheros for breakfast, a Mexican hamburger for lunch and perhaps carne asada or pork chops for dinner. “It’s a Santiago’s thing,” proclaims the website.

Moe’s brings Dixie-style approach Best BBQ Restaurant Moe’s BBQ and Bowling 3295 S. Broadway. “We opened about 3½ years ago and brought Dixie-style barbecue to the area,” manager Ian Mattingly said. “Our barbecue is prepared by rubbing spices into the meat and slow-cooking it over the coals to enhance the smoky taste.” He said a house specialty is the pulled pork sandwich with marinated coleslaw served on the bun with the meat, along with white Alabama barbecue sauce. The menu also includes fried chicken, turkey, ribs and fried catfish. There is a choice of a full meal or a sandwich. There are popular South-

ern side dishes available like baked beans, coleslaw and banana pudding. Moe’s also offer larger quantities like a whole turkey or slab of ribs, and the restaurant will do catering. The Broadway location also offers bowling, plus there is live music three nights a week. There is full beverage service, and outdoor seating is available during nice weather. Often Moe’s has special events like the recent motorcycle show plus the upcoming crawfish boil. Moe’s now has locations in Boulder, Denver and Lakewood, plus there is now a mobile van. Mattingly said the van joins the gathering of food trucks each Tuesday and Thursday at Civic Center during the summer. The truck also goes to special events in the winter.

We’ve got a lot of places where people can just sit down and read, browse through the books. … We also have author events probably every night in at least one of our stores.” A Denver institution for more than 35 years, Tattered Cover opened its doors in Town Center in November 2004 and Shaheen and most of the store’s booksellers have been at the Ranch location since day one. “We all just love to read, and love

putting books in hand,” Shaheen said, adding that when folks choose to shop with them, not only are they getting a unique experience but they are supporting an independent bookstore, coffee shop and their community. One of three Tattered Covers in the Denver area, Shaheen said each store is tailored to its neighborhood, and that in addition to its broad selection of titles, the store on Dorchester is known for having a great children’s section, story times and different kids’ events. The store is open from 9 a.m.-9 p.m. Monday-Saturday and 9-6 on Sunday. The cafe, which prides itself on selling local coffee and pastries, opens at 7 a.m. on weekdays and at 8 a.m. on the weekends.

CCM Staff elinda Fatianow opened Indulge Bistro and Wine Bar at the corner of Lucent and Highlands Ranch Parkway with her husband, Peter, in October 2008. With close to 100 selections of wine from around the world, full lunch and dinner menus, happy hour seven days a week and the self-proclaimed “best view in Denver” from a west-facing patio complete with fire pits and couches, the Fatianows built the restaurant with one thing in mind – comfort. “I think we are a lot different from any other restaurants from around this area,” Delinda Fatianow said. “We built this restaurant because we thought there was a need in the community for something upscale, but comfortable, and that’s what we think we provide. We have a full bar, lots of wine and great food.” The couple, who just opened a second location on Main Street in Golden, are happy to host everything from birthday parties to company events and wedding rehearsals and also teaches on-site and online wine education courses. The bistro and wine bar is open for lunch and dinner from 11 a.m.-10 p.m. Monday-Thursday and 11 a.m.-12 a.m. Friday-Saturday and open for dinner from 4-10 p.m. Sundays. Taylor was a member of corporate America until 2007, when he realized he would be happier doing something he loved. “I’ve always been sort of a cleancar freak,” he said. “I used to wash my own car in the driveway every Saturday morning for rest and relaxation.” Today, he can ask one of his 35 employees to do it for him when they’re not busy with the constant stream of customers who visit to get their car babied, shop in the boutique (run by Taylor’s wife, Lisa), buy some fancy pickles or a fountain drink or just kick back on a couch in front of a big-screen TV while watching the kids play in the toy

room. “They know their cars are going to be treated gently and cleaned well, and they get a chance to relax,” said Taylor. He says it’s the little things Jazz does that keeps the customers coming back – special towels for windows that get washed separately, environmentally safe chemicals, rain checks, free coffee, water and wi-fi.

Taylor’s philosophy focuses on customer service, and to him that means happy employees. “We ensure the team is well cared for and motivated to do a great job for our customers, and that the customer comes fi rst,” he said. “If my team is empowered to do a great job for the customer each and every time, then they will keep coming back.”

CCM Staff mmigration attorney Christine Swenson has the experience to help those who are sometimes least able to find help when they need it most. “I am trying in my own small way and in my own small corner of a very big, tangly, purple state to give people a voice,” she said.

Swenson has more than 15 years of legal experience. Prior to starting her own practice, she was a criminal-justice professor at Arapahoe Community College. She had a lot of knowledge to pass on to her students, having been an assistant district attorney both in Colorado’s 18th Judicial District and Arizona’s Pima County. But then she was drawn back to her real passion: victims’ rights. As a prosecutor, she was responsible not only for holding people accountable to the law, but also to achieving justice for victims. During that time, she says, is when she discovered how often the rights of undocumented residents are minimized

or overlooked altogether. She’s in close contact with the immigration-services center at Bemis Library, and occasionally offers free seminars there on topics such as the DREAM Act, which would defer deportation for children who were brought here illegally if they go to college or the military. Today, Swenson’s goal is to set an example to various governmental agencies she works with that deal with immigration. “I want to get them to see a little bit more that undocumented non-citizens are not necessarily a threat to public safety,” she said.

CCM Staff ustomers looking for fruits and vegetables have a multitude of choices at the Sprout’s Farmer’s Market in Lone Tree. The store is in a large building east of the Super Target on Lincoln Avenue. The layout is one large, open room. There are no designated aisles. Instead there are tables displaying

a wide variety of fruits and vegetables. Each display is labeled in details For example, one table’s label identified the ears as Olathe sweet corn, while nearby there was a table piled high with fruit identified as Palisade peaches. However, the store merchandise is not limited to fruits and vegetables. There are large, well-stocked display

cases of ready-to-cook items as well as a wide variety of meats. The store also stocks gourmet coffee, a wide range of spices and diverse selection of cheeses. Sprouts is part of a national chain that was established 10 years ago but traces its roots back to 1943, when

The seasonally adjusted menu appropriately satisfies the palate, with lighter delicacies in the spring and summer and more hearty meals during the colder months. First-time restaurant owners Richard Esper and Alec Erickson brought their culinary expertise from the Bellagio hotel in Las Vegas to Parker, which they also found to be the perfect place to raise their families.

The duo has been so consumed with making sure the upstart meets expectations, that they were unaware of the voting for the best new restaurant. Regardless, Esper says the early recognition is encouraging. “It shows good support by Parker,” he said. “We know to a certain extent the feedback from guests and especially our regulars, but it’s nice to have that validated publicly.” The following has come largely from elev. 5900’s succulent entrees, including mouth-watering steaks, but customers have likely noticed the freshness of the accompanying sides. Esper says with the Taylor Produce

stand just outside its doors, they have a constant supply of just-picked fruits and vegetables. They also take advantage of goods from the Parker Farmers Market that bustles out front every Sunday. Esper is organizing an event he wants to introduce this fall called “Sunday, Bloody Mary Sunday,” which will test local bartenders’ skills when making the popular drink. He doesn’t worry about driving customers to competitors because every restaurant has its niche and “the more options you have, the better choices you can make.”

CCM Staff hen out-of-towners ask longtime Parker residents which Asian restaurant is the best in town, there is one common answer. Indochine, which specializes in Thai and Vietnamese cuisines, has been a popular eatery in Parker for nearly 10 years. A few-blocks move from its original home near Parker and Mainstreet to the Parker Station building in the downtown district three years ago did nothing to stop the crowds from coming in. The move increased capacity from 28 to 100-plus, including outside seating. It’s the second time that Indochine has been named as the top Asian restaurant in Parker as part of Colorado Community Media’s Best of the Best contest. Yume Tran, who owns In-

dochine with her husband, Jeff, says the honor “means a lot to us since that means that we are doing something right to service the Parker community.” It’s not only the food – from best-sellers like the flamed beef cubes and Vietnamese noodle bowl, to drunken noodles and green curry – but the elegant atmosphere and courteous customer service keep regular customers flowing through. “We hope we were voted because our guests see and appreciate that each and every day, we continue to give our best to create and service the healthiest meals,” Tran said. Her quirky, charming personality fits in well with the sweet treats that line the display cases at Posh Pastries, a small, off-the-beaten-path shop on the southwest corner of South Parker Road and Plaza Drive. Casselberry, a baker who began honing her craft at age 10, takes her trade so seriously that she went to Par-

Posh Pastries has also made a name for itself by running booths at farmers markets. The Parker Farmers Market is one of five that the bakery hits each week. Casselberry, in an attempt to elicit a laugh and possibly ease guilt, waves a “magic” wand over her delicacies to “remove the calories.” It seems to work, as sales show no signs of abating.

Parker Days is big boy among festivals CCM Staff here are several exciting annual events throughout Parker, but there is little doubt about which one gets the most recognition and adoration. The second weekend in June is steadfastly marked off on calendars for the Parker Days Festival, which features rides, activities, booths and entertainment for the whole family. Dan Rodriguez, chief executive officer of the Parker Chamber of Commerce, which has organized the event for 35 years, says “when the community comes together anything is possible.” The recognition is especially welcomed because Parker Days is the chamber’s signature event. “Thank you to those that made this

honor possible, including the Parker community, 600 chamber members, 300 volunteers, devoted chamber staff, supportive Town Council and the best event coordinator on earth,” Rodriguez said. The three-day event, formerly known as the Parker Country Festival, is a regional draw. At no time was that more apparent than when 145,000 people visited downtown Parker in

June, shattering last year’s record of 110,000. The fest provides a boon for local businesses, as well as hundreds of food and craft vendors. The Parker Days tradition has spanned generations. In some Douglas County families, it’s the kids, parents and grandparents who anticipate the wild laughter and creation of lifelong memories.
